Caffe Fernet @ Customs House - Italian Dining with Marina Bay's View

Sitting along the Singapore River with an unobstructed view of Marina Bay Sands, Caffe Fernet is one of those spots where the location is part of the experience. The open-concept space feels relaxed and breezy, making it an easy choice for after-work drinks, a casual dinner or a leisurely evening by the waterfront. The menu lends itself particularly well to sharing, with a selection of small plates, pastas and larger dishes that make it tempting to order a little bit of everything.

We started with the Hamachi Crudo ($29), served with fennel and pickled celery. The thick slices of hamachi were fresh and refreshing, and the pickled celery added acidity to the dish. It was enjoyable on its own, but compared to some of the other small plates we had that evening, it was one of the less memorable ones.

Now this is one salad I would happily have an entire portion to myself! The Zucchini Noodle Salad ($22) was surprisingly flavourful, with mint, pine nuts and ricotta salata coating every strand of the zucchini noodles. Fresh and light yet packed with flavour, this was easily one of our favourites of the meal. Who knew zucchini noodles could be this addictive?

Another small plate we shared was the Iberico Pork Pluma ($29), served with salsa verde. The slightly sweet pork immediately reminded us of char siew in the best possible way. The slices were generous and incredibly tender, while the salsa verde helped cut through the richness. Definitely another dish we would order again.

The star of the meal for us was undoubtedly the Mafaldine Cacio e Pepe ($29). Deceptively simple, relying on just a handful of ingredients, Caffe Fernet’s version combines peppercorns, Parmesan and Pecorino with beautifully chewy, al dente mafaldine.

The chef shared that three different types of peppercorns are used, giving the pasta plenty of fragrance and depth. We loved it so much that we actually asked for more pepper for an extra kick, and the chef generously added more Parmesan for us too! It’s also a great pasta to share if you want to save room for more of the smaller plates.

Of course, we couldn’t end an Italian-inspired meal without Tiramisu ($18). This classic dessert came with layers of rich mascarpone cream and ladyfingers soaked in dark rum and espresso. Creamy, boozy and coffee-forward, it was a satisfying way to round off the meal without getting overly complicated.

Caffe Fernet clearly puts plenty of thought into its drinks too. We tried three during our meal: the Singapore Sling ($23), Peach Boulevardier ($25) and a non-alcoholic Yuzu & Cinnamon Lemonade ($18). With the restaurant’s waterfront location and Marina Bay Sands right across the river, it’s easy to imagine coming here even just for drinks, especially as the evening sets in.

Come for the view but definitely stay for the food. Caffe Fernet has one of those locations that immediately sets the mood, right in the CBD, overlooking the Singapore River with Marina Bay Sands in full view. The open-concept setting can get rather windy (and yes, a little humid because this is Singapore!), but we loved the relaxed atmosphere.

Foura @ IMBA Theatre - A Wellness-Led Dining Destination

A wellness-led dining destination, Foura recently opened within IMBA Theatre at Gardens by the Bay. Its menu is designed around nutritional integration, with a dedicated section inspired by the dietary patterns of Blue Zone communities, the regions renowned for their exceptional longevity. Built on four pillars of wellbeing (physical, mental, emotional and relational), Foura also collaborates with leading wellness practitioners across Southeast Asia to offer immersive experiences such as yoga, Pilates and 9D breathwork in Southeast Asia’s largest immersive theatre.

Burratina & Roasted Pumpkin 4/5

The menu offers contemporary Asian and European cuisine, showcasing grass-fed and free-range proteins, omega-rich seafood, and nutrient-dense produce, finished with carefully selected fats such as high-polyphenol extra-virgin olive oil (EVOO). We began with the Burratina & Roasted Pumpkin ($28). Roasted pumpkin purée and creamy burratina were drizzled with Korean chilli oil, basil oil and balsamic crema, then finished with pickled red onions for acidity. The accompanying toasted sourdough slices were buttery and crisp, making them perfect for scooping up the creamy mixture. While the flavours worked well together, the pumpkin could have been roasted longer to concentrate its natural sweetness and develop a richer, denser texture.

Salmon, Tuna & Hamachi Crudo 3.5/5

Another starter we tried was the Salmon, Tuna & Hamachi Crudo ($32), featuring King Salmon, Maguro tuna and Hamachi dressed in a soy-citrus dressing and dill oil. While the fish was fresh and the soy-citrus dressing added a pleasant umami brightness, the dish felt fairly standard.

Shio Koji Rainbow Trout 3/5

For the mains, the Shio Koji Rainbow Trout ($36) carried a touch of Japanese influence in both its presentation and flavours. The shio koji-marinated rainbow trout, glazed with balsamic crema, was slightly dry, with the glaze overwhelming its delicate flavour. Surprisingly, the highlight of the dish was the shari rice, whose pearly, plump grains were beautifully seasoned with vinegar, making each bite incredibly moreish. Stirring in the accompanying free-range onsen egg made it even more satisfying. The yellow bean soup on the side was light and comforting; the chilled Hokkaido potato slices added an interesting contrast but came across rather bland and watery. The roughly cut cabbage salad also felt like an afterthought.

