Puzzle Coffee @ Dempsey Hill - Cafe from Melbourne Opens Flagship Outlet With An All-Day Menu

Puzzle Coffee at Dempsey Hill, the brand's flagship and second outlet in Singapore, introduces a new all-day menu showcasing a mix of local and international flavours.

Reuben Toastie 4/5

One of the standout dishes is the Reuben Toastie ($20), a substantial sandwich filled with house-prepared beef brisket, tangy sauerkraut, and rich Gruyère cheese, all held together with light rye sourdough. The spread of Dijon mustard adds a great balance to the richness, though some pieces of the beef were overly chewy, which detracted from the overall enjoyment.

Chia Seed Pudding 2.5/5

The Chia Seed Pudding ($17) impressed me with its presentation, reminiscent of what I have had in Melbourne. The pudding is made by infusing almond milk with chai tea leaves and blended with chia seeds and pitted dates. However, the almond milk, being quite thin, didn't allow the chia seeds to bloom into the desired pudding texture. There wasn't much taste or flavour coming through from the pudding other than a hint of sweetness. It would have benefited from a richer base, like coconut cream or yoghurt, to have a better pudding texture and a taste that complements the tropical dragonfruit sorbet and fresh fruit topping.

Buttermilk Pancakes 4.2/5

The Buttermilk Pancakes ($25) were well-executed, with a nicely brown exterior and fluffy interior. The layer of creamy and citrusy cheesecake mousse and whipped cream atop was a boast to the texture, made moreish with sweet and tart mixed berry compote spread between the pancakes.

Chilli Scramble Eggs 4.5/5

Amongst the various versions of Chilli Scramble Eggs I had tried this year, this Chilli Scrambled Eggs ($26) stood out with its in-house chilli jam spread. Gorgeously yellow scrambled eggs on grilled sourdough, the jam, crafted from fresh tomatoes, chilli peppers, and spices, provided a fruity and sweet contrast. The sprinkle of crumbled goat cheese added a creamy and savoury element, but the diced jalapeños were a bit too assertive for the dish.

Prawn Linguine 4.5/5

The Prawn Linguine ($30) was delicious, with perfectly cooked, succulent prawns that had an almost creamy texture. The al dente pasta was tossed in a sauce made from slow-cooked capers, chilli, dill, and cherry tomatoes, with a touch of white wine and butter to finish.

Thai Mango Salad 3.5/5

The Thai Mango Salad ($24), a milder version of the classic som tam, was tasty but lacked the punch one might expect, and at this price point, there are wiser options on the menu.

Brown Sugar Boba Cake 2/5, Matcha Lava Cake 2/5, Cold-Drip Tiramisu 4/5

For desserts, we tried the Brown Sugar Boba Cake ($21), Matcha Lava Cake ($22), and Cold-Drip Tiramisu ($21), and they were rather mediocre compared to the mains. The boba pearls for the cake were tough, and the matcha lava cake, while texturally good, was overwhelmingly sweet with occasional chocolatey notes. The tiramisu, with its layers of espresso-soaked ladyfingers, Kahlua, and Marsala wine, was the best of the trio, offering a good balance of bitterness and sweetness. Still, you might be better off opting for pancakes or pastries for desserts at these prices.

Strawberry Matcha

As for beverages, beyond their coffee offerings, the Strawberry Matcha (from $6.50) is worth trying if you're in the mood for something different.

Morsels @ Dempsey Hill - Chef Petrina Launches new Menu 3.0 showcasing Skilful Blend of Eastern and Western Influences

I recently returned to Morsels to experience its new Menu 3.0. The innovative new creations will delight fans of Chef Petrina's cooking style, which seamlessly incorporates East and West influences with fermented sauces.

Aka Ebi Tartare 4.2/5

We started our dinner with the Aka Ebi Tartare ($18). The red shrimp is tossed in a mixture of green grape raisin and raspberry gochujang, paired with a crispy nori cracker. This dish offers a multi-textural enjoyment, with each bite bursting with vibrant flavours.

Next up was the Hokkaido Scallop Carpaccio ($28). Light, bright, and vibrant, the scallops are tossed in aguachile and paired with a smooth cannellini bean puree, making for a refreshing and delightful appetiser.

