Opus Bar and Grill @ VOCO Orchard Singapore - Grilled Out Sunday Edition 2.0.

Opus Bar and Grill has recently rolled out a refreshed edition of its Sunday brunch, Grilled Out Sunday Edition 2.0. This new concept introduces a bi-monthly themed culinary series, where each edition has its own menu, ranging from classic roasts and slow-smoked meats to local flavours, spit-roast specials, and festive holiday grills. The experience is further elevated with curated beverage pairings, including wines, cocktails and beers.

Taking centre stage in this Grilled Out Sunday Edition 2.0 à la carte buffet is the mains selection, where the sumptuous meat platter is as much a visual feast as it is indulgent. The Sunday roasts highlight four distinctive fire-led cooking techniques — Grilling, Josper Roasting, Smoking and Rotisserie.

Black Angus Striploin

From the grill, the Black Angus Striploin delivered the expected beefy flavours. The Josper oven was key in building intense depth in the Garlic and Rosemary Lamb Leg, sealing in its aromatic richness. The Smoked Duck Breast stood out for its tender, unctuous texture, gently infused with a lingering smokiness. A familiar crowd-pleaser, the Rotisserie-roasted Chicken was evenly cooked, with golden skin and a desired succulence. That said, the oven -roasted Crispy Pork Belly fell short of expectations. The crackling lacked the desired crispness, and a slight gamey note detracted from its overall appeal.

An engaging highlight of the brunch is the live guéridon service, where selected savoury items are finished tableside, adding an interactive and theatrical touch to the dining experience.

Moules Marinière

Completing the brunch is a selection of appetisers and sides. The starters were delectable - Crab and Potato, Moules Marinière, and Roasted Tomato Soup were enjoyable and, in fact, more memorable than the sides.

Yorkshire Pudding

Among the sides, the warm, cheesy Cauliflower Gratin and the classic Yorkshire Pudding stood out. The latter, being a must-have with any proper Sunday roast, was fluffy and chewy.

A thoughtful addition is the self-service Salad Bar, where we helped ourselves to fresh salads, cheeses and crackers as we await our orders.

Creme Brulee

For desserts, we had the Apple Crumble, Crème Brûlée, and Ice Cream Sundae. The latter charmed with its nostalgic, old-school presentation. My favourite was the Apple Crumble, served warm with a generous dollop of cream. The buttery sweetness of the crumble hit just the right spot, making it a comforting and satisfying end to the meal.

Tanglin Cookhouse is a hidden gem nestled in the tranquil corner of Tanglin Mall, providing an oasis of lush British colonial-style setting for diners to indulge in timeless yet contemporary colonial cuisine away from the bustling streets of Orchard. They are thrilled to announce their newly opened outlet at Paya Lebar Quarter, inviting diners to experience the harmonious blend of history and contemporary culinary delight at Tanglin Cookhouse.

We kickstarted the meal with an enticing cocktail selection. The "Tanglin Classic" ($18) offers a refreshing blend of Widges London Dry Gin, cucumber, rosemary, and Fever Tree tonic. At the same time, the "Bloody Brilliant" ($18) features Four Pillars Bloody Shiraz Gin, fresh blood orange, and Fever Tree tonic. Our favourite goes to the latter, which delivered a fruity explosion that sets the perfect tone for the dining adventure ahead.

Tanglin Scotch Egg 4.2/5

The Tanglin Scotch Egg ($20) is a modern twist on a classic dish. It features a cage-free organic egg with a perfectly runny yolk, served on a vibrant bed of purple cabbage slaw. The dish is elevated by adding pickled mustard seeds, which provide a tangy contrast, and a creamy ranch dressing that ties all the flavours together.

Spiced Curry Lamb Papadum Nachos 4/5

The Spiced Curry Lamb Papadum Nachos ($16) are a delightful fusion of Indian and Western flavours, offering a unique and delicious twist on traditional nachos. It features crispy papadum chips as a base, providing a delightful crunch. These chips are then generously topped with tender and flavourful spiced curry lamb, which adds a rich and aromatic dimension to the dish. The yoghurt dressing adds a creamy texture and a hint of tanginess that complements the spiciness of the curry.

