The Line @ Shangri-La Singapore - An Egg-traordinary Spring Feast Buffet

The Line at Shangri-La Singapore presents an Egg-traordinary Spring Feast Buffet from 3 to 27 April 2025. Expect an impressive spread that spans Western, Middle Eastern, Indian, and Southeast Asian cuisines, with unlimited servings of premium seafood such as Boston Lobster and Snow Crab.

Cold Selection and Charcuterie Stations

The Cold Selection and Charcuterie Stations feature a well-curated selection of cheeses, cold cuts, and wholesome salads. One of my personal favourites was the Roasted Kabayaki Salmon Salad with Buckwheat Soba Noodles — light, flavourful, and satisfying.

Mushroom-Stuffed Chicken Roulade

The Western Station had an outstanding lineup. The Creamy Salted Egg Pasta with Fried Prawn Balls was a straightforward crowd-pleaser, while the Mushroom-Stuffed Chicken Roulade was elevated with a rich mushroom brown sauce.

Miso-Glazed Barramundi with Creamed Leek

The Miso-Glazed Barramundi with Creamed Leek stood out with its succulent texture and beautiful balance of umami, sweetness, and savoury notes — definitely worth returning for seconds.

The Mussels with Chorizo and Cherry Tomatoes paired perfectly with bread rolls, as did the hearty Hungarian Beef Goulash.

At the Carving Station, highlights included the Oven-Roasted Australian Wagyu Beef MB9 Bolar Blade with traditional gravy and Traditional Malay-Style Ayam Percik.

At the Chinese BBQ Station, you can find Roasted "Dang Gui" Duck and Roasted Pork Belly.

Claypot Seafood Congee

Live stations are scattered throughout the buffet line, including comforting favourites such as Popiah, Claypot Seafood Congee and Singapore Laksa, cooked à la minute.

Tandoori Live Station, Satay Station

The Indian selection was equally thoughtful. It featured a Tandoori Live Station serving juicy Tandoori Chicken Thighs and a popular Satay Station offering Chicken Satay with traditional accompaniments.

Desserts were a visual and flavourful delight, with dainty mini tartlets, brownies and crisp Choux Craquelin.

Waffle with Ice Creams

One of the dessert highlights was the Live Mochi Waffle Station. The waffles were crispy on the edges and chewy in the middle. They were served with a variety of condiments, though I found they were best enjoyed with two scoops of ice cream for the ultimate hot-and-cold combo.

The promotion will run from 3 April to 27 April 2025, available Thursday through Sunday (excluding 20 April). Our Festive Lunch and Dinner Buffet starts from $68++ per adult for lunch and $118++ per adult for dinner. On 20 April, there will be a special Easter Sunday Brunch from 12:00pm to 3:00pm, starting from $148++ per adult.

This festive season, the Banquet of Hoshena promises a dining experience like no other, where every detail is carefully crafted to transport you to a magical realm. The 7-course festive menu is priced at $158++ per person and is available until 1 January 2025. This enchanting experience takes place in a cosy private room within LUCE, where you will be graciously hosted by the charming Queen and her magical mirror as they take you on a journey to a land far, far away. As you dine, expect the table to come alive with stunning animated displays, interactive tasks, mythical creatures and a sense of wonder that elevates every moment.

To begin our evening, we were presented with the Keys to A Parallel world, in the delicious form of a Rosemary & Olive Tartlet with caramelised fig, duck rillette and onion jam. This bite-sized creation was a perfect balance of flavours, as the buttery tart shell paired beautifully with the rich, savoury rillette, sweet figs, and tangy jam. A delectable start to our dinner.

The Truffled Celeriac comes with a touch of playful magic. It features a stick of Granny Smith apple suspended in a floating bowl at the centre of the table. Alongside it is a dish of tender celeriac shaved fresh truffles and Amalfi lemon gel, inviting diners to combine the elements for a refreshing bite to whet the palate.

We enjoyed the Salmon Tartare, delicately balanced on a hot, crispy shiso leaf tempura that provided a satisfying crunch. It is an indulgent bite that offers a nice contrast in textures, with the richness of the salmon tartare offset by the crispness of the leaf.

