Terra By Seita @ Tras Street - Introducing A New Culture Of Tokyo-Italian Dining

Terra by Seita at Tras Street, is here to introduce to you a new dining culture - Tokyo-Italian dining. Not to be confused with Japanese-Italian fusion cuisine, Chef-Owner Nakahara Seita's dishes here remains true to their Italian identity but crafted using techniques unique to Tokyo and ingredients native to Japan. It stems from the popularity of Italian cuisines in Tokyo, where the streets are populated with Italian restaurants.

Urban terracotta floors, a live green wall, reflect Chef Seita's connection with nature, which he sees as an energy that runs through the land, animals, food and us, man. (which also explains the shiny metallic cow heads pinned on the wall). And apparently, the patterned brick walls were pieced together by him, with the help of some professionals. The restaurant sits 36 people, including a private dining room divided by a movable wall illustrated with a Italian street scene.

Influenced by the four seasons of Japan, Chef Sieta's Omakase is a degustation menu of his own creations based on the seasonal ingredients, paired with Italian wines of his recommendation. What we had was his Autumn Menu, and we had a peek of the ingredients harvested for our meal - Uni, Hokkaido Vongole clams and Hokkaido King Crab.

Focaccia with Porcini Butter 3.8/5

We started with some warm in house Focaccia with Porcini Butter. Like pate but creamier and smoother, the savoury butter melted in my mouth with an earthy taste.

Uni Bruschetta 3.5/5

For starters, we first had Uni Bruschetta with 6-month old homemade preserved lemon. I learnt that Chef Seita likes to work with Uni, for its acquired taste and the challenge to get it right, which to me, he pretty much did. The cold custard-like Uni spread on the crusty bread was delicate and smooth to taste. The kiss from the pickled lemon reminded me of a good old fashion oyster recipe - a squeeze of lemon juice onto freshly-shucked oysters.

Bonnito Fish Cappacio 3.8/5

Though not as a key ingredient, Cherry tomatoes in Terra carries a rather heavy weight in Chef Seita's dishes, evident in the next 2 items. Bonnito Fish Cappacio, glazed with olive oil and assorted micro herbs, was served on a cherry tomato base with dill sauce. The fish had a firm texture, and I like the use of the sweet tangy tomato salsa and botanicals which balanced any brininess that the fish might have.

Hokkaido King Crab Meat Spaghettini 4.5/5

Next up was a quintessential Italian dish, a pasta - Hokkaido King Crab Meat Spaghettini with Hokkaido cherry tomatos, which is available for 1 month only. Spaghetti has been on the menus of cafes in Japan since the 1920s and was speculated to be the birth of the Itameshi phenomenon. The cooked tomato ruptured with such intense flavour, and perhaps only King Crab, prized for its sweetness and succulence, could counter balance that. Chef Seita also makes the restaurant’s fresh pasta daily based on techniques learned from Italian chefs in Italy, which is available for your Omakase upon request.

Amadai Fish 4.5/5

For mains we had another King - Amadai Fish, served medium rare with fresh Hokkaido vongole clams and Hokkaido potato. Served medium rare with its scales all crisped like a crown, I love the contrast in texture and how it melted in my mouth. The chunky potato broth was sweet and comforting, punctuated with freshness lent from the Italian parsley.

Mr Yoshioka's Pork 4/5

Mr Yoshioka's Pork, was our last of the mains, a Spanish iberico served with caramelised Japanese onions topped with Australian winter truffles and truffle butter sauce. Moist and tender, my favourite bit was certainly the charred edge of the pork. I was quite amazed by the huge Japanese onion at the side, and I thought it could have been even tastier should it have been caramelised further for a deeper, sweeter taste.

Dessert 4.5/5

Fruits from Japan are just as stunning as their fresh produce. The dessert says it all. It comprises yuzu sorbet, Japanese Amaou strawberry, Shizuoka musk melon, Yamanashi Peach from Hokuto and Moscato D'asti Jelly, all the goodness in one bowl. Each tiny piece seemed to be packed with flavours of the entire fruit.

There are 3 omakase menus priced at $128++, $168++ and $208++. Diners can top up $88++ for wine pairing. Apart from the Uni Bruschetta, the other items were the first time Seita has served it in his restaurant.

