Wild Supper Club Private Dining, Focusing on Pescatarian and Vegetarian Menu

We kick-started our pescatarian dinner with the Aged Hamachi & Apple Tart. The aged hamachi is delicately paired with apple, roasted tomato, and Ipoh pomelo, dressed in a light vinaigrette and topped with fresh chives. Served in a crispy tart shell, each bite bursts with flavour, balancing the clean-tasting fish with bright acidity and crunch.

Next came the Artichoke & Spinach Dip, accompanied by baked pita chips. Creamy, luscious, and downright addictive, the dip was a crowd favourite. It is rich in flavour yet not overly heavy, and the warm pita chips make the perfect vessel for scooping up every bit of that goodness.

The Pickled Mushroom Croquettes were deep-fried to a perfect golden brown. It is crispy on the outside, packed with umami on the inside, and beautifully complemented by a fragrant basil and parsley coulis. A simple but expertly executed dish that hits all the right notes.

A surprise standout of the evening was the Baked Pear Empanadas served with parsnip foam and rosemary oil. The sweetness of the pear, encased in a buttery, flaky pastry, was unexpectedly delightful. While empanadas are often savoury, this sweet interpretation worked beautifully and charmed everyone at the table.

The Hokkaido Scallop & Ikura Ceviche atop Squid Ink Crème Brûlée is an inventive creation that impressed both visually and texturally. The contrast between the fresh, briny ceviche and the smooth, slightly savoury crème brûlée made for a playful and memorable dish.

For our main, we had the Halibut, pan-seared to perfection with a lightly crisped exterior and tender, moist flesh. It is a wholesome, well-balanced dish that seamlessly combines Southeast Asian and Mediterranean influences.

To accompany the main, we had two vegetable sides: Broccolini dressed with shaved grey mullet roe, Persian feta cheese, and chilli jam. It is a perfect blend of saltiness and heat. The Heirloom Carrots served atop smoked eggplant dhal with coriander chutney, showcasing layers of earthy and smoky flavours.

Dessert began on a light note with a Yoghurt Cheesecake topped with Lemon & Thyme Curd, served in a Black Sesame Cone. Tangy, refreshing, and not too sweet, it provided a smooth transition from the savoury dishes.

We ended our meal with the Pistachio Cake crowned with Raspberry Relish and Vanilla Chantilly. Moist, nutty, and well-balanced, the pistachio flavour shone through beautifully without being overshadowed by the sweetness. It is a fitting finale to a delightful evening.

Casa Vostra @ JEM - Bringing Its Heartfelt Italian Fare to the West

If you’ve ever been to Raffles City, chances are you’ve noticed the ever-long snaking queue outside Casa Vostra. The good news for Westies! The beloved Italian eatery has opened its second outlet at JEM, marking a new chapter for fans of its signature pizzas and handmade pastas. The new outlet seats up to 80 guests, approximately 30% more than its Raffles City flagship, offering a more spacious dining experience with outlet-exclusive dishes, a kid-friendly menu, and even some family-friendly activities thrown in.

Carnivora Pizza 4/5

Exclusive to the JEM outlet, the Carnivora ($28) is a hearty indulgence that will satisfy any meat lover. Built on a San Marzano tomato base, the pizza is topped with creamy Fiordilatte, Mortadella, prosciutto, spicy salame, porchetta, and Pepperone Crusco (a traditional sweet pepper from Italy’s Basilicata region, sun-dried and lightly fried). The result is a beautifully layered pizza that is savoury, smoky, and subtly sweet, with the crispy pepper adding an aromatic crunch.

Polpette alla Fonduta 3.5/5

Another JEM-exclusive, the Polpette alla Fonduta ($16) features well-seasoned beef meatballs that are fried to a nice crust, paired with a creamy Taleggio fondue that lends a rich, cheesy flavour. While the fondue adds decadence, the dish could use a bit more punch or contrast to balance its heavy notes. For those who enjoy an extra touch of luxury, you can add truffle oil for an additional $10.

Agnolotti all’Anatra in Brodo 4/5

The Agnolotti all’Anatra in Brodo ($28) showcases Casa Vostra’s finesse with handmade pasta. Each delicate parcel is filled with roasted duck and served in a deeply flavoured consommé made from the same bird. The broth is light yet flavourful, complementing the al dente pasta. It’s a comforting dish that highlights Italian simplicity at its best.

