Ginger.Lily @ Hilton Singapore Orchard - New Afternoon Tea Chapter, "A Symphony of Origins: Terroir and Bloom"

The next chapter in Ginger.Lily's storybook-inspired afternoon tea concept invites guests to discover "A Symphony of Origins: Terroir and Bloom", a collaboration between Michelin-starred Chef Adrien Descouls and Hilton Singapore Orchard's Executive Sous Chef Cindy Khoo. Inspired by the landscapes, traditions, and artistry that define their culinary journeys, this menu is a whimsical tribute to heritage and nature reimagined on the plate.

From savoury creations that echo the volcanic soils and rolling hills of Chef Adrien's native Auvergne, to delicate pastries where Chef Cindy infuses French precision with Japanese finesse, each bite tells a story of place, memory, and imagination. Together, they present an afternoon tea experience that is both refined and poetic, a celebration of origins transformed into flavours that linger.

Afternoon tea at Ginger.Lily is available in two seatings, 1:00pm to 3:00pm and 3:30pm to 5:30pm. The experience is priced at $78++ per diner and includes one glass of cocktail or mocktail and two pots of tea, with a minimum of two diners required. Guests are kindly encouraged to inform the team of any dietary restrictions at the time of reservation.

Before diving into the food, I must first share my love for the artisanal tea selection, thoughtfully curated with Pryce Tea. The offerings are pretty special, featuring floral and fruity blends such as Vanda Miss Joaquim, Pink Ginger.Lily, Forest Berries, Kyoho Oolong, and Shizuoka Muskmelon. There is a tea scent bar, where guests can smell the various tea blends before making a choice. Coffee is also available, with a regular selection of black coffee, Americano, Latte, Flat White and Cappuccino.

Guests are also treated to a welcome drink, either the Champignon "Mushrooms" Cocktail, an interesting blend of sous-vide shiitake, Lapsang Souchong tea, and Stranger & Sons gin, or the Peach Sour Mocktail, crafted with Hakuto peach oolong, slow-pressed guava, and yuzu. We opted for the mocktail, which was bright, refreshing, and a perfect start to the afternoon.

To begin, we were served freshly shucked Oysters, delicately paired with floral tea jelly, lemongrass, and a hint of vin jaune.

The next course was a heartwarming Shepherds’ Truffle Broth, where the velvety richness of Marabel potatoes blended with cheese, finished with fresh truffle shavings for an earthy, comforting, and luxurious touch.

The Tartare de Bœuf features Fin Gras du Mézenc, a prized beef from the Auvergne region, paired with spiced tea and a roasted artichoke sabayon. Whilst this is of course meant to be served raw, I opted to have the beef cooked to suit my preference. It is a tasty, moreish appetiser.

The selection of savoury tea treats arrived in a charming pink, storybook-like box. On the top layer were the Pink Radish Flower Tarte, Cold-Smoked Trout, and Hen’s Egg with French Caviar, all of which I thoroughly enjoyed.

The Pink Radish Flower Tarte was so pretty, and had vegetable top pesto as well as beurre noisette. The Cold-smoked Trout was a delicate finger sandwich with strained fresh cheese and some ikura.

In particular, the Hen’s Egg with French Caviar was a luxurious miniature masterpiece, featuring a smooth vodka mousse crowned with exquisite French caviar, and with a whisper of umami from dashi.

In one of the drawers, there were heartier savoury options. There was the Seven-Grain French Baguette with Beef Ham and creamy Saint-Nectaire cheese, alongside the Slow-Cooked Veal Milk Bread Bun. However, there was too much bread for me, and this was quite filling.

The dessert selection was a charming array of inventive sweets, beautifully presented in a storybook-like box.

The Hakuto Peach Chouquette was a delicate puff, layered with herb gel, peach tea, and framboise jam, while the Pink Lady Macaron combined black sesame praline with a subtly tea-infused ganache. The Tarte aux Amandes with Avocado paired creamy avocado whip with tangy lemon crémeux for a surprisingly fresh twist, dressed with delicate purple edible flowers. There were also soft, fragrant Hojicha Honey Madeleines, glazed with a honey olive drizzle.

I was very pleasantly surprised by the Golden Hokkaido Potato Churros, which were served hot and crispy, and tasted like a cross between French fries and sweet churros. These were super good! It was also served with a bright kumquat cream for dipping.

The Berries en Fleurs Gâteau was a decadent composition of tea-infused crémeux, freeze-dried raspberries, and rich Botanique en Fleurs 68% house-blend chocolate.

No afternoon tea is complete without scones and Ginger.Lily offering features Tahitian Vanilla and Strawberry Scones, accompanied by passionfruit compote, lychee muscat marmalade, and rich clotted cream.

Overall, it was a thoughtfully curated afternoon tea experience, with lovely presentation, nuanced flavours, and a delightful play of floral and fruity notes that I really enjoyed. Warm and thoughtful service too from the team, who made our afternoon very enjoyable and relaxing.

