Pacific Emporium @ Pan Pacific Singapore - Launches Festive Afternoon Tea For The Festive Season

Celebrate the festive season with Pacific Emporium’s Festive Afternoon Tea, a thoughtfully curated spread of savoury bites, festive sweets, Christmas-inspired scones, and a choice of mains. The experience is complemented with TWG tea or coffee, with the option to add on a glass of champagne to amp up the celebratory mood.

We started with a complimentary welcome drink, Cinnamon Spark, a sweet-citrusy blend of cinnamon-honey syrup, fresh lemon juice, and aromatic bitters, which nicely set the tone for the afternoon.

Turkey Slider

Each guest gets to choose one main. The Turkey Slider featured a juicy turkey patty tucked between buttery brioche, layered with sweet caramelised onions and cheese.

Sampler of Festive Sausages

The Sampler of Festive Sausages, which included a Basil Pesto Bratwurst and Garlic Butter Sausage, was well-seasoned and juicy.

The savoury bites include festive creations. The Salmon & Cheese Roulade was a classic pairing of smoked salmon and cream cheese, while the Lobster Salad, cleverly presented as a local-inspired kueh pie tee, proved a delightful surprise.

Apple & Walnut Savoury Tart

Other savouries included Prosciutto e Melone, offering a light and refreshing contrast, and the Apple & Walnut Savoury Tart, which delivered a buttery, nutty bite with a hint of freshness.

Breaded Ham & Cheese Sandwich

The Grilled Chicken Choux Bun was sweet-savoury and filling, packed with a creamy yet chunky chicken filling. Breaded Ham & Cheese Sandwich was served hot and pleasantly different from the usual cold tea sandwiches.

Hazelnut Passion Fruit Log Cake

The sweet treats this season leaned towards citrusy notes. The Hazelnut Passion Fruit Log Cake was nutty and fragrant, made with buckwheat sponge and layered with tart passion fruit curd.

The iridescent Earl Grey Lavender Log Cake intrigued with its Earl Grey Tanariva mousse, though the crunchy dark chocolate tended to dominate the overall flavour.

Raspberry Rosella Choux

My favourites were the Apricot Dianduja Tart and Raspberry Rosella Choux. The tart struck the right balance of sweetness, with distinct yet harmonious chocolate and apricot flavours. The choux, on the other hand, had a spot-on tartness that beautifully balanced the sweetness.

Scones

The Lemon Hazelnut Madeleine was buttery with a gentle citrus lift, while the scones were served with clotted cream, cherry jam, and chocolate hazelnut spread. They were decent, though not particularly memorable.

Overall, Pacific Emporium’s Festive Afternoon Tea is a well-rounded option for a relaxed, festive catch-up. In particular, the sweet options stood out for their well-balanced flavours and sweetness.

Chef Makoto, who helms AMI Patisserie at Scotts Road, is celebrated for his masterful creations that harmoniously blend refined flavours, delicate textures, and exceptional craftsmanship. This afternoon tea experience also captures the tranquil beauty of the Japanese autumn, a season evocative of a graceful dance of change sweeping across the landscape.

To begin, guests are welcomed with a Yuzu Blossom Mocktail, a blend of TWG Sakura! Sakura! Tea, yuzu juice, honey and butterfly pea flower tea, made using butterfly pea flowers freshly harvested from The Fullerton Farm. The drink's purple and yellow hues make it so pretty! Guests can also select a serving of TWG tea or Bacha coffee to accompany their food.

Afternoon tea is served on a classic three-tiered stand, with a menu of five savouries, five sweets, and a plated dessert. As expected of an award-winning pastry chef, the afternoon tea set is pastry-forward, showcasing creative techniques and imaginative flavour combinations.

We began with a delightful bite-sized treat, the Sansho Miso Yaki Nasu Madeleine, where smoky grilled eggplant meets a touch of parmesan.

The Burrata Cheese and Parma Ham Sando is a spin-off of the memorable Burrata Cheese & Parma Ham Croissant that Chef Makoto also serves at AMI Patisserie. It's light yet indulgent, and creamy burrata paired with savoury ham is always a great combination.

With the Smoked Salmon Tarte, what I appreciated most was the uniquely crafted tarte pastry, beautifully layered and flaky, adding a light, buttery contrast to the rich smoked salmon and capers topping. Meanwhile, the Tomato Tartelette showcases ripe tomatoes atop a crisp, savoury and golden base.

Last but certainly not least, the AMI Signature Caviar Choux is filled with creamy egg mayo and crowned with Nomad Caviar. Definitely one of my favourite bites of the afternoon!