Coppa al Pistachio 4.5/5

For dessert, the Coppa al Pistachio ($14) is an absolute must-try. The combination of creamy pistachio gelato, crunchy nuts, and fluffy whipped cream makes for a delightful, nutty finale. It’s indulgent yet balanced. It is the kind of dessert you’d happily return for.

Adding to the fun, the JEM outlet also introduces a Casa Claw Machine from 3 Oct to 2 Nov 2025. Spend $100 per table to earn one sure-win play. Prizes include pizza plushies, vouchers for complimentary panna cotta, or iced teas and coffees for your next visit. VUE @ OUE Bayfront - New Summer Menu Featuring 2GR Australian Full-Blood Wagyu

Nestled atop OUE Bayfront, VUE continues to impress with its scenic views and elegant French-Asian cuisine. I recently returned to experience their newly launched Summer Menu, spotlighting the exceptional 2GR Australian Full-Blood Wagyu. We had the 4-course prix fixe menu priced at $168++, with optional upgrades available throughout the meal.

Our evening began with warm, house-baked bread served alongside olive oil and aged balsamic vinegar, a simple yet comforting start that set the tone for the meal to come.

2GR Beef Carpaccio (add $12) 4.8/5

I couldn’t resist starting with the 2GR Beef Carpaccio, and it was every bit as indulgent as expected. Delicate slices of richly marbled wagyu melted in the mouth, enhanced with earthy Manjimup truffle, creamy stracciatella, and generous shavings of parmigiana. A dish that lets the premium quality of the beef shine through with finesse.

Heirloom Tomatoes 4.5/5

For a lighter option, my dining companion selected the Heirloom Tomatoes. Naturally sweet and juicy, the tomatoes were complemented beautifully by smoked burrata, tonburi (a Japanese plant seed often called "land caviar"), black olives, and a refreshing mozzarella sorbet that added an unexpected but delightful brightness.

I opted for the Premium Risotto, a decadent creation that combined tender 2GR beef tongue with Perigord foie gras and a luxurious topping of Oscietra caviar. Each bite was rich, creamy, and intensely flavourful, showcasing an indulgent balance of textures and umami.

My companion chose the Signature Uni Risotto, which substituted traditional risotto with Japanese multigrain rice, offering a nuttier, more textured mouthfeel. The dish, featuring Hokkaido sea urchin, uni foam, and parmigiano, delivered a briny, oceanic freshness, satisfying yet delicate.

The highlight of the evening was undoubtedly the 2GR Beef Trio, an expertly grilled plate featuring three cuts: striploin, oyster blade, and beef cheek. Each showcased a different facet of the wagyu's richness and tenderness, offering variety in both flavour and texture. It is a must-order for beef lovers.

Spanish Lubina 4.2/5

For something different, we tried the Spanish Lubina (sea bass). The fish is dry-aged to deepen its natural flavours and coated with Dukkah spices for a nutty, aromatic crust. Finished with a bright tomato fondue, the dish was clean, elegant, and full of Mediterranean flair.

Strawberry Osmanthus 4.5/5

To end the meal on a refreshing note, the Strawberry Osmanthus featured layers of genoise sponge, rhubarb marmalade, and a light yoghurt sorbet. Delicately floral and not overly sweet, it was the perfect palate cleanser.

Pistachio Apricot 4.5/5

For a richer finish, the Pistachio Apricot dessert paired Sicilian pistachio ice cream with a tangy apricot compote, all topped with crispy brown butter kataifi. It was a harmonious blend of creamy, nutty, and tart.

As expected in a fine dining experience, we concluded with a lovely selection of petit fours.
For those looking to enjoy VUE at a more accessible price point, take advantage of their Sunset Dinner (5:30pm–7:30pm) or Late Night Dinner (9:30pm onwards) promotions. The 3-course menu is priced at $88 (U.P. $128), and the 4-course at $128 (U.P. $168), offering excellent value for the experience and quality on offer.

Maison Boulud @ Marina Bay Sands - New Executive Set Lunch Featuring Classic and Rustic French Dishes

Maison Boulud at Marina Bay Sands has recently refreshed its menu to pay greater homage to Chef Daniel Boulud's culinary philosophy. Diners can now experience more classic and rustic French dishes, prepared with seasonal ingredients. Alongside this, a new Executive Set Lunch Menu changes every few weeks.

