Peppermint @ PARKROYAL COLLECTION Marina Bay - Bringing Vibrant Flavours of Korea to The Heart of Marina Bay

Back by popular demand, Seoul Good returns to Peppermint for a limited time from 6 June (Dinner) to 13 July 2025 (Lunch). This special edition of the halal-certified buffet brings the vibrant flavours of Korea to the heart of Marina Bay, curated by Chef de Cuisine Leon Yee and his talented team.

With nearly 40 dishes available, this Korean showcase celebrates the diversity and comfort of the country’s cuisine – from sizzling meats to soul-warming soups and vibrant street food. Here’s a taste of what to expect:

Banchans

You're greeted by an inviting spread of Banchan the moment you step in. The small plates included Kkakdugi (spicy pickled radish), Baechu Kimchi (fermented cabbage) and Gim Gui (roasted seaweed), offering a crunchy, tangy and savoury start to awaken your palate. It's a great way to sample a little bit of everything before moving on to the heavier dishes.

One of the most eye-catching stations was the Make-Your-Own Bibimbap. With colourful vegetables, marinated meats, and sauces, diners can customise their rice bowls to their liking, from classic gochujang to a drizzle of sesame oil for that authentic Korean touch.

Some standouts included the Korean Spicy Cheese & Corn Pizza – rich, creamy and satisfying with a hint of spice and the Haemul Pajeon (seafood pancake), which had a great crisp edge and generous bits of squid and prawns. The Japchae stir-fried sweet potato noodles were well-balanced with just the right amount of chew and umami.

Carnivores will be well-fed with the buffet’s generous spread of grilled and braised meats, including crowd favourites like Beef Galbi and Chicken Bulgogi. Two standout additions include Yang-Galbi, Korean-style lamb spare ribs that offer a rich, smoky bite and Kkorijjim, a deeply comforting dish of braised wagyu oxtail simmered until fork-tender. Each option is full of bold, savoury flavours and perfect for piling onto your plate or wrapping in lettuce for a satisfying ssam-style bite.

Of course, no Korean meal is complete without Korean Fried Chicken. Choose between Spicy and Garlic Soy or have both. Crispy, juicy and addictive, this was easily one of the most popular items at the buffet.

Beyond the showstoppers, there are several comforting dishes worth trying. The Tteokbokki with Fishcake – chewy rice cakes in a mildly spicy sauce, is a Korean street food staple that's always a crowd-pleaser.

At the live noodle station, they were serving up Jjamppong, a spicy seafood noodle soup that delivered a bold, punchy broth. However, the noodles were a touch too soft for our liking.

We also sampled the Samgyetang, a traditional ginseng chicken soup served with glutinous rice. It was mild in flavour but soothing and comforting.

Baesuk 1

While we didn’t spot many Korean-themed desserts, there was Baesuk (Korean pear soup), a refreshing end to the meal, although the strong cinnamon note might not appeal to everyone.

Whether you're a longtime fan of Korean cuisine or simply craving something different, Seoul Good at Peppermint delivers a delightful experience filled with comforting flavours, generous portions and value for money.

Oscar's @ Conrad Centennial Singapore - The Sea, Smoke & Spice New Themed Buffet Experience

Known for its generous spreads and lively live stations, Oscar's at Conrad Singapore Marina Bay presents two new themed dinner experiences: The Sea, Smoke & Spice and Flavours of Yesteryear. Celebrating both the bold and the familiar, each theme invites diners to savour distinct culinary stories, from flame-kissed signatures to comforting heirloom recipes.

The evening begins with a refreshing taste of the sea. The Seafood Bar featuring freshly shucked Oysters, Slipper Lobsters, Mussels and Flower Crabs is not to be missed. We especially enjoyed the oysters that were sweet, plump, and incredibly fresh.

Jamon 2

A surprise highlight was the freshly sliced Jamón. We recommend pairing it with the sweet melon from the fruit section for a classic, satisfying combination.

Another standout for us was the Mushroom Risotto. Served with whipped Chantilly and sautéed mushrooms, it's finished in a dramatic Parmesan wheel. The al dente rice was creamy and well-seasoned, with rich, earthy mushroom notes that packed a punch.

For those who love deep, bold flavours, the Slow-Roasted Lamb Shoulder, infused with aromatic spices, was tender and juicy, with a savoury richness. The Chermoula Fish Pot featured flaky fish marinated in North African herbs and spices. Both dishes were flavourful, though potentially a little heavy for those with lighter palates.

