AmoJan25-2
Artisanal Burrata Cheese with Datterini Tomatoes and Basil Pesto 4.2/5

We began our meal with the Artisanal Burrata Cheese with Datterini Tomatoes and Basil Pesto ($28). The soft, creamy burrata was complemented by the tomatoes' natural sweetness, while the basil pesto added an aromatic lift, bringing the dish together beautifully.

AmoJan25-6
Roman Artichoke Fries with Paprika and Black Truffle Crema 4.2/5

For a crispy, addictive snack, the Roman Artichoke Fries with Paprika and Black Truffle Crema ($18) was a standout. Coated in a light batter, the artichokes had a crispy exterior and fluffy interior, reminiscent of potato wedges but with a richer, earthier flavour.

Wagyu Beef Carpaccio with Rucola, Parmigiano and Truffle Relish 4.2/5

The Wagyu Beef Carpaccio with Rucola, Parmigiano, and Truffle Relish ($26) delivered a melt-in-the-mouth experience. The peppery rucola, savoury Parmigiano, and fragrant truffle relish elevated the silky, tender beef, creating a vibrant and well-balanced dish.

AmoJan25-14
Sourdough Bruschetta with Pizzutelli Tomatoes and Basil Pesto 4/5

Another delightful bite was the Sourdough Bruschetta with Pizzutelli Tomatoes and Basil Pesto ($20). The toasted sourdough provided the perfect base for the sweet Pizzutelli tomatoes and herbaceous basil pesto, offering a satisfying crunch with every bite.

AmoJan25-17

Spaghetti Cacio e Pepe with Pecorino Cheese and Black Pepper 4.2/5

For the pasta course, we tried the Homemade Spaghetti Chitarra with Seafood and Pomodoro ($35) and the Spaghetti Cacio e Pepe with Pecorino Cheese and Black Pepper ($26). The Spaghetti Chitarra stood out with its sweet and tangy tomato-based sauce, perfectly paired with fresh seafood. Meanwhile, the Cacio e Pepe, a creamy and cheese-laden delight, catered to those who enjoy rich, indulgent flavours. However, it felt slightly plain without additional ingredients to enhance the dish.

AmoJan25-38
Quattro Formaggi 4/5

The Quattro Formaggi ($28) was a must-try for cheese lovers. A decadent combination of Smoked Scamorza, Taleggio, Buffalo Mozzarella, and Provolone created a rich, umami-packed pizza with layers of distinct flavours melding together beautifully.

AmoJan25-23
Grilled Wagyu Beef Hanging Tender Tagliata with Truffle Mash 4.2/5

The Grilled Wagyu Beef Hanging Tender Tagliata with Truffle Mash ($42) was grilled to perfection. It boasted a gorgeous charred exterior while remaining tender and full-bodied inside. The luxurious truffle mash added a smooth and creamy complement to the dish.

Another highlight was the Grilled Iberico Pork Secreto with Sweet Onion Figgione ($36). The succulent, well-marbled pork paired wonderfully with the sweet onion figgione, enhancing the meat's natural flavours with a delightful sweetness.

AmoJan25-44
Roasted Seabass with Artichokes, Capers and Confit Tomatoes 4.5/5

The Roasted Seabass with Artichokes, Capers, and Confit Tomatoes ($42) was a beautifully executed dish for seafood lovers. The crispy skin, flaky flesh, and acidity from the confit tomatoes created a balanced and satisfying bite.

AmoJan25-50
Panna Cotta with Blood Orange Caramel 4.2/5

To round off the meal, we indulged in the Panna Cotta with Blood Orange Caramel ($15). The wobbly, creamy panna cotta was perfectly matched with the rich blood orange caramel, delivering a satisfying balance of sweetness and acidity.

AmoJan25-53
Amo Tiramisu 4.2/5

The Amò Tiramisu ($18) stayed true to tradition, offering a well-executed rendition of this classic Italian dessert. Each bite was light yet flavourful, ticking all the boxes for a great tiramisu.

