A staple for every Christmas feast is turkey and ham. From the Christmas carvey live station, customers can savour the Traditional Whole Roasted Turkey and Honey Glazed Ham, with accompaniments such as Brussel Sprouts, Sweet Potato Au Gratin, Roasted Mushroom, Smashed Baby Potato and more.

For the seafood lover, head to the Seafood On Ice section for an ocean of fresh seafood such as prawn, mussel, clam, snow crab, Alsakan king crab, Boston lobster, Normandy oyster and Fine de Claire oyster. Assorted of sushi and sashimi, as well as house-cured salmons, are available too.

For the carnivores, the Charcoal Grill section will delight you with an array of meat selections such as the Marinated Peri Peri Chicken, Iberico Pork Secreto, Roasted Beef Tomahawk, Salmon Wellington and Grilled Catch of the Day. I highly recommend you to go for the grilled catch of the day. You can have a whole live fish grilled to perfection.

A highlight at Beach Road Kitchen is the Chef's Passarounds. The chef will push around a trolley and go around the restaurant serving each table. Look out for them, especially the Pan Seared Foie Gras and Roasted Truffle Duck with Black Lentil.

For the sweet tooth, the buffet also features a patisserie of sweet treats from White Chocolate Citrus Log Cake and Sweet Raspberry Log Cake to holiday favourites Maple Pecan Pie and Pumpkin Cheese Cake.

Lawry's The Prime Rib @ Mandarin Gallery - Presents A Magnifique Spread This Festive Season

For this festive season, Lawry's The Prime Ribs at Mandarin Gallery has put together a collection of set course menus for the festive celebrations. The set course menu emphasis top-quality meats and seafood while featuring the restaurant's sublime signatures such as the Signature Roasted USDA Prime Rib of Beef and Broiled Atlantic Lobster Tail.

Ocean Gems Fresh Chilean Scallop 3.5/5

I tried the 6-Course Christmas Eve Set Menu ($168++/$189++) which starts with the Ocean Gems Fresh Chilean Scallop for amuse-bouche. The Chilean scallop is drizzled with extra virgin olive oil and served with baby carrot puree beetroot puree and green pea puree.

Boston Lobster Bisque with Fresh Lobster Claw 3.8/5

Next is the hearty Boston Lobster Bisque with Fresh Lobster Claw, served with chive bits, cream and a drizzle of Grand Marnier. However, I felt that it lacked the robustness of the crustacean flavour.

For the appetiser, we have a trio of small bites. From left to right, we have the baby octopus in Roma tomato puree with crabmeat salad, pan-seared goose foie gras with homemade red wine raisin sauce over bacon-wrapped chicken, and chicken gyoza with homemade spicy sauce.

For mains, diners get to have three choices. They can opt for the Signature Roasted USDA Prime Rib of Beef with Turkey Combo, Grilled Kurobuta Pork Collar or Broiled Atlantic Lobster Trio and Wild Salmon Roe.

If you opt for the Signature Roasted USDA Prime Rib of Beef with Turkey Combo, it comes with 100grams roasted beef, 100grams roasted sliced turkey, 100grams smoked turkey ham, US Idaho mashed potatoes, Yorkshire pudding, whipped cream horseradish, chestnut stuffing as well as a choice of creamed corn, creamed spinach or buttered peas. For the doneness of the beef, I would recommend going for rare. I was afraid it will be too raw for my liking, but it turned out this is the perfect doneness to appreciate the tender and beautiful flavour of the prime rib. Not forgetting the soft and fluffy Yorkshire pudding which complements the dish. Do allow it to soak up the delicious and flavourful sauce.

Grilled Kurobuta Pork Collar 4/5

If you are not into beef, you can go for the Grilled Kurobuta Pork Collar. The slab of pork collar is served with US Idaho potato wedges, caramelised onion, and grilled tomato stuffed with creamed spinach.

Broiled Atlantic Lobster Trio and Wild Salmon Roe 4.5/5

Another favourite at Lawry's The Prime Ribs is their Broiled Atlantic Lobster Trio and Wild Salmon Roe. For a change, instead of the meat, these broiled lobsters will delight you with their delicate freshness. Not only one but you get 3 pieces of it. It is served together with US Idaho mashed potato, sauteed vegetables and drawn butter.

For dessert, one can choose between the Sakura Cremeux with Mango-Pear Coulis and Haagen-Dazs Chocolate Ice Cream or Glazed Chocolate Mousse Praline Dome with Haagen-Dazs Vanilla Ice Cream.  Subject to individual preference, the sakura cremeux is light with a little sweetness from the mango-pear coulis while the glazed chocolate mousse praline is pack with the bittersweet chocolate richness. One can order either coffee or tea to go with their dessert.

