Barrio’s special ‘Ceviche’ 4/5

We began our dinner with a selection of Tapas, and the first was Barrio's special 'Ceviche' ($22), which features marinated seabass soaked in a zesty blend of citrus juices. Barrio's version has more robust, punchy flavours than the usually lighter flavours of ceviche. There are also plenty of fresh ingredients, like diced onions, cilantro, and a hint of chilli. Very addictive crispy tortilla chips accompany the dish, which provides a satisfying crunch and a contrast to the marinated fish.

Barrio ‘Bikini’ Sandwich 4.5/5

We absolutely loved the Barrio 'Bikini' Sandwich ($20), which stars a winning combination of ingredients that come together very well - roast beef, cheese and black truffle. The tender slices of roast beef are succulent and packed with flavour, while the melted cheese provides a savoury creaminess that perfectly complements the beef.

Garlic Prawns 4.2/5

The Garlic Prawns ($30) captivated our senses as soon as the dish arrived at the table, filling the air with an irresistible aroma. Each large, juicy prawn is perfectly cooked and beautifully presented alongside a velvety, earthy hummus and a sprinkling of dried chilli. It is an interesting flavour combination that captures both the taste of land and sea. There's also some crunchy toast to mop up the hummus and garlic sauce.

Our interest was piqued by the arrival of a huge pan of Fideuà ($55 for small, $75 for large), the less often seen sibling of Paella. Originating from the coastal region of Valencia, Fideuà is an interesting twist on the traditional rice dish, using short noodles instead. As we eagerly dug in, we discovered that the noodles had indeed soaked up the rich flavours of the broth and other ingredients like the pork sausage and mushrooms. Whether you prefer this or the rice version will probably depend on what texture you enjoy. We found that the noodle version was softer and easier to bite, whilst the rice version usually has a more chewy texture with some crispy, charred bits. Other options exist for the Paella and Fideuà, such as seafood, squid ink or vegetables.

¼ ‘Cochinillo’ Suckling Pig 3.5/5

Moving on to the main meat dish, we were presented with an impressive platter of ¼ 'Cochinillo' Suckling Pig ($89, good to share between 3-4 pax), a culinary centrepiece that requires approximately 45 minutes of preparation time upon order and is also served with Panadera potatoes and Padron Peppers. With succulent meat and a golden-brown crispy skin, there is little to fault regarding the execution of the dish or its texture, but we found the taste of the suckling pig to be quite strong, which was not to our taste preferences. Perhaps true pork lovers will enjoy this dish more than we did.

Churros with chocolate 4.8/5

Churros ($14) are always a delightful end to a Spanish meal, and Barrio's version is everything I want in a churro. Each churro has a soft, slightly mochi-like centre, providing a satisfying chewiness that contrasts beautifully with the crisp, crunchy exterior. The churros are accompanied by the slightest sugar dusting and a rich, velvety chocolate dipping sauce that offers a decadent finish.

Barrio offers an unpretentious dining experience that captures the essence of community. The food is tasty, and the portions are generally good to share. Little wonder the restaurant was quite full when we visited, with groups of families and friends enjoying the evening and some delicious Spanish food.

Crab and Avocado Bruschetta 4.2/5

We started the evening with the Crab and Avocado Bruschetta ($18). This dish features crab tartare mixed with Sichuan-infused guacamole, served atop toasted brioche and finished with pomegranate seeds, caviar, and slices of green apple. The interplay of creamy avocado, sweet crab, and the slight numbing sensation from the Sichuan peppercorns was delightful. The crunchy brioche was a perfect vessel for the toppings, and the pomegranate pops added sweetness — a satisfying and inventive starter.

Yu Xiang Eggplant 4/5

Next was the Yu Xiang Eggplant ($18), Chef Eugene's modern twist on the traditional Sichuan dish, Yu Xiang Qie Zi (鱼香茄子). The dish showcases eggplant in two ways — one is braised in house-made Yu Xiang sauce, and the other is prepared escabeche style, pickled in the same sauce. The combination of soft, braised eggplant and the slightly tangy, pickled version was a unique way to play with textures. The rich, garlicky sauce brought everything together beautifully.

The Ceviche ($21) is a vibrant and fresh dish inspired by the classic Peruvian seafood appetiser but with a Sichuan twist. Here, diced Spanish seabass is cured in a Sichuan-style "Leche de Tigre" with pickled ginger and vine pepper oil, which provides an additional zing to the delicate fish. The balance of acidity and spice made it a refreshing and bold offering, though not as Sichuan-heavy as some might expect.

