I Want to Cook For My Family
The I Want to Cook For My Family Campaign is initiated by Daniel Ang of DanielFoodDiary.com to gather 100 bloggers to cook for their family. Most of us bloggers spent most of our time outside attending events and food tasting session. At times, we are so caught up with our own personal life that we forget about the love ones in our family. The campaign helps to remind us to take a step back to do something and spend time with our family members.
Ingredients
- Kang Kong
- Yifon Botted Tea Tree Mushrooms
- 2 Cloves of Garlic
- Dried Shrimps
- Sambal Paste
- 1 Teaspoon of Knorr HaoChi All-in-1 Seasoning
Direction
1. Pre-heat Happy Call Double Sided Pan for 1-2 minutes.
2. Heat cooking oil in Happy Call Double Side Pan.
3. Add in garlic, dried shrimp and sambal paste. Saute till fragance.
4. Add in Kang Kong and Teatree Mushrooms and stir fried for a minute.
5. Drizzle in the seasoning.
6. Stir Fried for another minute and we are ready to serve.
The first dish I prepared for my family is Stir Fried Sambal Kang Kong with Yifon Teatree Mushrooms. It can be easily prepared for your family. Just need to fried fragrant some garlic, sambal paste and dried shrimp. Next just need to stir fried the Kang Kong and Teatree Mushrooms.
Ingredients
- Mackerel Cutlet
- Salt
- Pepper
- Teriyaki Sauce
- Chopped Red Chilli
Direction
1. Pre-heat Happy Call Double Sided Pan for 1-2 minutes.
2. Heat cooking oil in Happy Call Double Side Pan.
3. Pat dry Mackerel Cutlet before putting into pan.
4. Grill mackerel cutlet until one side is brown and flip over to the other side.
5. Drizzle in Teriyaki sauce and cooked both sides for 1-2 minutes.
6. Topped with some chopped red chilli to serve
The second dish I cooked for my family was Teriyaki Mackerel Cutlet. It is another very simple dish to prepare. Just need to marinate the mackerel cutlet with salt and pepper. Grilled the cutlet until both side is brown and then drizzled with teriyaki sauce.
Ingredients
- Pork Ribs (7-8 pieces)
- 1.5 Cup of uncooked rice, rinsed
- 2 Cup of water
- 1 tsp of sesame oil (for marinade)
- 2 tsp of light soy sauce (for marinade)
- 1 tsp of dark soy sauce (for marinade)
Direction
1. Wash and blanch pork ribs in boiling water for 1-2 minutes.
2. Marinate pork ribs for 20-30 minutes with 1 tsp of sesame oil, 2 tsp of light soy sauce and 1 tsp of dark soy sauce.
3. Pre-heat Happy Call Double Sided Pan for 1-2 minutes.
4. Add in uncooked rice, water and left over marinade sauce. Close cover and simmer over low heat for about 5 minutes till water almost absorb.
5. Put in marinated pork ribs into pan. Close cover and cook for another 5 minutes till pork ribs are cooked through and done.
6. Drizzle some sesame oil and dark soy sauce over the rice mixture. Close cover and stands the rice for another 5 minutes.
7. Open cover, stir and mix the rice mixture before servicing. Add in more dark soy sauce if you prefer it to be darker and sweeter.
Wrapping up the 3 course meal was the Pork Ribs Claypot Rice. If you own a Happy Call Pan, claypot rice can be easily prepared in the ease of home.
As you can see, cooking a meal for the family does not need to be fancy and can be readily prepared. Greatly appreciated Daniel Ang for initiating the I Want to Cook For My Family Campaign giving me the opportunity to cook and spend some quality time with my family.

Happy Call Stir Fried Chilli Paste Prawn
Stir Fried Chilli Paste Prawn is a very simply recipe that can be prepared in a couple of minutes. Actually I have cooked this dishes a couple of weeks back but only get to post it now. Hopefully it will give you some inspiration what to cook for your family this week.
You can get any sort of chilli paste that is readily available at any major supermarkets. I have also de-shelled the prawns hence no messy hands peeling them afterwards.
Ingredients
- Prawns
- 2 tbsp of Chilli Paste
- Cooking oil
Direction
1) Pre-heat Happy Call Pan for 1-2 minutes. Put 1 tbsp of cooking oil.
2) Put chilli paste in pan.
3) Put prawns into pan and coat the chilli paste evenly around the prawns.
4) Stir fried for about 2 minutes and we are ready to serve.

