Pietrasanta @ Connexis Tower, Fusionpolis - Returning To Its Tuscan Roots

Pietrasanta at Fusionopolis is returning to its Tuscan roots. Drawing inspiration from Pietrasanta in Tuscany, the hometown of founders Niccolò and Chef Loris, the restaurant has created a selection of dishes that captures the rustic flavours, traditions and warm hospitality of Tuscany.

We started with two cold appetisers that showcased the simplicity and elegance of Tuscan cuisine. Crudo Di Ricciola ($28.90) featured firm, meaty amberjack paired with sweet-tart tomato confit, lightly dressed with lemon and extra-virgin olive oil, and accented with delicate floral notes from pink peppercorns.

Battuta Di Manzo Con Pecorino Toscano ($27.90) highlighted the sharp, intensely savoury character of aged Pecorino Toscano, which was incorporated into the beef tartare alongside lemon and capers, resulting in a bright, balanced finish.

The highlight for me among the appetisers was Coccoli Ricotta e Finocchiona ($24.90), a nostalgic Tuscan street food featuring warm deep-fried dough served with burrata cream and Finocchiona salami. Stuffing the fluffy dough with the milky burrata and herbaceous, garlicky salami created a mouthwatering combination of flavours and textures that left me wanting more.

Moving on to the mains, Pici all’Aglione ($24.90), the signature Tuscan thick hand-rolled pasta was skilfully executed, delivering a delightful bounce with every bite. The dish embraces the Tuscan philosophy of simplicity, tossing the pasta with just tomato, garlic, and olive oil to let the ingredients’ quality shine.

We also tried two risotto dishes. Cooked with lobster bisque, the Risotto Gamberi e Zucchine ($32.90) was crowd-pleasing, with creamy, flavourful Carnaroli risotto studded with chunky prawns, creating textural enjoyment in every bite.

The Peposo Di Manzo Con Risotto Al Porri ($37.90) featured a firmer, more al dente risotto that I personally preferred, paired with satisfyingly tender braised beef cheek. The renewed menu also embraces regional Tuscan flavours through its artisanal pizzas.

Among all the mains, the Salsiccia e Cavolo Nero ($28.90) was my absolute favourite and worth returning for. The dough had an excellent structure, providing the perfect foundation for the toppings of mozzarella fior di latte, Tuscan black kale (cavolo nero), flavourful Italian pork sausage, and aged pecorino. Finished with a drizzle of extra virgin olive oil and black pepper, every bite was remarkably balanced, delivering a little of everything at once. It was particularly impressive how the wilted kale contributed so much texture and character to the pizza.

For dessert, while the Tiramisu ($14.90) was undeniably delectable, the Zuccotto alla Fiorentina ($14.90) offered a rare glimpse into a traditional Florentine sweet. Originating from Florence, this classic dessert is typically crafted in a distinctive pumpkin-shaped mould. Beneath its cake exterior lies a creamy ricotta ice cream filling, complemented by a contrasting sweet-tart berry sauce.

Pietrasanta has long been a staple in the area, and it’s no surprise given its rustic flavours and traditional recipes executed with finesse. While the dishes embrace simplicity, they are rich in character, with the Salsiccia e Cavolo Nero pizza and Pici all’Aglione standing out as highlights worth returning for.

We kicked things off with the Wood Fire Bread ($18), served piping hot with Sicilian EVOO and wild oregano, providing an aromatic and crusty texture and the perfect companion to the Ricotta Dip ($12). This creamy whipped ricotta, paired with spicy honey, was an addictive start. It was sweet, savoury and silky smooth, which made us scrape the bowl clean.

A classic Burrata ($26) followed, elevated with crispy chilli oil, taralli crumb and basil. That house-made chilli oil? Served on every table and a must-try. Pro tip: Use it liberally, especially with the bread.

From their hearty pasta offerings, the Mafalde Ragu ($36) stood out; our server highly recommended it and we now understand why. Perfectly al dente ribbons of pasta were coated in a rich beef and pork ragu, finished tableside with smoked provolone flambéed on the spot. Smoky, cheesy and saucy. This is a flavour bomb that we'll return for.

The Singapore Tribute Piccola pizza ($35 for 4 slices, $48 for 6) was an instant eye-catcher. Paying homage to our local flavours, it's topped with chilli crab sauce, crab meat, Fior di Latte, lemon zest and fresh herbs. With its airy, flavourful crust, which is fermented over 50 hours and baked in a wood-fired Valoriani oven, this was a standout. Add their signature crispy chilli oil to take it up a notch.

To balance the richness, we had the Broccolini ($20), charred and tossed in anchovy butter with lemon breadcrumbs and Parmigiano. Light, bright and a welcome palette cleanser in between the heavier dishes.

