808 Eating House @ Joo Chiat Road - Accessible Style Of Inventive Contemporary Southeast Asian Cuisine

A new kid on the block in Joo Chiat enclave is 808 Eating House. The casual eatery by young chef Eugene Chee has conceptualised a menu inspired by Southeast Asian cuisine and regional produce. Chef Eugene wants to move away from the traditional fine dining atmosphere and create a livelier and more local vibe, fuelled by inventive and satisfying dishes prepared with finesse and thoughtfully-sourced local or regional quality ingredients.

Chicken and Egg 3.5/5

We started with some snacks - Chicken and Egg ($4) and Pickled Quail Eggs ($6). The Chicken and Egg is one of the dishes Chef Eugene frequently made during his stint at Bar Crenn while the Pickled Quail Eggs is a crowd favourite during a pop-up collaboration with Chooby Pizza. It felt like Chef Eugene was bringing us into his culinary world, the journey that brought him to where he is today.

Pickled Quail Eggs 4.2/5

The Chicken and Egg is a layered chicken fat chawanmushi with creme fraiche and a generous topping of finely-chopped chives. However, my favourite is the Pickled Quail Egg, which surprised me with its tartness and sweetness from the black vinegar.

Duck Fat Financiers 4/5

Everyone at the table paused momentarily when the Duck Fat Financiers ($10) was served. I was wondering whether this is a savoury or dessert dish. It is interesting to pair the buttery duck fat with a creamy and flavourful chicken liver mousse. The combination may sound weird, but it works for me.

Crispy Baby Squid 4.5/5

The Crispy Baby Squid ($16) is highly addictive, coated in a thin layer of potato starch and deep-fried to golden brown. They are enhanced with a shichimi togarashi sprinkle and are best enjoyed with the squid ink aioli dip.

You Mai Chai 3/5

The You Mai Chai ($12) is served as a salad, tossed in pandan oil, honey and mustard dressing, and topped with prawn and coconut flakes. I am not used to having the greens as a salad. I still prefer to have it stir-fried.

Sweet XL Clams 4.2/5

One of my favourite dishes for the night is the Sweet XL Clams ($24), topped with egg floss. The clams were huge, plump and juicy, swimming in a fragrant and delicious Hua Tiao broth, perking the enjoyment.

Buah Keluak Pork Belly 4/5

A change from the usual buah keluak chicken is the Buah Keluak Pork Belly ($26) paired with achar at the side. The tender pork belly is topped with coconut serundeng and ginger flower, elevating the taste profile. The accompanying achar is a welcoming side to balance the pork belly's richness.

Barramundi 3.5/5

The Barramundi ($28) was cooked beautifully with perfectly seared crispy skin, perched on a lightly-spiced garam masala pumpkin puree. While I enjoyed the fish, I wouldn't say I liked the use of Indian spices in the dish. The idea is good, but more tweak is needed to bring the dish together.

If you need your carbo, the Cold Bee Hoon ($6) will fill you up. The rice vermicelli is packed with flavours from the ebi sakura, shallot oil and chives, worked beautifully together.

Ice Cream Sandwich 4.2/5

The desserts at 808 Eating House are also crafted with a focus on local and regional flavours. The Ice Cream Sandwich ($12), a local childhood treat, comes in a modern take of black sesame parfait sandwiched between two wafer biscuits, topped with coconut caramel, mushroom crumble and mint.

Peanut In A Cup 3/5

The idea behind Peanut In A Cup ($5) is akin to savouring a bowl of local peanut soup. First, concentrated peanut milk is rendered by steeping roasted peanuts in warm milk. Then, it is poured into a glass of muscovado syrup at the base. Please give it a good swirl to enjoy the creamy texture and rich flavour.

Overall I find 808 Eating House has a lot of potential. I get what the chef is trying to do. It is creative, but more work and tweaks are needed to combine the concept and flavours. Saying so, I do look forward to their next menu.