Chestnut Soup 3.8/5

Next, we were served a hearty Chestnut Soup with crispy bacon bits, chickpeas, and garlic croutons. The velvety texture is comforting, with a subtle, earthy sweetness from the chestnuts. The chickpeas, bacon bits, and croutons also added a nice bite to the soup. However, I detected some citrusy notes that felt slightly out of place. The soup is served with bread and a nice, light seaweed butter.

The Squid Ink Spaghetti is served with impressive flair, accompanied by a fiery red animation display that adds to the drama of the dish. It features generous chunks of blue crab meat, Calabria Nduja sausage, and a rich tomato ragout, creating a wonderful combination of flavours. The dish can be further spiced to your liking with three condiments — Sichuan pepper, Timut pepper, and chilli oil — allowing you to adjust the heat and elevate the experience to your preferred level of spice. A very enjoyable pasta dish that left us wanting more.

The dinner experience also includes a ‘potion-making’ session, where diners are invited to follow the Queen's instructions to craft their very own apple drink (non-alcoholic). It's a delightful and engaging way to add an extra layer of fun to the dining experience.

Chicken Roulade 4/5

The main course was a lovely Chicken Roulade elegantly paired with chicory, mascarpone, braised red cabbage, cress salad, and a vibrant salsa verde. The roulade itself was tender and juicy, with the mascarpone adding a luscious creaminess to the dish. The slight bitterness of the chicory and the braised red cabbage provided some contrast. It is a tasty dish; however, this dish is overall on the rich side.

Dessert arrives amidst a stunning animated display of colourful blooms, and the Guanaja 70% Chocolate Raspberry Gâteau is suitably pretty in pink. This creation features layers of rich cocoa sponge, decadent chocolate crunch, and a raspberry marmalade. A raspberry sorbet adds a refreshing, tangy contrast. Whilst it was fine for me, I can imagine that some diners will find this cake a tad too sweet for their liking.

I was also fortunate to dine alongside two couples celebrating an anniversary and a birthday. The atmosphere was thus made even more lively with special animation effects, and the whole table joined in their celebration. Each couple was presented with a slice of cake to mark their special occasion.

It was definitely a memorable night out, and I appreciated the thought and creativity behind each element of this immersive dining experience. The food is good, and the animations and theatrics added a unique touch to the dinner experience. The cosy, intimate atmosphere also makes this a great choice for those celebrating a special occasion, offering a perfect blend of warmth, magic, and indulgence.

New highlights for the appetiser include the Gado Gado and Seafood Couscous Salad. The light and appetising Gado Gado ($15) comprising of long beans, boiled potato, cabbage, bean sprouts, fried bean curd and egg is dressed in a fragrant peanut sauce for a nutty finishing.

The Seafood Couscous Salad ($20) consisting of prawns, squid and fish in a refreshing mango salsa dressing is excellent for whetting up the appetite.

For the soup option, diners can choose either the Minestrone or the new Crab Bisque with Cognac. The sweet and tangy Minestrone ($15) soup comes with delightful bites from the accompanying ingredients such as beans, pasta, potato, carrot, zucchini and cabbage.

Besides the local classic, the kitchen has expanded the menu to include Thai cuisine. We tried the Thai Green Curry ($25) with tender chicken simmered in a rich coconut-based curry. It is served together with a plate of fragrant steamed rice topped with a silverfish omelette.

We moved from local and Asian cuisines to Western fares, such as the Chicken Roulade and Ribeye Steak ($52). The tender and juicy Chicken Roulade ($25) is paired with mashed potatoes, asparagus, broccolini and baby carrots. It is a classic and simple dish executed beautifully for a delicious meal.

Consumers are more into sustainable diet nowadays, so the culinary team has replaced the regular ground beef with carbon-neutral beef from Five Founders, Australia. Beef lovers can look forward to the perfectly grilled Ribeye Steak ($52) served with potato gratin and seasonal vegetables.

