The dish that has been making waves on everyone's social media feeds is the Deep-fried 'Cigar' Roll. It arrives in a cigar box, and the presentation is akin to a cigar. It is a clever twist on the traditional Chinese crispy duck spring roll. The cigar is essentially a crispy roll enveloping freshly peeled snow crab, prawn mousse, foie gras, and black truffle. It is accompanied by Beijing duck sauce and Japanese sesame sauce, adding a delightful fusion of flavours.

An exceptional Double-boiled Soup is created from fresh Jeju abalone and free-range chicken. It features a rare and precious ingredient - the Sarcodon Imbricatus wild edible mushroom from China, which is known for its rich nutrients, tender flesh, and unique aroma.

Applewood-smoked Iberico Pork Belly 4.2/5

Inspired by Stephen Chow's iconic movie dish, "黯然销魂饭" (Sorrowful Rice), this creation is a deconstructed masterpiece. It includes tenderized and marinated Pork Belly slow-roasted over binchotan charcoal and smoked with applewood for a delightful fragrance. The dish is garnished with a quail egg and substitutes traditional rice with a golden, thin, crisp rice wafer.

The Steamed Carrot Cake, enhanced with Boston Lobster, Shiso Leaf, and Aromatic Lemongrass Sauce, is an off-menu creation that adds a luxurious and inventive twist to a traditional dish. The in-house "gan xiang" sauce elevates the silky-smooth, flavorful steamed carrot cake, complemented by charcoal-grilled Boston lobster.

Crab Roe Collagen Braised Mung Bean Noodles 5/5

My favourite from the evening is the Crab Roe Collagen Braised Mung Bean Noodles. This dish celebrates the rich flavours of crab in two delightful ways. First, there's the freshness and natural sweetness of the crab, showcased through a massive claw. Second, a seafood paste, skillfully created from crab meat, prawns, and water chestnut, coats the chewy mung bean noodles in a flavorful broth. The dish is enhanced by vinegar pearls, reminiscent of the Shanghainese tradition of savouring crab with drizzles of vinegar. And it doesn't end there – the dish is further enriched by a generous shaving of housemade crab roe, meticulously derived from seven female crabs, marinated with ten years hua diao wine, blended and slow-baked for two hours.

Chilled Peach Resin, served in a Philibon French Charentals Melon, is an elegant and refreshing dessert. A cold melon soup blended with Hokkaido milk is poured into a half-carved melon, accompanied by melon balls and collagen-rich peach resin. Even the desserts at Peach Blossoms are executed with finesse.

Sweet Cart of Treasures 4.2/5

Dessert gets a unique twist with a Dessert Trolley, cleverly served from a dim sum cart. This delightful trolley offers a range of Chinese sweet treats, including Durian Sandwich, classic White Sugar Sponge Cake, fragrant Jasmine Tea Mousse, Taro Lava Puff, and delectable Salted Egg Yolk Lava Puff. Chef Edward's sweet offerings are an exquisite way to conclude a remarkable dining experience at Peach Blossoms.

Gourmet Park @ Resorts World Sentosa - Gourmet Food Truck Park Featuring Exciting Michelin-Starred Names

Gourmet Park is conveniently located just outside the main entrance of Universal Studios Singapore in Resorts World Sentosa.

This innovative food truck park concept was created to offer visitors, whether tourists or locals, a carefully curated selection of emerging food brands and Michelin-starred cuisine to savour.

The food trucks are lined on the circumference, each serving their usual signatures and/or dishes specially prepared only to be enjoyed at the park.

Other notable park highlights include the alfresco dining area, live DJ sets on weekend evenings, the intentional inclusion of vegetarian options at three trucks, and free entry for all.

Blue Lotus - Signature Chilli Pomelo Crab Meat Rice Bowl 4/5

Blue Lotus is most known for its modern Chinese creations. The first we had from them was their Signature Chilli Pomelo Crab Meat Rice Bowl ($19). Although a tad pricey, it was great to enjoy the crab meat without needing to peel, and we particularly enjoyed the heat and variety of spices packed in its chilli crab sauce.

The second dish, the Five Spices "Lu Rou" Kurobuta Pork Belly Rice Bowl ($17), was decent, with chunky and well-braised pork belly on white rice.

The Kathi Roll Co - Butter Chicken Roll 4/5

At The Kathi Roll Co, dig into their range of Indian street food consisting of wraps, rolls and bowls. Our Butter Chicken Roll ($18) came with nicely spiced and tender chicken chunks, but we also found it quite pricey.

Kotuwa - Chicken Kottu 4.5/5

Kotuwa is a Michelin-starred name that focuses on traditional Sri Lankan cuisine. It was a unanimous nod of approval from all of us for their Chicken Kottu ($16). This elevated rendition of a Sri Lankan street classic features a mix of chopped roti, vegetables, chicken and a curry-like gravy. It was hearty with the perfect spice, richness and textures.

Chun Noodle Bar - Truffle Char Siu Noodle 4/5

The wanton noodles from Chun Noodle Bar are available in various renditions. We had the Truffle Char Siu Noodle ($13) that had egg noodles tossed in their housemade sauce, tender Iberico char siew and wantons.