Caviar @ Palais Renaissance - Welcomes New Head Chef And A New Spring Menu

Caviar at Palais Renaissance is a fine dining restaurant offering a unique dining experience featuring over eight different types of caviar. A Spring Menu was recently launched, crafted by their new head chef, Chef Dannel Krishnan. The focus is still on showcasing the variety of caviars available at the restaurant.

Duck Rillette Quail Egg Kataifi

Chef Krishnan draws inspiration from seasonal produce from both the East and West, as seen in our first course - an adorable Duck Rillette Quail Egg Kataifi. Nestled in the crisped kataifi is a quail egg akin to a mini ozzy Ajitsuke Tamago, cushioned by a buttery layer of duck rillette. The kataifi was deep-fried in duck fats with a little sprinkle of kombu salt, lending each bite a savoury, aromatic crunch.

Tai Shirako

What followed was Tai Shirako, which is by far the most mouth-watering shirako I had. These unctuous morsels were elegantly plated with tangy apple balsamic jelly, and perhaps what made it moreish was that they were hand breaded in Japanese panko and fried till perfection. It can be a lot to have all three in a plate, but the occasional hints of salt and flavours from the Polanco Siberian caviar helped to offset that richness.

Firefly Squid

The next dish was one of my favourites - Firefly Squid with Egg Custard. The Tonburi Hotaru-Ika aka Firefly Squid, is prized for its bursting umami flavours packed in a tiny self. The savoury flavours from the creamy shoyu custard, mushroom reduction, and tonburi (some called it the land caviar) built upon one another and harmonized beautifully with the delicate squid's very own umami flavours.

Aged Big Scaled Bream

Next was Aged Big Scaled Bream with Yuzu Mandarin, physalis (add on Caviar de Neuvic 8g $40), with flavours embodying the spring season. Scaled and prepared in shinkei jime style, the sea bream was dressed with tangy yuzu mandarin sauce, garnished with charred physalis (cape gooseberries), Japanese myoga (Japanese ginger) and kaffir lime shavings that further enlivened the dish with citrusy and herbaceous notes. A little less of the dressing's acidity would have been better.

White Asparagus

The next dish, White Asparagus with almond cream and ice plant (add on kaviari caviar 8g $42), is ideally best to add on caviar due to its sweet profile. The White Asparagus from France is poached in koji milk, paired with charred nashi pear and sweet almond cream. I can understand the recommendation to pair it with caviar, as it was leaning too much on the sweet side on its own. The seemingly withered ice plant didn't help balance the flavours.

Bluefin Tuna

Next was an artistically plated Bluefin Tuna, served with two types of caviar - an award-winning Polanco Siberian and Kaluga Queen Cross Breed known for its creamy texture. The tartare is marinated with ponzu emulsion and served alongside crunchy Jerusalem artichoke. The tuna had a luxurious meaty mouthfeel, making it an ideal partner to its two equally exquisite counterparts.

Stone Axe Wagyu Tenderloin

Our main was Stone Axe Wagyu Tenderloin, one of Australia's best wagyu, served with cordyceps and oolong jus. While the Wagyu Tenderloin delivered in both taste and texture, what also impressed me was the well-seasoned cordyceps that acquired the consistency of a very springy noodle.

We had a refreshing pre-dessert, Sour Cream Snow with Almond Soil and Banana Jelly, followed by a sweet ending. The dessert was definitely the highlight - White Chocolate Strawberries and Yoghurt Ice Cream with Polanco Oscietra. The custardy White Chocolate dessert was adorned with a layer of glistening award-winning Polanco Oscietra caviar, paired with a scoop of yoghurt cream and sweet fresh Japanese strawberries. The mingling of the various components' sweet, savoury, tangy profiles was simply divine.

