Flip Flop @ One Farrer Hotel & Spa - Pop Up Sunday Brunch

Coming 4 June 2017, Flip Flop at Level 6 of One Farrer Hotel & Spa will be starting their Pop Up Sunday Brunch, which is located besides the swimming pool. Specially curated by the culinary team at One Farrer, the food is beautiful in presentation as well as taste. Not only that, many of the ingredients are harvested directly from the 11,000 sq ft farm at the hotel. I was surprised to know that the farm has over 65 varieties of edible plants, herbs, spices, fruits and vegetables.

Ginger Lemon Fusion

You will understand why I mentioned that the food here is beautifully presented when even the coolers - Cloudy Bay ($10) and Ginger Lemon Fusion ($10) are so Instagrammable. The sweet and refreshing drinks are perfect for the humid Singapore weather.

Cold Angel Hair 4/5

Starting with some starters, we tried the Cold Angel Hair ($12) which is infused with truffle and topped with shio kombu and caviar salad. This may not be a new dish but it still manage to delight me with its earthy aroma and springy texture.

Jamon & Trio Cheese Baked Egg Hash 4.5/5

Good for sharing among 2 people is the Jamon & Trio Cheese Baked Egg Hash ($14). I was rather surprised how the different cheeses work harmoniously together to elevate the whole dish. It was savoury, cheesy, creamy and more important addictive.

Grilled Apricot, Farm Picked Green Lettuce with African Chicken Salad 4/5

The next dish we tried is the Grilled Apricot, Farm Picked Green Lettuce with African Chicken Salad ($14). The tender chicken roulade is dressed in a satay-like sauce which I find it very palatable and enjoyable.

Boston Lobster Benedict 4.2/5

For a luxurious enjoyment, one can go for the Boston Lobster Benedict ($30) which comprises of poached lobster, avocado, tobiko roe and holladise sauce. While the holladise sauce is not as rich or intense, I actually like it that way so that it did not mask the sweetness of the lobster flesh.

Smashed Avocado on Doris's Dilly Bread 3/5

The Doris's Dilly Bread in the next dish is made using the chairman's mum recipe. We all love the bread. Unfortunately I felt that the Smashed Avocado did not give justify to it, it tasted rather bland and lacklustre. Even though there are sweet corn, poached egg and Jalapeno pesto besides the avocado, it did not manage to zest it up.

Diners are also given choices for the brunch at Flip Flop. They get to mix and match their selection of Eggs (poached, sunny side up, omelette, scrambled), Protein (bacon, sausage, breakfast ham, roasted beef), Greens (farm fresh salsa, mix mushrooms, roasted tomatoes, smashed avocado) and Carbs (toast, muffin, croissants, potatoes). Minimum of 2 choices at $12 to a big breakfast of 4 choices at $18.

Mini Pancake Stack with Mixed Berries & Passion Fruit Cream 3.5/5

For dessert, we had the Mini Pancake Stack with Mixed Berries and Passion Fruit Cream ($8). The mini pancakes was light and fluffy, complemented by the sweet passion fruit cream. It is actually quite good on its own too.

Baked Granola Tart with Low Fat Yogurt & Mixed Berries 4.5/5

After numerous attempts, the kitchen finally manage to make the granola tart holds. Coated with chocolate and crowned with mixed berries, the Baked Granola Tart with Low Fat Yogurt & Mixed Berries ($8) is like a piece of art on the plate. It hurts me to destroy it but then its too delicious to leave the art piece untouched.

Boruto Sake and Tapas Bar @ South Bridge Road - Celebrating Its 2nd Anniversary With A New Menu

Recently I am back at Boruto Sake and Tapas Bar along South Bridge Road to celebrate its 2nd anniversary. In conjunction with its 2nd birthday, Chef Angus has created a new menu to celebrate the occasion as well as refreshing the menu to entice the palate of the regulators as well as new diners.

