The Estate introduces a refreshed weekend ritual with its “Sunday Social Champagne Brunch”, a vibrant dining experience that brings together good food, free-flow champagne and a lively social atmosphere. Anchored by the theme “Brunch, but make it Estate”, the experience combines the restaurant’s well-loved buffet spread with curated plated signatures, music, a live DJ spinning throughout the brunch, and family-friendly touches, with the introduction of a dedicated Junior Corner. Free-flow premier French champagne from Moët & Chandon adds a touch of French chic to the afternoon, elevating the indulgence even further.

Seafood

The brunch begins with Estate’s renowned seafood bar taking centre stage, showcasing premium selections such as fresh French Oysters, Boston Lobsters and Alaskan King Crabs, alongside Tiger Prawns, Scallops, Clams and Mussels. This impressive spread sets the tone for a luxurious experience, offering diners a taste of the ocean’s finest with every visit to the station.

At the carving station, diners can look forward to hearty centrepieces such as the tea-smoked whole lamb leg and the lemongrass & coconut-roasted wagyu sirloin. Both offerings deliver bold flavours and succulent textures, making them particularly enjoyable for those who appreciate richly prepared meats.

Mini Wagyu Slider

The Mini Wagyu Sliders are also worth a mention, featuring juicy patties layered with aged cheddar and caramelised onions, and nestled within fluffy brioche buns. Despite their modest size, these bites are surprisingly satisfying and well-executed.

Foie Gras/Corned Beef Hash

A key highlight of the brunch is the reimagined lineup of individually plated chef’s signatures, elevating the dining experience beyond the traditional buffet. Favourites include the pan-seared Foie Gras, rich and buttery with a beautifully caramelised exterior, as well as the indulgent corned beef hash with soft scrambled eggs, finished with black truffle essence and caviar.

Chawanmushi

The Lobster and Yuzu Chawanmushi is another refined creation, delicately steamed in kombu dashi and topped with ikura, delivering a silky texture, umami-rich flavours, and a gentle citrus lift.

Equally noteworthy are the seared Scallop à la Provençale, served with a smooth cauliflower velouté, brown butter and crisp capers. The dish offers a harmonious balance of richness and subtle sweetness, complemented by layers of texture.

Beyond the plated selections, the buffet continues to impress with Estate’s signature spread of international and local favourites, offering diners a wide variety of options to explore throughout the afternoon. Among the highlights are the Singapore Chilli Mud Crab served with mantou, as well as roast meats such as Five-spiced Roasted Duck, Garlic-crusted Roasted Chicken, and Roasted Pork, all of which deliver familiar, comforting flavours.

Lobster Laksa

Another highlight is the noodle bar, where freshly prepared bowls take centre stage. The Lobster Nyonya Laksa stands out with its rich, aromatic broth. At the same time, other options such as the King Crab Laksa and Yunnan Cong You Ban Mian provide equally satisfying alternatives for those craving something warm and hearty.

The refreshed experience delivers a satisfying weekend feast, complete with premium ingredients and comforting favourites for all ages.

The buffet begins on a high note with a vibrant selection of Chef's Salads, offering a refreshing and flavourful start. Highlights include the Spanish Style Grilled Octopus, Creamy Idaho Potato with mustard and dill, and the Tomato with Baby Mozzarella and basil. Heartier options such as AUS Pulled Lamb with lentil and hummus, and AUS Beef Brisket with pickled vegetables further elevate the spread.

Adding to the spread are Assorted Sashimi such as Salmon, Trout, Yellowfin Tuna, and Hamachi, as well as a variety of Sushi and Maki Rolls of the Day.

At the Carving Station, diners can enjoy an impressive lineup of hearty mains. Highlights include the Slow-Roasted AUS Grain-Fed Prime Rib served with baby potatoes, Yorkshire pudding, and red wine sauce, as well as the Aussie-Style Grass-Fed Lamb Rack paired with mint and BBQ sauces. The Maple Glazed & Orange Marmalade Gammon Ham stood out for its balance of sweet and savoury notes. At the same time, the Baked Barramundi and Peri-Peri Roasted Chicken offered lighter yet flavourful alternatives.

The AUS Meats Charcoal Grill Station adds a smoky dimension to the feast, featuring grilled favourites such as Tiger Prawns, Pork Belly, Pork Bacon, Chicken Wings and Chicken Satay, all freshly prepared over charcoal for that irresistible charred aroma.