Moving on to the sweets, some of these creations feel familiar, as Chef Makoto's signature dishes are featured on this menu. I was thrilled to taste them again, and they were as delicious as I remembered!

My favourite amongst the sweets was the Black Forest Choux, filled with 70% chocolate ganache, kirsch cream, and a tart sour cherry compote. I love the choux's airy, light yet satisfyingly crisp exterior, as well as the rich chocolate component.

Mont Blanc

The Strawberry Pistachio Tarte is as pleasing to the eyes as it is to the taste buds, topped with vibrant, sweet strawberries. Meanwhile, the Mont Blanc is an autumn essential, rich, creamy, and perfectly seasonal. For both of these tartes, there is an unexpected touch, a little cake base beneath, adding an extra layer of texture.

The Caramel Banana Mousse has a sweet and silky texture, with smooth mousse layered over a crisp base. Light yet indulgent, it offers a gentle sweetness that's perfectly balanced, with subtle caramel notes enhancing the natural richness of the banana.

Kinako and Matcha Tropézienne with Yuzu Jam

To my surprise, this afternoon tea set did not include scones. Instead, it features a Kinako and Matcha Tropézienne with Yuzu Jam. The kinako and matcha cream were delicious, and the yuzu jam added a bright, citrusy note to the bread. However, I found the bread too thick to finish entirely.

Mango Coconut Rice Pudding with Mango and Passion Fruit Sauce

Served in an elegant glass, the Mango Coconut Rice Pudding with Mango and Passion Fruit Sauce is reminiscent of summer's brightness more than autumn's, but it stands out as one of the most refined and elegant interpretations of mango sticky rice I've ever tasted.

Overall, fans of Chef Makoto will not be disappointed. The pastry craftsmanship is consistently superb, promising a most wonderful tea time experience, enjoyed within the luxurious surroundings of The Fullerton Hotel Singapore, one of the city's most iconic heritage landmarks.

To continue enjoying Chef Makoto's treats at home, two of his best-selling pastry creations —the Caramel Passion Banana Mousse Cake and the Apple Tatin Tarte —will also be available for takeaway from The Fullerton Cake Boutique, adjacent to The Courtyard.

Revolution Wine Bistro @ Henderson Industrial Park - New Food-Forward Dining Destination by The Team Behind Defunct RVLT

From the team behind the now-closed RVLT, Revolution at Henderson Road is a brand-new restaurant that has redefined itself as a food-forward dining destination, shedding its old wine bar image. The cosy space is designed in collaboration with iconic Danish design house Fritz Hansen. It is furnished entirely with pieces from their design heritage, lending an understated yet elegant and cosy atmosphere.

Chicken Nuggets with Tomato Sriracha 4.5/5

At lunch, the menu leans towards simple, comforting fare — shareable starters, locally inspired pastas, and hearty mains. A must-try from the sharing plates is the Chicken Nuggets with Tomato Sriracha ($20), a highly requested favourite carried over from its previous spot. These are far from your usual fast-food nuggets. Made from a golden ratio of 80% chicken thigh and breast to 20% soft bones, they were tender and succulent, with a contrasting crispy crust. The crunchy, soft-bone bits buried within elevated the textural enjoyment. And what made these morsels even more addictive was the in-house Tomato Sriracha dip, crafted with 3-day fermented tomatoes, which imparted a fruity-sweet, vinegary tartness and a punch of heat, making it an excellent palate awakener.

Homemade Sourdough with Whipped Seaweed Butter 4.5/5

The Homemade Sourdough with Whipped Seaweed Butter ($8) was pleasing, featuring a well-made sourdough that struck a delicate balance of tang, nuttiness, and structure, with a crusty exterior and a chewy interior that paired beautifully with the umami-rich butter.

Hua Diao White Clams Linguine 4.5/5

Revolution also offers a Set Lunch ($28.80) comprising a salad, a choice of pasta, and a drink (iced tea, lemonade, or coffee). I tried both the Hua Diao White Clams Linguine ($19.80) and the Chicken Rendang Homemade Ravioli ($19.80). The linguine had an intoxicating aroma of Hua Diao wine, with a buttery, garlicky sauce that coated the al dente pasta and large, meaty clams.

The ravioli, however, paled in comparison. The pasta dough was a bit thick, and the minced chicken filling made only a slight impact. While the rendang gravy was bold and aromatic, textured with seasoned breadcrumbs, a simpler execution, such as egg pasta with shredded chicken, could have been more successful in conveying the idea.

Among the salads, the Kale Salad was delightful, featuring crisp, fried kale paired with fresh leaves, avocado chunks, and tomatoes.

