Poonsti, the well-loved eatery specialising in crispy rosti, has launched a brand-new weekend evening dining concept. Staying true to its potato-loving roots, the space transforms into a charcoal grill house, where perfectly grilled meats are paired with their signature crispy rosti, a variety of sides, and craft beers for a hearty, comforting meal.

Build Your Own Rosti-Grill Set ($25+)

The dinner menu follows a customisable concept:

1. Choose your Rosti: Plain, Garlic & Chives, Curry, or Black Pepper & Cheese.
2. Pick a Grilled Meat: House Bacon, Beef Sausage, Flat Iron Steak, Pork Collar Steak or Chicken Thigh.
3. Select two Sides: Coleslaw, Baked BBQ Beans, Mac & Cheese, Buttered Corn or Salad.

Each set is served on a tray, but for the sake of presentation, we plated them for a better visual experience.

Garlic & Chives Rosti, Pork Collar Steak, Coleslaw, Mac & Cheese

For our first set, we opted for the Garlic & Chives Rosti (+$2), Pork Collar Steak (+$4), Coleslaw, and Mac & Cheese. Poonsti's signature rosti remains as delightful as ever, with a crispy golden exterior and soft, fluffy insides. The garlic and chives infusion adds a subtle yet aromatic depth to the potatoes. The pork collar steak was a pleasant surprise — tender, smoky, and juicy, with just the right amount of char. Worth highlighting are the side dishes, which are often an afterthought in many places. The Mac & Cheese was creamy and well-seasoned, while the Coleslaw had a nice balance of tang and crunch, rounding out the plate beautifully.

Curry Rosti, Chicken Thigh, Beef Sausage, Salad, Buttered Corn

For the second set, we went with Curry Rosti (+$2), Grilled Chicken Thigh, Salad, and Buttered Corn, with an additional Beef Sausage (+$8) for a more substantial meal. The Curry Rosti was an interesting twist — crispy like the classic version but infused with a light curry spice that added a Southeast Asian touch. The Chicken Thigh was well-marinated, tender, and charred to perfection, while the Beef Sausage was plump, juicy, and bursting with flavour. As for the sides, the Buttered Corn was sweet and buttery, and the Salad provided a refreshing contrast to the heavier components of the meal.

Poonsti's weekend grill concept successfully elevates its well-loved rosti by pairing it with well-executed charcoal-grilled meats and thoughtfully prepared sides. Unlike many places where sides are overlooked, Poonsti ensures each element of the meal is carefully crafted. Lime Restaurant @ PARKROYAL COLLECTION Pickering - Elevates Dinner Buffet with Seafood Symphony

Lime Restaurant at PARKROYAL COLLECTION Pickering has recently introduced a refreshed dinner menu. Seafood Symphony, available daily, features a lavish spread, including an enhanced three-tier fresh crustacean tower alongside new cooked seafood dishes.

One of the key highlights is the three-tier crustacean tower. Initially a single tier, the spread has now been elevated to include Boston Lobster, Snow Crab, Chilean Scallops, Yabbies, Tiger Prawns, Black Mussels, White Clams, and Whelk.

Known for their Peranakan spread, Executive Chef Alvin Leong has introduced a new speciality — Buah Keluak Black Duck. Swapping its usual brown exterior for an enigmatic black coat, the duck took on a subtle nutty nuance while remaining just as tantalising and succulent. It was served with a piquant chilli and calamansi sauce alongside the classic plum sauce.

One of my favourites was the Flower Clams in Collagen Broth. The broth was utterly delicious — aromatic, slightly milky, sweet, and savoury. I even grabbed some buns from the Bread Station to soak up every last drop. Another delectable creation was the Steamed Mussels in White Wine Broth, made even more flavorful with herbs and stewed cherry tomatoes.

The Western station offers hearty options like Sous Vide Roast Angus Beef and Crispy Roast Pork Porchetta. The latter stood out as one of the better versions I've had, with a perfectly crisp crackling and an even balance of fat and meat beneath the crisped skin.

