Perched atop OUE Bayfront, VUE continues to impress with its refined modern European cuisine and stunning skyline views. Elevating the weekend dining scene, the restaurant has launched a new Weekend Lunch Set Menu, thoughtfully curated with a choice of four ($108++) or five courses ($128++). Each dish reflects a careful balance of artistry and finesse, culminating in a delightful finale of free-flow desserts from its signature trolley.

As with every visit, the meal began on a high note with the restaurant's complimentary milk buns. Soft, pillowy and lightly sweet, they were perfect when paired with olive oil and balsamic vinegar. It's one of those addictive starters that inevitably leads to a second helping, and understandably so.

We started our lunch with the cold appetisers, in which the 42-Month Aged Jamón Iberico delivered a deeply savoury, complex flavour profile. The long curing process lends the ham its signature intensity and nutty undertones, complemented beautifully by sweet Charentais melon. Paired with the La Coca toast, a thin, crisp Spanish flatbread, provided a delightful textural contrast, allowing the richness of the ham to shine.

The Heirloom Tomatoes offered a lighter yet equally satisfying alternative. Naturally sweet and juicy heirloom tomatoes were paired with smoked burrata, creating a luscious creamy contrast. The inclusion of tonburi, often referred to as "land caviar," added a subtle popping texture, while black olives introduced a gentle briny depth, tying the dish together harmoniously.

Moving on to the hot appetisers, the Wild Caught Scallop stood out for its precision in execution. The wild caught scallop was pan-seared to a perfect golden crust while retaining a tender, succulent interior. Its natural sweetness was elevated by the luxurious topping of Osetra caviar, while the white chocolate miso emulsion added an unexpected yet balanced layer of sweetness and umami. The sautéed spring peas lent freshness and a slight crunch, rounding off the dish elegantly.

In contrast, the Grilled Baby Gem Lettuce showcased the restaurant's mastery of binchōtan grilling. The lightly charred outer leaves carried a gentle smokiness, while the inner core remained crisp and refreshing. The dish was brightened with an orange tahini dressing, complemented by feta cheese, walnuts and a Parmesan crisp. It delivered a pleasing interplay of smoky, creamy and crunchy textures.

For the risotto course, both options impressed with their depth of flavour and execution. The Wild Forest Mushroom Risotto was a comforting, earthy masterpiece. Made with a medley of premium mushrooms, including porcini and chestnut, the dish exuded deep umami richness. Each grain of rice retained a slight bite, coated in a creamy, velvety sauce enriched with aged Parmigiano Reggiano. The addition of truffle further enhanced its aromatic, woodsy profile.

Equally indulgent was the Signature Uni Risotto (+$12). This luxurious creation highlighted the briny sweetness of Hokkaido sea urchin, folded into a creamy emulsion that beautifully coated the Japanese multi-grain rice. The grains offered a subtle textural contrast, making each mouthful more dynamic. The uni foam intensified the oceanic flavours, resulting in a deeply satisfying and decadent dish.

From the grill, the Spanish Octopus demonstrated VUE's expertise with binchōtan charcoal. The octopus was cooked to a perfect tenderness, with a slight char that imparted a smoky depth without overpowering its natural sweetness. Accompanied by grilled baby gem lettuce, semi-dried tomatoes, and a pistachio chimichurri, the dish was well balanced, with the nutty, herbaceous sauce elevating the overall profile.

Stoneaxe Wagyu Rump Cap MBS 8-9 4.5/5

For the mains, the Stone Axe Wagyu Rump Cap MBS 8-9 (+$15) was a highlight for meat lovers. Also known as picanha, the cut is prized for its rich flavour and luscious fat cap, which renders beautifully over the grill. Simply seasoned to let the beef's quality shine, the meat was juicy, tender and deeply flavourful. Served with truffle mashed potatoes and heirloom cauliflower, the accompaniments complemented without overshadowing the star ingredient.

Ending the meal on a sweet note, the Dessert Trolley remains a signature draw of the weekend lunch experience. Presented tableside, it offers an enticing selection of bite-sized and plated desserts that change with the seasons. From delicate pastries to indulgent sweets, the free-flow format allows diners to sample a variety of creations, making for a playful and satisfying finale.

Overall, VUE's Weekend Lunch Set Menu delivers a well-paced and thoughtfully executed dining experience. With its combination of quality ingredients, refined techniques and indulgent touches like the dessert trolley, it is an excellent choice for a leisurely weekend indulgence in the heart of the city.

Set within the stylish enclave of Artyzen Singapore, Cafe Quenino introduces a refreshed dining concept that reimagines Singapore's beloved "tze char" culture in a contemporary Orchard setting. Anchored by the philosophy of "tze char comfort for today's table" and a communal format of "plates for the table, shared your way", the experience encourages diners to curate their own feast from a diverse menu of Southeast Asian flavours.

