We began the experience with a playful take on an amuse bouche – Pani Puri. Unlike the traditional savoury version, this one was filled with white dragon fruit, watermelon, and honeydew, with flavour contrasts brought in by basil, curry leaves, and banana yoghurt. One pop delivers a refreshing explosion of sweet and herbaceous notes – a surprising and lively start to the meal.

Bak Bak Wings II 4.2/5

The Bak Bak Wings II ($26) from the small plates menu stood out as a clever reinterpretation of Hainanese Chicken Rice. Deboned chicken mid-wings were stuffed with chicken rice, while lollipop drumlet was glazed with a sticky-sweet char siew sauce. The dish came complete with a side of banana chilli and chicken consommé for a full chicken rice experience. Surprisingly, if we hadn't known the chef's background, we might have guessed this was a dish from a Chinese kitchen – that's how refined the interpretation was.

Thosai Matti 4.2/5

The Thosai Matti ($28) took another familiar favourite — thosai — and gave it a bold, modern makeover. Beetroot-infused thosai was wrapped around a masala sardine pâté and topped with a charred French sardine. Traditional accompaniments like sambar, orange rind chutney, and coconut espuma tied the dish together, enhancing both flavour and nostalgia in every bite.

For something bright and refreshing, we had the Scallop Ceviche ($34), where the sweetness of fresh scallop was uplifted with a zesty cure of orange, lemon, and chilli padi. A tom kha reduction, Thai mango, basil, ikura, and beetroot further added layers of tang and umami.

Lamb Biryani 5/5

The showstopper of the night was undoubtedly the Lamb Biryani ($48). Served in a generous portion, the cranberry and pistachio-laced rice was light and aromatic, while the tandoori lamb rack was juicy, tender, and packed with spice. Paired with an eggplant pachidi and burnt cucumber raita, the dish delivered a robust symphony of flavours and textures. It's a dish you'll remember long after the last bite.

Roti Canai 4.5/5

We were wowed by the Roti Canai ($18) for dessert, which masterfully reimagined the beloved Malaysian staple into a sweet treat. The shredded roti was tossed in sweet rasam powder and curry caramel, topped with a plum brûlée, and served with a side of spicy tapioca chips. It was quirky, bold, and immensely satisfying.

SPRUCE @ HillV2 - 15th Anniversary Grand Reopening with New Menu Featuring Collaboration by MasterChef Singapore Season 4 Winner Inderpal Singh

SPRUCE recently celebrated its 15th anniversary with a grand reopening at HillV2 and introduced a new bakery and bistro concept. Their all-new menu features a range of new dishes alongside an exclusive MasterChef collaboration with MasterChef Singapore Season 4 winner, Inderpal Singh. This collaboration consists of 5 items by Chef Inderpal, which showcase his expertise in spices.

The new modern space is adorned with warm lights and lots of greens, making it a cosy space for gatherings.

Beverages

Their beverage list is extensive, with homemade drinks such as Homemade Lemonade ($8), freshly squeezed lemon with fresh mint, and Arnold Palmer ($7), a blend of freshly brewed tea and homemade lemonade. Cocktails, created in collaboration with award-winning mixologist Nithi, are also available.

MasterChef Laksa Pumpkin Soup 3.8/5

The MasterChef Laksa Pumpkin Soup ($15) caught our eye for its intriguing combination of sweet pumpkin, laksa leaves, galanga and chilli! The creamy soup took some getting used to but paired well with a crunchy slice of garlic bread.

MasterChef - Fenugreek Crab Cake 4.2/5

A popular MasterChef creation is the Fenugreek Crab Cake ($22). Despite its price, it was chock full of succulent crab meat. We were also fans of the rich and aromatic fenugreek chutney, which enhanced the overall umami flavours.

MasterChef “Chilli Prawn” Roti John 3.5/5

The MasterChef "Chilli Prawn" Roti John ($27) featured prawns in chilli crab sauce on a basil roti john, offering a special twist on the classic beef or chicken versions. However, it was a tad pricey for its portion.

Prawn Orecchiette 4/5

For mains, we first had the Prawn Orecchiette ($24), which saw orecchiette pasta tossed in spinach and garlic cream sauce, with tiger prawn chunks and zucchini. While I would have liked the pasta a touch softer, the garlicky sauce was quite enjoyable.

Truffled & Mushroom Risotto 3.8/5

The Truffled & Mushroom Risotto ($23) was decent, with carnaroli rice simmered with mushrooms and mascarpone cheese. The thick texture made it better suited as a sharing dish.

Chimichurri Baby Back Ribs 4.2/5

Apart from the Fenugreek Crab Cake, our other unanimous favourite of the night was the Chimichurri Baby Back Ribs ($26). I rarely order baby back ribs as they usually come doused in a thick, sweet sauce, which I am not a fan of. SPRUCE's rendition, however, has the tender ribs served with a zesty homemade chimichurri sauce and shoestring fries on the side.

MasterChef - Barramundi & Coconut Briyani 4/5

The MasterChef — Barramundi & Coconut Briyani ($28), aptly described by my dining companions as a healthy briyani, was clean-tasting in a good way. The pan-seared barramundi had a crisp skin, while its meat remained tender. It was atop coconut briyani with pistachio and raisins and accompanied by a side of refreshing yogurt.

Tiffin Room x Meatsmith Little India @ Raffles Hotel - Exclusive Collaboration Showcasing North Indian Flavours With Indian-Accented American Barbecue

It is a collaboration you should not miss. Tiffin Room and Meatsmith Little India are back again for the second time, with a specially curated four-hands menu from 14 to 28 July 2022. It guarantees you a treat by marrying Chef Kuldeep Negi's expertise in authentic North Indian flavours with Chef Edwin Tan's experimental take on modern Indian-accented American barbecue. You will see their skilful play on flavours, textures and spices come through distinctly right from the starters to the dessert.

