For the celebratory occasion, celebrity Chef Ku Keung and his team from Conrad Centennial Singapore has put together an array of enticing and auspicious dishes specially for this Chinese New Year.
Fortune Piggy Yu Sheng 3.8/5
Together with the team at Conrad Centennial Singapore, we did the traditional "Lo Hei", tossing the Fortune Piggy Yu Sheng to a prosperity and happiness new year. The Fortune Salmon and Crispy White Bait Yu Sheng is available for both dine in and takeaway. For takeaway it is at $68 small and $128 large.
Eight Treasure Congee 4.2/5
The Eight Treasure Congee is like a version of bibimbap with the colorful topping on top of the smooth and silky congee. This is very hearty and comforting.
Steamed Star Grouper and 8-Head Abalone 3.8/5
For a luscious enjoyment, the Steamed Star Grouper is paired together with 8-Had Abalone. To be frank, I appreciate the premium combination but it did not come together as a dish. However it is still delicious on its own
Golden Maine Lobster, Butter Pumpkin Sauce, Crispy Potato Crumbs 3.8/5
Next we have the Golden Maine Lobster for a bountiful New Year with its firm and bouncy texture coated in a butter pumpkin sauce, served with crispy potato crumbs.
Roast Whole Suckling Pig Fragrant Coconut Rice 4.2/5
The highlight goes to the Roast Whole Suckling Pig Fragrant Coconut Rice. I remembered Chef Ku Keung did a similar dish last year with Shanghainese Sticky Rice, Fritters and Chicken Floss. This year, he has decided to go local inspired by our local Nasi Lemak. The suckling pig is stuffed with pandan flavoured glutinous rice, otah and even sambal chilli sauce.
Koi Soya Pudding, Hasma, Peach Resin and Red Date Broth 4.2/5
For dessert, we have something light but yet refreshing. The Koi Soya Pudding is shaped into a koi fish which auspicious symbolisation during Chinese New Year. The creamy and smooth koi soya fish comes alive in the red date broth with hasma and peach resin.
Osmanthus Broth, Rainbow Crystal Tang Yuan 4/5
Wrapping up the dinner is the Osmanthus Broth with Rainbow Crystal Tang Yuan. Tang Yuan which symbolises reunion is such an ideal dessert for Chinese New Year. The three different colours are made from sweet potato, pumpkin and black sesame, a flavourful and textural enjoyment.
