AIR CCCC @ Dempsey - Unveils New Menu and Local Kitchen Team

I returned to AIR CCCC at Dempsey over the weekend for lunch and was greeted by an exciting, refreshed menu and a new local kitchen team led by Head Chef Part Nongnuch, bringing bold flavours, renewed energy, and an inviting atmosphere that continues to unite people through food, space, and shared experiences.

The restaurant now offers a 3-course weekend lunch set at $68 (starter, main, and dessert) and a 2-course option at $58. We had the 3-course experience.

Sweet Corn from Talula 4.2/5

The Sweet Corn from Talula was an instant hit at our table. A velvety corn chutney, paired with crispy corn husk emping chips, offered a delightful combination of smooth creaminess and vibrant sweetness. Scooping the chutney with the crunchy chips was a simple yet joyful experience.

Ceviche of Local Mahi Mahi 3/5

Thick slices of fresh local Mahi Mahi were served with pink guava for crunch and a zesty sauce for a tangy lift. While the fish was clean-tasting and refreshing, the earthy garden herbs came through a little strongly, slightly overshadowing the otherwise bright and lively flavours.

A must-add for bread lovers is the Purple Potato Flat Bread. It was crisp on the outside, fluffy within, and served with a deeply savoury Mushroom XO sauce that was utterly addictive.

Perfectly grilled, the Spanish Mackerel retained its moist texture, with pickled onions adding a sharp brightness and zucchini providing a light, fresh balance. It is a solid choice for seafood enthusiasts.

Grilled to a smoky char and dressed with smoked chilli oil for a gentle spice, the Kampong Chicken from Ng Ai sat atop a bed of tropical coleslaw that helped cut through its richness. However, the chicken itself leaned slightly dry — a juicier bite would have elevated the experience.

A light and uplifting dessert featuring chilled Watermelon Sorbet layered over Annie’s yoghurt, with candied cashews adding a sweet, nutty crunch. The combination of fruity freshness, creamy tang, and gentle caramel notes made for a satisfying close to the meal.

“Bubur Hitam” Gelato 3.8/5

For something richer, the "Bubur Hitam" Gelato offered earthy depth, balanced by the tanginess of AIR Garden rosella and the chew of heritage rice. It is a thoughtful nod to local flavours with a modern twist.

AIR CCCC's refreshed menu blends creativity, local produce, and global touches under the guidance of Chef Nongnuch. While a couple of dishes could benefit from fine-tuning, the overall experience, from vibrant starters to inventive desserts, makes this a worthwhile lunch destination in Dempsey.

Alice Boulangerie has embarked on an exciting new chapter with the opening of its charming new outlet at Raffles City, designed to be a bakery by day and a cosy dinner spot by night. Featuring a refreshed all-day dine-in menu alongside a brunch selection, guests can look forward to hearty, deeply comforting dishes that uphold the high quality Alice Boulangerie is known for. The outlet also debuts the new bakery concept Fine Crumbs, which operates until 5:30pm and offers a delightful range of 25 creative types of sweet and savoury buns that appeal to both the eyes and the taste buds.

A unique starter would be the grilled Beef Tongue Skewers ($22), which is charcoal-grilled with an ale glaze, then topped with green harissa and crispy chicken skin. There’s also a little hint of spiciness that adds an interesting kick to the dish.

The Hokkaido Scallop Crudo ($24) was a standout, featuring sashimi-grade Hokkaido scallops dressed in a zesty ponzu, drizzled with laksa leaf oil, and served with julienned Thai green mango and red chilli to round off this bright and refreshing appetiser.

Grilled Spring Chicken 4.5/5

Honestly, between the two main courses we tried, we couldn't decide if we liked the chicken or the fish more because both are excellent and worth ordering. The Grilled Spring Chicken ($48) was very impressive for how tender and juicy it was. The meat is definitely not dry at all! A whole baby spring chicken is marinated overnight in an aromatic achiote pepper glaze and spice blend, then charcoal-grilled till perfection with a hint of smokiness. It's served with charred broccolini on the side, and also comes with two sauces: a garlic aioli and a sambal cincalok that is super addictive! It's quite a large portion, so this is good for sharing.

