Il Cielo Restaurant @ Hilton Singapore

Located on the rooftop on level 24 of Hilton Singapore is a cozy and intimate pool side Italian restaurant that serves nostalgic flavours of the days past presented in a contemporary style. Il Cielo Restaurant (means "The Sky") is helm by Italian Chef Omar Bernardi using natural, organic and sustainable sources.

With a seating capacity of 48 persons that includes indoor, a private room and pool side seating comes with a panoramic view of Orchard Road skyline, providing an urban resort feel with its interiors and surroundings.

Bosco ($45 for whole) il Cielo  Pizza ($50 for whole) 4.2/5

For the best of both world, the chef made us a half half pizza. The distinct and aromatic truffle from can be smelled from a distance when the pizza was served. It came from the Bosco ($45 for whole) that is topped with porcini, home cured Italian sausage and truffle. The other Il Cielo ($50 for whole) is a Neapolitan pizza topped with Maine lobster and caviar. Both Rome style pizzas are made with flour from Vesuviana that were thin and crispy.

Burrata 4/5

A first in Singapore where the Burrata Mozzarella ($38) is freshly made 'a la minute' and paired with heirloom tomatoes. The homemade buffalo milk burrata surprisingly has a nice bite to it from the outer layer with a nice contrasting soft and moist filled bufala inside.

Capesante 4/5

The Capesante ($32) comes with a trio of scallops done 3 ways. We have the pancetta and truffle, foie gras and wine reduction and Saffron sauce with caviar. A delightful trio to sample the different flavours and execution from the chef.

Kamut Spaghetti 4/5

The Spaghetti ($36) at Il Cielo is made from the rare kamut flour. Kamut is not the name of the wheat but a trademark. The Khorasan wheat is an ancient type of grain organically grown, believed to have originated from Egypt. The al dente spaghetti was cooked with sicilian red prawn, zucchini and caviar.  It was hearty and homely but yet with a modernised execution.

Branzino 4/5

The Branzino ($75) comes with a whole sea bass flash roasted on olive wood. The fish is served whole and deboned at table side by the waiter. The sea bass was moist and came with a hint of earthy aroma.

Agnello 4.2/5

The Agnello ($50) is cooked to medium exactly what we have ordered. The beautiful olive crusted colorado rack of lamb was beautiful and paired with excellently with the truffle mustard.

Tortino Al Cioccolato 3/5

The Tortino Al Cioccolata ($18) was rather misleading. The Amadel Dark Chocolate Souffle was more like a molten lava chocolate cake rather than a souffle. The accompanying spicy vanilla ice cream on the other was rather unique, creamy and smooth with a nice tad of spiciness.

Overall the most memorable experience is the cosy, intimate and alluring ambience of the restaurant in a semi-alfresco setting. Awarded the Ospitalita Italiana Seal for quality, authentic Italian cuisine, Il Cielo uses the finest natural and organic produce including seasonal vegetables and herbs, sustainable seafood sources as well as fresh and natural cuts that are free of hormones, antibiotics and other harmful chemicals.

Nederburg Wines Heritage Heros

Award winning South African wine producer Nederburg Wines (with 200 years of history) has created a selection of limited edition, home made gourmet wines known as Heritage Heros. Each individually named, they have been made to honour some of the major figures in South Africa winemaking who have been a source of inspiration to award winning winemaker Razvan Macici.

The Anchorman - Chenin Blanc 2011

The Anchorman is named after Nederburg’s founder, Philippus Wolvaart, who bought the farm in 1791 and planted Chenin Blanc, amongst other varietals. He had the vision and courage to tame a wilderness and grow great wine. His fingertips are still on every wine we make.

Vineyards: Fruit from old, low lying dryland bush vines in Darling, Paarl and Durbanville.
Colour: Brilliant with a golden hue.
Bouquet: Reminiscent of ripe fruits, especially apricots and oranges with a floral hints and traces of raisin and spice.
Palate: Well balanced, fresh and fruity with a beautiful minerality and an excellent structure.

The Motorcycle Marvel - Rhone Style Blend 2009

The Motorcycle Marvel honours the legendary winemaker Günter Brőzel, who was cellarmaster at Nederburg from 1956 to 1989. He played a leading role in building Nederburg’s reputation as the most awarded winery in South Africa

Vineyards: The Shiraz grapes were sourced from an award winning bock of trellised vines in the Philadelphia area while the Carignan and Grenache came from old bush vines in Paarl.
Colour:Dark intense red
Bouquet: An abundance of spicy, peppery berry and sweet fruit characters.
Palate: A rich and intense, full bodied explosion of flavour with ripe and silky tannins and an excellent integration between fruit and wood.

The other 2 Heritage Heros Wines which I have not get to try is The Young Airhawk - Sauvignon Blanc 2012 and The Brew Master - Bordeaux Style Blend 2009. Nederburg’s II Centuries Cabernet Sauvignon will also debut in Singapore. A celebration of two centuries of skill, tradition and heritage, II Centuries forms the apex of the multi-tiered range of wines produced by Nederburg. All single-varietal wines, the “best of best” collection of hand-made wines are produced from grapes sourced from the best vines within top-performing vineyards jointly identified by our highly-skilled winemaking and viticultural teams.

The Heritage Heroes range is available at S$39 per bottle and the II Centuries Cabernet Sauvignon is available at S$79 per bottle at DFS. They are also available in popular dining venues and hotel outlets.