Nature of Boruto 4/5

Besides the sake selection at Boruto, the bar also shakes up some interesting cocktails too. I started with the Nature of Boruto which is a concoction of midori melon liqueur, kuromaru shochu, the 1872 Clipper Tea Co. Healing Garden (Tisane) infused Vodka, triple sec, yuze sake and egg white. A light and refreshing pre-dinner drink to kick start the night.

Oyster with Ponzu 4/5

We started the dinner with some Fresh Oyster ($18.80) paired with ponzu granite, momeji oroshi and herb cress. I like the idea because the lightness of the ponzu sauce allows the appreciation of the oyster, and not overpowering it.

Tori "Charcoal" Karaage 4/5

The chicken karaage is given a hipster tweak coating it with bambo charcoal. The chunky Tori "Charcoal" Karaage ($10.80) is tender and juicy. Dip it with the accompanying mentaiko mayo for lifted enjoyment.

Tuna  with Caviar 4.2/5

Next we had the Tuna with Caviar ($22.80) with yellowfin tuna topped with avruga caviar with a final touch of olive oil crumble for finish. The torched tuna has a nice smoky aroma while the avruga caviar gives it a salty contrast.

Taraba Kani Salada 3.5/5

A light and refreshing dish on the new menu is the Taraba Kani Salada ($22.80). The beauty plate comes with king crab leg, avocado, cherry tomato and greens. Mixed everything with a free drizzle of the ponzu sauce and gives it a good toss to blend everything together. There is also a bit of heat from the wasabi that is used in the salad.

Kani Croquettes 4/5

Fried to golden brown is the Kani Croquettes ($12.80), using blue swimmer crab and topped with sweet corn for some extra crunch. The used of the garlic aioli coupled with the crispy bread crumb coating, made this a delightful dish.

Gindara Pumpkin Miso 4/5

It is rather an uncommon combination to pair pumpkin with cod fish. The Gindara Pumpkin Miso ($18.80) sees Chef Angus pairs black cod with roasted pumpkin and married them with yaki aged miso. The combination of savoury and sweet is well balanced on this plate.

Ebi Niniku Yaki 4.5/5

Among the new dishes, I probably adore the Ebi Niniku Yaki ($18.80) the most. I like how the huge and crunchy white prawns are cooked to perfection in a sake broth with dried pepper. The execution kind of resembles the drunken prawn dish for me.

Ika Gyoza 4.2/5

Good for sharing is the Ika Gyoza ($18.80) that is stuffed with a mixture of minced pork, tofu, rice, green chilli and water chestnut. A multi textures dish that is dressed in a bak chor mee inspired vinegar chilli sauce.

Charcoal Hiyashi Noodles 4/5

If you feel that you need some carbo to fill you up, there is the Charcoal Hiyashi Noodles ($15.80), topped with Nama hotate and tobikko. It is dressed in a katsuo dashi sauce with a tad of wasabi. The homemade charcoal noodles has a firmer texture. It is more chewy compared to others. The dish is served chilled.

Uni Truffled Somen 4.5/5

A popular and signature dish at Boruto is their Uni Truffled Somen ($35.80). The somen is topped with Bafun uni, sakura ebi and truffle caviar. A multi sensory dish of sight, smell and taste. No wonder it has been a crowd favourite.

Chuleton De Buey 4.2/5

With the new menu introduction, Boruto has also included big plate items in the menu which is good for big group to share. We tried the Chuleton De Buey ($98.80) which comes with mesclun salad, tomato salsa and basil pesto on the side.The top notch piece of steak is cooked perfectly with a beautiful charred bone-in. Besides beef, the big plate also offers a choice pork or chicken. Do note that you need to order a day in advance for the big plates.

Overall I have enjoyed the new menu at Boruto. Compared to its previous menu which felt more like omakase dishes catered for individual diner, the new menu feels more communal. This allows for more choices and sharing over a few sakes.