Lavi Taco - Pulled Mushroom Taco 4.2/5

If you want a vegetarian option, check out Lavi Taco's Pulled Mushroom Taco (3 for $20 / 2 for $26). The tacos were generously filled with its well-textured mushroom filling, so much so that one of my dining companions didn't realise it was vegetarian till the end!

Luke's Lober's Lobster Roll ($27.60) uses lobsters from Maine, USA. Most would be familiar with them and their buttered rolls stuffed with your choice of lightly seasoned seafood.

QUEIC & Olivia Market - Olivia Cheesecake 4.8/5

Moving to desserts, I was so excited to spot QUEIC & Olivia Market's truck as they made my favourite cheesecakes! The prized Olivia Cheesecake ($14) has this amazingly oozy filling made of cream cheese and blue cheese, sat on a crunchy almond sable crust. It is so intense yet so well-balanced. I highly recommend this to all cheese lovers.

Spank My Dough - Artisanal Brioche Doughnuts 4.2/5

Grab more desserts from Spank My Dough, which specialises in Artisanal Brioche Doughnuts ($4.50 - $6.80/piece) produced in small batches daily and with piped fillings. The fluffy bombolonis are available in various flavours, including Vanilla Bean, Raspberry Cheesecake, Pistachio Cream, Blueberry Lavender Lemon and more.

With the wide variety of cuisine available here, there is something for everyone. Other brands not featured here include Blue Smoke, Coolhaus, Dickson Nasi Lemak, JAMBA, Mad Roaster, Quattro Pizza and Seafood Bar by Bleu.

Ms. Maria & Mr. Singh @ Craig Road - A Revamped Space with Newly Launched Degustation Menus

Ms. Maria & Mr. Singh, located at Craig Road, has recently revamped their menu, now offering a Degustation-style dining experience. The eight-course dinner menu includes new dishes imported from its renowned Bangkok outlet. To bring you the full experience, the space has also been refreshed with new furnishing and plate ware imported from Bangkok.

Papdi Chat 4.5/5

The new Degustation menu starts with Papdi Chat, inspired by a traditional Indian street snack and Chef Gaggan's signature dish, "Yogurt Explosion". A single bite into the yoghurt sphere releases a good amount of punchy and aromatic flavours of chaat masala, which were further amped up with tangy Tamarind Chutney and herbaceous Green Chutney. The Papdi Cracker holding the yoghurt sphere and the pomegranate garnish gave this bite a delightful textural contrast.

Golgappa with Vedita Shots 4/5

Continuing in the same vein is the Golgappa with Vedita Shots. This rendition features a Japanese touch with Hokkaido white corn puree and topped with Uni (available in $138 Menu). Cap the dish with a shot of senses -waking tequila-based green verdita cocktail.

Guacamole Ikura 4/5

The next course was Blue Corn Tortilla & Papadum served alongside Guacamole Ikura of creamy and herbaceous avocado guac made savoury with fresh ikura. The guac was bright with the right amount of acidity and added a burst of savouriness from the ikura.

Ceviche 3.8/5

The next course is the Ceviche which surprised us with piquant and robust chipotle leches that lay the foundation for the succulent diced Hamachi, Prawns and Octopus cured with Leche de Tigre milk. As for the Prawn Fritters, while they provided a texture element to the dish, they detracted from the freshness of the dish.

Scallop Tostada 4/5

Next up was Scallop Tostada with Romesco, Salsa Macha and Basil Aioli - an elevated rendition of the classic taco. Thin slices of raw scallops were delicately arranged atop avocado slices, resting on a crispy fried tortilla spread with Salsa Matcha. The creamy avocado and the sweet scallops melded together into one beautiful buttery bite in each mouthful, flavoured with the fruity sweet notes with a spicy kick from the Salsa Matcha spread, alongside romesco and Mexican chillies oil.

Mole Madre and Pipian 4/5

The next course is Mole Madre and Pipian, where root vegetables are slow-cooked in a Mexican sauce of coconut milk, pumpkin seeds, sesame seeds and chillies. Two moles of contrasting flavours were used for this dish - a dark, bold and umami Mole Negro (Black Mole) against a vibrant and herbaceous Mole Verde with Pipian (Green Mole with Pumpkin Seeds). Purple tortillas are served for us to DIY our own tacos. The surface of the lotus root was slightly charred, imparted a delectable caramelised sweetness and a smoky note into the taco, adding to that overall deep umami flavour profile. The softened root vegetable retained a pleasing level of structure that provided a satisfying bite.

Pork Vindaloo Tacos 4.8/5

The next dish drew inspiration from the curry dish in the Goa Pork Vindaloo Tacos. It was a scrumptious combination of slow-cooked pulled pork collar marinated in a vindaloo-based sauce, enlivened with zesty pineapple salsa and smoky roasted pineapple.