A Beautiful Day Café & Tea Room, which began as a pop-up in Changi two years ago, has now established its permanent home at PLQ Parkside. Centred around the art of tea, the café presents a menu that marries contemporary Chazuke and Yoshoku cuisine in a Victorian-inspired setting.

Applewood Smoked Negitoro Kway Pie Tee 3/5

We started with the Applewood Smoked Negitoro Kway Pie Tee with Tobiko ($18.90). The Kway Pie Tee shell was perfectly crisp, offering a satisfying crunch that paired well with the luscious filling. However, the amount of sauce in the Negitoro filling was slightly cloying.

Spicy Smashed Potatoes 3/5

Both the Cauliflower Poppers ($9.90) and Spicy Smashed Potatoes ($6.90) shared a strikingly similar flavour profile with the Kway Pie Tee, likely due to the creamy, mayo-based dressings — mentai mayo for the former and a chilli mayo sauce for the latter. As with the Kway Pie Tee, a lighter hand with the sauce would have improved the dishes. The potatoes were tasty with just the furikake.

The Hotate Ceviche ($19.90) stood out with its refinement in both presentation and taste. Thinly sliced scallops were elevated by a scallion ponzu sauce that brought a delicate, balanced acidity and savouriness to the dish.

Unagi Chazuke 4/5

For mains, the Unagi Chazuke ($19.90) was delightful. We first steeped jasmine tea leaves with hot dashi, creating a fragrant jasmine-infused broth that was then poured over grilled eel and Japanese rice. After the rich flavours of the appetizers, this felt wholesome and nourishing. The subtle jasmine aroma lifted the dish, and the rice was firm and pearly, perfectly carrying the dashi.

Carbonara Udon 3/5

In contrast, the Carbonara Udon ($16.90) leaned heavily toward indulgence. The cheese mayo sauce was rich and creamy, but thankfully, the al dente udon provided a pleasant chew and held the sauce well. Due to its richness, it's a dish best shared.

Kiwi Tie Guan Yin Tea

A Beautiful Day Café & Tea Room also offers an impressive tea selection, including CoffTEA (a tea-coffee hybrid akin to Yuan Yang), Teatails, and Camellia Premium Rock Tea Series. We tried the Kiwi Tie Guan Yin Tea, a refreshing blend of fruit juice and tea that paired well with the bold flavours of the dishes. Scarlet Robe Rock Oolong, served in an elegant crystal bottle, was notably smooth on the palate,

Offering 5, 7, and 10-course omakase menus for lunch and dinner, this unassuming eatery beckons diners into a world of woodfire, smoke, and charcoal-grilled delights from across the globe.

The 7-course Omakase Experiential Dining ($138++) commenced with Lobster Consomme, featuring a whole lobster meticulously grilled over charcoal. This exquisite crustacean immersed itself in a pool of sweet, revitalizing consomme. The lobster's charred essence gracefully infused the consomme, adding an alluring smoky undertone.

Eggs on Eggs 4.2/5

Our adventure segued into "Eggs on Eggs" - a reinterpretation of Chawanmushi. This velvety delight harmonised four egg varieties: chicken, century, ikura, and urchin. The addition of century egg elevated the flavour and introduced a tantalising textural contrast atop the silky egg custard.

Japanese Wagyu 3.8/5

Japanese Wagyu, a short rib cut featuring a marbling score of 12, followed suit. The pristine cut received a gentle kiss from the fire on one side, seasoned with a delicate touch of pepper. A marinated egg yolk was served alongside, intended to be a luscious steak sauce. Regrettably, the yolk's excessive saltiness somewhat disrupted the delicate equilibrium needed to fully savour this exceptional Wagyu.

Amidst the richness of our preceding courses, a fragrant bowl of tea acted as the perfect intermission, cleansing our palates and preparing us for the delectable courses yet to come.

Sate Lilit 4/5

Sate Lilit Bali was our subsequent encounter, featuring minced meat skewered on fragrant lemongrass sticks and expertly grilled. This cooking technique imparted a tantalising lemongrass aroma. Served alongside were freshly cut green and red chillies, bathed in fragrant coconut oil, adding an extra layer of aroma and flavour.

I indulged in Oyster paired with ikura and shark cartilage for the seafood offering. A novel combination, the shark cartilage introduced a delightful textural dimension akin to soft bones, perfectly complementing the tender oysters.

Inspired by Northern Thai cuisine, the Congee arrived infused with the spicy and tangy essence of tom yum, customisable to preferred spice levels. Jamaican Jerk chicken accompanied this congee and was a complete, soul-warming meal. A drizzle of lobster oil added a robust flourish to this comforting dish.

Our culinary journey culminated in Gelato, featuring vanilla ice cream drizzled with olive oil and adorned with lumpfish caviar. This dessert skillfully harmonised sweet and savoury elements, providing a delightful conclusion to our epicurean exploration.

Additionally, The Social Outcast offers a tantalizing Wagyu Experiential Dining experience on weekends. This indulgent affair comprises 9 exquisite cuts of Wagyu, paired with a playful DIY Sando experience.