Alma by Juan Amador @ Goodwood Park Hotel - An New Era With A New Culinary Team, New Menu And Refreshed Interior

After closing the restaurant temporarily for about a month to undergo renovation, Alma by Juan Amador reopened with a refreshed interior, a new culinary team and a new menu. Chef Juan trains the new team first-hand with the highly anticipated new menu featuring his signature dishes and innovative take on Asian ingredients.

Egg Benedict 2.0, Sa-Bo-Fun, Purple Tikka Masala

We had their 5-course Menu ($228), starting with a trio of snacks. We had the Egg Benedict 2.0, Sa-Bo-Fun and Purple Tikka Masala on the plate. My favourite of the trio is the Egg Benedict 2.0. It is not your usual egg benedict which comes in a crispy Vol-Au-Vent, topped with bafun uni and black truffle.

I realized the snacks are a representation of global flavours. For example, the Sa-Bo-Fun comprising red wine duck sausage and salted fish on top of a charred rice cracker, is a rendition of the Chinese claypot rice. Lastly, our taste buds are tickled by the Indian spices from the Purple Tikka Malsa layered in coconut yoghurt chicken tikka, compressed cucumber coconut masala cream and oyster cracker.

Beurre Blanc Ice Cream 4.5/5

After the complimentary Potato Bread with smoked butter, we had one of Chef Juan's dishes, the Beurre Blanc Ice Cream. The classic French sauce is presented in an ice cream form, paired with Fine de Claire oysters, Kaluga hybrid caviar and finished with hazelnut foam. The refreshing execution is entirely unexpected, bursting with lovely flavours.

Next is another signature dish from Chef Juan, Parfum de Siam. The butter-poached Australian rock lobster, yellow zucchini noodle and tempura zucchini flower are paired with a Thai-inspired thick and creamy sauce. It showcases how the chef marries Asian spices and ingredients into Western cooking techniques.

Crackling Iberico Pork Belly 3/5

Moving on is the Crackling Iberico Pork Belly. While I understand premium pork is used and the pork belly was cooked perfectly, as good as you can find in any Hong Kong roasted meat restaurant, it didn't have that element of excitement or surprise I get from the earlier dishes, maybe because the cooking style of the roasted pork belly is too commonly available and eaten in Singapore.

A4 Satsuma Wagyu 4.2/5

I prefer the A4 Satsuma Wagyu over the pork belly for protein. The melt-in-the-mouth beef is richly flavoured, and it is the grade I enjoyed as it has a slightly more textural bite than A5.

Moutai "Flying Fairy" Ice Cream 4/5

Though distilled Chinese liquor is used in the desert, the Moutai "Flying Fairy" Ice Cream is light and refreshing, comprising of tree gum snow nest, strawberry air and a crisp hawthorn flake.

Lastly, the Petite Four of Pistachio Praline Bonbon, Passionfruit Pate and Financier completed our meal at Alma by Juan Amador, perfectly with a cup of coffee.

Cafe Usagi TOKYO @ Suntec City - Featuring Mochi Creations, Teas And Other Modern Japanese Desserts

Cafe Usagi TOKYO opened its space late last year in Suntec City, with a second kiosk recently introduced at 111 Somerset. "Usagi" translates to rabbit in Japanese, and decorations in the cafe are in line with its name.

Led by Japanese Chef/Creative Director Yuka Shigeno and co-founder Artini, the cafe features a range of Japanese desserts with modern twists, focusing on mochi and tea-based creations. Coming 9 and 10 April 2023, enjoy a 1-for-1 Mochi Ice Cream Promo at their Suntec City outlet (limited to 2 orders per customer, while servings last).

Strawberry Daifuku 4/5

All of Cafe Usagi's desserts are crafted in-house, including the Strawberry Daifuku ($6.90). It was well-liked among my dining companions. Wrapped in freshly made soft and chewy mochi skin, the decent-sized strawberry had a thin layer of red bean paste around it. While the red bean paste could be smoother, the strawberries were juicy and sweet.