The ordering format is straightforward and convivial. Guests can choose from 3, 5, or 7 plates, paired with sides depending on the selected tier — much like ordering a spread at a traditional tze char establishment. Dishes span starters, mains, larger plates and desserts, all designed for sharing in the middle of the table.

Another starter, the King Salmon Sashimi, impressed with its generous portion and quality. The salmon was fresh and buttery, elevated by chilli and black bean accents, while a squeeze of calamansi added a zesty lift that brought the dish together beautifully.

The French Fries with Aioli turned out to be a standout — crisp on the outside, fluffy within, and highly addictive. The Garlic Roasted Baby Potato with Curry Leaves offered a more aromatic alternative, with earthy notes enhanced by the fragrance of curry leaves.

Coconut Pandan Burnt Cheesecake 3.8/5

The meal ended with the Coconut Pandan Burnt Cheesecake, a localised take on the classic dessert. Infused with pandan and accompanied by coconut whipped cream and grated coconut gula melaka, it delivered familiar flavours. However, the texture leaned denser than expected, lacking the molten centre that would have elevated the indulgence.

Overall, the new concept at Cafe Quenino successfully captures the essence of communal tze char dining while presenting it in a polished, modern format. The flexibility to mix and match dishes across categories makes it an appealing option for groups, offering both variety and a sense of familiarity with a contemporary twist.

Jellyfish Sushi (within Artichoke) @ New Bahru - Sushi Swims Freely Beyond Any Bounds

Hidden within Artichoke, Jellyfish Sushi is a quietly confident counter that pushes the idea of bread sushi into a more focused, sushi-adjacent direction. It is the older sibling to Small, another concept by Chef Bjorn Shen tucked away in the same space. Both share the same bloodline — intimate, experimental, and unmistakably original — but where Small is freeform and confrontational, Jellyfish Sushi is deliberately restrained. The emphasis here is on the purity of fish and flavour, staying firmly in a sushi-like lane while exploring what sushi can become when bread replaces rice.

With just ten seats, Jellyfish Sushi offers an intentionally intimate counter experience where each course unfolds at its own pace. Priced at $165++ per person, the tasting menu runs up to 12 courses and evolves every few months, with each iteration reinterpreting the bread sushi concept through different cuisines and cultural lenses. This is also where the lineage from Small becomes evident — experimental yet with a clearer sense of structure and restraint.

Trio of Appetisers 4/5

The 12-course dinner opens with a Trio of Appetisers that gently sets the tone. Hiroshima Oysters in Chilled Minestrone Dashi is refreshing and light, whetting the appetite with dashi-poached oysters wrapped in spinach and paired with diced leek, zucchini, and celeriac, finished in a chilled tomato-infused dashi. Salmon Maki-No-Rice follows — a rice-less salmon roll built with roe, avocado, fennel, and shikuwasa. Served atop a creamy sauce of avocado, salmon roe, chopped pickles, fennel, and Okinawan citrus, it is bright, clean, and quietly playful. Completing the trio is Grilled Anago. The saltwater conger eel, sautéed in garlic and olive oil, offers a delightful crunch that contrasts with its inherent richness.

The bread sushi journey begins with Shime Saba & Stracciatella. Salt-cured and plum-vinegar-pickled mackerel is layered with salted zucchini, stracciatella cheese, and wasabi mayo, then encased in bread and served as a hand roll with nori. The bread is brushed with white and rose balsamic vinegar to mimic the acidity of sushi rice. The result feels almost tapas-like, evoking the casual elegance of Spain while retaining Japanese sensibilities.

Kanpachi & Salted Lettuce is an unconventional pairing that works seamlessly. Soy and wasabi marinated amberjack sits atop salted lettuce dressed with smoked vinegar, served on the lower half of the bread for a spongier crumb and firmer crunch. Pickled mustard seeds add subtle pops of acidity.

Madai Carpaccio & Pistachio leans into finesse. Thinly sliced red sea bream, prepared using the kombujime technique, is dressed with garlic oil, spring onions, rocket, myoga, pickled ginger, sesame seeds, and lemon zest. Tossed with rocket leaves and pistachio pesto, it is served on the top crust of the bread for a softer, fluffier mouthfeel. It is delicate, aromatic, and beautifully balanced.

Have a Break with Heirloom Tomato 4/5

A brief pause comes in the form of Heirloom Tomato with Firefly Squid. Cherry tomatoes, peeled and pickled for three days in umeboshi, Japanese vinegar, and sugar, are sweet and tangy, refreshing the palate before the richer courses that follow.

Next, we had the Nagasaki Blue Fin Tuna in three different cuts, starting with the Akami. Negitoro, made with finely chopped tuna and leek, is served on the "rib" or side crust of the bread for added crunch. Presented as a hand-roll wrapped in nori.

