Convivio Weekend Brunch 4.5/5

“Convivio” means “feast” in Italian and refers to a lively, communal dining experience. In this unique brunch concept, diners can choose one of six mains, complemented by an extensive spread featuring a fresh seafood bar, a cheese trolley, and decadent desserts. The brunch is priced at $78 per adult and $39 per child (ages 6 to 12), with a $48 top-up for free-flowing prosecco, Aperol Spritz, and red and white wine.

Composed Salads

The Composed Salads selection rotates weekly. During our visit, the standouts were the Duy Pu Lentil (with sun-dried tomatoes, artichokes, olives and lemon dressing) and the Octopus salad (with fingerling potatoes, capers and citrus). Both were lightly seasoned and refreshing.

Cheese Trolley

Fresh Cheese

Cheese lovers will appreciate the Cheese Trolley, which showcases impressive house-marinated cheeses paired with condiments, alongside a Fresh Cheese selection featuring Buffalo Mozzarella, Giuncata with Citrus Zest, Pesto-infused Burrata and our favourite, the Truffle-infused Ricotta.

Lasagne

Do not miss the Lasagne station, offering three variations: Salmon, Bolognese and Mushroom. Each was generously layered, cheesy and moist, making them all equally satisfying.

For mains, each diner can choose one of six options, including Braised Wagyu Beef Cheek, Burrata Ravioli, Grilled Swordfish, Slow-Cooked Baby Chicken, Baby Octopus Rigatoni and Pinsa Romana.

Burrata Ravioli

One of One-Ninety’s signatures, the Burrata Ravioli is topped with Parmigiano Reggiano foam and black truffle. This was excellent, with each ravioli perfectly cooked and filled.

IMG_2363
Grilled Swordfish

The quality of the fish shone through in the Grilled Swordfish. It was firm and meaty yet remained succulent, with a subtle natural sweetness. The pairing of grilled green asparagus and balsamic-marinated tomato sauce added brightness to the dish.

IMG_2330
Dessert Table

We were spoiled for choice at the Dessert Table, which featured indulgent favourites such as Tiramisu Cake, Vanilla Panna Cotta, Cannoli, Bronte Pistachio Tart and assorted chocolate bon bons. The classic Tiramisu Cake and Bronte Pistachio Tart stood out as our favourites.

Gyu San Charcoal Bar @ The Forum Shopping Mall - First-of-its-Kind Grilled Wagyu Japanese Hamburg Over Binchotan Grill

GyuSanCharcoalBar2

Gyu San Charcoal Bar, a first-of-its-kind concept in Orchard, promises a compelling gastronomic experience centered around grilled wagyu Japanese hamburgs. This unique restaurant is located in The Forum Shopping Mall and features an open-concept island charcoal bar. The wagyu hamburgs are skillfully crafted from ball to patty right before your eyes and then cooked to perfection over binchotan charcoal.

Baby Corn

Opting for the Gyu San Hamburg Set ($23.80), we were treated to two succulent wagyu patties weighing 90g each. Accompanying the hamburgs were a refreshing Green Salad, free-flow Niigata Japanese Premium Rice, and free-flow Miso Soup. To enhance our dining experience, we also indulged in a variety of sides, such as asparagus, shiitake mushrooms, kabocha, shishito peppers, enoki mushrooms with beef, and baby corn. For those seeking an even heartier feast, additional wagyu patties can be added for $8.50 each.

GyuSanCharcoalBar23

The rice served at Gyu San Charcoal Bar is exclusively harvested from Uonuma City in Niigata. Known as top-grade Koshihikari rice, it boasts a fluffy texture and natural sweetness that perfectly complements the savoury hamburg steaks. We decided to elevate our meal further by adding an onsen egg, adding a delightful layer of creaminess and helped bind all the flavours together.

GyuSanCharcoalBar10

When it comes to savouring the hamburg patties, there are two options. The first is to relish the beef's pure, unadulterated flavour by enjoying the patty on its own. Alternatively, the second patty can be savoured with any combination of the eight different accompaniments, allowing for a personalized gastronomic adventure. These accompaniments include traditional yuzu kosho, taberu rayu, sambal, shio lemon, garlic chips, kimchi, garlic confit, and chimichurri.