Mochi Dorayaki 2.5/5

Apart from the range of mochi desserts, the cafe hopes to focus on dorayaki. The Mochi Dorayaki ($6.90) has a combination of both. Layered between two dorayaki was mochi and red bean paste. The overall texture was dry and needed syrup or sauce to pair. I wasn't a fan of the dorayaki on its own, as it had a slight aftertaste that wasn't entirely pleasant.

Strawberry Matcha Dorayaki Cake 2.5/5

The Strawberry Matcha Dorayaki Cake ($9.90) had matcha cream in the middle and sliced strawberries all around. While this had a better combination than the previous Mochi Dorayaki, the dorayaki affected the overall experience.

Iced Uji Matcha Latte 3/5

Unfortunately, my Iced Uji Matcha Latte ($6.80) wasn't whisked well and came slightly clumpy. It also didn't carry the fragrance and robustness I hoped for. To be fair, I tried the same matcha latte at their 111 Somerset outlet, and the experience was better.

Mochi Waffles with Kuromitsu Syrup 4/5

Our unanimous favourite was the Mochi Waffles with Kuromitsu Syrup ($8.50). We paired this with the Samurai Blue Sea Salt Ice Cream ($5). If you are a mochi fan, you will likely enjoy this. The mochi skin is sandwiched in between, which results in a slight crispness around the waffle edges and a chewy interior. I recommend digging into this while it's hot, as the texture gets slightly sticky after cooling down.

Ceremonial Uji Matcha Mochi 4/5

The use of mochi skin continues in their Mochi Ice Cream ($6 onwards). You can first choose a preferred ice cream flavour, and the staff will prepare the order on the spot by wrapping the selected scoop with mochi skin. We found the Uji Matcha ice cream quite sweet, but it had a much more robust flavour than the matcha latte.

Lavender Hojicha Pot 4/5

After the variety of cold desserts, the Lavender Hojicha Pot ($7.90) was extra welcoming. We learnt that many of the tea blends in Cafe Usagi are Chef Yuka's creations. This hot Lavender Hojicha tea, in particular, was fragrant and smooth.

Matcha with Hokkaido Azuki Red Bean and Mochi Bread 3.5/5

Lastly, it's the newly launched Matcha with Hokkaido Azuki Red Bean and Mochi Bread ($8.80 per Loaf). Available in Original Milk, Matcha and Hokkaido Chocolate Chip flavours, they will be available daily from early April in limited quantities.

Orchid Live Seafood @ HomeTeamNS Khatib - Offers Indulgent Live Lobster Porridge And 1-For-1 Boston Lobster

Situated within Home Team NS Khatib is Orchid Live Seafood, known for offering a range of live Teochew-style seafood at family-friendly prices. With fresh seafood in large full-view tanks in the restaurant, diners can be sure that they are getting the freshest ingredients as the prized catches come straight from the tanks. They have four different types of lobsters, with the Southern Australian Lobster as the most prized lobster breed.

Live Lobster Porridge 4.5/5

Our first course is their Signature Live Lobster Porridge, cooked Teochew style with a watery but rich porridge base and rice still in grain form. Diners can take their pick from the four types of lobsters. For an indulgent experience, we had the most premium Southern Australian Lobster ($288). It comes in glorious red colour, with a firm, succulent meat texture and rich flavours.

Live Boston Lobster in Cream Cheese 4/5

We had the Live Boston Lobster in Cream Cheese starting from $78 per lobster. Superbly cheesy with some sweetness, the best way to have the dish is to use the lobster meat to sweep up the rich cheese sauce. Other styles of cooking include Garlic Steamed or Chilli.

Signature Steven Chicken 4.2/5

Another of our favourite dishes is the Signature Steven Chicken ($16 for 8 pcs | $24 for 12pcs | $30 for 16pcs). The deep-fried chicken is fried in a homemade marinade of marmite and honey sauce, resulting in a crispy exterior and a sweet and savoury flavour combination that we thoroughly enjoyed.

