Edge @ Pan Pacific Singapore - “Penang Hawker Fare” Buffet Till 29 June 2025

From now until 29 June 2025, Edge at Pan Pacific Singapore invites diners to savour the authentic flavours of Penang with its limited-time “Penang Hawker Fare” buffet.

This special edition is a collaboration with three renowned Penang hawkers: Chef Toon Chin Hye (Ah Soon Fried Oyster), Chef Chew Soon Hock (Swatow Lane Ice Kacang), and Chef Tan Pow Lai (Tan Kee Poh Piah), each bringing years of expertise to the table.

Penang Hawker Fare Buffet 4.5/5

Until 15 June 2025, guests can also meet these Penang chefs in person as they work alongside Edge’s culinary team to serve up authentic Penang favourites, all in addition to the restaurant’s extensive buffet lineup.

The buffet is priced at $118++ per adult and $59++ per child (ages 6 to 12), inclusive of free-flow soft drinks. It runs daily from 6pm to 10pm.

The Healthy Unagi Rice Bowl ($29) features tender eel, natto (fermented soybeans), nagaimo (Japanese mountain yam), okra, sous vide egg, and garnishes like spring onions, seaweed, and Japanese ginger. However, the sticky mucilage from the ingredients may not be to everyone's liking.

Undoubtedly, the highlight of Uya's menu is the Hitsumabushi ($35/$48). Served in two sizes, this bowl showcases glistening golden-brown unagi atop fluffy Niigata rice. Accompanied by a trio of condiments (spring onions, wasabi, and crispy nori), homemade umami dashi, pickled cucumbers, and miso soup with yuzu zest, the Hitsumabushi offers three ways to enjoy it. You can savor the original flavors of the grilled unagi and rice, enhance it with your choice of toppings, or pour the light dashi broth over the rice, reminiscent of an 'ocha-zuke' style. However, it's worth noting that the dashi broth at Uya leans towards the sweeter side compared to other unagi restaurants.

We kickstart our yakiniku with a meat platter that consists of Rosu (Wagyu A5 Yakiniku), Karubi (Short-Rib Bone-In), Thai Style Pork Neck, Thick Bacon Steak and Moo Ping. I need help pinpointing my favourites as they are all quality meat with their own merits. How fitting it is to have Moo Ping on the menu for the Thai side of things, a staple in Thai cuisine.

As for the Yak Kin! Potato Salad, the smooth and creamy texture is further accentuated in flavour with bonito flakes topping.
