Jade Restaurant (玉楼) Chinese New Year 2016 @ Fullerton Hotel Singapore

For those that have been to Jade Restaurant at Fullerton Hotel Singapore, you will know that Master Chef Leong Chee Yeng not only cooks up a delicious menu but also very talented in his Chinese calligraphy, pottery and ceramic arts. Every year I will look forward to his artistic creations.

Eight-Happiness Gold Rush Salmon Yu Sheng 4/5

Tossing to a prosperity monkey year, Chef Leong presents the Eight-Happiness Gold Rush Salmon Yu Sheng with Champagne Jelly, Olive Oil and Peach Dressing ($68/$98/$138). During this period, dine-in orders of Yu Sheng will feature calligraphic drawings complemented with auspicious greetings. Orders should be made one day in advance.

Poached Seaweed and Abalone Dumpling 3.8/5

Shaped like the coral found underwater, Chef Leong has created a different interpretation of the dumpling with the used Japanese Kelp and abalone. The Poached Seaweed and Abalone Dumpling ($16/3pc, $38/8pc) has an interesting bouncy bite to it from the abalone within, giving an addition layer of texture.

 Premium Seafood Treasure Pot 4.2/5

The Premium Seafood Treasure Pot ($58 per pax) at Jade Restaurant comes with Braised Six Head Whole Abalone, Fish Maw, Sea Cucumber, Deep Fried Fish Maw, Chinese Cabbage, Flower Mushrooms, Roasted Garlic and Roasted Pork in Claypot. The premium ingredients are braised for a good 3 to 4 hours in a claypot before being served individually.

Simmered Boston Lobster with Ginger Milk 4/5

A good change from the usual is the Simmered Boston Lobster with Ginger Milk ($88 for whole lobster, 700g). The lobster meat is simmered in milk, ginger, butter and a little lemon zest. It is then served with a drizzle of the ginger milk gravy. Fresh and bouncy texture of the boston lobster complemented with the ginger milk gravy. The crunchy tempura vegetable on the side is also well received by the group.

I love duck meat and when Chef Leong put together the Roasted Duck with Foie Gras Sauce ($23/quarter, $46/half, $92/whole), I knew this is going to be heavenly combination. The roasted duck is marinated with foie gras sauce, allowing the piquant flavour of the foie gras and the crispy skin of the roasted duck to be enjoyed in a bite. The thoughtful chef also specially prepared the Sour Plum Guava Jelly for diners to cleanse their palate after all the richness in the roasted duck dish.

Fragrant Wok Fried Glutinous Rice with Chinese Sausage 4/5

The Fragrant Wok Fried Glutinous Rice with Chinese Sausage ($14/pax, $30/portion), has hint of smokiness with crusted bite in the grain. It is further perfumed by the waxted Chinese sausage. This is a dish commonly eaten to celebrate a year of bountiful harvest and to welcome the arrival of spring.

Almond Cream with Red Sago Red Bean Dumpling 3.5/5

After the heavy meal, it is perfect to end dinner on a light note with the Almond Cream with Red Sago Red Bean Dumpling. The red sago dumpling's chewy texture provided that extra enjoyment on top of the almond cream, finished off with the sweetness of the red bean.

Taking centre stage is Chef Leong's food installation using gelatin to put together this beautiful piece of art. It took him 5 days to do so. Together with the beautiful piece of art, we have the Sweet Potato Pandan Flavoured Nian Gao Tarts ($28/box of 8pc), Honey Peach Pastry ($26/box of 8pc) and Fried Nian Giao. These delightful New Year goodies is not only delicious but also ideal of festive gifts.

Crispy Salmon Skin Lo Hei 4/5

For those that wants to avoid raw fish this year, the Crispy Salmon Skin Lo Hei ($118 large) at Min Jiang will be an ideal choice. The varieties of crunchy vegetables, orange peel, jellyfish and crispy salmon is all hold together with the homemade tangy sweet plum based sauce. This is available for both dine-in and takeaway.

Gong Xi Fa Cai 4/5

Gong Xi Fa Cai ($298) is inspired by the Mahjong game which is commonly play during Lunar New Year. The good fortune "FA" mahjong tile is made entirely of salt. To reveal the delicacy inside the salt crust, diners have to break out it with the mallet.

Breaking open the salt crust is a delicious treasures of pig trotter which has been braised for 4 hours. Australian 6 head abalones, dried scallops, flower mushrooms and black moss. This is also available for both dine-in and takeaway at Min Jiang. The portion is good for 8 people.

Braised Whole Chicken with Sea Treasures in Claypot 4.5/5

Lunar New Year is all about feasting and the Braised Whole Chicken with Sea Treasures in Claypot ($248) will definitely impress your guests. The pot consists of a whole spring chicken flash fried, then braised for an hour together with Australian 10 head abalones, dried oysters, flower mushrooms, dried scallops, white radish, black moss and gluten puffs stuffed with minced pork and prawn paste. The portion is good for 6 persons. Available for both dine-in and takeaway at Min Jiang.

Fruity Lo Hei with Bacon and White Truffle Oil 4.2/5

While Min Jiang has the Crispy Skin Lo Hei, over at Min Jiang at One-North, it has the Fruity Lo Hei with Bacon and White Truffle Oil ($78 small/ $128 big). It comes with romaine, mixed lettuce, baby radish, carrot and radish strips, surrounded with julienne slices of mango, rock melon, Japanese cucumber, and strawberries. This is topped with crispy bacon bites and deep fried yam. Blending the refreshing yusheng together is the dressing made with plum sauce, mixed fruits and white truffle oil. This is available for both dine-in and takeaway.

Braised Pork Spare Ribs with Sea Treasures in Claypot 4.2/5

For a more luxurious feast, Min Jiang at One-North offers the Braised Pork Spare Ribs with Sea Treasures in Claypot ($248) which is good for 6 persons. A lot of effort is put into cooking the pork ribs. It is flash-fried, braised and then steamed. All this preparation needs at least 5 hours to get the intense flavours and tenderness. Other ingredients such as the Australian 8 head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, black moss and Tianjin cabbage which have been cooked separately are all put together before serving. It is available for takeaway too.

Nian Gao Platter 4.5/5

For dessert, we have a trio of Nian Giao inspired dishes in the Ondeh-Ondeh Inspired Nian Gao, Durian Nian Gao Roll and Deep Fried Nian Gao with Banana. All three are such a delightful creation that I wish they can sell it all year round.

Auspicious Blessings Cake 3/5

Symbolising blessings of wealth and good luck is the Auspicious Blessings Cake ($88, 1kg). The earl grey butter cake is fashioned to look like a mandarin orange carrier bag. There are even gold coins and mandarin oranges propped on top of the bag made from milk chocolate and orange chocolate respectively. This is a lovely gift for the season.

Wealth of Opportunities Cake 3/5

Shaped to look a giant golden garlic, the Wealth of Opportunities Cake ($88, 1kg) is said to bring fortune and good opportunities in Chinese Feng Shui. Another unique and cute creation made from chocolate marble cake.