The Oven-Roasted Marinated Angus Beef Striploin was a crowd-pleaser, especially when paired with the variety of sauces offered. We found the Pulled Beef Sliders to be a little dry, although the flavour came through well. The Marinated Spanish Octopus, served on a soft jacket potato with sour cream and olive oil, leaned salty. While the potato was beautifully cooked, crispy on the outside and soft within, we found it slightly overpowered the octopus.

The heart of the Sea, Smoke & Spice experience lies at the Live Charcoal BBQ. Smoky and sizzling from the grill:

• Sticky Australian Lamb Ribs
• Spice-rubbed Hanger Steak
• Kurobuta Pork Tomahawk
• Stuffed Portobello Mushrooms

Locally farmed Barramundi and Tara-marinated prawns grilled just right added a coastal flourish to the mix.

Tandoori 2

Right next to the BBQ, don’t miss the Sizzling Tandoori Delights. We loved the Tandoori Chicken and Seabass, and the Chukandari Paneer Tikka stood out for its bold seasoning. Pair everything with fresh naan bread for a complete experience.

Laksa 1

A must-have at Oscar’s: the Signature Seafood Laksa at the Live Noodles Station. Rich, creamy and comforting, served with tofu puff, prawns, fish cake and a quail egg.

To end on a sweet note, the buffet's dessert selection is a dream come true for strawberry lovers. Fresh strawberries shine across shortcakes, praline tarts, mousse domes, and the signature Strawberry Romanoff. The fruit's tartness and aroma cut through the savoury dishes with perfect balance.

Si Chuan Dou Hua Restaurant @ PARKROYAL on Beach Road - À La Carte Dim Sum Buffet Featuring Over 50 dishes

Si Chuan Dou Hua Restaurant at PARKROYAL on Beach Road has introduced an À La Carte Dim Sum Buffet featuring over 50 dishes, available from now till 31 August 2025. Guests can indulge in unlimited servings from an extensive menu, along with a platter of four premium creations limited to one serving per guest.

The Premium Creations platter comprises Steamed Prawn Dumpling with Bird's Nest, Steamed Pomegranate Seafood Dumpling, Steamed Mushroom Bun with Minced Chicken, and Steamed "Shao Mai" topped with Sea Urchin. While all three dumplings shared a similar taste profile despite the variations in ingredients, the Steamed Prawn Dumpling with Bird's Nest stood out. The Bird's Nest itself did not significantly elevate the flavour, but the dumpling had a more succulent and refined bite compared to the others.

We also tried four more dumplings. The Smoked Duck and Prawn Dumpling offered a pleasing smoky depth that differentiated it from a typical prawn dumpling, though the filling felt overly compact. The Crab Meat and Vegetable Dumpling leaned towards a generic seafood profile, but the flavour of the crab meat still came through.

Both the Black Pepper Minced Beef Dumpling and the Minced Meat Glutinous Rice Dumpling wrapped in Banana Leaf left a stronger impression. The former featured a paper-thin dough skin skillfully wrapped around a delicious minced beef filling, with the skin offering a satisfying bite. The latter was a delightful combination of sweet glutinous rice dough and savoury minced meat, further elevated by the fragrance of the banana leaf.

Among the pastries, the Radish Puff Pastry was a highlight. It had a thin, flaky crust encasing juicy radish, and the addition of white sesame seeds added a brilliant touch of aromatic nuttiness to each bite.

For soups, we tried the Hot and Sour Soup. Unfortunately, the level of heat was overwhelming.

The buffet also features Sichuan classics such as "Chong Qing" Diced Chicken with Dried Chilli and Fried Crispy Iberico Pork, both of which remain crowd favourites.

However, the Bean Curd in Spicy Minced Meat Sauce was surprisingly one-dimensional, lacking the signature numbing aroma of Sichuan pepper and missing the juiciness one would expect from the minced meat. The Stir-fried Prawn with Dried Chilli and Cashew Nut was more satisfying, with succulent prawns coated in a fragrant glaze.

From the Cantonese selections, the Sautéed Black Pepper Beef offered tender slices of beef packed with bold black pepper flavour. The Deep-fried Prawn with Wasabi was well-executed, featuring a creamy wasabi sauce that struck a well-balanced note without being overpowering.

To end the meal, we had Chilled Mango Sago and Herbal Jelly — simple yet refreshing desserts to sum up the dim sum experience.
