Edge @ Pan Pacific Singapore - Dive into ‘A Sea of Flavours’, an Indulgent Seafood Dinner Buffet Experience

Pan Pacific Singapore’s award-winning buffet restaurant, Edge, invites diners to embark on a seafood-filled culinary journey with “A Sea of Flavours”, an exclusive dinner buffet available from Fridays to Sundays, from 15 May to 21 June 2026. Curated by Executive Chef Andy Oh and his culinary team, the experience showcases an impressive selection of premium seafood, ranging from fresh seafood on ice and succulent crab creations to charcoal-grilled favourites and international specialities, making it a feast that seafood lovers will not want to miss.

The experience begins at the Seafood on Ice station, where an abundant selection of Sustainable Boston Lobster, Snow Crab, Tiger Prawn, Pacific Clam, Sea Whelk, Half Shell Scallop, Sea Conch, Black Mussel and Crawfish awaits. There is also a Japanese section featuring Norwegian Salmon, Maguro and Tako sashimi, alongside an assortment of Sushi and Maki served with wasabi, Japanese gari and shoyu.

Another highlight is the Steamed Oyster station, where plump and juicy oysters are steamed to order and served with garlic sauce and Thai Nam Jim. They were exceptionally fresh and flavourful - so much so that I found myself returning for more than a dozen throughout the evening.

For those who prefer lighter seafood preparations, the Cantonese-style Steamed Fish is not to be missed. Delicately cooked to preserve its natural sweetness and tenderness, it offers a comforting contrast to some of the richer dishes across the buffet.

Crab lovers will be thoroughly spoiled with multiple preparations available throughout the spread. The Stir-fried White Pepper Crab with Scallion delivers a fragrant, peppery kick. At the same time, the Salt-baked Mud Crab, served with chilli sauce and mantou, offers a satisfying combination of sweet crab meat and savoury accompaniments. Equally enjoyable is the Creamy Salted Egg Yolk Crab, coated in a rich and velvety sauce that clings beautifully to every piece.

Moving on to the carving station, the 24-hour Slow Roasted Whole Veal Leg takes centre stage. Slow-cooked to achieve remarkable tenderness, the veal remains juicy and flavourful, pairing wonderfully with the accompanying Yorkshire pudding. Other highlights at the station include succulent Lamb Chops and crispy Pork Knuckle, both equally tempting for meat lovers.

The Japanese Street Food Station offers another noteworthy item: Mayura Station Chocolate-fed Wagyu Beef, served with ponzu and braised leek. The wagyu boasts excellent marbling and a rich, beefy flavour, while the ponzu provides a refreshing, citrusy lift that balances the meat’s richness.

At the Chinese Roast Meats section, diners can enjoy Charcoal-grilled Ibérico Pork Char Siew served with fluffy lotus buns. The char siew is beautifully caramelised with a good balance of sweetness and smokiness. Also available are crispy Roasted Pork Belly and flavourful Roasted Duck, making this station a favourite among fans of traditional Cantonese roasts.

For local comfort food lovers, Edge’s Signature Singapore Laksa remains a must-order. The rich coconut-based broth is packed with flavour and topped with locally farmed Tiger Prawn, quail egg, fish cake, and bean sprouts. The combination delivers all the familiar flavours of a good laksa, elevated with quality ingredients.

Be sure to save room for dessert, as the spread is just as impressive as the savoury offerings. Signature creations include Edge’s Signature Hazelnut Royaltine and Edge’s Signature Durian Pandan Cake, alongside favourites such as Black Sesame Chocolate Cake, White Chocolate Orange Cake and Portuguese Egg Tarts. Hot desserts like Bread Butter Pudding, Snow Fungus with Nashi Pear and Goji Berry Soup, Durian Pengat and Classic Crème Brûlée provide comforting options. At the same time, Honey Jelly with Snow Bird’s Nest and Aloe Vera offers a lighter finish. Traditional sweets such as Assorted Nyonya Kueh and Kueh Lapis are also available. The Giant Chocolate Fountain, accompanied by assorted condiments, adds a touch of fun. There is also a selection of ice creams, including Banana Passion Fruit Sorbet and Red Bean Potong, to complete the indulgent finale.

Wenzhou Mansion @ Tanjong Pagar Road - First Jiangsu-Zhejiang Fine-Dining Restaurant in Singapore Dedicated to Wenzhou Cuisine

A new expression of refinement arrives at Wenzhou Mansion, Singapore's first and only Jiangsu-Zhejiang fine dining restaurant dedicated exclusively to Wenzhou cuisine. Opened in Tanjong Pagar in August 2025, the establishment presents the culinary traditions of Wenzhou through time-honoured intangible heritage techniques and the natural flavours of East China Sea seafood. Wenzhou cuisine is one of the four major schools of Jiangzhe cuisine, itself recognised as one of China's eight great culinary traditions. Wenzhou Mansion is guided by Mr Li Chuhua, an officially recognised Intangible Cultural Heritage inheritor of Wenzhou cuisine. Drawing on decades of experience, he curates the menu around experience-driven techniques, from handling live seafood to home-style braising and lightly fermented preparations.

