Le Shrimp @ The Star Vista - Special New Seasonal Le Shrimp Trio Tossed Ramen Only For June 2019

Le Shrimp the latest concept by Paradise Group which first opened its door at Paragon has opened two more outlets at Changi Airport Terminal 3 (public area) and The Star Vista. I dropped by their newest outlet at The Star Vista, which has 62 seats to have their Japanese shrimp ramen broth with silky ribbons of Chinese la mian.

Le Shrimp Trio Tossed Ramen 3.5/5

For a limited period from 1 June to 30 June 2019, Le Shrimp is offering a new creation - Le Shrimp Trio Tossed Ramen ($19.90). It is a dry version with a specially concocted sauce for the la mian, topped with peeled fresh prawns, ebiko prawn paste, prawn dumplings, cucumber strips and cabbage. I felt that the sauce didn't quite have the punch I was expecting. It lacked that fragrant and fiery kick.

You can complement your meal with the crispy Spring Roll and Long Jing Tea Lava Egg. I personally felt that a bowl of ramen is not complete without the lava egg.

My favourite is still the Le Signature Trio Shrimp Ramen ($19.90). The rich and flavorful broth with its distinctive smoky aroma is topped with fresh prawns, handmade ebiko prawn paste and prawn dumplings.

At Le Shrimp, diners can top-up $3.20 to include an appetiser and a drink with every order of noodle.

Paradise Dynasty @ Wisma Atria - Offering Anhui, Cantonese, Fujian, Hunan, Jiangsu, Shandong, Sichuan And Zhejiang Cuisines Under One Roof

After closing the outlet at Ion Orchard, Paradise Dynasty has re-located and moved next door, re-opened at Wisma Atria on 10 January 2019. The latest outlet can sit up to 196 pax with a new and brighter season. Besides the la mian and xiao long bao offerings that have made Paradise Dynasty a household name, the newest outlet offers cuisines from Anhui, Cantonese, Fujian, Hunan, Jiangsu, Shandong, Sichuan and Zhejiang under one roof.

A new dish on the menu is the Crispy Yellow Croaker Spring Roll ($9.20/3pcs). Wrapped in the crispy pastry skin is the soft and tender flesh of the yellow croaker. A delightful starter packed with different play of flavours and textures.

Using the head section of the jellyfish for that extra crunch, the Chilled Jellyfish in Soy Sauce Vinaigrette ($12.80) whets up the appetite with its tangy seasoning.

The Lettuce Roll with Homemade Sesame Sauce ($8.80) may look unassuming but it turned out really delish. The fresh and crunchy lettuce roll is complemented by the excellent homemade sesame sauce that simply brought the ingredient to live.

Stir-fried Fresh Organic Bamboo Shoot with Bacon 3/5

Some bamboo shoot may come across having an acquire taste but I did not taste it from the Stir-fried Fresh Organic Bamboo Shoot with Bacon ($14.80). I also like the idea of the bacon giving the dish a coat of aroma on top of its crunchiness.

Smooth and silky is the Braised Tofu with Crab Roe ($22.80). Unfortunately I could not really taste the robustness of the crab roe in the execution.

Prawn and Pork Dumpling in Hot Chilli Vinaigrette 4.5/5

My all time favourite at Paradise's restaurants is their Prawn and Pork Dumpling in Hot Chilli Vinaigrette ($9.80/6pcs). These parcels wrapped in a silky thin wanton skin are plump and juicy. The highlight is the aromatic hot chilli vinaigrette that elevated the whole enjoyment.

Steamed Glutinous Rice stuffed in Red Date 3/5

Its not all about savoury at Paradise Dynasty, there are sweet takes such as the Steamed Glutinous Rice stuffed in Red Date ($7.80) and Yam Paste Xiao Long Bao ($8.80/6pcs). It is not that the Steamed Glutinous Rice stuffed in Red Date is not good but it is something new to me and it probably needs time for me to accept the unique taste.