For the festive set course menu, guests will get a 10% discount if all guests are seated between 5-6pm. On top of that, for every three set course menu ordered, you will receive a bottle of Bolla Prosecco (750ml) or Casillero del Diablo Devil's Brut Sparkling Wine (750ml) for takeaway subject to which set course menu ordered.

InterContinental Hotels Group Festive And Takeaway Promotions 2019

InterContinental Hotels Group's Christmas Party this year was held at InterContinental Singapore. We had the first look at their festive delights and takeaways put together by their various brands and accompanying the festive spreads were Christmas cocktails concocted from InterContinental Singapore's latest hotel bar Idlewild.

Familiar flavours of Christmas delights never fail to bring joy to the table, such as Honey-baked Boneless Ham ($148, 2.2kg) from Crowne Plaza Changi Airport. Glazed with a sauce made from pineapple juice, honey and raspberry vinegar after being baked in the oven, its sweet and tangy flavours are crowd-pleasing.

For something a lot more luxurious, a night with red, Holiday Inn Singapore Atrium will have the perfect roast for you Slow baked Australian Grain-fed Tomahawk with truffle jus ($138).

Or spice up your spread with Asian flavours instead. Turkey takes on a new Asian profile at Holiday Inn Orchard City Centre - Roasted Whole Turkey with Masak Lemak, meaning turkey in coconut curry with Bird’s Eye chilli. Light green with the Masak Lemak sauce and spiked with Asian red spices, it is as Christmasy as you want it to be. Another option is the Soya Glazed Turkey with Coconut Sriracha (hot sauce named after the coastal city of Si Racha in Thailand), which gives the festive bird its red roast colour.

Your old folks may be stoked to see you bringing home the Hakka Salt Baked Chicken with Stuffing ($52 for 1.5kg), This is one of the mod-sin creations by Baba Chews from Hotel Indigo. It is inspired by a Salt-Baked Chicken stall that originally started in 1962 at Mohamed Sultan Road but had ceased operation in 2017.

For sweets, you can also go include some mod-sin flavours such as Chendol Yule Log ($65) and ‘Kopi’ & Chocolate Yule Log ($68). Holiday Inn Singapore Atrium also has an Asian version as well - Cempadak Yule Log Cake ($78)

My pick for log cake this year would be from Regent Hotel, Dolcetto by Basilico’s Festive Booth - Golden Delicious Apple Tarte Tatin Log Cake ($108), interpretation of the traditional French dessert with caramelised apples wrapped around a sponge log sitting on a crisp pastry base.  Never have I come across such an elegant version of a log cake. But for something comforting, it has to be its Old English Christmas Fruit Cake, I simply enjoy the rummy flavour of the raisins and dried fruits.

The fanciest Christmas sweets will be from Intercontinental Singapore, such as the Santa’s Carousel Fruit Cake- an intricate rendition of the classic Christmas bake crafted with rum and brandy-infused candied fruits and chocolate. It even comes with a revolving Santa attached to it, which is great as a centrepiece. The range also includes sugar-free options - White Christmas log cake comprising sugar-free chocolate mousse and cinnamon apple compote;

Otherwise, settle for flavours that are simple, yet indulgent. Crown Plaza introduces two new Yule Logs - Pink Ruby Yule Log and Chocolate Banana Yule Log ($68 each). The Pink Ruby Yule Log is made with ruby chocolate, which is seemingly a new rose-hued gem in the chocolate scene ever since it was launched in 2017 by Swiss chocolate maker Barry Callebaut. Pretty in pink, the log cake is made with raspberry puree and pink ruby chocolate mousse filling, interlaced with layers of vanilla cream cake and white chocolate feuilletine. As for the latter, the classic combination of chocolate sponge cake, rich chocolate buttercream and caramelised banana will end every meal with a happy note.

Goodwood Park Hotel Christmas 2019 - A Merry Whimsical Christmas

Christmas is just around the corner, and it is the time to feast again, For this Christmas, Goodwood Park Hotel presents an enchanting selection of festive sweets and new savoury treats.

Roasted Pandan Scented Turkey with Mantou Kaya Nibbles & Housemade Chilli

Goodwood Park is known of its Asian-inspired Yuletide fare, and for this year it has created the Roasted Pandan Scented Turkey with Mantou Kaya Nibbles & Housemade Chilli ($238). The turkey is steeped in honey marinade and fresh pandan extract and slow-roasted to perfection. The result is a succulent roasted bird with a subtle aroma of pandan on top of the natural honey sweetness. It comes with sweet-savoury mantou kaya nibbles stuffing consists of sauteed shallots, shiitake mushrooms, and mantou filled with luscious kaya.