Happy Call Double Sided Pan Char Siew
After trying out a few Happy Call Doubled Sided Pan recipes, I decided to challenge myself to cook something more sophisticated. I decided to make home made Char Siew! So I went to the supermarket and bought a piece of pork loin.
I marinated the pork loin and left it overnight. I realized my char siew did not fully absorb the flavours. After checking with some kitchen experts, they advised me to poke holes in the meat next time when I want to marinate. The Char Siew was also lacking in sweetness and I don't how on earth I have left out the honey in the recipe.
This is the finally product of my grilled Char Siew. I didn't manage to control the fire well and I should have checked the meat more often.
Nevertheless, the Char Siew was still very beautiful inside. Hopefully I can perfect it in my next attempt.
Recipe (By Mamabliss)
Ingredients for Marinade
- 2-4 tbsp of Hoisin Sauce
- 1 tsp Oyster Sauce
- 2 tsp Light Soy Sauce
- 1 tsp Dark Soy Sauce
- 1 tbsp rose wine
- 2 tbsp garlic powder
- A dash of Pepper
- 1 tsp Sesame Oil
- 1 tbsp Sugar
- 2 tbsp Honey
Ingredients
- Pork Waist or Pork Loin.
Direction
1. Mix all the ingredients for sauce. Marinate mixture with meat for 2-4 hours. Best overnight.
2. Pre-heat Happy Call Pan for 1-2 minutes. Put 1 tbsp of Oil.
3. Close pan and grill meat on low medium heat for 5 minutes.
4. Put left over marinate sauce aside for later use.
5. 10-15 minutes check meat and flip.
6. 30 minutes later, meat should be ok and remove meat.
7. Pour the left over marinade sauce into pan and thin with water.
8. Once water bubbling, turn off fire.

Happy Call Double Sided Pan Stir Fried Tapioca Leaves
Today 5 May 2012 is Vesak Day. I thought I would share a very simple Stir Fried Tapioca Leaves with Yifon Bottled Tea Tree Mushrooms recipe. This can be easily done at the comfort of your home and cooked within a couple of minutes. The Tea Tree Mushrooms are extremely flavourful and they have excellent texture that complements the tapioca leaves.
Ingredients
- Tapioca Leaves
- Yifon Botted Tea Tree Mushrooms

Happy Call Doubled Side Pan Stir Fried Napa Cabbage
What is Food Revolution? Food Revolution is started by Celebrity Chef, Jamie Oliver to stand up for REAL FOOD and Bring Back Food Education. Education is life long and this can't be achieve overnight. In fact Jamie Oliver has been doing it for 7 years!
I have to say I am quite ignorant of what I have been eating. I have been watching Jamie Oliver's Food Revolution on youtube and some stuff really taken me back such as how chicken nuggets are made, flavoured milk has sugar content = a can of soda and more...

Another message I got from watching Food Revolution is Pass It On. Teach someone a simple recipe how easy to cook with real food. When people start cooking, they will get to experience fresh and real food. This is also a way of food education.
This is a simple Stir Fried Napa Cabbage that I learnt from Noob Cook. The recipe can be found at the website here. Fresh ingredients, Napa Cabbage and Enoki Mushrooms (golden mushrooms) are used. The leafy part of the Napa Cabbage is separated from the stems. The stems were then cut into smaller pieces. For the Enoki Mushrooms, trimmed the ends.
I also prepared some sliced gingers, diced garlic and dried shrimps. The dried shrimps were not in the original recipe from Noob Cook. I added it because I like the extra taste and flavours from them. For the sauce, it is a simple light sauce with light soy sauce, water and chinese wine.
Cooking is simple. Heat the pan. Put in the gingers, garlics and dried shrimps and fried 1-2 minutes until fragrant. Next is just Step 123.
1) Put in the stem parts of the cabbage for 1-2 minutes.
2) Put in the leafy parts of the cabbage, enoki mushrooms and pour in the sauce.
3) Stir Fried the Napa Cabbage for another 1-2 minutes.
So cooking a dish is not that hard. You do not need to have good knife skill or beautiful plating. After all, it is home cooked food who is going to judge you. Support Food Revolution and Pass It On.