South Indian Coconut Rice 5/5

Our main was Chicken Tikka Masala, featuring chunky pieces of chicken marinated in a tomato cream base curry filled with spices, nuts, and yoghurt. The cream base curry itself was moreish and indulgent. While the chicken was delicious, with tender meat and tantalising charred edges, it was the exceptional South Indian Coconut Rice that stole the show. The fluffy rice was rich with coconut taste and fragrance, elevated with fresh shredded coconut and lentils, adding a dimension to the overall texture.

Gaggan’s Crab Curry 4.5/5

We also get to try a signature dish of Chef Gaggan since 2016/2017 - Gaggan's Crab Curry, a South Indian curry base crafted with a blend of coconut, Garam masala, raw mango and tomato. The resulting curry packed a punch and had a tangy undertone that harmonised with the natural sweetness of the chunky crab meat.

Churros 3/5

Dessert was Churros with Toasted Sticky Rice Ice Cream drizzled with a cardamom-flavoured dulce de leche. While the sticky texture of the ice cream was interesting, with a nice coconut flavour, the sweetness was slightly cloying.

The new Degustation menus will be updated every quarter. They are priced at $48 for a 5-course lunch and $78 for an 8-course dinner. A $138 option for dinner is available as well.

There are new additions to the beverage lineup, including Indian-Mexican cocktails and margarita slushies with flavours such as the classic Lime, Kyoho Grape, or Mango. Opt for a flight of three different flavours ($25++) or bottomless (1.5hrs) for just $58++.

Wan Hao Chinese Restaurant (萬豪軒) @ Marriott Tang Plaza Hotel - “The Return of Sri Lankan Crabs”, Wan Hao’s Limited-Time Offering Till 31 Aug 2023

Wan Hao Chinese Restaurant is bringing back its "The Return of Sri Lankan Crabs" promotion, which features twelve crab-centric dishes centred around local and Chinese flavours with modern elements. The menu offers both Dim Sum and A La Carte options, with the Dim Sum offerings exclusively available during lunch hours.

For Dim Sum, you can expect creations such as Pan-Fried Chilli Crab Bun ($3.80 per piece) and Black Pepper Crab Meat Spring Roll ($3.80 per piece), while the A La Carte dishes include Stewed Crab with Shallot & Sha Jiang in Claypot ($15/100g), Braised Luffa Gourd with Crab Meat & Crab Roe ($48) and more.

Hairy Crab Xiao Long Bao 4/5

From the Dim Sum menu, we sampled the Hairy Crab Xiao Long Bao ($4.80 per piece, min. order of 2 pieces). The xiao long bao broth carried a more savoury-sweet flavour profile, deviating from the usual porky richness.

While I found the portion a bit small considering the price, it was quite an indulgent treat with the morsels of crab meat.

Wok-Fried Prawn with Egg White & Fresh Milk in Crab Roe Sauce 4/5

The Wok-Fried Prawn with Egg White & Fresh Milk in Crab Roe Sauce ($48) featured a smooth and custardy egg white topped with crunchy prawns. The crab roe and its sauce added a buttery richness, though the fried piece carrying the ingredients could be done significantly better. It lacked crunch and, unfortunately, gave a tad oily aftertaste, which affected the overall experience.

Braised Iberico Pork Ball with Hairy Crab Superior Stock & Bok Choy 4.2/5

A standout for us from the A La Carte menu was the Braised Iberico Pork Ball with Hairy Crab Superior Stock & Bok Choy ($38 per pax). The golden stock was rich and savoury, complementing the packed yet tender pork ball. The addition of crunchy water chestnut bits added texture, while the crab meat lent a subtle sweetness.

Salted Egg & Chicken Floss Crab 4.5/5

The batter on the Salted Egg & Chicken Floss Crab ($15/100g) was perfectly executed. It was skillfully done thin enough to thoroughly coat the crabs and pick up the salted egg and chicken floss. There was even a generous amount of crunchy batter bits all around.

Although the salted egg flavour was less robust than expected, this decadent combination will appeal to the local palate. The crabs themselves were incredibly fresh with plump meat. I was thoroughly impressed by the amount of crab egg roe found in the shell - it was packed!

Steamed Crab Roe with Wok-Fried Glutinous Rice 4.2/5

We concluded our crab feast with the Steamed Crab Roe with Wok-Fried Glutinous Rice ($16/100g). Personally, I prefer steamed crabs, especially when they are fresh, as it allows its natural sweetness to shine through. The lightly seasoned glutinous rice studded with Chinese sausage was a great accompaniment to the firm crab meat.

If you are a crab enthusiast, Wan Hao’s crab creations are worth a try before their seasonal menu comes to an end.

The Crispy Soft-shell Crab with Garlic, Chilli, and Scallion was a delightful explosion of flavours, with the "Bowrington Bridge" soft-shell crab masterfully deep-fried to crispy perfection, infused with aromatic spices. The accompanying Chilled Cherry Wine Tomatoes, marinated with Plum Sauce, provided a refreshing contrast with its sweet and tangy notes, leaving us eager for more.

Each spoonful of this soup was a delightful journey, warming both the soul and the palate.
