Edge @ Pan Pacific Singapore - Embrace the Joyous Season and Endless Celebrations with Extravagant Buffet Spreads
Embrace the joyous season with endless celebrations and a luxurious dining experience at Edge, Pan Pacific Singapore. From 21 November 2024, indulge in a feast curated by Executive Chef Andy Oh and his talented culinary team. The buffet showcases a harmonious blend of festive classics and international delights, featuring premium seafood, succulent roasts, and the season's signature favourites.
The Seafood on Ice station boasts an impressive selection, including Boston Lobsters, Freshly Shucked Oysters, Prawns, Pacific Clams, Sea Conch, and Crawfish. The lobster meat is so sweet, but the oysters are a little less plump than expected.
Edge never disappoints when it comes to its cheese offerings. A standout for us was the Port Salut, a soft cheese with a smoky undertone that makes it an irresistible treat. We also discovered the Red Pesto Tomme, which adds an intriguing twist to the classic Tomme with its vibrant pesto-infused flavour.
A highlight of the buffet is the Miso Cod Fish. While it may not rival Nobu's version, this dish impressed me with its soft texture, fresh quality, and delicate marinade. Served alongside tender okra, it's a must-try!
Meat lovers are in for a treat with an extensive selection of festive specialities. The Traditional Roasted Turkey Breast is perfectly cooked to retain its juiciness, while the Maple-Glazed Gammon Ham offers a delightful balance of sweet and savoury flavours. Other highlights include the Roasted Whole Lamb, which is tender and aromatic, and the succulent Roasted Pork Porchetta with its crispy crackling. For a touch of indulgence, the Australian Black Angus Beef Tomahawk steals the spotlight with its rich, smoky flavours. Pair these dishes with a variety of sauces such as apple sauce, olive sauce, and red wine sauce to elevate your dining experience.
The Live Grill Station offers an exciting array of freshly prepared delights. From the smoky and flavourful Salt & Pepper Squid to the tender Marinated Angus Beef Short Rib, every bite is a testament to the chefs’ skill. The Grilled Chicken, seasoned to perfection, is a crowd favourite, while the variety of homemade sausages ensures there’s something for everyone to enjoy.
Western classics are another highlight of the buffet. The Slow-Baked Fish Filet in Minestrone Mussels Broth is light yet satisfying, combining the delicate flavours of the sea with a comforting broth. Meanwhile, the Oven-Baked Chicken with Cacciatore and Olive provides a hearty and flavourful option.
Pizza lovers can indulge in freshly hand-stretched pizzas with a range of toppings. It's worth a slice if you have a stomach for some carbs!
Indian station featuring flavoursome curries and traditional favourites such as Butter Chicken, Papadam, Naan and Fish Tikka from the Tandoori oven.
The buffet's Asian and local offerings are equally impressive. At the Indian station, diners can savour robust curries and other traditional dishes. Local favourites include the iconic Singapore Chilli Crab, paired with fluffy mantou for dipping, as well as a variety of double-boiled soups and stir-fried dishes. The Asian Live Station features piping hot bowls of Laksa, a selection of Yong Tau Foo Soup, and the fragrant Penang Wok-Hei Fried Kway Teow. For those who love roasted delicacies, there are Peking Duck, Roasted Chicken, Pork Belly, and Honey Glazed Char Siew.
No meal at Edge is complete without a visit to the dessert station. The festive spread includes Christmas Log Cakes, Verrines such as Panna Cotta and Durian Pengat, a decadent Chocolate Fountain, and a selection of gelato and sorbet. For those with a penchant for local sweets, the Nyonya Kueh and hot desserts like Cheng Teng provide a comforting end to the meal.
An exciting addition is the Liquid Nitrogen Ice Cream, made fresh on the spot. The Milo flavour is a standout. Just be sure to enjoy it quickly, as it melts fast!
The praline selection is a delightful surprise, with unique flavours like Mango, Cranberry, Strawberry, and Bandung. Each piece is exquisitely crafted, offering a burst of flavour we absolutely love.
The entire restaurant is beautifully decorated with Christmas-themed décor, creating a warm and festive atmosphere. With big groups of diners filling the space, the celebrations felt vibrant and joyful. Reservations are highly recommended to secure your spot.