Dinner service features a five-course tasting menu ($98++), and I tried a couple of the courses. The starters showcase a Trio of Snacks, starting with Crystal Sensu Fan, topped with Lobster Roe Bavarois and Caviar, which was incredibly delicate yet deeply umami. The Chicken Skin Stroopwafel with Drunken Foie Gras and Rose Wine Jelly offered a playful contrast of crisp chicken skin waffle and unctuous foie gras terrine, with the jelly cutting through the richness.

In the same vein, the Mala Taco, filled with luscious negitoro and topped with tomato jelly, featured a sesame and hazelnut-infused tuile that delivered a layered sweet-savoury nuttiness and mala warmth without overwhelming the negitoro. In contrast, the tomato jelly balanced the richness of the bite.

Mussels Cheong Fun 4.5/5

Another course I tried was the brilliantly executed Mussels Cheong Fun. The soft, tender cheong fun acted like a delicate veil, concealing a surprise of aromatic moules marinières beneath — sweet-savoury with a touch of brininess, brightened by vibrant acidity and a drizzle of scallion oil that added gentle herbaceous notes. Paired with a Jerusalem artichoke purée, the mild, earthy base absorbed the sauce beautifully, making for a deeply satisfying bite.

Rounding off the meal, the petite Pandan Madeleines ($12) were delightful, with a lingering buttery flavour in every bite.

AMI Patisserie x Roku Gin - Presents a Cocktail and Dessert Omakasae Experience from 4 to 6 April 2025

This spring, Roku Gin and AMI Patisserie collaborate to present a cocktail and dessert omakase session from April 4–6. The Sakura Bloom 2025 Edition returns by popular demand, a bottle embodying the Japanese concept of shun — the fleeting moment when nature is at its peak in vibrancy and vitality. In the same vein, "AMI" also translates to "blossoming in Asia" in Japanese. This 8-course omakase showcases Chef Makoto's signature creations alongside specially curated Roku Sakura Bloom-infused desserts. The experience is elevated with a signature Roku serving — the Roku Sakura Bloom Gin and Tonic with Pink Gari — as well as two limited-edition cocktails crafted by local food stylist and entrepreneur C.R. Tan.

Signature Choux 5/5

Next was Chef Makoto's highly raved-about Signature Choux. The delicate choux pastry encased a classic, creamy organic egg filling, which contrasted beautifully with its slightly crisp shell. The crème fraîche on top enhanced the creamy mouthfeel, while caviar and shiso flowers added a well-balanced savoury depth.

Hokkaido Crab Tartelette 4.5/5

Following that was the Hokkaido Crab Tartelette, featuring a tart base topped with a harmonious blend of Hokkaido crab, scallop, green apple, amera tomato, and young ginger. The tart was baked to achieve a deep browning, adding depth to the flavours. A layer of yoghurt cream tied the elements together, complementing the textures beautifully.

Smoked Omi Roasted Beef Tarte 4.5/5

We enjoyed the Smoked Omi Roasted Beef Tarte, which featured house-made brioche, Omi beef from Chef Makoto's hometown, and uni for a heartier bite. The well-seasoned brioche served as the perfect vessel for the luscious, smoky Omi beef and creamy uni, with a touch of wasabi cream to bring the elements together.

Japanese Asparagus Tarte 5/5

The Japanese Asparagus Tarte truly celebrated the beauty of spring. Layering on top of a buttery sweet tart base were crunchy Japanese asparagus, tender slices of shiitake, and Parma ham. Seemingly simple ingredients, every bite was packed full of flavours with a satisfying mouthfeel.

Moving on to the highly anticipated desserts: First was the Japanese Spring Citrus, a refreshing combination of gin jelly infused with Roku Sakura Bloom Edition, mandarin orange, and kumquat granita.

Next came the Marble Dark Chocolate, which delivered bold, intense flavours with crispy tiles, 72% dark chocolate ganache, coffee cream, and Cognac Amaretto ice cream.

Strawberry Sakura 5/5

The final creation — and my personal favourite — was Strawberry Sakura. This classic pairing of strawberries and cream was elevated with delicious rice pudding infused with Roku Sakura Bloom Edition, fresh strawberries, strawberry granita, and velvety coconut ice cream.

Ending the meal was Oyatsu, the Japanese version of Petit Four — Warabimochi. Made from a family recipe, the warabimochi had an impressive stretchy and chewy texture. It was delicious with a thin coating of kinako powder and a drizzle of kuromitsu.

This set incorporates four harmonious sweet treats: strawberry tarte, Matcha Kinako Choux, Sakura Choux, and spring citrus tarte. For every purchase, a complimentary serving of Sakura Bloom Gin & Tonic with Pink Gari will be up for redemption while stocks last.