The Aqua Pazza ($39) is equally good, featuring seared, flaky smoked black cod in a tangy tomato sauce brimming with black olives, pearl onions, capers and cherry tomatoes. If you enjoy puttanesca sauce, you will love this. There are also deep-fried fish strips reminiscent of childhood cuttlefish snacks.

We also got to try some of the buns from Fine Crumbs, where each bun is crafted with premium Japanese flour using the traditional Yudane method, which locks in moisture to create a soft, chewy texture. The dough undergoes a slow 12-hour natural fermentation, free from artificial additives or bread improvers, allowing flavours and structure to develop gently and naturally. From fermentation to proofing, every step is meticulously monitored to achieve the perfect light, airy crumb.

Mentaiko Prawn Bun 4/5

We tried two of the savoury buns, starting with the Mentaiko Prawn Bun ($5.2), a charcoal bun stuffed with chopped tiger prawns and tobiko, tossed in creamy mentaiko mayo, and paired with a refreshing purple cabbage slaw and a tomato slice for crunch and balance.

Next was the Bulgogi Beef Bun ($5.7), where tender, marinated beef in a savoury-sweet glaze, paired with red and green chilli, roasted sesame and purple cabbage, all nestled in a soft, golden corn bun. Finished with a touch of mustard mayo, this hearty bun delivers familiar Korean-inspired flavours.

Black Sesame Peanut Mochi Bun 4/5

For the sweet buns, the Black Sesame Peanut Mochi Bun ($4.8) is a soft black sesame bun filled with rich black sesame paste and chewy mochi, topped with a generous coating of fragrant ground peanuts. It’s quite an interesting bite that honours local favourites.

Matcha Nama Chocolate Bun ($6.5) is a green, fluffy matcha bun dusted with matcha powder and filled with a thick slab of luscious matcha nama chocolate and light mascarpone cream. This is great for the matcha lovers. I liked it a lot.

With 25 interesting flavours on the menu, we're definitely keen to come back and try more! Some of the other savoury buns that caught our eye include the Charred Corn Bun, Big Brekkie Bun with roasted bell pepper, scrambled egg and streaky bacon, Truffle Portobello Bun, Pesto Chicken Bun, and the Croque Monsieur Bun.

As for the sweet treats, the Strawberry Milk Loaf, Yuzu Meringue, and Chocolate Banana Tart are high on our list! Do note that Fine Crumbs Bakery only operates until 5.30pm, after which they focus on serving their dine-in menu and wine list.

Alegria @ Teck Lim Road - New Menu Brings Brazilian Flair and Filipino Soul Together

Alegria, located at the heart of Keong Saik district, specialises in Latin Asian cuisine reimagined with Asian and European influences. Their newly launched menu draws from Peruvian, Mexican, and Brazilian flavours, with unmistakable Filipino touches woven throughout.

We started with a brilliant lineup of starters. The Pão de Queijo ($15), Brazil's iconic cheese bread, arrived warm and chewy, served with house-fermented basil butter. The herbaceous butter beautifully complemented the cheesy interior, making these morsels utterly moreish.

Coxinha 5/5

Next came the Coxinha ($16), a classic Brazilian chicken croquette and a first for me. I braced for a heavy, cheesy filling, but Alegria's version surprised me with its lightness. Encased in a crisp crust, the mashed potato dough encased a well-seasoned shredded chicken filling that had a subtle curry-like warmth. The balance of crunch, fluff and spice all come together in each bite, deliciously satisfying without being cloying.