As for the Yam Paste Xiao Long Bao, the take of stuffing it with the sweet yam paste its an unique take of the traditional Xiao Long Bao giving it a sweet finishing.

La Mian with Yellow Croaker Fish and Preserved Vegetable 2.8/5

I have always enjoyed a good bowl of La Mian from Paradise Group's of restaurants. Undeniable the noodle is top notch. However the soup base of the La Mian with Yellow Croaker Fish and Preserved Vegetable ($16.80) was slightly fishy which was a let down. It is definitely note their usual standard.

Chilled Snow Fungus with Peach Resin 4.2/5

Wrapping up the dinner, I have the refreshing Chilled Snow Fungus with Peach Resin ($8.80). Mentioned in my earlier posts, I have a liking for peach resin recently. Hence this just hits the spot.

Le Shrimp Ramen @ Paragon - Japanese-inspired Chinese Shrimp La Mian Concept

New at Paragon is Le Shrimp Ramen by Paradise Group. The new concept is inspired from the group's CEO visit to Japan, whereby he chanced upon a shrimp-based broth ramen stall. After month's of R&D, the new concept is born, marrying both Chinese and Japanese culinary influences which is a first in Singapore.

The highlight shrimp broth is made using fresh big prawns, baking them and then grinded to a fine texture. This is then simmered with premium conpoy for more than 8 hours, to develop the depth and umami note. A blend of spices such as star anise, cinnamon, clove and white peppercone are added for the extra robustness.

Le Signature Trio Shrimp Ramen 4.2/5

The 3-in-1 bowl will be the Le Signature Trio Shrimp Ramen ($19.90). The luscious bowl of La Mian comes with fresh prawns, handmade ebiko prawn paste and prawn dumplings. Noteworthy is the bouncy prawn paste that is shaped out of 100% prawn meat with the ebiko topping lending a crunchy touch. The prawn dumpling is always plump with fresh crunchy prawn. The highlight definitely is the shrimp-based broth. It is not your typical prawn mee broth. It is more refined in taste with a hint of smokiness.

Complete your meal with a number of appetisers and side dishes such as the Twister Prawn Rolls ($5.90) and Long Jing Tea Lava Egg ($1.90 per egg). The crispy texture of the prawn roll is very delightful. I would recommend the lave egg with the La Mian, this makes it a complete ramen experience.

For diners that are allergy to shell fish, need not worry as there are other noodle selection such as the Red Garoupa with Pickled Cabbage Tonkotsu Ramen ($18.90). The bowl of noodles in tonkotsu ramen comes with chunky slices of red garoupa and pickled cabbage. What perks me up is the mala shiokness, which is not overpowering but lends a subtle spiciness to the whole enjoyment.

LeNu @ Vivocity - Chinese Noodle Bar For A Delicious Bowl Of Braised Beef Noodle

LeNu is a casual Chinese noodle bar by the Paradise Group. It has several outlets across the island. One of the outlets that I visit regularly is the one at Vivocity which is the closest to home. The menu offers a variety of snacks and noodles dishes.

Tofu Century Egg 3/5

One of my favourite snacks or starter at LeNu is their Tofu Century Egg. The chilled tofu is drenched in oyster sauce and topped with century egg. Bonito flakes are added for that extra flavours. However in recent time, I think the quality of the tofu has dropped. The texture is not as silky as before.

Pork Wanton in Chilli Vinaigrette 4.5/5

If you can take your chilli, I would recommend the Pork Wanton in Chilli Vinaigrette ($6.90). It comes with 5 pieces of plump pork wanton wrapped in smooth wanton skin. The highlight is the chilli vinaigrette sauce that is so aromatic, with a shiok spicy kick to it.

The signature at LeNu has to be their beef noodles. The braised beef broth is simmered around 18 hours using beef marrow, bones, and other premium ingredients for the richness and depth, packed with beefy flavours. Diners have the choice of preferred noodles and cuts of beef.