The magnificent Trio of Chocolate Fountains takes the Dessert Station up a notch. They feature flowing streams of Dark Chocolate, Matcha, and Raspberry — perfect for coating marshmallows, strawberries, grapes, biscotti, and more.

The Black Pearl, the latest Chinese restaurant to open at Odeon 333, presents a contemporary interpretation of 'Yue' cuisine, encompassing various sub-cuisines of the Greater Canton region. Located on the rooftop of Odeon 333, the lavish interior boasts a panoramic city view, featuring a main dining hall, three modular private dining rooms, a stylish bar, and an exclusive Chef's Table.

The meal begins with a taste of the dim sum menu, highlighted by the Crispy Shrimp Rice Roll ($18). The red hue comes from blending uncooked red rice into the flour mixture, giving the rice roll a vibrant touch. It is wrapped around a deep-fried Vietnamese rice paper fritter filled with prawn and asparagus, complemented by a house-blended soy sauce. The contrast between the smooth rice roll and the crispy interior creates an enjoyable textural experience.

Garnished with crispy salmon skin, it provides an extra layer of texture.

Ending the meal on a sweet note, the Pumpkin Sago with Coconut Milk ($8 per pax) blends Japanese pumpkin with fresh cream and coconut milk for a smooth consistency. The inclusion of pumpkin cubes and sago adds a pleasant texture, and diners can enjoy it chilled or hot.

While The Black Pearl delivers well-executed and delicious dishes, many of them can be found in other Chinese restaurants across Singapore. The restaurant succeeds in offering a comfortable dining experience with quality ingredients and refined cooking techniques. However, it is still in search of a unique identity to truly stand out as a gem in Singapore's competitive Chinese dining scene. Nonetheless, with its prime location, stylish setting, and diverse menu, The Black Pearl is undoubtedly worth a visit for those looking to indulge in contemporary Cantonese cuisine.

AMI Patisserie x Roku Gin - Presents a Cocktail and Dessert Omakasae Experience from 4 to 6 April 2025

This spring, Roku Gin and AMI Patisserie collaborate to present a cocktail and dessert omakase session from April 4–6. The Sakura Bloom 2025 Edition returns by popular demand, a bottle embodying the Japanese concept of shun — the fleeting moment when nature is at its peak in vibrancy and vitality. In the same vein, "AMI" also translates to "blossoming in Asia" in Japanese. This 8-course omakase showcases Chef Makoto's signature creations alongside specially curated Roku Sakura Bloom-infused desserts. The experience is elevated with a signature Roku serving — the Roku Sakura Bloom Gin and Tonic with Pink Gari — as well as two limited-edition cocktails crafted by local food stylist and entrepreneur C.R. Tan.

Next was Chef Makoto's highly raved-about Signature Choux. The delicate choux pastry encased a classic, creamy organic egg filling, which contrasted beautifully with its slightly crisp shell. The crème fraîche on top enhanced the creamy mouthfeel, while caviar and shiso flowers added a well-balanced savoury depth.

Following that was the Hokkaido Crab Tartelette, featuring a tart base topped with a harmonious blend of Hokkaido crab, scallop, green apple, amera tomato, and young ginger. The tart was baked to achieve a deep browning, adding depth to the flavours. A layer of yoghurt cream tied the elements together, complementing the textures beautifully.

We enjoyed the Smoked Omi Roasted Beef Tarte, which featured house-made brioche, Omi beef from Chef Makoto's hometown, and uni for a heartier bite. The well-seasoned brioche served as the perfect vessel for the luscious, smoky Omi beef and creamy uni, with a touch of wasabi cream to bring the elements together.

The Japanese Asparagus Tarte truly celebrated the beauty of spring. Layering on top of a buttery sweet tart base were crunchy Japanese asparagus, tender slices of shiitake, and Parma ham. Seemingly simple ingredients, every bite was packed full of flavours with a satisfying mouthfeel.