Beets & Burrata 4.5/5

We started with two excellent appetisers — Beets & Burrata and Pâté en Croûte. The Beets & Burrata combined a milky, pillowy burrata with earthy, tart beets, sprinkled with toasted hazelnuts that added a delightful textural crunch and nutty flavour. The pairing with haricots verts was particularly interesting, echoing the freshness of the dish with crisp, snappy textures.

Pâté en Croûte 4.5/5

The Pâté en Croûte was delectable, featuring a blend of Iberico pork, foie gras Armagnac, apricot, and pistachio. I especially enjoyed the defined chunk of foie gras Armagnac embedded within the pâté — it boosted the mouthfeel with a creamy richness and released alluring notes of Armagnac in every bite, complemented by occasional crunches of pistachio and sweet apricot bites.

Sea Trout 4.2/5

For mains, the Sea Trout was simple but delightful just as much. Served with finely shredded Brussels sprouts, the fish was fatty, tender, and had a beautifully seared, crispy skin. A savoury lemon chicken jus further elevated its naturally robust flavour.

Coq Au Vin 4.2/5

The Coq Au Vin featured red wine-braised free-range chicken, served with chunky bacon, mushrooms, and gnocchi. The chicken had been braised overnight in a rich port and red wine concoction, resulting in a bold, intensely flavoured, beautiful reduction. A slight caramelisation on the chicken added another layer of complexity, while the mushrooms had thoroughly absorbed the richness of the sauce. The chunky bacon contributed smoky and savoury notes that rounded out the dish.

Citron Pistache 4.5/5

For dessert, we selected the Duo of Artisanal Cheeses and Citron Pistache. I appreciated the inclusion of a cheese course — the cheeses were served with pickles, a raisin spread, and raisin toasts. Citron Pistache was perhaps the more exciting choice: a dome spiked with nutty Sicilian pistachio Chantilly and crunchy meringue, encasing a tangy lemon gel and ricotta gelato.

Madeleines

As a thoughtful gesture from the team, we were also treated to a serving of truly delicious petite Madeleines at the end of the meal — possibly the best I've had thus far. Warm and fluffy, each bite felt like a smile to the belly, ending the dining experience on a wonderfully comforting note

Pxza Private Dining - An Epic 12 Pizza Dining Experience Comprising of Classic and Contemporary Flavours

In August 2024, we visited Pxza Private Dining, a hidden gem that offers a unique twist on the private dining pizza scene. Unlike traditional spots, Pxza crafts a mix of both classic and inventive pizzas, delivering a memorable feast in a cosy and intimate setting.

Our meal began with a platter of Grilled Zucchini, Grilled Capsicum, Cheese, and Olive, a refreshing and flavourful starter that set the tone for the pizza feast to come.

The Garlic Pizza was an aromatic delight, featuring three variations of garlic: fresh, dehydrated, and slow-roasted. Topped with parmigiano reggiano shavings, each bite was bursting with rich, garlicky goodness and a beautifully savoury finish.

The Marinara Pizza paid homage to its Neapolitan roots with a simple yet bold combination of tomato sauce, garlic confit, oregano, and Parmigiano. Its rustic flavours and fresh ingredients highlighted the beauty of simplicity.

Next, the Margherita Pizza showcased the classic trio of tomato, mozzarella, and basil — a nod to the colours of the Italian flag. Known for its elegance and minimalism, this pizza delivered the fresh, authentic flavours that make it a timeless favourite.

One of the more inventive offerings was the Pestacchio Pizza, featuring homemade pistachio pesto, fior di latte, and parmigiano. The nutty, creamy pesto paired perfectly with the cheese, creating a unique, unexpected, and delicious combination.

The Burrata Pizza elevated the traditional tomato base with the addition of creamy burrata, fresh basil, Maldon salt, and white balsamic. It was a luxurious take on the Margherita, with rich flavours that felt indulgent yet balanced.

The Vongole Pizza was a standout. Topped with white clams, garlic confit, parmigiano, and a touch of lemon zest, it delivered a fresh, briny flavour reminiscent of a classic Italian seafood pasta. It was easily one of the night's highlights.

Another creative offering was the Miso Eggplant Pizza, where miso-glazed eggplant and nori flakes met a drizzle of sesame oil. The Japanese-inspired flavours worked harmoniously, creating a savoury, umami-packed dish.