Braised Beef Combination Noodle 4.2/5

Being greedy, I have the Braised Beef Combination Noodle ($17.90) which considers of tender wagyu beef slices, beef tendon and beef shank, so I can have a taste of everything. As for the noodle choice, I have gone for the kway teow. I like the addition of the the salted vegetable giving the dish a more complex dimension, together with the hint of spiciness. The combination works harmoniously for an elevated enjoyment.

The other soup base available on the menu is from the pork bone, simmered for over 12 hours, for that intense richness, collagen rich broth. The base is like a good bowl of tonkotsu ramen

Garoupa with Preserved Vegetable Noodle 3.8/5

For the pork bone soup base, I decided to go for the Garoupa with Preserved Vegetable Noodle ($14.90). It comes with moist and tender garoupa fillet, swimming in the creamy consistency pork bone soup. Unfortunately the fillet is probably the frozen type which is the let down. It comes with a slight hint of spiciness from the preserved vegetable, which is almost undetectable.

Xin Peng La Mian. Xiao Long Bao (鑫鹏拉面小笼包) - Not The Best But A Good Steal At $4 For 6 Pieces Of Xiao Long Bao

Blk 442 Bagin Eating House is located directly opposite Blk 448 Clementi Ave 3 Food Centre. The coffeeshop houses a number of food stalls. I have been monitoring the coffeeshop and it seems that Xin Peng La Mian and Xiao Long Bao is quite popular with the neighbourhood.

Fried BEan Sauce La Mian 3/5

To satisfy my curiosity, a ordered a couple of items from the stall to try. First is the Fried Bean Sauce La Mian ($4). I find the sauce a bit on the watery side and there wasn't a lot of minced meat. Being a carnivorous, I did not feel quite satisfy. However I like the the shredded cucumbers which gives a refreshing touch to the dish. The other worthy note is the well cooked noodle that is firm and has a good bite to it.

Xiao Long Bao 3/5

I also ordered the Shanghai Xiao Long Bao ($4 for 6pc). For the filling is generous, the portion is not balanced. When I lifted the Xiao Long Bao, it falls apart. The dough was also quite thick which did not have a pleasant bite.

Besides the two dishes I ordered. The stall also offers a variety of la mian and dumplings. While it has its own fan base, I feel it just average though I have to admit the pricing is very reasonable.

Ellenborough Market Café @ Swissôtel Merchant Court - Return Of The Matriarch

Stepping into the dining halls of Ellenborough Market Café at Swissôtel Merchant Court, and you know you are in for something slightly different - Not the usual warm lights, solid wooden furnishing against generic tiles and neutral walls of a typical international buffet restaurant in a hotel. Instead, pretty turquoise walls made bold with sparkling diamond-cut glass wall features, backs contemporary furnishings that stand elegantly on vintage-style Peranakan floor. What a chemistry between heritage and modernity.

In a new look, but old fond flavours stay. Led by Executive Chef Louis Tay, not only the team continues to whip up signature dishes, they now expanded the international hot dish selection.

Well roasted with a pink core, drizzled with the sauce made with its own juice and fats, my salad could not be more sumptuous than this!

La Mian with Lion Head Meatball 4/5

I don't usually take 狮子头 or Chinese Meatballs as they are always just a compact ball of meat like siew mai but theirs turned out to be exceptionally tasty - juicy, tender and sweet, like a exquisite xiao long bao that falls apart easily in my mouth. The broth was sweet and the La Mian, hand-pulled by their La Mian Master was light and springy.

Kuey Pie Tee 4/5

One key ingredient to a delicious Kuey Pie Tee is of course the little golden shells. Though left out in the open, each thin shell remained airy and crispy. Being my own chef adds to the experience - scooping heaps of tunips and vegetables into the golden shell right up to its brim, topping it with succulent shrimps and mash eggs, dressing it with sweet sauce, and down to the sprinkling of ground peanuts and chopped parsley for the final touch. Not forgetting a dash of chilli!