Spinach & Mushroom ($17) offers a fusion of flavours rooted in a classic breakfast combination but elevated with Sichuan influences. The spinach is topped with toasted pine nuts, smoked bamboo shoots, and rye croutons, finished with fermented Sichuan black soybean sabayon and a drizzle of Tang Cu sauce. The dish was hearty and well-balanced, with the earthy notes from the smoked bamboo adding an extra layer of flavour. The tanginess from the sauce brought a bright contrast to the rich ingredients.

Find the Chicken in the Chillies 4.5/5

A fan-favourite and rightly so, the Find the Chicken in the Chillies ($19) is Chef Eugene's playful take on the iconic Sichuan dish La Zi Ji (辣子鸡). Tender, juicy chicken popcorn is wok-fried with a mix of dried chillies, Sichuan peppercorns, garlic, and leeks. The chicken is first coated in seasoned breadcrumbs and then fried twice to achieve an ultra-crispy exterior. It's addictive, spicy, and flavourful — a must-order for spice lovers. One of the best renditions of La Zi Ji I've had in Singapore.

The Ume Tomato ($14) was a lighter, refreshing dish made with Looye cherry tomatoes sourced from Holland. The tomatoes are marinated in Ume (plum) and served with Ume granite, sour jelly, and salicornia. The combination of sweet, sour, and salty flavours was intriguing, with the tangy granite providing a nice contrast to the sweetness of the tomatoes. This dish is an ideal palate cleanser to order after the spicy La Zi Ji, as it beautifully cuts through the heat and refreshes the senses.

Oriental Duck Consomme 4/5

The Oriental Duck Consomme ($28) is a beautiful representation of Chef Eugene's love for roasted duck. The consommé is poured tableside over duck ravioli, braised daikon, black trumpet mushrooms, and cordyceps flower. The broth is clear yet rich in flavour, and the tender duck ravioli was the star of the dish. Each bite was comforting and elegant and showcased the complexity of the flavours in a subtle way. A dish that will impress both fans of Sichuan and French cuisine.

A Sichuan-inspired take on the American South's chow chow relish, the Chow Chow Prawn ($43) features wok-fried spiced tiger prawns paired with a Sichuan chow chow relish made from cabbage, onions, and bell peppers. The prawns were perfectly cooked, with a slight char that added smokiness to the dish. The chow chow relish had a nice balance of tang and heat, complementing the sweetness of the prawns — a creative and well-executed dish.

The Loup De Mer ($98) is a whole European seabass cooked perfectly. The fish is served with asparagus, ratte potato, kale, and vine pepper beurre blanc, and then the fish is finished with Sichuan chopped chilli salsa. The crispy skin, with scales left intact, added a delightful crisp to the tender, flaky fish. The beurre blanc had a slight Sichuan kick, making this a dish that marries European finesse with bold Sichuan flavours —definitely one of the menu's highlights.

A hearty, comforting dish, the Homestyle Braised Pork Belly ($63) draws inspiration from claypot rice but is elevated with Chef Eugene's signature touch. The tender pork belly is perfectly braised and served with fried kale, tea tree mushroom, garlic rice, and egg confit. For an added indulgence, shaved truffle is available as an add-on. The dish was rich and satisfying, though the price point might be steep for some.

Whether you're a longtime fan or a first-time visitor, this menu refresh brings a sense of excitement and reinvention to the restaurant's already impressive offerings.

HighHouse @ One Raffles Place - Third Edition of Its Monthly Brunch Series, "Brunch Out! Arcade Appetites: Vroom Vroom."

HighHouse at One Raffles Place hosts a monthly brunch series on the last Saturday of each month from 11.30 am to 3.30 pm. On August 29th, they held their third edition, themed around the annual F1 races: "Brunch Out! Arcade Appetites: Vroom Vroom." The brunch featured a diverse array of food stations, offering a distinctive range of dishes to suit various tastes.

Yellowfin Tuna and Spanish Octopus Ceviche 3.8/5

The Ceviche Bar provided a light start, featuring Yellowfin Tuna and Spanish Octopus Ceviche brightened by zesty Philippine Pineapple Salsa. The combination of both seafood elements offered a satisfying textural bite, while the guacamole added creaminess and enhanced the overall mouthfeel.