Hanamaruken Ramen @ Bras Basah - Popular Ramen Chain from Osaka Serving Braised Marbled Soft Bone Pork Rib in Rich Tonkotsu Broth

This new ramen spot in Bras Basah is for you if you are a fan of meats and rich tonkotsu broths. Hanamaruken Ramen is a popular ramen chain founded in 1982 in Osaka and has now set up its space at the Lazada One building, a brief stroll from the MRT station.

With its close proximity to SMU, SMU staff and students can also enjoy a discount here just by flashing the relevant staff/student pass.

Signature Happiness Ramen 4/5

The highlight of the ramen menu is definitely their Signature Happiness Ramen ($22.80 for regular, $19.80 for junior), served with braised marbled soft bone pork rib alongside thin handmade noodles, bamboo shoot, nori and shoyu-flavoured tamago.

Unlike the usual tonkotsu broths that shout pork flavours, Hanamaruken's rendition has a distinct added touch of umami shoyu. Made of chicken and pork bones, the broth was simmered for at least 9 hours with a mix of spices and other ingredients. I enjoyed how creamy and nicely balanced it was without being overly salty.

The massive slab of braised marbled soft bone pork rib was prepared by stewing for long hours, resulting in even its soft cartilage. While the meat was fork-tender, I found it too fatty and heavy for my liking. You'd enjoy this if you are a fan of such rich cuts.

Double Happiness Ramen 4.2/5

For a greater variety of pork, try the Double Happiness Ramen ($19.80), which will include both a cut of the pork soft bone and two thick chashu slices. My dining companion and I preferred the chashu more for its better balance of fat and tender meat.

Apart from these two pork-focused bowls, the restaurant also offers Miso Ramen, Seafood Ramen and Tan Tan Ramen.

Chahan Japanese Fried Rice 4/5

The owners enthusiastically shared with us about the Chahan Japanese Fried Rice ($9.80) being one of their favourite items on the menu. We can see why, as the Japanese pearl rice was fragrantly fried with eggs and bits of pork without being greasy. That said, I prefer my fried rice to be dry, while this leaned just a touch more wet.

Diners can choose from a couple of sides such as Chicken Karaage, Ebi Tempura and hand-made Gyoza ($8.80 for 6pcs, $15.80 for 12pcs). The crisp wrap was delightful, but the filling could be more generous.

Artisanal Sparkling Tea 4.5/5

I thoroughly enjoyed the special range of Artisanal Sparkling Tea ($6.80) that the restaurant offers. Available on tap in three flavours - Osmanthus Squirrel, "Unknown Fragrance" and Lychee Red Tea, the owners introduced them as they found it to complement their ramen well.

I loved how each tea had a unique profile, and provided a refreshing break from the intensely rich ramen.

Atrium @ Pan Pacific Singapore - Launches The Brand New Panache Of Singapore Afternoon Tea

Located on the first floor of Pan Pacific Singapore, the Atrium Lounge is known for its iconic seating pods floating over a reflective pool. It recently launched the brand-new Panache of Singapore Afternoon Tea, available daily from 12pm to 6pm. One can look forward to an enhanced dining experience with refreshed presentation and added touches such as welcome cocktail and amuse bouche, as well as enchanting melodies played live on a magnificent grand piano.

The afternoon tea comprises an ode to the classic indulgence with a touch of Singaporean flavours. Highlights include the Durian Choux, Singaporean Chilli Crab Brioche Roll, Pandan Cheesecake, and Classic Scones paired with Chef Dannevien’s handmade Pineapple and Peppercorn jam.

The sweets selection features local favourites such as the Durian Choux, and Pandan Cheesecake on the first tier, as well as the Lychee Chestnut Gâteaux, Dulcey Chocolate Passion Tart, and White Chocolate Banana Gâteaux.

My favourite is the Durian Choux, filled with creamy and indulgent Mao Shan Wang durian and Gula Melaka for a hint of sweetness.

The White Chocolate Bana Gateaux features ivory whipped ganache layered with fluffy chocolate cake, complete with a crunchy praline feuilletine and soft banana confit that provide different dimensions of textures and flavours.

Savouries include the Singaporean Chilli Crab Brioche Roll, Homemade Virginia Ham Sandwich, Laksa Tart, Egg Pinwheel Roll, and Cucumber Sandwich.

Not to be missed is the Singaporean Chilli Crab Brioche Roll, with a fluffy soft brioche roll filled with crabmeat and savoury sweet chilli sauce. Another local favourite is the Laksa Tart, baked with laksa spices and topped with poached shrimp.

These decadent afternoon treats will not be complete without the finest beverage selection. Choose from an elaborate range of nearly 20 types of TWG Tea loose leaf, featuring locally inspired Singapore Breakfast and Weekend in Singapore and aromatic brews from Bacha Coffee. Take the teatime affair up a notch and sip on dreamy bubbly or toast to an Espresso Noisette and Brewberry Colada, handcrafted cocktail and non-alcoholic cocktail by Atrium's mixologists.