We wrapped up with the Fortunamisu ($18). While we wished the ladyfingers were a little more soaked, the malted crumb and that sweet, fruity liqueur added a fun twist to this Italian classic.

The vibe? Warm, buzzy and utterly inviting, which is very much in line with its Napoli roots. FORTUNA is perfect for gatherings over good food and conversation. Be sure to book ahead, as it was packed even on Friday lunch.

Angie's Oyster Bar & Grill @ Havelock - Refreshed Dining Space and a New Chef’s Seasonal Menu

Located in the Tan Boon Liat Building, Angie's Oyster Bar & Grill has been dedicated to offering quality seafood and meats since 2021. This time, the restaurant unveiled a new Chef's Seasonal Menu for dinner, featuring new creations and enhancements to beloved signature dishes.

Starting from 10 July, diners can enjoy this attractively priced dinner set, with options of a 4-course meal at $78 per person or a 6-course meal at $98 per person. Elevating the dinner with a specially curated wine pairing is also available: $58 per person for three 90ml pours or $78 per person for four 90ml pours, matching the respective courses.

Angie's has also been continually upgrading its interior. Recent revamps include a new copper wall showcasing their wine collection and a refurbished live oyster tank. The complete makeover is expected to be ready by July 2024, promising an even more inviting ambience for diners.

Kombucha

I am a huge fan of Kombucha ($9) and was elated to hear that Angie's serves homemade ones in three refreshing flavours: original, yuzu, and passionfruit. Handcrafted in-house, these kombuchas are all natural without any added preservatives or additives.

A visit to Angie's would only be complete with trying their oysters. The Chef's Special Selection of Oysters featured a trio, each uniquely dressed. On the day of our visit, we had oysters from Japan.

Typically, I enjoy my oysters bare, but Angie's demonstrated how suitable dressings can enhance the natural flavours of the shellfish. From right to left, we started with a refreshing piece adorned with plum-infused horseradish and shiso, followed by a zesty and sweet number with passionfruit ponzu, and concluded with a delightful pairing of Tsuyataro cucumber and cold-pressed olive oil.

Homemade Ricotta & Cranberry Apricot Jam Toast 4.2/5

The open-faced Homemade Ricotta & Cranberry Apricot Jam Toast was a real treat. Crafted and fermented in-house, the fresh ricotta shone through with its mild creaminess, beautifully contrasted by crunchy Granny Apple strips and tangy-sweet apricot jam.

Blue Tasting of the Sea 4.2/5

Our amuse-bouche, aptly named Blue Tasting of the Sea, featured three delightful bites - bluefin tuna topped with negi on crispy rice, Galician blue prawn tartar studded with flying fish roe atop toasted sourdough and finally, my favourite of the three, a blue swimmer crab slaw served on a homemade crispy spiced papadum.

Charred Romaine Wedge 4.2/5

Angie's rendition of the classic Caesar Salad is one to look out for. Their Charred Romaine Wedge is adorned with specially sourced chilli pepper-cured Atlantic sardines, parmesan polenta chips, homemade anchovy vinaigrette, and hickory-smoked bacon. The result is a balanced mix of smokiness, cheesiness, and crunch.

Angie’s Original Fish & Chips 4.2/5

For my main course, I chose Angie's Original Fish & Chips, while my dining companions chose the Hawke's Bay Wagyu Ribeye and Cold-water Lobster Linguine.

Angie's Fish & Chips, a favourite among diners, offered a surprise in this set menu: instead of just one type of fish, it featured two — NZ Wild-caught Halibut and Line-caught Barramundi, both coated in their signature stout batter for an impressive crunch. Accompaniments included fries, crushed peas, and a jalapeno tartar sauce.

Strawberry Meringue with Toasted Coconut Gelato 4/5

We concluded our set dinner with a festive dessert, the Strawberry Meringue with Toasted Coconut Gelato. Thoughtfully created to commemorate Singapore's upcoming 59th birthday in August, it is adorned in celebratory hues of red and white. A scoop of coconut gelato accompanies homemade elements of strawberry crumble, strawberry-swirled meringue chips, sliced strawberries and lychee pearls.

The unique Ube Cornbread ($18) was highly recommended and lovely! A warm base of sweet cornbread is topped with a smooth ube (purple yam) Mont Blanc, paired harmoniously with coconut gelato, mild cheddar custard and toasted coconut sprinkles.