Pickled Cherry Tomato

In addition to the hamburgs, Gyu San Charcoal Bar offers a selection of delectable sides. The Chawanmushi, a savoury steamed egg custard, provides a comforting and velvety indulgence. Meanwhile, the chilled Pickled Cherry Tomatoes offer a delightful burst of sweetness and refreshment, making them an ideal accompaniment for a complete and satisfying meal.

GyusanCharcoalBarInterior-2

Gyu San Charcoal Bar presents an innovative and unforgettable dining experience for wagyu enthusiasts and food lovers alike. With its mastery of grilling techniques, thoughtfully curated accompaniments, and delightful sides, this establishment truly sets itself apart as a must-visit destination for a remarkable wagyu hamburg adventure.

White Marble @ Orchard Rendezvous Hotel - Chef Otto Weibei's Loving Tribute To The Mediterranean

WhiteMarble13

The newly opened White Marble restaurant at Orchard Rendezvous Hotel is a Mediterranean grill concept by Chef Otto Weibel, Singapore's grand doyen of Western gastronomy. The restaurant brings together the timeless flavours of the countries bordering the Mediterranean Sea. And in line with Chef Otto’s philosophy, dishes are prepared with fresh quality produce, using simple techniques that showcase the natural flavours at their vibrant best.

WhiteMarble1
Roasted Butternut Squash 4.2/5

Our dinner started with the Roasted Butternut Squash ($12++). The sweetness of the butternut squash is paired with chilli yoghurt and coriander salsa. It comes with a hint of spiciness from the chilli oil drizzled over the dish, finished with toasted sunflower seeds and seasonal herbs.

WhiteMarble4
Octopus 4/5

Following that, we have the Octopus ($36++). The charcoal-grilled Spanish octopus rests atop crispy potato and garlic cream. Pistachio crumbs are added for extra texture, while the chilli oil spiced up the taste profile.

WhiteMarble6
Fattouche 3/5

WhiteMarble8
Mezze Plate 3.5/5

The Mezze Plate ($34++) and Fattouche ($12++) are good for sharing. The platter comprises falafel, tabbouleh with quinoa, fattouche, eggplant moutabal, hummus, chicken skewers, and grilled pita. The platter draws inspiration from Chef Otto's trip to the Middle East, featuring dishes in the region such as Dubai, Lebaron and Egypt. A healthy take from the region is the Fattouche, a classic Levantine crunchy salad dressed in a refreshing lemon dressing.

WhiteMarble10
Chicken Leg Bone-in Tagine 4.5/5

Great to go with a plate of rice is the Chicken Leg Bone-in Tagine ($60++). The whole chicken leg is marinated with shawarma spice for a day, grilled and cooked with red onions in a tagine. It is a classic Moroccan stew held together by a delicious tomato sauce brightened with dates and preserved lemon.

WhiteMarble14
Prawn Bucatini Puttanesca $28++

My favourite dish for the night is the Prawn Bucatini Puttanesca ($28++). I love the pasta texture cooked in a classic Italian recipe with olive oil, mixed olives, tomatoes, capers and anchovies. It seems that many things were going on, but they came together harmoniously for a delicious finishing.

WhiteMarble16
Seafood and Australian Lamb Skewer 4/5

Not to be missed at White Marble is the charcoal-grilled Seafood Skewer ($38++ per skewer) and Australian Lamb Skewer ($48++ per skewer). The seafood skewer consists of octopus, white fish, prawns, and assorted vegetables. I prefer the Australian lamb skewer marinated in chermoula. It was juicy and tender. Three different sauces - lemon garlic cream, harissa aioli, and salbitxada are served to enjoy the seafood and meat.

WhiteMarble18
Crema Catalana 4.2/5

Unlike creme brulee, the difference is that Crema Catalana ($16++) is thickened with milk and cornstarch instead of cream. Freshly squeezed orange juice is added, zesting up the flavour profile. It is topped with torched orange segments, freeze-dried tangerines, candied orange peels and mint leaves.

WhiteMarble20
Fig & Almond 4/5

Another classic Spanish dessert is the Fig & Almond ($16++), a cold-pressed olive oil cake baked with fresh figs. It is paired with almond crumble for crunch and yoghurt ice cream for a sweet ending.