Fourgather @ Telok Ayer Street - Travel to Thailand With Fourgather’s Newly Expanded Menu of Modern Thai Flavours
When we last visited Fourgather at Telok Ayer, we enjoyed their creative, fusion-inspired Thai dishes. Now, just six months later, the restaurant has expanded its offerings to include more authentic dishes with unique twists.
The vibrant, eclectic space was bustling on a weekday night, making it ideal for relaxed gatherings. The upbeat Thai music playing in the background definitely added to the atmosphere.
Beverages
We opted for non-alcoholic beverages and appreciated the balanced sweetness. My favourite is their Thai Chrysanthemum ($5.50) for its lovely herbal notes and how it effectively washed down the spice from the food.
Thai Chicken Breast Salad 3.8/5
We started with the Thai Chicken Breast Salad ($16.90), featuring tender chicken breast in a mix of Thai herbs, nutty roasted rice powder, and a tangy spicy dressing.
Tom Yum Soup Clear 4.2/5
Next, the Tom Yum Soup Clear - Seafood ($24.90) was a flavourful, spicy option that struck a perfect balance with its herbaceous ingredients. Diners can choose from additional toppings like Vegetable ($13.90), Chicken ($16.90) or Prawn ($19.90), and a creamy version is available for those who prefer it.
PINTO Thai Rice Porridge Set for 2 Pax 4.2/5
On a chilly, rainy day, the new PINTO Thai Rice Porridge Set for 2 Pax ($23.90) felt incredibly soothing. This set includes a pot of unlimited pandan porridge accompanied by four side dishes. We sampled an array, from Steamed Pork Patty with Salted Fish to Thai Stir-Fried Pickled Mustard with Egg.
One of the standout dishes was the Crispy Pork Belly, Fish Sausage, and Fried Anchovies Yum Salad. The fish sausage crisps soaked up the tangy, spicy dressing beautifully, making it an addictive table favourite.
Another unexpected delight was the Chye Poh with Egg, featuring generous portions of sweet, crunchy chye poh.
For larger groups, a 4-person portion ($52.90) includes 10 side dishes. All sides are also available as a la carte.
Creamy LAVA EGG with Basil Minced Pork 4.2/5
Another new dish was the Creamy LAVA EGG with Basil Minced Pork ($14.90), where a layer of velvety eggs covered jasmine rice, topped with fragrant basil minced pork. The dish’s spice level is adjustable, and diners can choose different proteins, such as fried pork belly (+$3), prawns (+$6) and seafood (+$11).
Thai Crab Laksa 4/5
We ended our meal with the Thai Crab Laksa ($20.90). Dip the rice noodles into the creamy and mildly spicy coconut curry, pairing it with chunks of blue flower crab meat, fresh herbs and vegetables.
While the menu is slightly pricey, our meals at Fourgather are always a delight. We find their food to be authentic, with a touch of modernity, and well-balanced.

Labyrinth @ Esplanade Mall - Celebrating 10 Years of Singapore’s Culinary Heritage with a Refreshed Focus and Renewed Impetus
Marking its 10th anniversary, Labyrinth by Chef Han Li Guang continues to redefine Singaporean cuisine. Since opening in 2014, Labyrinth has become synonymous with heritage preservation, culinary creativity, and local ingredients, evolving into a highly-regarded fine dining experience. This October 2024, Chef Han and his team have brought a fresh perspective, exploring Singapore's food heritage through a new, refined lens. The 13-course dinner menu ($298++) is a tribute to Singapore's culinary traditions, reimagined with precision and artistry.
Bak Kut Teh Consomme 4.5/5
Our meal opened with the Bak Kut Teh Consommé. This starter was a delicate yet flavourful dashi broth, capturing the essence of traditional Bak Kut Teh without overpowering the palate. Serving this as a first course was a thoughtful nod to Singaporean dining culture, where a light soup often begins the meal to whet the appetite. It was an impressive, nuanced start.
Ramly Burger 4.2/5
The Ramly Burger was a playful miniature inspired by the iconic Ramly burger from Pasar Malams (local night markets). Labyrinth's version features an aburi hand-chopped beef flank patty wrapped in an eggy parcel, with tomato meringue buns topped with sesame seeds. Topped with Labyrinth's "Ramly sauce" and mustard cress, this bite-sized snack delivered nostalgia and innovation in one.