Fortuna @ Craig Road - Singapore’s First Sicilian-Neapolitan Trattoria with 50+ Hour Fermentation Pizza Dough

First started in Sydney, Fortuna at Craig Road is Singapore's first Sicilian-Neapolitan trattoria. Created by an Italian trio – master pizzaiolo Giorgio Sorce (ranked 87th worldwide), Michelin-starred chef Omar Tutino, and F&B operator Egon Marzaioli – they aim to offer authentic Sicilian and Neapolitan cuisine. This second outlet adopts the same contemporary design as the one in Sydney, delivering a welcoming, laid-back vibe.

Pane Di Casa 5/5

Our meal began with a great starter: Pane Di Casa ($12), served with Ricotta Mantecata ($16). The wood-fired bread, simply dressed with salmoriglio (a Sicilian sauce made of garlic, lemon, oil, and oregano), was incredibly fluffy with a bit of chewiness. It shares the same dough as the Napoletana Pizza, which has undergone a 50+ hour fermentation. The Ricotta Mantecata, one of three dips on the menu, features ricotta jazzed up with honey and house-made Fortuna chilli. The combination of bread and dip was pure joy.

For Antipasti, the Cuoppo Di Pesce ($25) showcased one of Neapolitan's popular street foods – fried calamari, elevated with garlic lemon dressing and salumi XO mayo. Three types of flour were used in the batter to achieve a light and crisp texture.

Not Just A 4 Cheeses 4.5/5

Pizza at Fortuna is crafted in the distinctive style known as the "Kingdom of the Two Sicilies," using 100% Sicilian ingredients. First, we had the Napoletana Pizza (available in 22cm or 30cm). The dough left to rise for 50 hours through a two-process fermentation, is shaped four hours later and baked in a wood-fired Valoriani oven. The flavour we tried, Not Just A 4 Cheeses ($29), combined Fior di Latte, Gorgonzola Dolce, Ricotta Salata, and Parmesan Chips with sweet fig compote to round off the cheesy flavours. This was the best, as it allowed the dough's natural taste and beautiful texture to shine.

Gambero & Stracciata 3/5

Next, we tried the Fried & Baked Pizza (22cm), which is double-cooked by frying and baking for extra crispiness. The Gambero & Stracciata ($38) featured delicious Stracciata and Gamberi di Massara toppings, but the baking process dried and toughened the fried dough, especially the portion under the toppings. Typically, based on what I had tried, fried pizza is crisp and puffy on the outside while remaining soft and chewy inside. I reckoned they could have draped the cheese over the fried dough and topped it with the other ingredients without baking it.

Truffle & Anchovies 2.5/5

The Contemporary Pizza Al Ruoto, cooked in an aluminium pan, follows a unique three-way pre-fermented dough process that takes 18 hours and achieves 80% hydration, resulting in an incredibly crunchy exterior and soft interior akin to focaccia. The Truffle & Anchovies ($42) combined walnut whipped butter, anchovies, and truffle. While the dough was delectable, the toppings and dough didn't meld together well, and the combination of anchovies and truffles needed to be more harmonious too.

‘1000’ Layers Lasagna 2.8/5

All of Fortuna's pasta is made in-house Ă  la minute using quality flour from Naples, a balanced mix of semolina and 00 flour, local free-range eggs, and Sicilian olive oil. The '1000' Layers Lasagna ($36) is prepared the way Egon's mother in Sicily makes it, with layers of Provolone del Monaco and Bronte Pistacchio pesto. The bechamel sauce allowed the flavourful Mortadella to shine, accenting the butteriness of the provolone cheese. The nuttiness of the lasagne imparted from the Pistacchio pesto elevated the overall flavour profile. However, served cross-sectioned and pan-fried to achieve crispy edges based on the recipe, it was nostalgic but lacked the satisfaction of tucking into a hearty lasagna, feeling more like a snack than a main. And it was just too compact and flat to allow the homemade pasta to shine.

The Spaghetti ($38) showcases succulent Mazzara King Prawn, served with a bisque accentuated with Fortuna Chili. The depth of crustacean flavours was impressive, but the salt level could be more restrained, as it sometimes overwhelmed the diced King Prawn.

We tried Pollo Marinara ($34) for mains, a half-roasted chicken served with olive tapenade, capers, and San Marzano tomatoes. The chicken was aptly seasoned and tender, with a rustic charm.

To sum up our dinner, we had Fortunamisu ($18) for dessert. The house tiramisu is made with Savoiardi ladyfingers, Illy Caffe coffee, and chocolate crumble. The crumble's textural crunch was a nice touch, but it could have been improved by more coffee-soaked ladyfingers and a touch of bittersweet alcohol.

Opt for the full experience with their 4-course Italian set lunch at $39++. Enjoy wood-fired bread with your choice of dip, a selection of antipasti, a choice of main course, and a delightful dessert with coffee.
