These plump Fresh Jumbo Canadian Oysters ($12.90/pc, min. order of 2 pcs) were elevated with tangy pickled shallots, tobiko and a moderately spicy salsa taquera. I could have multiples of this!

Grilled Squid with Salsa Taquera 4.2/5

Following the oysters was the Grilled Squid with Salsa Taquera ($28.90). I really enjoyed the tenderness of the squid, accompanied by a hint of smokiness. While some of my dining companions wished for a stronger char, the dish was well-received overall. Like the oysters, it was served with a side of Mexican salsa taquera, adding a zesty touch.

Everyone’s favourite dish of the night was Gaggan's Crab Curry with Seafood Paradise Creamy Butter Mud Crab topped with Coconut Crumbs ($128). It beautifully showcased the strengths of both restaurants, featuring Seafood Paradise’s succulent crab in its renowned creamy butter sauce, elevated by Gaggan Anand’s aromatic and spices-spiked crab curry.

The luscious and flavourful combination prompted us to order a second serving of fried mantous to mop up the sauce!

The Stir-fried Live Tiger Prawn with Gaggan's Crab Curry Base incorporates the same crab curry base minus the cream. The absence of cream allows the vibrant herbs and spices to shine more distinctly, especially after stir-frying with the meaty prawns.

A whole Jade Perch is marinated in a mildly spicy tamale masala sauce before being wrapped and baked in a banana leaf. This method of preparation ensures that the fish meat retains its juiciness.

Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh's Masala 4.2/5

The last creation of this collaboration is the Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh's Masala served with Papadum. This twist to our local mee goreng sees a robust infusion of malasa spices with flavours leaning more sweet.

The Kongsee on Genmill Lane is conceptualised as a mod-sin izakaya with the vibe of an underground lounge, with Chef Willin Low as the food consultant.

Barramundi Ceviche 3.5/5

Barramundi Ceviche ($22) is a dish that was conceived against the backdrop of our local food history and culture. The Barramundi is locally sourced, treated and presented as a Latin American dish with a Southeast Asia flair. It is accompanied by some cold and warm elements for flavour and textural contrast - Pickle Onions, Fried capers, Fried Diced Eggplant, Savoury Ice Cream and mini Papadams, which serve as a vessel to bring it all together. While the concept was good, the flavours of the various elements didn't quite come together.

As our fondness for Thai food has also shaped our local food scene, the menu also offers a few Thai-inspired dishes, such as the Kongsee Crab Cake ($28), made with Wild Caught Crab in Tom Kha Kai. The flavour of the Crab Cake was reminiscent of the Thai Fish Cake, which was in harmony with the coconut soup. The soup, delectably infused with lemongrass and aromatic kaffir lime oil, added to the cohesiveness of the dish.

Salted Egg Prawn 4.2/5

We tried 2 of the Skewers (minimum 2 skewers) that spotlight the quality of the respective ingredients - Iberico Satay ($8) and Salted Egg Prawn ($7). The iberico secreto was grilled to perfection over binchotan, rendering its fats and attaining the right amount of char on the exterior, which fully developed the iberico's tantalising flavours. The accompanying Javanese Peanut Sauce and Pineapple Salsa showcase the restaurant's attention to detail in bringing you the dish's essence. The latter was well executed too. I could taste the Tiger Prawn's sweetness enhanced by the contrasting Salted Egg sauce. It also had a delectable firm, and meaty texture.

Ngoh Hiong Dumplings 3.5/5

Ngoh Hiong Dumplings ($8) is a rendition of our traditional Ngoh Hiong, made with a Crab and Pork mixture wrapped with Bean Curd Skin and finished with a dash of Vinegar. While the mixture was considerably juicy and the flavour was good, it lacked the crunch and sweetness in the absence of prawns and water chestnut.

Roxy Crab Laksa ($12) is a highly anticipated dish cooked with Chef Willin's Secret Recipe Laksa Broth. The broth undoubtedly captivated me with its robustness. It was pleasantly spicy with a well-balanced of flavours. Though switching prawns with Wild wild-caught crab elevates the finesse of the dish, the comfort and satisfaction of a laksa are missing.