The Whipped Burrata ($22) comes with glazed baby carrots, Brazil nuts, and a kale salad. The burrata is creamy and luxurious, while the glazed baby carrots add a nice sweetness and crunch. The fresh kale provides a crunchy bite, making this dish a well-balanced starter.

We then had the Duck Dumplings ($30), served in brodo stock, paired with fermented garlic mash, and finished with juniper kombu oil. The dumplings were flavourful and satisfying, and the brodo added depth to the dish.

Galician Octopus 3/5

The Galician Octopus ($42) is grilled to a perfect char, resulting in a tender and bouncy texture. It comes with farfalle pasta tossed in squid ink assam sauce. While each component is delightful on its own, the combination did not quite gel together for me.

Mangalica Pork Loin 4.5/5

For the mains, we had the Mangalica Pork Loin ($44). The clean-tasting pork was tender and succulent. However, the accompanying pulled pork tortellini felt a bit unnecessary, with the skin being slightly dry from sitting too long. It seemed the chef wanted to showcase different ways to enjoy the beautiful pork or offer a replacement for the usual carbs like mash and fries.

The BVP Quail ($50) was a standout dish. I thoroughly enjoyed the rub, which gave the tender quail a delicious flavour coat. It was paired with smoked corn miso cream and lacto-fermented baby corn, adding complexity to the dish.

Morsels Signature Milo Tiramiso 5/5

We ended our meal with a must-try dessert, Morsels Signature Milo Tiramiso ($17). This unique take on the classic tiramisu incorporates Saratoga dark rum and shiro miso for a deliciously sweet ending that left us thoroughly satisfied.

Morsels' new Menu 3.0 continues to impress with its creative and flavourful dishes. Highlights include the Aka Ebi Tartare, Hokkaido Scallop Carpaccio, Mangalica Pork Loin, BVP Quail, and the delightful Milo Tiramiso. Chef Petrina's skilful blend of Eastern and Western influences and her innovative use of fermented sauces make dining at Morsels a memorable experience.

SPRMRKT @ Dempsey Hill - Limited-time Collaboration with Enjoy Eating House and Bar for Redefined Local Dishes

Enjoy Eating House and Bar, helmed by Chef Joel Ong, is renowned for its elevated take on local cuisine, showcased at its flagship outlet in Jalan Besar and a second location on Sixth Avenue. Now, in collaboration with SPRMRKT, diners can savour its offerings amidst the verdant surroundings of Dempsey Hill. The collaboration is available from Thursdays to Sundays, 5pm to 10pm, until the end of July.

Served chilled and inspired by black vinegar braise, the Black Dog Quail Egg ($8) served as a tangy and appetising starter.

Kueh Pie Tee 3.8/5

The Kueh Pie Tee ($18) featured a pretty flavourful shredded jicama filling made in prawn and conpoy stock alongside handmade pastry shells. Despite this, my dining companion and I found it a tad too pricey for its portion. It was served with house garlic chilli, egg, and sweet soy to pair.

Chonky Chicken Satay 4.2/5

The Chonky Chicken Satay ($20) lived up to its name with generously sized, spice-marinated chicken chunks served alongside homemade ketupat and a side of creamy peanut sauce infused with a zesty pineapple purée. Each juicy chicken piece boasted a delightful smoky char.

Enjoy Hokkien Mee 3.8/5

The Enjoy Hokkien Mee ($34) is one of the restaurant's popular dishes. It consists of noodles simmered in a prawn broth stir-fried with wild-caught "Ang Kar" prawns, pork belly, squid, and pork lard. While the noodles carried a decent amount of wok hei and the seafood was fresh, we thought the dish was considerably pricey. If you enjoy the pork lard-laden type of hokkien mee, you will enjoy this.

Crispy Local Barramundi in Chef Joel’s Red Curry 4.5/5

For me, a must-order is the Crispy Local Barramundi in Chef Joel's Red Curry ($29). The perfectly fried barramundi sat atop a house coconut curry sauce featuring sautéed local vegetables. The fish impressed with its flaky, tender meat and lightly crisp skin, while the rich curry sauce striked a balance with its satisfyingly creamy texture and just the right amount of heat. This was value for money.

Smoked Cod Otah 4/5

Chef Joel showcased innovation with his Smoked Cod Otah ($22), a departure from the familiar smooth-textured steamed muar otah. His rendition features grilled spicy fish paste with smoked cod chunks, which offer a delightful smokiness, lingering heat and mix of texture. For an extra zest, pair it with the side cincalok.