Sisig Taco 4.5/5

Alegria truly shines with its tacos. Made fresh in-house from corn flour, the tortillas were soft, warm, and gently fluffy. The Sisig Taco ($19) offered a creative spin on the Filipino staple, topped with zesty salsa and a creamy dinakdakan sauce. While the pork belly had a tougher bite than expected, almost like fried pancetta, the flavour was spot on, savoury and vibrant.

Pescado Taco 4.5/5

The Pescado Taco ($19) showcased firm but tender and flaky Baja-style fried fish encased in a light, crisp batter. A zingy salsa and sweet charred corn brought brightness and contrast, while the chipotle mayo tied everything together with a smoky, creamy finish.

Seafood Moqueca 3.5/5

Among the mains, the Seafood Moqueca ($34) was a comforting Brazilian seafood stew, especially when paired with savoury sinangag rice. Vibrant with the flavours of capsicum and curry, the prawns were cooked just right. It was succulent and tender. However, the stew leaned noticeably sweet overall. A touch of acidity or heat helped cut through the richness and brought better balance to the dish.

Pollo Asado 5/5

The standout main was the Pollo Asado ($34), which consisted of a woodfire-grilled half chicken glazed in achiote and cilantro crema. Instead of grilling the chicken whole, it was portioned into three, allowing each piece to achieve deeper caramelisation and smoky char. Juicy and flavourful, it was elevated further by adding tangy pineapple kimchi that cut through the richness of the crispy skin.

Churros 5/5

We ended on a sweet note with Churros ($15) served with a Dulce de Leche dip. Perfectly fried, they were crispy outside and airy inside. These were among the best I've had, leaving a lasting impression.

Poonsti, the well-loved eatery specialising in crispy rosti, has launched a brand-new weekend evening dining concept. Staying true to its potato-loving roots, the space transforms into a charcoal grill house, where perfectly grilled meats are paired with their signature crispy rosti, a variety of sides, and craft beers for a hearty, comforting meal.

Build Your Own Rosti-Grill Set ($25+)

The dinner menu follows a customisable concept:

1. Choose your Rosti: Plain, Garlic & Chives, Curry, or Black Pepper & Cheese.
2. Pick a Grilled Meat: House Bacon, Beef Sausage, Flat Iron Steak, Pork Collar Steak or Chicken Thigh.
3. Select two Sides: Coleslaw, Baked BBQ Beans, Mac & Cheese, Buttered Corn or Salad.

Each set is served on a tray, but for the sake of presentation, we plated them for a better visual experience.

For our first set, we opted for the Garlic & Chives Rosti (+$2), Pork Collar Steak (+$4), Coleslaw, and Mac & Cheese. Poonsti's signature rosti remains as delightful as ever, with a crispy golden exterior and soft, fluffy insides. The garlic and chives infusion adds a subtle yet aromatic depth to the potatoes. The pork collar steak was a pleasant surprise — tender, smoky, and juicy, with just the right amount of char. Worth highlighting are the side dishes, which are often an afterthought in many places. The Mac & Cheese was creamy and well-seasoned, while the Coleslaw had a nice balance of tang and crunch, rounding out the plate beautifully.

Curry Rosti, Chicken Thigh, Beef Sausage, Salad, Buttered Corn

For the second set, we went with Curry Rosti (+$2), Grilled Chicken Thigh, Salad, and Buttered Corn, with an additional Beef Sausage (+$8) for a more substantial meal. The Curry Rosti was an interesting twist — crispy like the classic version but infused with a light curry spice that added a Southeast Asian touch. The Chicken Thigh was well-marinated, tender, and charred to perfection, while the Beef Sausage was plump, juicy, and bursting with flavour. As for the sides, the Buttered Corn was sweet and buttery, and the Salad provided a refreshing contrast to the heavier components of the meal.

Poonsti's weekend grill concept successfully elevates its well-loved rosti by pairing it with well-executed charcoal-grilled meats and thoughtfully prepared sides. Unlike many places where sides are overlooked, Poonsti ensures each element of the meal is carefully crafted. If you're a fan of crispy potatoes and smoky grilled meats, this is definitely a spot worth checking out. The customisable menu, affordable pricing, and casual yet satisfying meals make it a great place for a laid-back weekend dinner.