AmoJan25-60
Pistachio & White Chocolate Lave Cake with Amaretto Cream 3.8/5

The Pistachio & White Chocolate Lava Cake with Amaretto Cream ($16) was a luxurious treat. The nutty aroma of pistachio combined with the sweetness of white chocolate created a delightful harmony, while the Amaretto cream added a nutty, boozy finish to elevate the dish further.

Amò's revamped menu showcases a strong dedication to authentic Italian flavours with a modern touch. From the flavorful antipasti to the indulgent desserts, each dish reflects the warmth and passion of Italian dining. Whether you're a fan of rich cheeses, premium meats, or fresh seafood, there's something on the menu to satisfy every craving.

GU:UM @ Keong Saik - Contemporary Korean Steakhouse Lunaches Refreshed Menus

Guum34

GU:UM, which literally means to grill, roast, or cook over fire in Korean, is a premium Korean steakhouse by One Michelin-starred NAE:UM’s Chef Louis Han. Unlike traditional K-BBQ restaurants, GU:UM elevates the experience with top-quality meats, refined techniques, and distinct Asian influences, creating a sophisticated and modern take on Korean barbecue.

Guum11
Yukhwae Jeon 5/5

We started with the Yukhwae Jeon ($32), a creative pairing of Korean beef tartare with a crispy potato pancake. This combination was nothing short of brilliant—the rich, umami-packed tartare contrasted beautifully with the crisp, starchy pancake. It’s a unique dish that I have never seen elsewhere, making it a must-order.

Guum12
Mulhwae 4.5/5

The Mulhwae ($28) followed — a refreshing cold salad soup with raw fish. It’s somewhat reminiscent of ceviche, but with more intricate layers of flavor. The sharp, tangy notes of the broth were incredibly appetising and invigorating, making it a perfect dish to whet the appetite.

Guum1
Surf & Turf Plattter 4.5/5

Guum25

Guum20

Perfect for sharing, the Surf & Turf Platter ($328) was a showstopper. It featured a variety of premium cuts from both land and sea, accompanied by grilled vegetables and side dishes. The beef and pork were grilled to perfection, exuding deep, smoky flavours that showcased their high-quality marbling. The seafood selection, including lobster and abalone, further elevated the indulgence of this luxurious platter.

Guum36

Guum49

To enjoy it the Korean way, wrap the meats in lettuce with a variety of condiments — a satisfying experience that enhances the flavours.

Guum39
Al Bibimbap 4.2/5

For those who want something more filling, the Al Bibimbap ($34) is a delightful twist on the classic Korean mixed rice dish. This white-based bibimbap comes with chunks of lobster, seaweed flakes, and roe, adding an extra layer of umami richness. A good mix of all the ingredients ensures a harmonious balance of textures and flavours in every bite.

Guum52
Hotteok 4.8/5

Even after a hearty meal, saving space for dessert is a must. The Hotteok ($18) was a standout, featuring a pan-fried Korean pancake with a chewy, almost mochi-like texture. It was exceptional when paired with the burnt honey ice cream, which added a sweet, caramelised depth to the dish.

Guum55
Injeolmi Tiramisu 4.2/5

Another noteworthy dessert was the Injeolmi Tiramisu ($16), an innovative take on the classic Italian dessert. Served inside a tart shell, the Nespresso-infused tiramisu was enhanced with toasted rice cake powder, creating a unique fusion of flavours. This Korean-inspired twist on tiramisu was a fantastic way to end the meal.

GU:UM is a game-changer in Korean barbecue, seamlessly blending premium steakhouse elements with Korean culinary traditions. The Yukhwae Jeon, Surf & Turf Platter, and Hotteok were clear highlights, showcasing Chef Louis Han’s creativity and finesse. Whether you're looking for a refined dining experience or a luxurious take on Korean grilling, GU:UM is a must-visit destination for steak and barbecue lovers alike.