White "Rojak" Fruit Salad with Kaffir Lime Quinoa 4/5

The White "Rojak" Fruit Salad with Kaffir Lime Quinoa ($22) is a vibrant and refreshing dish that combines the best of both worlds - the traditional flavours of Rojak and a contemporary twist with quinoa. The salad boasts a mesclun salad base, artfully adorned with a colourful medley of ingredients, including dragonfruit, pineapple, turnip, cucumber, and cherry tomatoes. The unique twist in this dish is the Kaffir Lime Quinoa, as its tangy and aromatic profile adds depth and complexity to the salad. To further elevate the dish, it includes You Tiao Croutons, which offer a crispy contrast to the fruits and quinoa. The cashew nuts add a delightful crunch, while the ginger flower vinaigrette ties all the flavours together with its aromatic and slightly spicy notes.

Crispy Hainanese Kurobuta Pork Chop 4/5

The Crispy Hainanese Kurobuta Pork Chop ($32) is a harmonious fusion of Asian and Western flavours, showcasing the rich culinary heritage of Hainanese cuisine with a modern twist. Featuring a succulent Kurobuta pork chop with a crispy exterior, it's complemented by an Oriental tomato sauce that balances sweet and tangy notes. The dish is enriched with garden peas, golden fries, and a refreshing purple cabbage slaw.

Tanglin Style Pao Fan 3.5/5

The Tanglin Style Pao Fan ($34) is an exquisite and comforting dish that showcases a lavish array of seafood and flavours. The poached rice dish features organic jasmine rice, known for its delicate fragrance and fluffy texture. The seafood selection is a highlight, including locally farmed tiger prawns, succulent crabmeat, tender clams, plump scallops, and squid. The Pao Fan is further elevated with puffed rice, which adds a delightful crunch and playful contrast to the tender seafood and rice and an onsen egg, which enriches the dish with its velvety yolk. What ties everything together is the superior broth. However, the broth was slightly less rich than expected.

Sunday Roast 4.2/5

The Sunday Roast (36) is a classic and hearty meal that pays homage to a Sunday roast dinner tradition. The beautifully roasted grass-fed Angus beef is at the heart of this dish, cooked to perfection to ensure tenderness and flavour. A rich and savoury onion gravy is generously drizzled over the meat, enhancing its taste and adding depth to every bite. The Yorkshire pudding, an essential component of a traditional Sunday roast, is served alongside the beef. These crispy and airy delights are the perfect complement to the meat, providing a satisfying contrast in texture. A medley of vegetables on the side, which includes garden peas, roasted potatoes, carrots, and charred broccoli, adds colour and vibrancy to the dish.

British Danish Bread & Butter Pudding 4.2/5

Finally, we round off the meal on a sweet note with the British Danish Bread & Butter Pudding ($18). It is a delightful dessert that marries the comforting charm of a classic British bread pudding with the sweet indulgence of Danish flavours. This dessert features a decadent bread and butter pudding base made with rich and flavourful ingredients like rum-soaked raisins, velvety chocolate, and aromatic cinnamon. These elements come together to create a comforting, warm, and slightly spiced sensation. It is topped with a scoop of creamy vanilla ice cream, which adds a refreshing contrast to the warm pudding. As a finishing touch, it is adorned with delicate cocoa nibs, which provide a delightful crunch and a hint of bittersweet chocolate flavour.

A highlight of any buffet spread is the cold seafood section. At 15 Stamford by Alvin Leung, guests have the luxury of feasting on the freshest Baby Lobsters, Tiger Prawns, Crayfish, Blue Mussels, Little Neck Clams and Seasonal Oysters, paired with unique condiment choices such as Thai assam vinaigrette, yuzu ponzu, cilantro and lime emulsion.

Sashimi lovers are in for a treat as they can indulge in a selection of the highest quality grade sashimi. The spread features tantalising options such as Tuna Akami, Hiramasa Kingfish, and Norwegian Salmon. Each piece of sashimi is a testament to the freshness and impeccable quality of the ingredients.