Edge @ Pan Pacific Singapore - Embrace the Joyous Season and Endless Celebrations with Extravagant Buffet Spreads

Embrace the joyous season with endless celebrations and a luxurious dining experience at Edge, Pan Pacific Singapore. From 21 November 2024, indulge in a feast curated by Executive Chef Andy Oh and his talented culinary team. The buffet showcases a harmonious blend of festive classics and international delights, featuring premium seafood, succulent roasts, and the season's signature favourites.

The Seafood on Ice station boasts an impressive selection, including Boston Lobsters, Freshly Shucked Oysters, Prawns, Pacific Clams, Sea Conch, and Crawfish. The lobster meat is so sweet, but the oysters are a little less plump than expected.

Cheese 1

Edge never disappoints when it comes to its cheese offerings. A standout for us was the Port Salut, a soft cheese with a smoky undertone that makes it an irresistible treat. We also discovered the Red Pesto Tomme, which adds an intriguing twist to the classic Tomme with its vibrant pesto-infused flavour.

Miso Cod 1

A highlight of the buffet is the Miso Cod Fish. While it may not rival Nobu's version, this dish impressed me with its soft texture, fresh quality, and delicate marinade. Served alongside tender okra, it's a must-try!

Meat lovers are in for a treat with an extensive selection of festive specialities. The Traditional Roasted Turkey Breast is perfectly cooked to retain its juiciness, while the Maple-Glazed Gammon Ham offers a delightful balance of sweet and savoury flavours. Other highlights include the Roasted Whole Lamb, which is tender and aromatic, and the succulent Roasted Pork Porchetta with its crispy crackling. For a touch of indulgence, the Australian Black Angus Beef Tomahawk steals the spotlight with its rich, smoky flavours. Pair these dishes with a variety of sauces such as apple sauce, olive sauce, and red wine sauce to elevate your dining experience.

Grill Live Station

The Live Grill Station offers an exciting array of freshly prepared delights. From the smoky and flavourful Salt & Pepper Squid to the tender Marinated Angus Beef Short Rib, every bite is a testament to the chefs’ skill. The Grilled Chicken, seasoned to perfection, is a crowd favourite, while the variety of homemade sausages ensures there’s something for everyone to enjoy.

Western classics are another highlight of the buffet. The Slow-Baked Fish Filet in Minestrone Mussels Broth is light yet satisfying, combining the delicate flavours of the sea with a comforting broth. Meanwhile, the Oven-Baked Chicken with Cacciatore and Olive provides a hearty and flavourful option.

Pizza

Pizza lovers can indulge in freshly hand-stretched pizzas with a range of toppings. It's worth a slice if you have a stomach for some carbs!

Indian

Indian station featuring flavoursome curries and traditional favourites such as Butter Chicken, Papadam, Naan and Fish Tikka from the Tandoori oven.

The buffet's Asian and local offerings are equally impressive. At the Indian station, diners can savour robust curries and other traditional dishes. Local favourites include the iconic Singapore Chilli Crab, paired with fluffy mantou for dipping, as well as a variety of double-boiled soups and stir-fried dishes. The Asian Live Station features piping hot bowls of Laksa, a selection of Yong Tau Foo Soup, and the fragrant Penang Wok-Hei Fried Kway Teow. For those who love roasted delicacies, there are Peking Duck, Roasted Chicken, Pork Belly, and Honey Glazed Char Siew.

No meal at Edge is complete without a visit to the dessert station. The festive spread includes Christmas Log Cakes, Verrines such as Panna Cotta and Durian Pengat, a decadent Chocolate Fountain, and a selection of gelato and sorbet. For those with a penchant for local sweets, the Nyonya Kueh and hot desserts like Cheng Teng provide a comforting end to the meal.