Sliced Wenzhou Kailan 温州芥兰片 4.2/5

We began with a series of cold appetisers, starting with the Sliced Wenzhou Kailan ($28). At first glance, the dish resembles cucumber slices, but it is actually crafted from the Kailan stem. Lightly pickled in a sweet-and-sour marinade, the stems offer a crisp bite with a bright, balanced tang that is both refreshing and moreish.

Shredded Chicken with Jellyfish 海蜇手撕鸡 4.2/5

The Shredded Chicken with Jellyfish ($68) features tender shredded chicken paired with jellyfish for a lovely textural contrast. High in protein and low in fat, the dish reflects the harmony of coastal food culture, where land and sea ingredients meet. This dish is notably light and refreshing.

Coriander with Sakura Shrimp 樱花虾皮拌香菜 4/5

In the Coriander with Sakura Shrimp ($25), sweet, crisp sakura shrimp are combined with aromatic notes of coriander. This clean, thoughtfully composed dish is designed to reset the palate, though it may be an acquired taste for those who do not enjoy coriander.

Raw Marinated Wenzhou Swimming Crab 温州江蟹生 4.5/5

A signature of Wenzhou-style raw marination, the Raw Marinated Wenzhou Swimming Crab ($128/portion) features live swimming crab prepared with traditional techniques. Often praised as the "ice cream of the sea," the flesh is delicately tender and refreshingly chilled. Cured in an in-house blend of sauces and spices, this is a highly appetising alternative to Teochew or Korean raw crab versions.

Duck Tongue & Fish Cake Platter 温州鸭舌拼鱼饼 3.5/5

The Duck Tongue & Fish Cake Platter ($58) offers two traditional staples. The Fish Cake, made from minced East China Sea fish and pork fat, is steamed to a springy, savoury finish. The Duck Tongues are braised and then sun-dried, offering a rich soy-braised aroma. In the Wenzhou dialect, "duck tongue" sounds like a phrase meaning "to earn and prosper," making it a popular auspicious starter at banquets.

Wenzhou Fish Ball & Pork Wonton Soup 温州鱼丸肉燕汤 分位 4/5

The Wenzhou Fish Ball & Pork Wonton Soup (from $35) showcases culinary craftsmanship through a traditional pounding technique. The springy bite of the fish balls contrasts beautifully with the smooth, slightly crisp pork dumplings. The texture of the pork dumplings reminded me of local fish skin dumplings (魚皮餃).

Large East China Sea Yellow Croaker with Scallion Oil 葱油东海特大黄鱼 4/5

The Large East China Sea Yellow Croaker with Scallion Oil ($158 for regular / $398 for large) features an ingredient revered as the "gold of the sea". Prized for its garlic-clove–shaped flesh, the fish is lightly steamed to preserve its silken texture. It is finished with fragrant scallion oil, bloomed in hot oil to draw out its inherent sweetness.

The Home-style Braised Mantis Shrimp with Shredded Radish (Seasonal Price) is a comforting dish brimming with everyday warmth. The highlight is the delicious, addictive sauce, best absorbed by the shredded radish.

The Steamed Roe Crab with Minced Pork and Pumpkin ($378) is served with claypot rice. As it steams, the seafood juices meld with the rich savouriness of Iberico pork, infusing the soft pumpkin below with layered, harmonious flavour.

Crispy Baby Roasted Duck with Peppercorn 大红袍花椒小乳鸭 4.5/5

A standout was the Crispy Baby Roasted Duck with Peppercorn ($98). It is unique to see duck prepared in a roasted pigeon style, a technique I haven't encountered in other Chinese restaurants in Singapore. Crispy on the outside and juicy within, it carries the aromatic, gentle numbing heat of Da Hong Pao peppercorns.

Stir-Fried Beef with Wild Chinese Chives 沙葱炒牛肉 4.2/5

In the Stir-Fried Beef with Wild Chinese Chives ($78), wild sand scallions from the Gobi Desert are wok-fired at high heat with tender beef. The result is a fragrant harmony of crisp and succulent textures.

The Pea Shoots with Seaweed in Superior Broth ($38) is a delicate vegetarian "double fresh" dish. The silky, briny seaweed pairs perfectly with the springtime sweetness of the crisp pea shoots.

The Wenzhou Stir-fried Rice Noodles ($28 Small / $48 Large) are soft and supple with a gentle chew. The rice vermicelli effectively absorbs the aromas of the accompanying ingredients, resulting in a deeply savoury finish.

Glutinous Rice Balls with Water Chestnut Dessert 汤圆马蹄爽 4.2/5

To end, the Glutinous Rice Balls with Water Chestnut Dessert ($12 per serving) offers a refreshing sweetness. The crisp water chestnuts balance the rich, chewy dumplings, leaving a light, springy finish on the palate.