For the vegetarians, customers have the option of Paneer Tikka ($16) served with raita and papadum. I am not a fan of it. I thought it was bland, lacking a sauce. Maybe a vegetarian curry will help to elevate the dish. For something for filling, go for the Green Burger ($18), whereby plump and juicy portobello mushroom is sandwiched between charcoal bun with pesto mayo dressing.

HotChic2 @ The Grandstand - New Pet and Kid-friendly Cafe Serves Exciting And Creative Fusion Dishes

Previously a hawker store at Bukit Batok known as HotChic, HotChic2 is the founding team's newest venture to offer a more diverse and experimental menu. Located within The Grandstand, the pet and kid-friendly cafe serves innovative fusion dishes inspired by cuisines all over the globe that are pleasing to both the eyes and the palate.

Build-Your-Own-Potion 3.8/5

We had fun exploring their fascinating drinks menu to kickstart the meal, with a customizable DIY-style Build-Your-Own-Potion ($9.50) to create your dream concoctions. I chose the vanilla butterfly pea for the base soda flavour, followed by a side of fruit (preserved oranges) and a mint leaf topping. While we enjoyed the refreshing and tangy soda, the drink's colour changing layers also make for a very instagrammable shot.

The Hotchic Ceviche ($12) consists of fresh Norwegian salmon slices dressed in Hotchic secret marination and sambal mayo and comes topped with lychee boba and tobiko. I loved how the sambal mayo gives a subtle kick of spice and flavours to the fresh salmon, while the lychee boba brings a burst of refreshing fruity finish to the dish.

Sake Mussels with Truffles 4/5

The Sake Mussels with Truffles ($14) was also no less impressive with a rich umami-filled broth of "shiok" sake and generous amounts of fresh blue mussels. It is paired with furikake sourdough to mop up the remaining broth. If you're a fan of sake, this is definitely a dish to go for.

The Mentaiko with Lime Fries ($12) comes in a giant bowl of fluffy crinkle cut fries, doused in a generous amount of mentaiko sauce.

The Oppa Su Dong Po ($27) is a Chinese-Korean-Japanese fusion main, consisting of slow-braised pork belly accompanied by peach kimchi and a HotChic2 invention, TARO-yaki balls. The best way to enjoy the dish and savour the flavours entirely is to wrap the tender pork belly meat with some peach kimchi and sour plum mayo in a piece of lettuce.

Hot Chic Chicken Roulade 4/5

The Hot Chic Chicken Roulade ($28) features tender chicken thigh pieces stuffed with secret recipe braised rice with yam & mushrooms, Justin's cucumber, and served with foie gras pate with furikake sourdough. The dish also came with a small jar of strawberry grape jam to cut through the meat's richness. The refreshing sweet fruity flavour of the jam helped to cleanse the palate as well.

From the pasta selections, we had the Prawn & Mushroom Aglio ($16). A classic dish done well, the pasta is cooked to a perfect al dente, and the fresh prawns used are also juicy and tender.

While we enjoyed the rest of the dishes, the Pan Fried Crayfish with Goth Pasta ($19) fell under expectations, as we felt that the pasta was a tad too dry and lacked the squid ink flavour.

We also tried the WHEN-CHEF-TRIES-TO-BE-ATAS set menu ($68), consisting of a starter, main and dessert. We started with a Bacon Foie Gras Pate that comes with macerated cherry tomatoes, crushed nuts and Japanese musk melon to pair with the spiced furikake sourdough.

This is followed by the main dish of Pan-Roasted Shichimi rubbed Pigeon, with Hazelnut Mash, bacon soil, braised quail eggs, as well as a myriad of vegetables on the side. While the pigeon meat is soft and tender, it has a slightly gamier taste than chicken meat. However, we enjoyed this immensely, as the cherry tomatoes helped to cut away some of the gaminess.

We ended the meal with a Turkish-inspired dessert. It was named "It's a secret" on the menu, as the desserts are meant to be a surprise and changes with the season. Besides the gorgeous presentation, the desserts scored in terms of taste as well - the bitterness of the creamy coffee custard complemented well with the pistachio crumbs and the sweetness of the crushed honeycomb and fruits.