Great accompaniments for the festive feasting is the Pan-fried Turkey and Chive Gyoza ($24 for 10pc) and Turkey Mantou Slider ($36 for 6pc / $58 for 10pc). The gyoza is encased with a generous filling of turkey melded with chopped chives and pan-fried to a delightfully crispy exterior. The turkey mantou sliders are inspired by the local Kong Bak Bao. Sandwiched in between golden bun are the tender braised turkey, yam and pickled white onion.

Crystal Glacier Log Cake 

On the sweet treats, Goodwood Park Hotel brought the winter wonderland to this year's Christmas celebration. The Crystal Glacier Log Cake ($82 for 1kg) is a delicate almond sponge cake with mascarpone, apple mousse and lingonberries, sitting on a base of milk chocolate hazelnut fudge. The cake is beautifully glazed with white chocolate and decorated with pastel milk chocolate shards.

Whimsical Fairy Cake

The magic of Christmas continues with the Whimsical Fairy Cake ($65 for 1kg). The enchanting cake features a butter cake sandwiched in strawberry jam, decorated with a graceful pink fairy, butterflies and lolly candies.

Merry Cubes 

The Merry Cubes ($88 for 1 Set) is a playful cake among the collection. The three tiers of sweet treats come in different coloured petite cake, shaped in little cubes. The different colours represent 6 different flavours - strawberry, orange, blueberry, lychee, mango and green tea.

Takeaway gourmet treats will be available at The Deli from 1 to 26 December 2019. Advance orders of five days are required, and guests may visit The Deli from 9am to 9pm daily to place their takeaway orders. Folklore @ Destination Singapore - Have A Jolly Heritage Eurasian Christmas At Folklore

For the festive season from 14 to 31 December 2018, Folklore will be introducing lesser known heritage dishes from Chef Damian's grandfather's repertoire, as well as well received festive dishes from past celebratory menus.

Dry Curry Mutton 4/5

I have a weak spot for curry mutton and I love the rendition of the Dry Curry Mutton ($42) prepared Indian-style at Folklore. Cooked in a blend of dry and wet spices, the meat though a bit tough, is well infused with the spices' aroma. It's hard not to ask for a plate of steamed rice to soak up that delicious gravy.

White Debal 4/5

The White Debal ($42) is Chef Damian's family rendition of the curry devil, traditionally served on boxing day which are cooked with the leftover meat and vegetables. Over at Folklore, the white debal comes with tender chicken pieces and housemade achar cooked in rempah, vinegar and mustard seeds.

Feng 4.5/5

Making a come back on the festive menu is Feng ($30). It is a traditional European curry dish created during the sea expedition days of the Portuguese, which is original known as Sarpotel in Goa. The dish is further localised as it travelled south towards Malacca. Requiring 2 days to prepared and cok the dish, Feng is assortment of pig's offal cooked in a blend of 18 spices. It may sounds acquire for some diners but this is absolutely delicious. Unknowingly I was going back for more, having it like a snack.

Beef Brisket Semur 4/5

The Beef Brisket Semur ($28) is another beautiful dish with fall of the bone meat in a rich and flavourful stew. I simply ditched my table etiquette and pick the bone up for a finger licking good meal.

Vindaloo 4.8/5

The Vindaloo ($35) is a dish originated from Goa. Chef Damian replaces the pork ribs with bone-in pork chops, just like how his grandfather did it. The pork chop is rubbed with cumin and mustard seeds and set aside to dry. It is then cooked in a blend of vinegar, garlic, ginger, tumeric, dry chillies and brandy. This is the best pork chop I have eaten and definitely the favourite among the group.

Bolu Cocu 3.5/5

The Bolu Cocu ($8 per slice) is a rare Eurasian dessert. It is a traditional coconut cake made in a brass mold. No oil or butter is used, the oil is from the coconut itself. I find the texture quite similar to the Chinese "Huat Kueh'.

Sugee Cake 3.8/5

Last but not least we end our meal with the Sugee Cake ($10 for 3pc). The buttery and nutty cake comes with a hint of brandy sweetness which is brushed onto the cake, everyday for a week. Having tried Lynnette's Seah's sugee cake, Chef Damian's version is still not moist enough compared to hers.

Folklore's Christmas menu will be available for lunch and dinner from 14 December to 31 December. Festive meal takeaways are available with an advance booking of 5 working days (last day to order is 25 December). Takeaways are available for all items except Eurasian Christmas Pie and Bolu Cocu.