Happy Call Doubled Sided Pan Muah Chee
I used to look forward to the seventh month festive at my neighbourhood because when there was Chinese Opera or Getai performance, these mobile hawkers will appear from nowhere to sell local snacks and my all time favourite is the Muah Chee.
Except for the famous Hougang 6 Mile Muah Chee stall that has moved to Blk 69 Bedok South, I don't remember knowing anywhere selling them now. Hence I went onto the web and found a ready easy to make Muah Chee recipe from Cuisine Paradise in 15 minutes. Now I can enjoy Muah Chee anytime I want.
All the ingredients needed for the dish, Glutinous Flour, Peanut Powder, White Sesame Seeds and Shallot can be easily found at any major supermarkets.
Frying the sliced shallot to golden brown to get the shallot oil.
Once the Flour mixture is poured into the Happy Call Pan, it will solidified rather fast. Quickly use a wooden spoon or chopsticks to keep stirring it into a dough. The dough is very sticky so for easy wash later, do use something wooden.
Remember to oil a plate/container before transferring the dough from the pan to the plate/container. If not the dough will stick to the plate/container and hard to remove later.
After preparing the sesame and peanut powder, I transferred the dough back to the pan to mix with the peanut mixture. I didn't have caster sugar so I used normal sugar instead. The normal sugar gave the Muah Chee a rough texture. My advice is to skip the sugar if you don't have caster sugar. It will still taste as good.
The last step is to cut the dough into small pieces, mixed them well with the peanut mixture and you are ready to serve.
Recipe (By Cuisine Paradise)
Ingredients
- 1 Cup of Glutinous Rice Flour
- 3/4 to 1 Cup of Water
- 1/2 tsp Sugar
- 1.5 to 2 tbsp of Cooking Oil
- 4 Shallot
- 1.5 Cup of Peanut Powder
- 1 to 2 tbsp of Caster Sugar (optional)
- 1 tbsp of White Sesame seeds (optional)
Direction
1. Pre-heat Happy Call Double Sided Pan for 1-2 minutes.
2. Saute 4 thinly sliced shallot with 2 tbsp of cooking oil over low heat till golden brown.
3. Remove shallot and leave oil in the pan
4. Mix Glutinous Rice Flour, sugar and water in a bowl and slowly stir until well combined.
5. Slowly swirl flour mixture into pan with the shallot oil. Stir it using a wooden spoon/chopstick or spatula under medium low heat till it begins to form a soft dough.
6. Lower heat and continue to toss and cook the dough for 3-5 minutes until it is smooth and slightly transparent. Remove and set aside on a oiled plate/container.
7. Wipe off the oil in the pan with kitchen towel.
8. Add in sesame seeds into pan and toss it for 2 minutes before adding in peanut powder. Stir for another 2 minutes till fragrant.
9. Set the mixture aside to cool for 3 minutes before adding in the caster sugar and mix well.
10. Transfer dough to peanut mixture, mix well and cut into pieces.

Happy Call Double Sided Pan Pork Rib Claypot Rice
After my very first Happy Call Double Sided Pan experience cooking the Coca Cola Chicken Wings, I am sort of addicted to cooking cause cooking seem so easy overnight. After browsing several blog sites and recipes, I decide to try Cuisine Paradise's Claypot Rice recipe.
I did not have all the necessary ingredients as in Cuisine Paradise's recipe hence I make do with what I could find in the fridge. Instead of chicken, I used pork ribs. For vegetables, I used snow peas and Yifon assorted bottled mushrooms.
I have to admit I made several mistakes in the process such as putting in the vegetables too early. As you can see from the picture below, the snow peas have been cooked too long and turned yellow. Nevertheless, the rice turned out quite nice and has similar texture as claypot cooking method. It has the moist but yet burnt crispy texture at the bottom.
Recipe (inspired by Cuisine Paradise)
Ingredients

- 2 Glove Garlic
- 1.5 Cup of uncooked rice, rinsed

- 1 tsp of dark soy sauce (for marinade)

Happy Call Double Sided Pan Coca Cola Chicken Wings
I am into the Happy Call Double Sided Pan craze too! I have bought my Happy Call Double Sided Pan from G market a couple of weeks back and has been looking for a simple recipe to use the pan. As I don't cook so it will be challenging for me to try any recipe that involes a lot of processes or cutting.
I chanced upon Noob Cook Coca Cola Chicken Wings recipe and I thought it was rather simple and easy. So over the weekend, the Happy Call Double Sided Pan lost its virginity to a novice cook.
I had 12 mid joint chicken wings marinaded for 30 minutes in light soy sauce, dark soy sauce and sesame oil . Noob Cook recipe mentioned to marinade for 15 minutes but I double it hoping that the meat will be more flavourful.
Next I brown the chicken wings on both sides beside pouring the coca cola, water and left over marinade sauce into the pan and let it simmer until it is reduced to a dark sticky syrup. I suspect I used too much of the liquid mixture and it told more than 15-20 minutes (mentioned in Noob Cook recipe) for it to be reduced to a dark sticky syrup
After about 30 minutes... this is my final product! Coca Cola Chicken Wings. It looks yummy isn't it?
Recipe (inspired by Noob Cook)
Ingredients
- 12 mid joint chicken wings
- 1 tbsp cooking oil
- 200ml Coca Cola (no diet or flavoured coke)
- 200ml water
- 1 tsp light soy sauce (for marinade)
- 1/2 tsp dark soy sauce (for marinade)
- 1 tsp sesame oil (for marinade)
Direction
1. Marinate chicken wings for 15-30 minutes with 1 tsp light soy sauce, 1/2 tsp dark soy sauce and 1 tsp sesame oil.
2. Pre-heat Happy Call Double Sided Pan for 1-2 minutes.
3. Heat cooking oil in Happy Call Double Sided Pan.
4. Brown chicken wings on both sides
5. Add Coca Cola, Water and remaining of marinade sauce into pan.
6. Close pan and simmer for 20-30 minutes until the liquid mixture is reduced to a dark sticky syrup. (turn chicken wings once at halfway).