Moving on to the highly anticipated desserts: First was the Japanese Spring Citrus, a refreshing combination of gin jelly infused with Roku Sakura Bloom Edition, mandarin orange, and kumquat granita.

Next came the Marble Dark Chocolate, which delivered bold, intense flavours with crispy tiles, 72% dark chocolate ganache, coffee cream, and Cognac Amaretto ice cream.

The final creation — and my personal favourite — was Strawberry Sakura. This classic pairing of strawberries and cream was elevated with delicious rice pudding infused with Roku Sakura Bloom Edition, fresh strawberries, strawberry granita, and velvety coconut ice cream.

Ending the meal was Oyatsu, the Japanese version of Petit Four — Warabimochi. Made from a family recipe, the warabimochi had an impressive stretchy and chewy texture. It was delicious with a thin coating of kinako powder and a drizzle of kuromitsu.

Cavern Restaurant @ Rainforest Wild ASIA - Singapore's First and Only Restaurant in a Cave

Tucked away within the Mandai Wildlife Reserve's new Rainforest Wild ASIA, Cavern Restaurant is the latest concept by the TungLok Group. Designed to resemble the Mulu Caves of Sarawak, one of Southeast Asia's largest and most intricate cave systems, the restaurant offers a unique dining setting surrounded by rugged rock formations and lush greenery. Its location near the entrance of this new attraction makes it a convenient and immersive stop for visitors looking to relax and enjoy a meal in an environment that feels like a natural extension of the rainforest.

The Crystal Cave Salad ($22) is a vibrant and refreshing start to the meal. A creamy Spanish burrata sits at the heart of the dish, paired beautifully with heirloom beetroot in both classic red and golden hues. The truffle honey dressing lends a luxurious touch, while toasted walnuts provide a delightful crunch, elevating the salad's texture and flavour.

The Spicy Wing ($16 for 4pcs) isn't particularly fiery despite its name. However, the blue cheese dip served alongside — its pungent creaminess balances out any lingering heat, though its strong flavour might not appeal to everyone.

The Pulled Pork Taco ($22 for 3pcs) impresses with its succulent, slow-cooked pork infused with deep, smoky flavours. The buttery avocado and smoky paprika aioli add layers of creaminess and spice, all encased within a soft, pillowy taco shell. Every bite is a harmonious blend of textures and flavours, making it one of the best offerings on the menu.

A much-improved version from its original, the Smouldering Core ($20) features charred cauliflower, halved and grilled to perfection. The barbecue sauce glaze on the exterior adds a smoky richness, while the garlic aioli and pickles inside provide a creamy, tangy contrast. It's visually stunning and finished with microgreens and edible flowers, giving it an elegant touch.

The Rigatoni Alla Vodka ($22) delivers al dente pasta bathed in a tangy tomato-based sauce topped with micro greens and parmesan cheese. While the flavours are pleasant, I wished for a more generous amount of sauce to better coat each piece of rigatoni.

A dish for meat lovers, the Caveman's Meat Skewer ($38) features 200g of beef tenderloin, button mushrooms, shallots, and peppers, paired with chimichurri sauce. While well-cooked, the dish feels ordinary, lacking a standout element to truly impress.

More satisfying than the skewer, the Ironstrike Knuckle ($28) is braised to fork-tender perfection, allowing the meat to fall apart effortlessly. Served with a mustard jus, the bold, tangy sauce enhances the richness of the pork, making it a comforting and well-executed dish.

For dessert, we indulged in the Pandan Bambolini ($6 per piece) — a fried doughnut filled with kaya. The kaya itself is outstanding, bursting with fragrant pandan and coconut flavours, but the execution was inconsistent. Some pieces had barely any filling, leaving the dough too dry to enjoy fully. When balanced correctly, however, it's an aromatic and indulgent end to the meal.