Lamb Kut Teh 4.8/5

Lamb Kut Teh ($32) is by far the best Lamb dish I had in a long time. Whether or not you are a lamb lover, you should give it a try. The soup carried a good amount of heat lent from White Peppercorn, permeated with just a faint gaminess from the lamb. The Lamb Denver Ribs had been grilled over binchotan before serving, which elevated its succulent texture with a contrasting, slightly charred exterior. The smoky nuance inherited by ribs from the binchotan had also made them even more moreish.

Churro Waffle with Kaya Ice-Cream 4.5/5

Rounding off our mod-sin journey was a memorable Churro Waffle with Kaya Ice Cream ($12). Given that the churro was skinner than usual and bore more ridges, it had an excellent balance of crispy golden crust and a chewy, dense, but airy interior. The Homemade Kaya Ice Cream that was nestled perfectly on the churros was on point with our familiar taste of kaya and the right amount of sweetness. The Coconut Cream salted with Shio Kombu enriched the mouthfeel of the dessert and counterbalanced its overall sweetness.

Wan Hao Chinese Restaurant (萬豪軒) @ Marriott Tang Plaza Hotel - “The Return of Sri Lankan Crabs”, Wan Hao’s Limited-Time Offering Till 31 Aug 2023

Wan Hao Chinese Restaurant is bringing back its "The Return of Sri Lankan Crabs" promotion, which features twelve crab-centric dishes centred around local and Chinese flavours with modern elements. The menu offers both Dim Sum and A La Carte options, with the Dim Sum offerings exclusively available during lunch hours.

For Dim Sum, you can expect creations such as Pan-Fried Chilli Crab Bun ($3.80 per piece) and Black Pepper Crab Meat Spring Roll ($3.80 per piece), while the A La Carte dishes include Stewed Crab with Shallot & Sha Jiang in Claypot ($15/100g), Braised Luffa Gourd with Crab Meat & Crab Roe ($48) and more.

Hairy Crab Xiao Long Bao 4/5

From the Dim Sum menu, we sampled the Hairy Crab Xiao Long Bao ($4.80 per piece, min. order of 2 pieces). The xiao long bao broth carried a more savoury-sweet flavour profile, deviating from the usual porky richness.

While I found the portion a bit small considering the price, it was quite an indulgent treat with the morsels of crab meat.

Wok-Fried Prawn with Egg White & Fresh Milk in Crab Roe Sauce 4/5

The Wok-Fried Prawn with Egg White & Fresh Milk in Crab Roe Sauce ($48) featured a smooth and custardy egg white topped with crunchy prawns. The crab roe and its sauce added a buttery richness, though the fried piece carrying the ingredients could be done significantly better. It lacked crunch and, unfortunately, gave a tad oily aftertaste, which affected the overall experience.

Braised Iberico Pork Ball with Hairy Crab Superior Stock & Bok Choy 4.2/5

A standout for us from the A La Carte menu was the Braised Iberico Pork Ball with Hairy Crab Superior Stock & Bok Choy ($38 per pax). The golden stock was rich and savoury, complementing the packed yet tender pork ball. The addition of crunchy water chestnut bits added texture, while the crab meat lent a subtle sweetness.

Salted Egg & Chicken Floss Crab 4.5/5

The batter on the Salted Egg & Chicken Floss Crab ($15/100g) was perfectly executed. It was skillfully done thin enough to thoroughly coat the crabs and pick up the salted egg and chicken floss. There was even a generous amount of crunchy batter bits all around.

Although the salted egg flavour was less robust than expected, this decadent combination will appeal to the local palate. The crabs themselves were incredibly fresh with plump meat. I was thoroughly impressed by the amount of crab egg roe found in the shell - it was packed!

Steamed Crab Roe with Wok-Fried Glutinous Rice 4.2/5

We concluded our crab feast with the Steamed Crab Roe with Wok-Fried Glutinous Rice ($16/100g). Personally, I prefer steamed crabs, especially when they are fresh, as it allows its natural sweetness to shine through. The lightly seasoned glutinous rice studded with Chinese sausage was a great accompaniment to the firm crab meat.

If you are a crab enthusiast, Wan Hao’s crab creations are worth a try before their seasonal menu comes to an end.