Seasoned Baby Squid 4.2/5

The Seasoned Baby Squid ($23) comes served in a sweet and spicy Thai sauce, red onions and cucumber strips. The baby squids were fried to a thin crisp on the exterior while retaining a tender bite. It also comes in another option - served with a trio sauce of wasabi mayo, sweet sauce and sriracha mayo sauce.

Udder's Ice Cream 4/5

Lastly, we ended the meal on a sweet note with Udder's Ice Cream, available in either dark chocolate or chendol flavours. The chendol ice cream is fragrant and sweet. However, I prefer the former for its rich chocolate bittersweetness and creamy texture.

In partnership with Veuve Clicquot, Siri House at Dempsey presents a stunning new outdoor dining experience at their outdoor terrace. The new open-air garden trellis comes with a ceiling of greenery and light bulbs complemented by dreamy hanging glass baubles filled with candles and florals. It is a romantic setting for the night. During the day, fabrics are draped over the structure, providing shelter from the heat and excessive light.

We visited Siri House for dinner to experience the Dining at Dusk - An Outdoor Dinner Experience. Diners can indulge in an exquisite 4 or 6 course menu complemented by Veuve Clicquot Champagne. The 4 course menu is priced at $98++ per pax, and 6 course menu is $128++ per pax. Each menu includes a complimentary glass of Veuve Clicquot Champagne per person.

Doenjiang Glazed Beef Short Rib 4.5/5

For the Appetiser course, diners have the choice of Doenjiang Glazed Beef Short Rib and Stracciatella. The Doenjang Glazed Beef Short Rib is cooked to tender to a beautiful pink, marinated in soy, nashi pear, apples, garlic and onions. It is paired with pickled napa cabbage and pickled daikon for a refreshing touch to cut through the richness. On top of that, it is served with celeriac and parsnip puree to go with the 36 hours sous vide beef short rib.

Stracciatella

The Stracciatella is light yet flavourful appetiser with a sweet aburi amebi. The prawn head is deep-fried to crispy, which can be eaten.

Crumbled Pork Ribeye 4.5/5

Moving to the mains, diners can choose from the Crumbled Pork Ribeye, Lobster Miso Carbonara and Chilean Seabass with Sauce Vierge. Starting with the Crumbled Pork Ribeye that uses Iberico pork ribeye, it is served with a house blend of smoked chillies mixed with honey and Dijon. It also comes with shredded pickled cabbage, drizzled with an umami-rich nori mayo. Usually, tonkatsu can be pretty dry if not done correctly, but I have to admit this is one of the best I have eaten. It is succulent and yet not greasy.

Lobster Miso Carbonara 4.8/5

If you have been following me, you will know that I like my pasta to come with a lot of sauce. So though the Lobster Miso Carbonara is not that saucy, flavours come with depth and robustness made with egg yolks, 3 kinds of cheese and white miso. Noteworthy is the housemade pappardelle with a delectable textural bite paired with a whole maine lobster tail that has been bincho grilled and glazed in chicken fat.

The Chilean Seabass with Sauce Vierge is paler in flavour than the other two mains. Though so, it allows the fresh and buttery flavour of the Chilean seabass to shine through.

From savoury, we moved on to the sweets, starting with the Orange Chocolate infused with preserved orange peel. It even comes with a scoop of hazelnut ice cream, shaved candlenut, and dehydrated chocolate mousse for added texture.

The Jasmine is a pretty dessert in which a scoop of Jasmine tea ice cream sits atop layers of puff pastry sandwiched with jasmine chantilly cream, further sweetened with a drizzle of chamomile syrup. Toasted buckwheat is scattered for extra texture.

A must-have is the Sicilian Pistachio. The whole block of pistachio ice cream is served with brown butter crumble base, topped with shavings of cured egg yolk.