Barrio by Mex Out @ 313 Somerset - Modern Mexican Beer Garden Offering Fresh-Mex Cuisine

Opening at the heart of Orchard Road is the latest concept by Mex Out called Barrio by Mex Out. The new restaurant looks like a modern Mexican beer garden at the street level of 313 Somerset. The restaurant features an expanded menu of fan favourites at Mex Out and new plated Fresh-Mex cuisine.

Margarita 4/5

We started off with some Margarita ($12) to get the mood swinging while we waited for our food to be served. The drink list at Barrio by Mex Out includes also sangrias, homemade soft drinks called aguas frescas and a selection of wines.

Burnt Nachos 4.5/5

A great starter for sharing is the Burnt Nachos ($13.60). The corn tortillas is freshly fried everyday. It is then topped with a generous amount of chilli con carne, cotija cheese, moazzarella and cheddar cheese sauce, pico de gallo, coriander, sour cream and freshly made guacamole.

Barbacoa Quesidillas 4.2/5

Encased in a crispy tortilla and sliced for easy consumption is the Barbacoa Quesidillas ($13.40). The chargrilled flank steak which is diced into pieces works beautifully with the pico de gallo, chilli jam, cheddar and jalapenos for a delightful combination of flavours and textures.

Chicken Wings 4.5/5

One of the best Chicken Wings ($8.50 for 6pc) I have eaten for a while. Besides the crispy exterior, the highlight is the spicy and tangy homemade sauce which the chicken wings are tossed in.

Mexican Street Corn 4.2/5

Corn itself already carries a sweet flavour. Imagine the Mexican Street Corn ($7.90 for 3pc) is further chargrilled with butter, mayo, paprika and cotija cheese, topped with coriander and oregano. It totally enhanced the whole enjoyment.

Jalapeno with Cheese 4/5

The other item from the snack menu that I personally enjoy a lot is the Jalapeno with Cheese. Lightly battered for a crispy exterior, the Jalapeno is stuffed with cheese for a harmonious combination of spicy and cheesy finishing.

Pulled Pork, Chicken, Fish and Carne Asada Tacos

What is Mexican cuisine without the traditional and staple tacos. At Barrio, guests can a choice of Pulled Pork Taco ($12.90 for 2pc), Chicken Taco ($14.40 for 2pc), Fish Taco ($13.90 for 2pc) and Carne Asada or Steak Taco ($13.90 for 2pc). Each of them has their own characteristic with their own filling folded in a tortilla shell.

Out of the four tacos I tried, my favourite is the Fish Taco. The beer battered sea bass is topped with pickled red cabbage, pico de gallo and chipotle aioli. The golden brown crispy batter with moist flaky white meat, coming together with the rest of the ingredients like musical scores in a musical composition, a symphony performance you should not miss.

Protein Salad 3.5/5

When this is served to the table, the first impression of the Protein Salad ($15.90) is it looks like the Korean bingsu, topped with a guacamole ice cream. When salad looks so pretty in sight, it already whets up the appetite.

Vegetables "De le Cruz" Bowl 3.8/5

Vegan lovers will be rejoiced with the Vegetables "De le Cruz" Bowl ($13.30). The messy plate of fluffy basmatic rice is topped with capsicum, black beans, pico de gallo, guacamole and sour cream. I understand a burrito version is also available if that is what you like.

Fried Chicken Burger 4/5

A crowd flavourite is the Fried Chicken Burger ($14.90). A multi texture enjoyment starting with the beef battered buttermilk marinated chicken. The crunchy fried chicken fillet sandwiched with the soft brioche buns, rounded up with chipotle mayo for a spicy and tangy finishing.

Chilli Cheese Burger 4.2/5

I preferred the Chilli Cheese Burger ($16.90) over the fried chicken burger. The beef patty is moist and juicy which consists of chilli, beef, tomatoes, beans and cumin. The crowning jewels to the burger is the guacamole, black beans, homemade cheese sauce (cheddar and mozzarella) and pico de gallo.

I am not a big fan of Mexican food but after checking out Barrio by Mex Out, it definitely has added new colours just like their colourful dishes into my food journal. I can't wait to return to try some of their snacks and tacos. I would recommend spending your calories on the barbacoa quesidillas, chicken wings, jalapeno and tacos.