Next is Chutoro, where cubed medium-fatty tuna is paired with avocado and underripe green tomato, dressed with soy sauce and wasabi. Presented in a bara-chirashi style over a crisp monaka wafer, it offers contrast in both texture and temperature.

The highlight, however, is the Otoro. Lightly seared and topped with garlic chives marinated in soy sauce, it is served on the bottom crust of the bread. Rich, indulgent, and deeply satisfying, it stands out as the most memorable of the trio.

A surprising detour comes with Wakame Ramen from Awaji Island, served with two dipping sauces — Roasted Saba Tsuyu and Cold Asari Clam Potage, alongside shredded spring onions and wasabi. While the flavours are interesting, the noodle texture is slightly firm; a softer, more slurpable bite would have been my preference.

Dessert closes the meal on a gentle note. Matcha Pudding with Warabi Jelly and Okinawa Black Sugar layers earthy matcha with a delicate warabi jelly sheet, finished with Okinawan black sugar syrup and nishiki goma. It is understated, comforting, and a fitting end to a thoughtfully curated experience.

Jellyfish Sushi is a compelling evolution of the bread sushi idea. It is less confrontational than its sibling, but no less creative. By focusing on restraint, balance, and ingredient integrity, it offers a dining experience that feels both experimental and quietly assured, rewarding diners who appreciate nuance over spectacle.

Recently, I made a return visit to Cavern Restaurant at Rainforest Wild Asia for dinner. Since my previous trip during its opening, the restaurant has refreshed its menu, introducing new dishes and refined flavours that made this revisit worthwhile.

We began the meal with the Prawn Cocktail ($16 for 3pc). Each prawn sits atop lettuce, paired with sriracha mayo, pomelo, and crispy cucumber, creating a refreshing starter that combines sweet, spicy, tangy, and crunchy elements. It’s a simple dish, but one that delivers a satisfying multi-sensorial play of flavours and textures.

Cavern also boasts a beautiful bar, so we explored a couple of their beverages. Berry Good Time ($16) is a lively blend of mixed berries, mint, lime juice and soda. It is bright, fruity, and perfectly fizzy. The Ginger Slammer ($23), made with tequila blanco, ginger syrup, lime juice, and soda water, is bold and zesty, with a spicy kick from the ginger. Both drinks bring refreshing profiles that pair well with the rainforest setting.

The XO Burrata with Heirloom Tomato ($22) stands out for its unique Asian twist. The pairing of XO sauce and chilli oil with creamy burrata may sound unconventional, but it works, similar to the sambal-burrata combination I’ve tried at One Prawn Co. The result is creamy, savoury, slightly spicy and well-balanced, with the tomatoes adding a sweet finishing lift.

The Clam Vongole ($24) arrives with perfectly cooked tagliatelle accompanied by juicy asari clams, chilli padi, parsley, chives, garlic, and white wine. The pasta is al dente and full of flavour from the sweet clams. The addition of chilli padi gives it a punchy lift. One puzzling detail: the dish comes with a white wine broth, which isn’t typical as vongole is usually served dry. Still, the flavours are enjoyable.

The Rocher ($16) is a visually appealing dessert of dark chocolate ice cream, hazelnut cream, and hazelnut pieces. Rich, nutty, and texturally layered, it is a well-crafted sweet finish to the meal.

This second visit to Cavern Restaurant proved even more enjoyable than the first, thanks to its refreshed menu and creative flavour pairings. From starters to desserts, the dishes feel more confident and refined. Paired with its cavern-inspired interior, textured stone elements, and an intimate, cave-like ambience, Cavern offers a cosy, immersive dining experience that makes it even more memorable.

Nestled atop OUE Bayfront, VUE continues to impress with its scenic views and elegant French-Asian cuisine. I recently returned to experience their newly launched Summer Menu, spotlighting the exceptional 2GR Australian Full-Blood Wagyu. We had the 4-course prix fixe menu priced at $168++, with optional upgrades available throughout the meal.

Our evening began with warm, house-baked bread served alongside olive oil and aged balsamic vinegar, a simple yet comforting start that set the tone for the meal to come.

I couldn’t resist starting with the 2GR Beef Carpaccio, and it was every bit as indulgent as expected. Delicate slices of richly marbled wagyu melted in the mouth, enhanced with earthy Manjimup truffle, creamy stracciatella, and generous shavings of parmigiana. A dish that lets the premium quality of the beef shine through with finesse.

For a lighter option, my dining companion selected the Heirloom Tomatoes. Naturally sweet and juicy, the tomatoes were complemented beautifully by smoked burrata, tonburi (a Japanese plant seed often called "land caviar"), black olives, and a refreshing mozzarella sorbet that added an unexpected but delightful brightness.
