With Lunar New Year around the corner, Crystal Jade Culinary Concepts has curated an selection of befitting celebratory dishes for dine-in and takeaway, as well as sumptuous set menus perfect for festive feasting across its various fine and casual dining restaurants. I dropped by Crystal Jade Golden Palace (翡翠金阁) at Paragon to have a glimpse of their Chinese New Year offerings.

Garden of Wealth Lo Hei 4.2/5

For this year, Crystal Jade Golden Palace and Dining IN has introduced the the new Garden of Wealth Yu Sheng ($88 Small / $138 Large) featuring julienne carrot and turnip, various pickled items, lily pad-shaped nasturtium leaves, freeze-dried wolfberries, ice plant, wood sorrel red leaves and edible flowers. This is accompanied with an appetising sweet-tangy dressing with a touch of zingy finish from fresh lemon juice.

Hong Kong 'Wei-Village' Treasure Pot 4.2/5

Another new item on this year gourmet offering is the new Hong Kong 'Wei-Village' Treasure Pot ($338 Small / $498 Large), inspired by a version popularised in the area of Yuen Long in New Territories, Hong Kong. The celebratory dish comprises of 18 different items such as 8-head abalone, sea cucumber, homemade dace fish balls, prawn balls in tomato sauce, braised Chinese yam, lotus root, fish maw and braised pork among others. Different from the other pen cai is the spiced gravy and the aroma of toasted fennel seeds.

Abundance Abalone Treasure Pot 4.8/5

I personally prefer the more traditional Abundance Abalone Treasure Pot ($338 Small / $508 Large) for its richer and full-bodied thick sauce. In the hearty generous pot of wholesome goodness, you can find 8-headed abalone, sea cucumber, dried oyster, conpoy, black moss, pig trotter, prawn, mushrooms and others.

Deep Fried Dumpling with Prawn Bits and Assorted Vegetables 4.2/5

A delightful light bite is the Deep Fried Dumpling ($28 for 6pc). Besides the delicious stuffing of prawn bits and assorted vegetables, what stand out is the chewy texture of the dumpling skin.

Deep-fried Chicken coated with Black Bean, Garlic and Spice 4.2/5

Buried under a bed of fried minced garlic and black beans is the Deep-fried Chicken ($18.80 for half) coated with black bean, garlic and spice. Besides the flavoursome crispy skin, the chicken still retains a moist texture. The bed of fried minced garlic and black beans is definitely a good change to the usual chicken dishes served on the menu.

Teochew Style Longevity Poached Vermicelli with Scallop 4.8/5

I thought I would be too full to finish the Teochew Style Longevity Poached Vermicelli with Scallop ($18/pax) but I actually cleaned up the whole plate. The dish may be light in taste but its very appetising. I could not resist slurping down the silky vermicelli which is complemented excellently by the light and refreshing broth.

Lychee Sakura Flower Crystal Jelly 3.5/5

Ending the dinner is a light dessert, Lychee Sakura Flower Crystal Jelly. The sakura pink colour jelly is really adorable. It is actually quite bland in taste. You need to have it together with the lychee pops, bursting the lychee flavoured liquid within to better enjoy it.

In all Lunar New Year dinner,  a must-have is the Yu Sheng. We had the Cassia Signature Loh Hei ($38++ per pax) which consists of a vibrant mix of shredded vegetables and condiments. The propitious salad also comes with premium ingredients such as lobster, salmon and north pole clam. A homemade hawthorn sauce is pour over the yu sheng before tossing to an abundance and prosperity year ahead.

Double-boiled Thick Chicken Soup 4.2/5

The Double-Boiled Thick Chicken Soup is packed with rich flavour that has a lot of depth. Not only that, the comforting bowl of soup comes with premium ingredients such as sea cucumber, fish maw, duo of scallops and flower mushroom.

Wok-fried Prawns 4.2/5

The Wok-Fried Prawns stuffed with minced shrimp allows diner to enjoy the crustacean in two ways. What I appreciate more is the the use of crispy garlic, cook in Bi Fong Tong Style. This is a good change from the usual herbal, salted egg yolk and cereal prawn dishes.

Steamed Cod Fish with Black Garlic in Light Soya Sauce 4.5/5

Why I enjoyed the sweetness of the black garlic, as well as knowing its health benefit value, it is not the highlight of the Steamed Cod Fish with Black Garlic in Light Soya Sauce. Instead it was the yellow ginger sauce that gives live to the cod fish. The cod fish was also steamed to perfection. It was so moist and buttery that literally melted in the mouth.

Fried Rice with Mini Abalone and Preserved Chinese Sausages 5/5

Fried rice is a common dish that you can probably find in every Chinese restaurant menu but to get it right and made me go wow is quite hard. It is not until I tried the Fried Rice with Mini Abalone and Preserved Chinese Sausages at Cassia. The mini abalone is more like garnishing here. The highlight is the fried rice itself. Not only did it come with wok hei and the aroma of the Chinese sausages, the golden-coloured rice is so well fried and coated evenly with the fragrant of the egg. I guess this is what we meant by the golden ratio in fried rice. Each mouthful of the fried rice is a multi-sensational enjoyment.

Wrapping up the dinner is the Chilled Coconut Cream with Pearls and Sago topped with Ice Cream. The milky coconut cream with pearls and sago felt like I was having bubble tea, just that it is served in a bowl and not in a cup.

On the eve of Lunar New Year (15 February 2018), diners can look forward to a hearty feast with Cassia’s curated set dinner menus, the Prosperity Reunion Set ($139++ per pax) and Fortune Reunion Set ($169++ per pax).