CHEFLAM's Sichuan Cuisine (兰堂川菜) @ Guoco Tower - A Fiery New Arrival Helmed by Master of Sichuan Cuisine

ChefsLam22

With great excitement, CHEFLAM's Sichuan Cuisine (兰堂川菜) has finally opened its doors at Guoco Tower, Tanjong Pagar. The restaurant is helmed by Chef Lam Shan, a renowned master of Sichuan Dongpo cuisine, often referred to as the "Master of Sichuan Cuisine." Known for his exceptional skills and numerous culinary accolades, Chef Lam brings an authentic and elevated Sichuan dining experience to Singapore.

ChefsLam27
Shadow Lotus Root Slices 4.2/5

We began our Sichuan feast with the Shadow Lotus Root Slices ($12.90), an irresistibly crispy and addictive snack. The thinly sliced lotus root is expertly fried to a golden crisp, offering a light, airy crunch that makes it a perfect starter.

ChefsLam3
Chengdu Cold Noodle with Shredded Chicken 4/5

Next, we tried the Chengdu Cold Noodle with Shredded Chicken ($9.90), a refreshing and flavourful dish. The springy wheat noodles are coated in a savoury, garlicky, and gingery sauce, delivering an aromatic kick. The tender shredded chicken adds richness, while the crisp cucumber provides a cooling contrast to the bold flavours.

ChefsLam1
Chowhound Beef 4.2/5

The Chowhound Beef is available in a single portion ($14.80) or served in a cloisonné pot ($48). This dish features premium beef slices slow-cooked for 24 hours in a nutritious herbal broth infused with 21 medicinal ingredients, including red dates, goji berries, and angelica root. The tender beef absorbs all the herbal goodness, making it a flavourful and nourishing delight. It is best enjoyed with Sichuan chilli powder or creamy sesame sauce for added depth.

ChefsLam14
Geleshan Laziji 4.8/5

The Geleshan Laziji ($23.80) is undoubtedly one of the best versions of this Sichuan classic we've had in a long time. Unlike most places that use a single type of chilli, Chef Lam's version incorporates three different varieties of Sichuan and Guizhou chillies, creating a complex and fragrant heat. The chicken is fried to perfection — crispy on the outside and juicy and tender inside — making every bite spicy, smoky, and incredibly satisfying.

ChefsLam5
Dongpo's Golden Soup with Pickled Fish 4.8/5

A standout dish, the Dongpo’s Golden Soup with Pickled Fish ($29.90) showcases a harmonious balance of sourness, spice, and umami. The broth, made with premium Sichuan pickled vegetables, delivers a rich and tangy aroma, while the thinly sliced fish absorbs the soup’s essence, resulting in a deeply flavourful and comforting dish.

ChefsLam18
Gold Medal Kung Po Chicken 5/5

The Gold Medal Kung Po Chicken ($16.80) lives up to its name — it won gold at the World Sichuan Cuisine Cooking Skills Competition. This dish is a true revelation, featuring a perfectly balanced combination of smoky, sweet, tangy, and spicy flavours. The flavour complexity in this version elevates it far beyond the typical Kung Po Chicken, making it an absolute must-try.

ChefsLam24
Sizzling Seafood Crispy Rice 4.5/5

The Sizzling Seafood Crispy Rice ($39.90) is an exciting creation for a visually stunning and interactive dish. A crisp rice shell is dramatically cracked open at the table, revealing a rich, seafood-infused sauce filled with juicy prawns, abalone, and vegetables. The crispy rice absorbs the savoury sauce, offering a symphony of textures.

CHEFLAM’s Sichuan Cuisine delivers an authentic yet refined Sichuan dining experience, staying true to traditional flavours while incorporating premium ingredients and innovative techniques. The Geleshan Laziji, Gold Medal Kung Po Chicken, and Dongpo’s Golden Soup with Pickled Fish are definite highlights. Whether you’re a spice lover or looking to explore Sichuan cuisine at its finest, this restaurant is worth the visit.