Oyster Bao 4.8/5
My favourite snack, the Oyster Bao, was Labyrinth's take on the disappearing Fuzhou Haobing street snack. This bao used a David Herve oyster no.4 and a delicate espuma batter to create a beignet-like texture. The flavours were layered and precise, with a light, airy crust surrounding the oyster — a beautifully elevated version of a rare street food.
Hainanese Curry Puff 4/5
Dubbed the Old Han Kee, Labyrinth's Hainanese Curry Puff pays homage to Singapore's iconic curry puff brand, Old Chang Kee. It is filled with oyster mushrooms, sweet corn, sweet potato, and braised pork belly and served with garlic aioli for extra richness. It is a satisfying and comforting bite.
Satay Club 4.2/5
Named after Singapore's historic Satay Club, this course featured two skewers — a Pork Satay and a Chicken Tsukune. The pork skewers, with loin and jowl, offered contrasting textures, reminiscent of Hainanese satay, while the tsukune encased a quail egg and was inspired by Japanese tsukune and Scotch egg. Paired with Filipino kare-kare peanut sauce, the skewers captured the essence of Southeast Asia's diverse satay styles.
RotiBoy 4.2/5
Labyrinth's RotiBoy transported me back to childhood with its coffee-flavoured craquelin atop a soft brioche filled with Bordier seaweed butter. The nostalgic flavours of Singapore's popular coffee bun were beautifully recreated, with subtle sweetness and a light coffee aroma.
Wartime Rojak 4.5/5
Inspired by an old recipe from the 1942-1950 cookbook "Wartime Kitchen," the Wartime Rojak reimagines a British-influenced Asian salad. Beetroot was prepared as a rosette and sorbet, accompanied by cucumber and lettuce granite, pineapple, and herbs like shiso. It was a refreshing, complex dish with sweet, savoury, and acidic notes, embodying the essence of rojak in a contemporary way. Notably, this dish replaced Labyrinth's iconic Chilli Crab, reflecting the restaurant's commitment to continual evolution.
Fish Maw Char Kway Teow 4.5/5
Labyrinth introduced Char Kway Teow with a twist, using NZ barramundi fish maw as the "noodle." Cooked to a similar shape and texture, the fish maw absorbed flavours of fish sauce, soy sauce, and oyster sauce and was topped with abalone and liver sausage. This elevated take on the hawker staple was comforting, with layers of umami richness.
Laksa Siglap 3.8/5
A different interpretation of laksa, Laksa Siglap used a fish-based broth with lasam noodles made from tapioca and rice flour. Medai fish slices, prepared with a velveting technique, gave a silky texture. While less creamy than traditional laksa, this version was nuanced and delicate.
Chicken Rice 4.5/5
Labyrinth's Chicken Rice was a beautifully composed dish with three components. French poulet breast was layered with a flavourful chicken farce and poached perfectly. The rice, a blend of Jasmine and Koshihikari grains, was cooked in a donabe for a smoky flavour, accompanied by cockscomb and chives. A grilled chicken heart skewer added depth, with each element contributing to the classic flavours in a modern format.
Pisang Goreng 4.5/5
A refined version of Pisang Goreng, this dessert featured a caramelised banana sorbet wrapped in a crispy dough and paired with spiced saffron pastry cream. The sweet and savoury notes balanced perfectly, transforming the beloved street food into a luxurious dessert experience.
Cereal Prawn 4/5
Labyrinth's Cereal Prawn reinterpreted the classic zichar dish in dessert form. This unique creation included oatmeal ice cream infused with 20-year Shaoxing wine, salted egg foam, warabi mochi, and goji berries soaked in Shaoxing wine. Served with a playful "Chef-branded" cereal box filled with puffed rice and caramelised oats, it was a delightful and nostalgic end to the main courses.
Tang Yuan 3.5/5
The Tang Yuan was a warm, comforting dessert that replaced the usual petit fours. The dumpling, filled with Azuki red beans and tangerine peel, was served in a ginger and rice wine syrup, symbolising completion and togetherness. However, the rice wine syrup may not appeal to all, though it provided an interesting twist.
Labyrinth's 10th anniversary menu beautifully celebrates Singapore's culinary heritage, reinvented with finesse. Chef Han's commitment to local flavours, ingredients, and history is evident in each dish, creating a nostalgic and forward-thinking experience. Labyrinth's new menu is a must-try for those seeking a deeply thoughtful, innovative journey through Singaporean flavours.