A selection of Roasted Delights further complements the spread, including Roasted Duck, Roasted Pork, BBQ Pork, and Hainanese Chicken served with fragrant Hainanese Chicken Rice, offering familiar local flavours that are always crowd-pleasers.

One of our favourite local delights is the Chilli Crab served with mantou, boasting a rich, tangy and spicy sauce that pairs perfectly with the fluffy fried buns, making it a must-have dish during brunch.

For those seeking comforting carbohydrates, the buffet also features a Congee Station with assorted condiments and fried Chinese doughnuts, alongside a Noodle Bar serving options such as Lor Mee and Laksa, catering to different flavour preferences. For a more satisfying combination, pair a warm bowl of congee with the soft, flavourful braised soy pork, which adds comforting richness to the dish.

Indian and Dosa Station

The Indian Station offers a robust spread of bold, aromatic dishes, including Kolkata Biryani, Butter Chicken, and Mutton Kosha Mangsho, alongside vegetarian options like Palak Paneer and Keerai Paruppu Kadayal. The Dosa Station serves freshly made Masala Dosa, Onion Uttapam and Plain Dosa with sambar and chutney.

Families are well catered for with the Munchkin Table, offering kid-friendly favourites such as pizza, pasta on a wheel, Wagyu beef sliders, hash browns, snail sausages and fish & chips, ensuring even the little ones have plenty to enjoy.

Desserts round off the experience on a delightful note, with an extensive selection that includes Signature Mango Cake, Strawberry Shortcake, Opera Cake, and Yuzu Sesame Cake. Other indulgent treats include Tim Tam Tarts with Berries, candy donuts, assorted kuehs, apple pie and pralines, as well as Banoffee Cream Pudding with white chocolate crumble. The Chocolate Fountain, served with fruits, marshmallows, Rice Krispies, and a fun popcorn station, adds a playful and satisfying end to the brunch.

The Orchard Cafe @ Orchard Hotel Singapore - OZ “Meats” Buffet, A Vibrant Celebration of Premium Australian Produce, Culinary Craftsmanship, and Bold Flavours.

The Orchard Cafe at Orchard Hotel Singapore has recently launched the OZ "Meats" Buffet, showcasing the best of premium Australian produce through a lineup of curated dishes and live stations. Complementing the hearty offerings is an array of decadent desserts, ranging from classics to those inspired by Australian favourites.

Nachos Station

The Nachos Station gets things off to a lively start, featuring AUS grain-fed beef or pork con carne. Paired with condiments such as tender beans, creamy guacamole, spicy salsa, sweet corn and sour cream, it makes for a fun and flavourful starter to the buffet.

Aussie-Style BBQ Pork Shoulder

Slow-roasted AUS Grain-fed Striploin.

At the Carving Station, diners can enjoy Slow-roasted AUS Grain-fed Striploin and Aussie-Style BBQ Pork Shoulder. I personally favoured the pork shoulder, which was noticeably juicier and more tender, with flavours beautifully complemented by the accompanying BBQ sauce.

Halibut

For seafood lovers, the Australian Catch of the Day was Halibut served with Béarnaise sauce. It was a lighter, more delicate option that balances the heavier meat offerings.

The AUS Wagyu Beef Sliders are also not to be missed, with fluffy buns sandwiching flavoursome patties and melted cheese. These relatively humble-looking bites turned out to be one of my personal favourites.

Another highlight is the Charcoal Grill Station, where AUS Beef Tri-tip, Short Plate and Veal Tenderloin are flame-grilled over charcoal, imparting enticing smoky notes to the succulent meats.

The dessert selection was an absolute joy, rounding off the buffet on a sweet note. Among the seasonal selections, the Tim Tam Tart with Berries was indulgently rich with chocolate, delivering a delightful nutty crunch with every bite. Lamingtons offered a simple pleasure with soft butter cake coated with desiccated coconut, executed well with just the right level of sweetness.

Passion Fruit Pavlova with Fresh Fruit

The Passion Fruit Pavlova with Fresh Fruit was another standout, crisp around the edges with a slightly chewy centre, carrying bright tropical notes of mango and passion fruit.

The Hot Dessert Station was particularly irresistible, featuring indulgent treats such as Salty Peanut Brownie Pudding, Bourbon, Rum & Raisin Bread Pudding, and a comforting Baked Rice Pudding with Raspberry.