Various finest artisanal cuts grace the Charcuterie and Cured Fish Station. These include Beef Bresaola, Mortadella Bologna Pistachio and Jamón Ibérico De Bellota. Guests can also savour Hot Smoked Salmon and Smoked Haddock, both served with side options such as horseradish cream, Lilliput capers, marinated olives, and anchovies.

Save room for dishes from the Pasta & Noodles section. Make your own pasta with a choice of capellini, fettuccine or macaroni, to be cooked a la minute in sauces such as the luscious aged cheddar cheese sauce, Asian aglio olio with a mild spicy kick, classic basil pesto, decadent black truffle cream, and the fusion yellow curry cream. 15 Stamford's Signature Laksa will also be available in the noodles section for a bowl of rich, slurping goodness.

The Tropical Sunday brunch would not be complete without Grill Carving and Rotisserie Spit Roast sections. Guests can look forward to succulent meats and seafood chargrilled to perfection. Pile your plates high with the Rotisserie Chicken, Hokkaido Pork Belly Char Siew, Angus Beef Rump Cap, Angus Beef Flank, and Angus Beef Ribeye freshly carved from the grill alongside spit-roasted Wild Red Snapper, Honey Glazed Ham, and Pasture Fed Lamb Leg. Amplify the flavours of the fork-tender meat with an array of sauces: adobo butter sauce, wood-smoked barbeque sauce, Asian chimichurri, Sarawak black pepper sauce, mentaiko hollandaise, and cilantro olive.

Round off the brunch on a sweet note with a selection of desserts. Guests can choose between three ice cream flavours: Chocolate Fudge, Thai Coconut, and Calamansi. There is also a Chocolate Fondue with roasted almonds, Valrhona chocolate balls, and seasonal fruits for dipping.

Estate @ Hilton Singapore Orchard - Unveils New Epicurean Buffet Offerings For Lunch And Dinner

Hilton Singapore Orchard's residential all-day buffet restaurant, Estate unveils a range of sumptuous new gourmet offerings on their spread for lunch and dinner from May 5, 2023 onwards. Diners can indulge in a tantalising variety of elevated local and regional dishes, each crafted with the finest and freshest ingredients to delight the taste buds and awaken the senses.

Guests looking to start their dinner light can first head to the Raw and Seafood Bar, where in addition to the succulent seafood available for lunch, diners can also enjoy freshly shucked seasonal oysters on ice and thick cuts of sashimi and sushi rolls.

Exclusively for dinner are the Premium Meats and Live Carvings of Estate Signature Black Truffle Roasted Duck with fried tofu and peanut crust, as well as the locally sourced Whole Barramundi with green pepper, chilli, potato, coriander and spring onion.

Another new highlight exclusive to dinner is a refreshed take on flavours for the Grilled Skewers, where carnivores will find a delectable range of meats well-marinated with homemade marinades created by Sri Lankan chef and butcher Bala from Estate's culinary team. Highlights include Chicken Shish Taouk, Fish Kebab, Beef Kofta, and Black Curry Pork Skewer.

The dinner buffet boasts a daily rotational menu of Western and modern Asian delights that will appeal to every palate. Diners who enjoy French specialities can indulge in the Baked Chicken with Dijon Creme Sauce and Grilled Angus Cube Roll with rich peppercorn brandy cream sauce.

The Carribean Coconut Mussel Curry is not to be missed, where perfectly cooked mussels are drenched in a rich and fragrant coconut curry sauce.

One of our favourites is the cooked-to-order Cantonese-style Wagyu Beef Handmade Noodles with tender beef tendon, white radish and a rich, soothing beef broth at the Noodles Kitchen.

Other Asian specialities include Szechuan-style Spicy and Soup with tofu, black fungus, mushrooms, sea cucumber and shredded chicken to start, and stop by the porridge station for a comforting bowl of Hong Kong-style Chicken Ball Congee with minced chicken ball, braised peanuts, century and salted eggs.

The dessert selection for dinner offers guests an even more comprehensive choice of toothsome treats like Rose Velvet Cake, Mixed Nuts Fudge Brownie, Bread and Butter Pudding. Diners can also head over to the Charcoal Waffle Ice Cream corner to enjoy freshly made charcoal waffles with creamy vanilla and chocolate gelatos.