Chopsuey Cafe @ Dempsey - Usher in Prosperity with an Exclusive Festive Menu

ChopsuayCafeCNy25-42

Chopsuey Cafe at Dempsey will present an exclusive Lunar New Year menu from 20 January to 12 February. The menu offers a fusion of contemporary flavours across an array of à la carte and vegetarian dishes alongside a thoughtfully curated set menu.

ChopsuayCafeCNy25-4
Lucky Lunar ‘Lo Hei’

Chopsuey Cafe’s signature Lucky Lunar ‘Lo Hei’ ($68/$88/$128), a vibrant mix of baby romaine, white radish, beetroot, carrot julienne, blueberries, pomegranate, pomelo, chunky cured salmon, toasted peanut crust, white sesame, and crispy wonton skin. The coarser toasted peanut crust added a delightful crunch, while extra virgin olive oil introduced a subtle herbaceous note that elevated this refreshing and textured dish.

ChopsuayCafeCNy25-8
Prawn Toasties 4.8/5

Among the starters, the Prawn Toasties ($19) stood out with their juicy king prawn paste. They offered chunky bites encased in an airy, perfectly crisp fried bun. Paired with a chili-dipping gravy, it was a harmonious and satisfying bite.

ChopsuayCafeCNy25-12

ChopsuayCafeCNy25-14
Crispy Shredded Duck Pancakes 4.5/5

The Crispy Shredded Duck Pancakes ($32) provided a creative twist on the classic Peking Duck. The shredded duck was tender and succulent, complemented by crispy bits and served with soft, chewy wraps that tied the elements together beautifully.

ChopsuayCafeCNy25-17
Hot & Sour Soup 2/5

The vegetarian menu offers a Hot & Sour Soup ($14) loaded with tofu, mushrooms, vegetables, vinegar, and a dash of chilli oil for a spicy kick. It was vinegary enough but left an aftertaste that didn't quite work for me.

ChopsuayCafeCNy25-21
Crispy Orange Kurobuta Pork 2.5/5

ChopsuayCafeCNy25-25
Taiwanese-Style Three Cup Beef Tenderloin 3/5

The menu offers a wide selection of mains. The Crispy Orange Kurobuta Pork ($32), an elevated take on sweet and sour pork, delivered succulent pork morsels, but the overly thick and sweet sauce was overwhelming. The Taiwanese-Style Three Cup Beef Tenderloin offered a slightly more balanced flavour, though it leaned towards sweetness as well.

ChopsuayCafeCNy25-32
Steamed Whole Fish 3/5

The Steamed Whole Fish ($112) featured the Catch of the Day, classic with crispy ginger, julienned scallions, and premium soy sauce.

ChopsuayCafeCNy25-29
Steamed Free-Range Chicken with Herbs & Hua Tiao Wine 4/5

The Steamed Free-Range Chicken with Herbs & Hua Tiao Wine ($36) was simple but delivered light and comforting flavours with aromatic herbs and the depth of premium Hua Tiao wine. This homely dish, reminiscent of chicken soup, was particularly memorable.

ChopsuayCafeCNy25-40
Wok Breath Fried Hor Fun 3/5

ChopsuayCafeCNy25-28
Lobster Fried Rice 3/5

Classic dishes like the Wok Breath Fried Hor Fun with Fish ($26) impressed me with a decent amount of wok hei, though the fish slices were rather bland. The Lobster Fried Rice ($42) featured chunks of lobster and boasted distinct grains and flavorful notes from cai po and garlic, but the unexpected sweetness overshadowed its savoury profile.

ChopsuayCafeCNy25-36
Stir-Fried Crunchy Leafy Greens 4.5/5

Stir-Fried Crunchy Leafy Greens ($16) featured a mix of Chinese kale and mini chard that were just given a quick sauté with fried garlic cloves, white pepper, and rice wine, preserving the freshness of the greens.