BBQ Glazed & White Pepper Sakura Pork Belly 5/5, Australian Wagyu Beef Brisket 3.8/5

The Live Carving Station was undoubtedly the most popular, offering two standout items: Oven Baked BBQ Glazed & White Pepper Sakura Pork Belly and Mexican Style Josper Grilled Australian Wagyu Beef Brisket. The pork belly shone with its ultra-tender meat and glaze that perfectly complemented its richness. The brisket, while flavorful, leaned towards the drier side. The deeply caramelised Honey Soy Brussel sprouts and grilled pineapples were pure deliciousness!

48-month-aged Jamon Iberico De Bellota 3/5

For cheese lovers, the Cheese Counter offers a selection of fine cheese and a 48-month-aged Jamon Iberico De Bellota, an ideal pairing with the free-flowing Telmont champagne, selected wines, and cocktails included with the ticket.

Other stations included a Steam Fish Station serving Greenland Halibut prepared en papillote, a Salad Bar, and a Dessert Counter, ensuring a wide range of palates were catered to.

The ticket was priced at $138++ with complimentary free-flow Telmont champagne, selected wines and cocktails. Each ticket has three coupons to exchange for three dishes from the various food stations. It's a weird concept, but it probably works for those who drink a lot over the food.

True Cost @ Suntec City - Rooftop Restaurant and Bar Overlooking Suntec City Offering Asian and Modern European Flavours

True Cost in Suntec City's Sky Garden prides itself on offering diners food and alcohol at low markups. The menu primarily features Asian and Modern European flavours, complemented by an extensive beverage list, which includes house-made cocktails, mocktails, wines, spirits, and beers.

The rooftop restaurant and bar provide a scenic overlook of Suntec City, with gorgeous natural sunlight pouring in during the day.

For a complimentary entry, visiting between 3pm to 5pm on weekdays and 9pm to 10pm daily is best. Outside these times, a moderate entrance fee of $5 per person for lunch between 12pm and 3pm and $10 per person for dinner between 5pm and 9pm. However, there's a 50% discount on the fees daily from 5pm if you opt for bar seating.

Watermelon Ceviche 3.8/5

We began with the refreshing Watermelon Ceviche ($9). The combination of tomatoes, feta cheese, pecans, olive oil, and watermelon created a delightful mix of textures and flavours. The fragrant and crunchy pecans were a standout.

Next, we tried the Octopus Carpaccio ($15.95), which was unfortunately less impressive. The sliced octopus, tossed in a bright orange dressing with tahini, sundried tomatoes, and za'atar, was too chewy and tough. At its price point, it felt slightly overpriced.

BBQ Pork Ribs 4/5

True Cost's BBQ Pork Ribs ($18.50) appeared to be a popular choice among diners. Served alongside grilled corn and kimchi cucumbers, the fall-off-the-bone ribs had a pleasant hint of smokiness. Although the slightly spiced corn was a touch dry, the overall dish was satisfying.

For our second main dish, we had the Crab Linguine ($22). The al dente linguine was tossed in a rich, savoury, buttery bisque sauce with ample crab meat.

Baklava Sundae 4.2/5

Dessert was the Greek-inspired Baklava Sundae ($11), which was made with a base of sunflower seed mousse, pistachio ice cream, and cherry syrup drizzled over. We broke into the thin, super flaky pastry and were pleasantly surprised by the balanced sweetness. The layered textures - from the crushed nuts and crisp pastry to the nutty sunflower seed mousse and tangy cherry syrup, were delightful. While a richer pistachio ice cream would have been preferred, it worked good as a sharing dessert to end the meal.

AIR @ Dempsey Hill - A Sustainable Dining Experience that Pushes the Boundaries of Culinary Innovation While Rooted in Environmental Consciousness

AIR, an acronym for Awareness, Impact, and Responsibility, represents more than just a restaurant — it's a sprawling 40,000-square-foot oasis at Dempsey Hill. Conceived by Chefs Matthew Orlando and Will Goldfarb, alongside entrepreneur Ronald Akili, this establishment serves as a hub for sustainability, featuring a circular campus encompassing a restaurant, cooking school, research space, and garden farm.

Fermented Cassava Flatbread 3/5

Our dinner commenced with the Fermented Cassava Flatbread ($16), accompanied by whipped mushroom "XO" butter. While the bread exuded a strong, yeasty flavour that didn't quite resonate with my palate, the savoury richness of the mushroom "XO" butter provided a redeeming quality. However, the price tag seemed a tad steep, considering its standard complimentary nature in most establishments.