If you frequent Dempsey Hill, this is a good opportunity to sample Enjoy Eating House’s food. SPRMRKT also offers a wide range of alcoholic drinks to accompany.

AIR @ Dempsey Hill - A Sustainable Dining Experience that Pushes the Boundaries of Culinary Innovation While Rooted in Environmental Consciousness

AIR, an acronym for Awareness, Impact, and Responsibility, represents more than just a restaurant — it's a sprawling 40,000-square-foot oasis at Dempsey Hill. Conceived by Chefs Matthew Orlando and Will Goldfarb, alongside entrepreneur Ronald Akili, this establishment serves as a hub for sustainability, featuring a circular campus encompassing a restaurant, cooking school, research space, and garden farm.

Fermented Cassava Flatbread 3/5

Our dinner commenced with the Fermented Cassava Flatbread ($16), accompanied by whipped mushroom "XO" butter. While the bread exuded a strong, yeasty flavour that didn't quite resonate with my palate, the savoury richness of the mushroom "XO" butter provided a redeeming quality. However, the price tag seemed a tad steep, considering its standard complimentary nature in most establishments.

Next, the Crispy Oyster Mushrooms ($30) emerged from the kitchen. They boasted a delightful interplay of textures and flavours heightened by Sarawak pepper emulsion and pickled chillies. Despite their satisfying crispy exterior and vibrant taste profile, the pricing seemed disproportionate for what essentially amounted to deep-fried mushrooms.

White Fish Ceviche 4/5

A refreshing interlude arrived in the form of White Fish Ceviche ($29) featuring green mango and Kenari nut milk. The dish offered a light and revitalising experience, complemented by the satisfying crunch of emping crisps — an unexpected but welcome addition reminiscent of nachos.

The Whole Coral Grouper For Two 4.2/5

The Whole Coral Grouper For Two ($58) took centre stage for the main course. It is filleted, and confit bathed in a pool of green onion and black garlic vinaigrette sauce. While the fish was excellently prepared, it was the accompanying Smoked Fish Rillette with Fish Bone and Garlic Lavash stole the show, adding depth and complexity to the dish.

Re-Incarnated "Chocolate" 4/5

The Re-Incarnated "Chocolate" ($18) exemplifies the ethos of AIR, showcasing its commitment to sustainability and innovation. Crafted from by-products of common processes—cocoa husks, cascara, and coconut flesh—the dessert undergoes roasting and grinding with cocoa butter and sugar. The result? Luxurious chocolate bars boasting a rich, roasty flavour with subtle coconut undertones. This ingenious approach mirrors traditional chocolate-making methods yet eschews cocoa beans, epitomising AIR's dedication to creative, eco-conscious cuisine.

The Whole Papaya 3.5/5

The Whole Papaya ($18) dessert represents a creative and inventive approach to utilising the entire fruit. This intriguing creation incorporates not only the papaya fruit itself but also features papaya skin granite and uses papaya seeds to impart a peppery note to the dish. While I admire the innovation behind this dessert, I feel somewhat awkward encountering the papaya seeds during consumption. Nonetheless, it's a commendable effort to reimagine traditional ingredients and minimise waste in culinary creations.

In summary, AIR at Dempsey Hill offers a sustainable dining experience that pushes the boundaries of culinary innovation while remaining rooted in environmental consciousness. While some dishes may fall short of expectations, the overarching commitment to sustainability and responsible dining shines through, making it a noteworthy destination for eco-conscious gastronomes.

The Barramundi takes centre stage, adorned with a fiery sambal paste crafted from red chilli, shallots, garlic, lemongrass, galangal, and dried shrimp. Slow-cooked and nestled in banana leaves before grilling, it's a triumph of flavours. The sambal sauce deserves special mention—it's so good that it could easily outshine our local sambal stingray.

The succulent Pork Collar is marinated in a tantalising blend of hoisin, fish sauce, ginger, garlic, shallots, coriander, chilli, cardamom, and brown sugar, then sous-vide cooked and expertly grilled. The result is a hint of smokiness with the perfect ratio of lean and fats.

The Petite Tender Steak takes a journey through sous-vide cooking in olive oil, garlic, shallots, thyme, and tarragon before grilling.