ChopsuayCafeCNy25-46
Golden Pineapple Tart 3.5/5

The Lunar New Year-themed menu features a special cocktail and a dessert — the Golden Prosperity Punch ($20) and Golden Pineapple Tart ($18).

ChopsuayCafeCNy25-3

ChopsuayCafeCNy25-49

The Joyous Reunion Set Menu ($138++ per pax) is designed for groups with a minimum of four pax, includes three delectable starters, a comforting soup dish, and three seasonal main dishes, all served with a side of vegetables and your choice of rice or noodles. A specially curated vegetarian menu is also available.

Cafe Oriental @ Amara Singapore - Celebrates The Rich Culinary Heritage of Singapore With “Local Legends”

IMG_0063

Amara Singapore celebrates the rich culinary heritage of Singapore with its new "Local Legends" series, which will launch in January 2025 at Café Oriental. This initiative features collaborations with celebrated chefs and iconic dining institutions, with each installment highlighting unique culinary traditions through a showcase of their heritage recipes and signature flavours.

IMG_0059

The series debuts with home chef Christina Hunter of Hunter's Kitchen (@hunterskitchensg). Originally from Ketapang in West Borneo, Christina is known for her authentic Indonesian cuisine, which is often imbued with subtle influences from her Teochew-Peranakan heritage. Her private dinners and curated menus consistently sell out.

IMG_0002
Sambals and Kerupuk

IMG_0010
Sambal Mangga

The semi-buffet spread showcases a selection of Christina's homemade sambals and kerupuk (chilli pastes and crackers). The sambals were particularly captivating with their bold and punchy flavours. The Sambal Mangga, crafted from young mango, stood out with its tangy profile, while the lesser-seen Sambal Terong, made with eggplant, delivered a robust and spicy kick. In fact, they were all addictive.

IMG_0052
Lontong 5/5

Hunter's signature Lontong elevated this humble dish to a new level. My bowl was topped with tender Opor Chicken, Sambal Goreng Beef Petai, and Balado Quail Eggs. The homemade compressed rice cakes were perfectly textured — firm yet tender — and paired harmoniously with the well-braised vegetables in a light coconut milk gravy, creating a comforting and flavourful combination.

IMG_0068
Asam Garam Sotong 4/5

For the main course, diners had two set options. Set One offered a choice between Suak Chui Koi (chilli chicken) and Asam Garam Sotong (squid cooked with tamarind), while Set Two featured Rawon Beef, a Javanese-style beef stew infused with keluak nut. I opted for the Asam Garam Sotong, which was perfectly cooked and coated in a punchy gravy. The dish was accompanied by Nasi Liwet, aromatic rice cooked in coconut milk and spices, along with Sayur Lodeh Tauco, Balinese omelette, Tempe Orek Ikan Bilis, and Bakwan Jagung. The rice was particularly noteworthy, adding an irresistible, aromatic richness to the plate. The crunchy bits of the Tempe Orek Ikan Bilis were a tad saltish, but they added another layer of aroma and flavour to each bite.

IMG_0088
Pisang Goreng 4/5

IMG_0090
Es Teler 2.5/5

The desserts featured were Pisang Goreng and Es Teler. The Pisang Goreng offered the satisfying contrast of sweet, creamy banana encased in hot, crispy batter. However, the Es Teler — a chilled dessert of mixed fruits and coconut — was slightly lacklustre.

IMG_9995

The next installation of Local Legends will feature a collaboration with acclaimed Chef Damian D'Silva of Rempapa in March 2025, highlighting Singapore Heritage cuisine. More exciting collaborations will be unveiled throughout 2025.

Reservations for Local Legends - Cafe Oriental x Hunter’s Kitchen can be made at https://reserve.oddle.me/en_SG/amarasingapore/ticket/5744. For two days only on 16 and 17 January 2025, Christina will tantalise diners with a semi-buffet dinner, priced at S$108++ per person, limited to 50 reservations per day.