Sky22 @ Courtyard by Marriott - Experience Sky22’s Mediterranean-Inspired Delights, A Limited-Time Menu Available Till 31 August 2023

This season, the special menu launch at Sky22 features Mediterranean-inspired flavours thoughtfully assembled by the restaurant's chefs. Featuring both a la carte options and set dinners, it offers dishes for starters, sharing plates, mains and desserts using flavours from countries like Greece, Italy, Spain and Morocco. The menu's emphasis is on proteins, the use of herbs, whole grains, spices and fresh vegetables.

If you are dining as a duo, the Set Dinner for Two is priced at $48/pax and $45/pax for a group of four. This time-limited menu will be available daily from 6pm to 10.30pm till 31 August 2023.

Sky22 boasts a breathtaking skyline view that surrounds the restaurant space. I recommend reserving a window seat if you are coming by - we were there for dinner and were rewarded with a gorgeous sunset. Our Set Dinner for two included a starter, two mains and two desserts of our choice.

Grilled Octopus 3.8/5

The Grilled Octopus ($28) showcased the Mediterranean influences using Muhammara, smoked paprika, capers and white anchovy. Unfortunately, the octopus was too chewy for my liking, though I appreciated the complementary bursts of sweet pomegranate and tang of capers.

Tiger Prawns 4/5

The Tiger Prawns ($32) main had a bed of squid ink rice cooked with garlic, chilli, and cognac. While the prawns fell short of expectations being slightly overcooked and dry, the miso butter slab gave the dish great depth. I recommend mixing the butter in before enjoying it.

Kleftiko 4/5

For our second main, we chose the Kleftiko ($36, Additional $6 Top Up for Set). It features a roasted lamb shank accompanied by potato, lemon and dukkah. My dining companion enjoyed the meat's gaminess more than I did and gave thumbs up to the meat's tenderness.

Apple Spiced Cake 4/5

The delightful Apple Spiced Cake ($14) was our first dessert choice. It was served with a butterscotch rum sauce and a scoop of vanilla ice cream. Although the alcohol spiked apples could have been cooked softer, the cake was moist with a pleasant hint of spices.

Chocolate Babka French Toast 4/5

Lastly, we had the Chocolate Babka French Toast ($12). The chefs used chocolate babka bread instead of the usual french toast to pair with a more refreshing, tangy-sweet labneh (a strained yoghurt). There were also bits of almond and a sesame brittle for added crunch.

We were presented with a quartet of appetizers to kick off the meal. The beautifully plated dishes showcased a variety of cooking methods, including the succulent Suckling Pig topped with Black Caviar, the refreshing Chilled Abalone, the flavourful Sauteed Sliced Sea Conch, and the indulgent Baked Kagoshima Wagyu Beef Pastry. Each appetizer was a delightful combination of textures and flavours, offering a glimpse into the culinary craftsmanship of Shang Palace.

Packed with depth and richness, the soup was a testament to the skilful art of double-boiling, resulting in a clear yet flavorful concoction that warmed both the heart and soul.

To conclude the exquisite 6-course experience, we savoured a trio of desserts. The Chilled Mango Cream Pudding with Pomelo, Baked Peanut Pastry, and Chilled Osmanthus Wolfberry Jelly offered a sweet and refreshing finale. The highlight was undoubtedly the baked peanut pastry, which left a lasting impression and had us eagerly anticipating its potential appearance during the upcoming Chinese New Year festivities.

Overall, "The Epicure Shangri-La at Shang Palace" 6-course menu at Shang Palace was a testament to the culinary expertise and attention to detail that has made this establishment a true gem in the Singapore dining scene. From the impeccable flavours to the elegant presentation, each dish showcased the artistry and dedication of the talented team at Shang Palace. This glaze enhanced the dish's appearance and added a subtle sweetness that complemented the savoury flavours exquisitely.

The halal rendition of this beloved classic lived up to its renowned reputation.

Finally, we indulged in the Mango Pudding ($5) and Sweet Yam Paste ($5) to conclude our meal on a sweet note. The Mango Pudding delighted us with its soft and creamy texture, garnished with fresh mango that added a fruity freshness. However, the Sweet Yam Paste caught our attention with its unique twist on the traditional dessert. Accompanied by a sweet corn soup, this rendition provided a delightful contrast of flavours and textures that satisfied us thoroughly.