The four-hand menu is available at Tiffin Room in Raffles Hotel for lunch and dinner. There are both Vegetarian ($98/pax) and Non-vegetarian ($108/pax) options, with the choice to add on for wine pairing ($78/pax).

Trio Starter 4/5

We had a delightful start to the meal with this trio starter - Papadum with Ikura and Creme Fraiche, Smoked Feta with Watermelon, Potato and Cheese Croquettes with Caviar and BBQ Mustard. Meatsmith’s Ikura Papadum has always been a crowd favourite. Pop it in a mouthful, and you get an explosion of briny ikura with rich and tangy creme fraiche on a crisp papadum.

Smoked King Salmon with Garden Tomato and Roquefort Salad 4.5/5

A pity that the Smoked King Salmon with Garden Tomato and Roquefort Salad was only available on the collaboration’s opening night of 14 July 2022. It made such a lasting impression! The lightly smoked cured salmon was of just the right level of saltiness, matched with fun bursts of flavours from the sweet oranges and tomatoes, as well as the sharper creamy blue cheese. Salmon was tender and flaky.

Hokkaido Scallop with Tandoori Black Cod 4.8/5

The Hokkaido Scallop with Tandoori Black Cod is a combined creation by both chefs. The plump seared scallop sits with a mildly sweet smoked carrot and orange purée, white wine reduction and caviar, paired with an aromatic and perfectly spiced Tandoori black cod. I thoroughly enjoyed how the seemingly different elements worked harmoniously together as a dish.

Signature Tiffin Box 4.2/5

For mains, a selection of North Indian dishes is presented in Tiffin Room's Signature Tiffin Box. Accompanying the fluffy and fragrant Jhinga Dum Biryani are three types of curries: Lamb Awadhi Korma (Lamb Chop Curry with Almond and Cashew Nut Gravy), Murgh Hara Pyaz (Boneless Chicken Leg with Spring Onion and Spinach Gravy) and Goan Fish Curry. Our favourite was the Goan Fish Curry, which features fresh red snapper. You can also enjoy the curries with three types of Naan: Garlic, Butter and Cranberry Cheese with sweet bits of cranberry encased within.

S’mores Tart and Smoked Coconut Ice Cream 4.2/5

I didn't think I would be a fan of this S'mores Tart because of how sinfully sweet it looks. Hence I was very pleasantly surprised to be proven otherwise. The torched marshmallow layer lends a little more sweetness to the decadent and smooth bittersweet chocolate base, paired with a scoop of cleverly well-smoked coconut ice cream and coconut flakes.

Anjeer Mawa Burfi and Pista Balushahi

We ended the meal with two classic Indian handmade sweets from Tiffin Room, the Anjeer Mawa Burfi and Pista Balushahi.

Papadum, Mint Chutney, Mango Chutney, Pickled Onion

Apart from the main dishes, you can snack on crunchy Papadum on the side. It’s served with three dips - Mint Chutney, Mango Chutney and Pickled Onion.

Allauddin's Briyani @ Tekka Food Centre - Popular Briyani Recommended By Michelin Guide

Stepping into Tekka Food Centre, you may be overwhelmed by the number of stalls selling briyani. So which stall is popular among the locals? It seems to be Allauddin's Briyani which even gets the congregation from Michelin Guide, earning a Michelin Plate recommendation.

Together with my foodie friends, we ordered both the Chicken Briyani and Mutton Briyani to try. What surprises me is the pricing. Each set is only $5 with pappadam, egg, achar and a bowl of vegetarian dhal on top of the fragrant basmati rice.

The chicken briyani comes with a whole chicken leg which is very tender. It falls off the bone with ease as I tore it apart to go with the rice. While I enjoyed the chicken briyani, I find the mutton briyani stands out more with its more intense marination and spices. Each mouth fill comes with the beautiful aroma from the spices.

If you like mutton, I would recommend you to go for the mutton briyani instead of the chicken briyani. I understand they have fish briyani too ,but I didn't try it. Allauddin's has two stalls in Tekka food centre. One sells briyani while the other sells the other Indian fare such as prata, murtabak, mee goreng and maggie goreng.

Pork Satay with Pineapple Peanut Sauce 4.2/5

For the starters of the local degustation menu, we tried both the Tahu Telur and Pork Satay with Pineapple Peanut Sauce. If you a big eater, I would recommend the tahu telur over the pork satay. For photo seek, I actually borrowed another 2 more skewers from my friend's plate. Putting that aside, both dishes actually tasted good. I enjoyed the light and fluffy beancurd tower complemented by the spice kicap manis sauce. I was also delighted that the kitchen made the effort to pair the succulent pork satay with pineapple in their peanut sauce.

For the Rice item, we tried the Nasi Briyani and Nasi Lemak. I think it is a good showcase of the local cuisine. The nasi briyani comes with with chicken rendang, achar and pappadum. I would prefer the nasi lemak more for its fragrant coconut rice and the shiok homemade sambal.

Last but not least for the Noodle items, we had the Hokkien Black Noodles and Xing Zhou Bee Hoon. The flavourful hokkien black noodles comes with squid, prawns, sliced pork and crispy pork lard. However, the gravy was on the salty side during our visit. What surprises me is the unassuming xing zhou bee hoon which is pack with wok flavour. Simple but comforting.

After having the local signature dishes, don't forget to head over to the dessert spread that includes a delectable dessert buffet of cakes, pastries, hot and cold dessert soups, nonya kueh, fruits, ice cream and most important, Mao Shan Wang durian pastries.