Next, the Crispy Oyster Mushrooms ($30) emerged from the kitchen. They boasted a delightful interplay of textures and flavours heightened by Sarawak pepper emulsion and pickled chillies. Despite their satisfying crispy exterior and vibrant taste profile, the pricing seemed disproportionate for what essentially amounted to deep-fried mushrooms.

White Fish Ceviche 4/5

A refreshing interlude arrived in the form of White Fish Ceviche ($29) featuring green mango and Kenari nut milk. The dish offered a light and revitalising experience, complemented by the satisfying crunch of emping crisps — an unexpected but welcome addition reminiscent of nachos.

The Whole Coral Grouper For Two ($58) took centre stage for the main course. It is filleted, and confit bathed in a pool of green onion and black garlic vinaigrette sauce. While the fish was excellently prepared, it was the accompanying Smoked Fish Rillette with Fish Bone and Garlic Lavash stole the show, adding depth and complexity to the dish.

Re-Incarnated "Chocolate" 4/5

The Re-Incarnated "Chocolate" ($18) exemplifies the ethos of AIR, showcasing its commitment to sustainability and innovation. Crafted from by-products of common processes—cocoa husks, cascara, and coconut flesh—the dessert undergoes roasting and grinding with cocoa butter and sugar. The result? Luxurious chocolate bars boasting a rich, roasty flavour with subtle coconut undertones. This ingenious approach mirrors traditional chocolate-making methods yet eschews cocoa beans, epitomising AIR's dedication to creative, eco-conscious cuisine.

The Whole Papaya 3.5/5

The Whole Papaya ($18) dessert represents a creative and inventive approach to utilising the entire fruit. This intriguing creation incorporates not only the papaya fruit itself but also features papaya skin granite and uses papaya seeds to impart a peppery note to the dish. While I admire the innovation behind this dessert, I feel somewhat awkward encountering the papaya seeds during consumption. Nonetheless, it's a commendable effort to reimagine traditional ingredients and minimise waste in culinary creations.

In summary, AIR at Dempsey Hill offers a sustainable dining experience that pushes the boundaries of culinary innovation while remaining rooted in environmental consciousness. While some dishes may fall short of expectations, the overarching commitment to sustainability and responsible dining shines through, making it a noteworthy destination for eco-conscious gastronomes.

Bochinche @ Club Street - Indulge In Wet-aged Argentine Steaks and In-house Dry-aged Grain-fed Cuts.

Bochinche, located on Club Street, has always been known for its fine curation of different types of meats and cuts from Argentina, Australia, USA, and Europe. Its wet-aged Argentine steaks and in-house dry-aged Grain Fed cuts grilled using Asado techniques over the Jarrah wood-fired griller are particularly noteworthy. The Argentinian starters and sides here are exceptional as well. For a quick lunch experience, its Lunch Menu offers its signature wet-aged steaks with a choice of add-on sides or desserts at an affordable price.

Classic Provoleta ($24) is a traditional Argentinian melted provolone cheese, served hot from the BBQ or oven, with a variety of toppings. We had a bubbling hot provolone cheese in cast iron, served with fermented Medley Tomato and a drizzle of honey. To get the full experience of this dish, eat it hot with Canasta De Pan ($12), a board of housemade Rosemary Focaccia, and "Pan De Queso", a South American cheese roll. Both breads were delightful and airy, complementing the rich melted cheese.

Tropical “Leche De Tigre” Ceviche 5/5

Next, we had Tropical "Leche De Tigre" Ceviche ($24) featuring red snapper, dragon fruit, mango, papaya and pineapple tossed in for a refreshing fruity zest and zing. There were kaffir lime leaves mixed in as well, adding a layer of citrusy and earthy undertone.

'Black Label' Ribeye 5/5

I tried the 250g 'Black Label' Ribeye ($35) for mains, featuring a grass-fed Buenos Aires steak, 28 Days Wet-Aged. Its great taste didn't just lie with its origin and the fact that it had been wet-aged for 28 days, but also with the skilful grilling on the wood fire to achieve that desired doneness. For an additional $10, you can either add on Hand-cut Beef and Grilled Organic Corn Argentina Empanadas (2pc) or Dessert. I had the Empanadas. The Grilled Organic Corn Empanadas was mouthwatering with aromatic creamy corn filling, contrasted with a flaky empanadas pastry.

For desserts, Argentinian Doughnut ($19) was a joy. It is light, airy and delicious with butteriness and an eggy flavour. They were served warm with contrasting velvety vanilla ice cream and Dulce De Leche. The sprinkle of toasted hazelnut added a good nutty flavour and a textural crunch to complete the dish.