Overall, Wenzhou Mansion offers a rare and refined look at a heritage cuisine seldom seen in such detail in Singapore. The focus on seafood freshness and intangible cultural techniques makes it a must-visit for lovers of regional Chinese fare.

The Harmony Set (S$568++ for four diners) begins with a Prosperity South African Yu Sheng tossed in olive oil for a lighter, cleaner finish, allowing the freshness of the ingredients to shine without weighing down the palate.

Double-boiled Shark’s Fin Soup 4.5/5

This was followed by a luxurious classic, the Double-boiled Shark’s Fin Soup with Chicken. The collagen-rich broth was rich-bodied and gelatinous, delivering a sense of indulgence in every spoonful.

Next came the restaurant’s signature Roasted Duck with Black Truffle Sauce. The Irish duck was succulent, with beautifully crisped skin, while the black truffle sauce was well put together, lending just a subtle earthy lift to the dish.

The set also includes Steamed Sliced Garoupa Fish with Celery and Black Fungus in Superior Soya Sauce. The fish was firm yet moist, its mild sweetness enhanced by the savoury umami notes of the soya sauce.

Wok-fried Hot Pot Panda Rice 4/5

One of the highlights of this year’s set menu is the Wok-fried Hot Pot Panda Rice with Bacon and Bolete Mushroom. Specially imported from Sichuan, China, Panda Rice is prized for its higher nutritional value and lower glycaemic index. The grains were slightly translucent with a gentle bounce, pleasantly non-starchy, and every bite was fragrant with wok hei and intensely moreish.

Supreme Fortune Pot 5/5

Supreme Fortune Pot is part of Kai Duck’s takeaway Millionaire Chinese New Year Set (minimum one day advance booking required; self-collection only). Each set comes with one Big Sweep Ticket*. The opulent pen cai features 15 premium ingredients, including South African abalone, sea cucumber, golden oyster mushrooms, fish maw, fatt choy, braised pork belly, and Kai Duck’s signature roasted duck. A standout for me was the inclusion of chunky radish and yam, which were wonderfully soft and thoroughly infused with the rich, savoury gravy.

The takeaway set also includes a platter of BBQ Pork. Marinated for over 12 hours and roasted for more than 40 minutes, the pork was unctuous and juicy, finished with a mouthwatering caramelised char.

Dessert rounded off the meal with a duo of sweets. A lightly tart and refreshing Chilled Mango Sago with Pomelo, alongside Pan-fried Handmade Glutinous Rice Cake, provides a comforting and homely end to the festive feast.

Edge @ Pan Pacific Singapore - Celebrates The Festive Season with Well-Loved Local and International Spread Alongside Festive Seasonal Creations

Celebrate the festive season at Edge at Pan Pacific Singapore with one of its most abundant spreads of the year. The line-up features festive seasonal creations alongside the restaurant's well-loved local and international offerings.

Traditional Roasted Whole Turkey, Maple-glazed Gammon Ham

At the Festive Carving Station, highlights include the Traditional Roasted Whole Turkey, classically paired with cranberry sauce, and a succulent, sweet-savoury Maple-glazed Gammon Ham served with zesty spiced pineapple marmalade.

Charcoal-grilled Grass-fed Lamb Leg

The Charcoal-grilled Grass-fed Lamb Leg rubbed with Ras El Hanout spice stood out for its heady, aromatic flavours. Alongside it was a Slow-roasted Tomahawk, finished with a final torching of the exterior to add an extra layer of char and smokiness.

We also tried an interesting take on Duck Confit, served with Savoy cabbage, that offered a comforting, well-balanced combination.

For Asian roasts, both the Roasted Duck and Maltose Honey-glazed Char Siew impressed with their succulency and depth of flavour.

Under Asian Delights, the "Jiang Zheng" Red Snapper was moist and tender, robustly flavoured with fermented bean paste chilli and crispy pork lard. A clear crowd-pleaser was the "Bi Feng Tang" Roasted Chicken, made moreish with crispy garlic and dried chilli.

My personal favourite was the Wok-fried Singapore Hokkien Noodles wrapped in Opah Leaf, fragrant and satisfying.

The Taste of Malaysia section included a festive twist with Sambal Berlado Turkey, alongside comforting staples such as satays.

Over at the Indian Cuisine station, popular dishes like Butter Chicken and Lamb Biryani were well represented.

The Cheese and Charcuterie Station offered a wholesome assortment of cheeses, condiments, and handcrafted cold cuts, including Pan Pacific home-cured beef salami, Virginia ham, pastrami, mortadella, paprika lyoner, and Black Forest ham.

The highlight of the festive spread was undoubtedly the Dessert Stations, featuring a chocolate fountain, ice cream, and log cakes.

The festive sweet creations were impressive, with standouts including Homemade Stollen, Minced Fruit Pies, and Raspberry Choux Puffs. The buttery Upside-Down Pineapple Cake was particularly memorable and a fitting end to the meal.
