The duck is meticulously marinated for at least 8 hours in a secret sauce that deeply infuses the meat with rich flavours before being air-dried for 2-3 hours to remove excess moisture. It is then smoked and deep-fried to perfection, resulting in an incredibly light, crispy skin that complements the tender, fragrant meat.