Salads - Nonya Wing Bean Prawn, Chicken Feet Kerabu, Prawn & Mango Kerabu 3.5/5

At the Peranakan station, one of my favourite items are their peranakan appetisers. Tangy with a hint of spiciness, they did get my appetite going. I love the combination of the different ingredients to create that crunchiness, even the deboned chicken feet got my jaw moving quite abit. My favourite is the Prawn & Mango for that extra fruity sweetness. They go really well with the traditional signatures such as signature Ayam Buah Keluak and Babi Pongteh, which are more robust and heavier in taste.

Herbal Pork Loin 4/5

Pretty good line-up at their hot station. Their Chilli Crab even comes with fried man tou. The star for me though, its their Herbal Pork Loin. I love the broth. It was light but extremely flavourful with herbs. The chef certainly didn't scrimp on the ingredients. The pork loin was fork tender. If only, there was some dark soy sauce with chilli padi and a bowl of white rice. It will felt like a comforting, nutritious home cooked meal.

Traditional Muah Chee 3/5

While they have a huge chiller full of dainty western patisseries, the star is really their traditional kueys and hot desserts. They have our childhood favourite - Homemade Muah Chee, which was soft and chewy, and if you ain't fast enough, expect to queue for the hot favourite Nyonya Kueh Dadar, which is made fresh in front of your eyes.

I didn't expect to see such a wide variety of traditional desserts. Do try their homemade Ah Balling. A gentle bite on the delicate skin and out oozes warm black sesame lava.

Chef Ho is currently an Associate Professor in the National Kaohsiung University of Hospitality and Tourism, Chinese Cuisine Faculty as well as restaurant consultant. Armed with more than 47 years of experience in the culinary field.

Guest at Town Restaurant during this period can savour a wide selection of over 30 authentic Taiwanese dishes under one roof on top of the local spread such as Laksa, Satay and Bak Kut Teh.

During my visit, I managed to try some of the authentic cooked dishes from Taiwan such as the Yang Zhou Style Fried Rice with Shrimp and Char Siew, Stir Fried Noodle with Three Juliennes, Three Cup Chicken, Stir Fried Fresh Whole Chicken with Ginger and Sesame Oil, Stir Fried Pork with Scallion, Stir Fried Squid and Sauteed Oyster with Black Bean Sauce.

Yang Zhou Style Fried Rice with Shrimp and Char Siew 4.2/5

Among the cooked dishes I tried, the fragrant fried rice topped with diced char siew and shrimp was one of my favourite. Each grain of the rice is nicely coated and separated, not sticking to one another and most importantly not greasy. The added char siew and shrimp further boost the aromatic experience.

Stir Fried Fresh Whole Chicken with Ginger and Sesame Oil 4.2/5

The other dish that stood out for me is the Stir Fried Fresh Whole Chicken with Ginger and Sesame Oil. Perfumed by the aromatic sesame oil, ginger and spring onion, the chicken was cooked to a palatable tender bite.

Braised Pork with Steamed Bun and Pickled Mustard Green 4/5

Another interesting dish to try is the Braised Pork with Steamed Bun and Pickled Mustard Green. Similar to our local Kong Bak Pau, the additional of pickled mustard green and peanut provided extra layers of textures and flavours to the whole execution compare to the version we are more familiar.

Chef Ho demonstrated his skill handmaking us the La Mian. He told us that on average it takes about 2 years to master the skill. Look at how skillful he is, just by using his fingers to provide the long strand of noodles.

The Taiwan dinner buffet also comes with a selection of sweet treats such as the Penghu Black Sugar Steamed Rice Cake stuffed with Red Bean, Steamed Rice Cake stuffed with Pickled Mustard Green, Peanut Mochi, Pineapple Cake and Sun Cake. Among the 6 delicious treats, my favourite has to be the green coloured Steamed Rice Cake stuffed with Pickled Mustard Green. I like the savoury stir fried filling that has crunchy shreds of vegetables fragrant by the mushrooms and dried shrimps.
