From 7 to 16 June 2019, Melt Cafe at Mandarin Oriental Singapore invites you to their Delhi Food Festival Dinner. Enjoy a slew of traditional Delhi dishes from both the Indian specialties station as well as their live stations which are set up exclusively for this festival.

Tomato Coriander Broth

Kick start your meal with this Tomato Coriander Broth, which can be found beside the Western Food station along with other soups. What makes this broth unique is that its rich consistency is obtained from ground basmati rice, rather than starch or potatoes. Extremely tangy and delicious, it is dangerously moreish!

Masala Dosa

I was surprised to see a Malasa Dosa Live station. You could have it plain as well, to appreciate all the beautiful and bright chutneys served alongside.

Chaat

Not to be missed is also the brightly lit Chaat station and each chaat is as colourful with flavours and textures from Moong Dhal Pakori  chickpeas, potatoes, onions, green chili, pomegranate tamarind chutney, mango chutney and sweet yoghurt.

Whole - Roasted Lamb Biryani Saffron Rice

Heading the Indian Specialties station is this iconic Whole - Roasted Lamb Biryani Saffron Rice, Vegetables. However, you can only witness its magnificence only on Friday and Saturday Dinner. So choose your date wisely.

Dal Dhaba

The Lentil Curry is a mainstayer and as humble as it may seem to be, it is the tastiest among all. I have tried it a couple of times during my other visits, and it never fails to delight my taste buds. Perhaps, it is its tomatoey flavour coupled with spices that makes it so alluring.

Macher Jhol

Among other festive dishes, my favourite is the Bengali Fish Curry with Coconut and Mango. The curry was fruity but was more piquant than sweet, which made it very appetising.

Mutton Ki Shami

A few items to highlight, such as their Signature Lamb and Foie Gras Kebab with Indian Spices. The flavours of lamb and foie gras were surprisingly good with each other without being too gamey.

Malai Jhinga

Tandoori Tiger Prawns were nicely charred, but some were slightly overcooked.

Til Wale Bharwa Aloo

The Potatoes and Cottage Croquette with Sesame Seed reminds me of sesame balls, that exudes tons of sesame flavour at every bite.

Paneer Tikka Masala

Their Vegetables and Spinach Creamy Curry Gravy is pleasing with a good ratio of spinach to the gravy, which makes it relatively light and less sinful when you reach out for more.

I wish there would be more exclusive Indian desserts to try but there wasn't. But the Alfonso Mango Lassi satisfied that nonetheless.

Pink Fish @ Jewel Changi Airport Singapore - World Champion Chef Brings A World Of Flavours To The Norwegian Salmon at Hip New Eatery

Pink Fish is a fast-casual concept restaurant that uses salmon as its ingredient. The hip eatery from Norway is founded by world champion chef Geir Skeie, who is the Bocuse d'Or winner in 2009, together with his two friends. This is their first international outlet, and they have picked Jewel Changi Airport Singapore as their foray to the rest of the world.

Kick start with the healthy Kombucha drink. It is a natural sparkling, fermented tea, packed with probiotics drink that is supposed to have a lot of health benefits. Diners can choose over a variety of flavours too. While it is a healthy drink, I find the taste quite acquire to my liking.

American Burger 4/5

The signature is their burger, which comes in 3 flavours (Asian, European and American). It comes with a generous 110g of salmon patty. I tried the American Burger ($9.90) that is sandwiched with coleslaw, cucumber, tomato and slathered with BBQ sauce. What impresses me is the salmon patty which comes with real chopped pieces of salmon

American Chilli Soup 4.2/5

With the closing of Chili's American Grill & Bar, I thought I will not be able to have a good bowl of chillis soup anymore. Thanks to Pink Fish for being my saviour. The American Chilli Bowl Soup comes with beans, coriander, tortilla chips and topped with grilled salmon fillets. The portion comes in 3 sizes - Nibbles ($10.90), Hungry ($14.90), and Starving ($18.90).

Like the soup bowl, it comes in 3 sizes - Nibbles ($10.90), Hungry ($14.90), and Starving ($18.90). Diners can also have the options of Asian, European or American for the salads. I have the European Salad which consists of grilled salmon fillet, greek yoghurt sauce, feta cheese cubes and olives.

Asian Raw 3.5/5

For the raw section, I tried the Asian Raw Bowl. It consists of Japanese sashimi salad with raw salmon cubes, yuzu, miso, edamame and rice. Similar to the soup and salad, it comes it 3 different sizes and flavours.

A noble note of the eatery is the use of sustainable Norwegian salmon to the biodegradable packaging and cutlery. I applaud the eco-conscious of the company for playing a part in protecting our Mother Earth. I hope more companies in Singapore will follow suit.