Patagonian Toothfish 3.8/5

The Patagonian Toothfish (Chilean Seabass) ($46) fared much better. The fish was buttery, flaky and beautifully cooked, while a drizzle of EVOO further enhanced both its richness and silky texture. The roasted cauliflower purée was well-seasoned and complemented the fish nicely, though a starchy accompaniment might have provided a more satisfying foundation for the dish.

Valrhona Cloud Mousse 3.5/5

Dessert continued Foura’s wellness philosophy. The Valrhona Cloud Mousse ($22) was finished tableside with a sprinkle of sea salt, granola and a drizzle of EVOO. The oil’s grassy, robust character and pleasantly bitter finish introduced an unexpected layer of complexity that elevated the chocolate mousse.

Soy Milk Panna Cotta 2.5/5

The Soy Milk Panna Cotta ($18), conceived as a healthier alternative to the classic Italian dessert, was smooth and delicate. However, it did not distinguish itself enough from an everyday soy pudding. Replacing the black sesame topping with a rich black sesame paste could have added greater creaminess, depth and nuttiness, giving the dessert a more indulgent finish while remaining true to its health-conscious concept.

While the dishes felt as though they could have been more compelling and better expressed the restaurant’s distinctive concept, the overall vision is well realised. The beautifully designed space, together with its immersive wellness experiences, creates a unique dining destination that goes beyond the food, making Foura an interesting addition to Singapore’s dining scene.

Pietrasanta @ Connexis Tower, Fusionpolis - Returning To Its Tuscan Roots

Pietrasanta at Fusionopolis is returning to its Tuscan roots. Drawing inspiration from Pietrasanta in Tuscany, the hometown of founders Niccolò and Chef Loris, the restaurant has created a selection of dishes that captures the rustic flavours, traditions and warm hospitality of Tuscany.

We started with two cold appetisers that showcased the simplicity and elegance of Tuscan cuisine. Crudo Di Ricciola ($28.90) featured firm, meaty amberjack paired with sweet-tart tomato confit, lightly dressed with lemon and extra-virgin olive oil, and accented with delicate floral notes from pink peppercorns.

Battuta Di Manzo Con Pecorino Toscano ($27.90) highlighted the sharp, intensely savoury character of aged Pecorino Toscano, which was incorporated into the beef tartare alongside lemon and capers, resulting in a bright, balanced finish.

The highlight for me among the appetisers was Coccoli Ricotta e Finocchiona ($24.90), a nostalgic Tuscan street food featuring warm deep-fried dough served with burrata cream and Finocchiona salami. Stuffing the fluffy dough with the milky burrata and herbaceous, garlicky salami created a mouthwatering combination of flavours and textures that left me wanting more.

Moving on to the mains, Pici all’Aglione ($24.90), the signature Tuscan thick hand-rolled pasta was skilfully executed, delivering a delightful bounce with every bite. The dish embraces the Tuscan philosophy of simplicity, tossing the pasta with just tomato, garlic, and olive oil to let the ingredients’ quality shine.

We also tried two risotto dishes. Cooked with lobster bisque, the Risotto Gamberi e Zucchine ($32.90) was crowd-pleasing, with creamy, flavourful Carnaroli risotto studded with chunky prawns, creating textural enjoyment in every bite.

The Peposo Di Manzo Con Risotto Al Porri ($37.90) featured a firmer, more al dente risotto that I personally preferred, paired with satisfyingly tender braised beef cheek. The renewed menu also embraces regional Tuscan flavours through its artisanal pizzas.

Among all the mains, the Salsiccia e Cavolo Nero ($28.90) was my absolute favourite and worth returning for. The dough had an excellent structure, providing the perfect foundation for the toppings of mozzarella fior di latte, Tuscan black kale (cavolo nero), flavourful Italian pork sausage, and aged pecorino. Finished with a drizzle of extra virgin olive oil and black pepper, every bite was remarkably balanced, delivering a little of everything at once. It was particularly impressive how the wilted kale contributed so much texture and character to the pizza.

For dessert, while the Tiramisu ($14.90) was undeniably delectable, the Zuccotto alla Fiorentina ($14.90) offered a rare glimpse into a traditional Florentine sweet. Originating from Florence, this classic dessert is typically crafted in a distinctive pumpkin-shaped mould. Beneath its cake exterior lies a creamy ricotta ice cream filling, complemented by a contrasting sweet-tart berry sauce.

Pietrasanta has long been a staple in the area, and it’s no surprise given its rustic flavours and traditional recipes executed with finesse. While the dishes embrace simplicity, they are rich in character, with the Salsiccia e Cavolo Nero pizza and Pici all’Aglione standing out as highlights worth returning for.

Hevel @ Keong Saik Road - Honest Modern European Cuisine, with a Focus on Communal Joy, Seasonal Integrity, Wrapped in Heartfelt Hospitality.

Dinner at Hevel offers a very polished experience from start to finish. The culinary team, led by Chef Stefan Liau, have crafted a memorable Chef's menu that showcases a thoughtful blend of familiar, comforting flavours alongside unexpected, playful pairings.

Priced at $138++ per person, the menu consists of six courses featuring eleven dishes, each carefully designed to whisk diners away on a culinary journey. The atmosphere exudes sophistication from the moment you sit down and sets the mood for a cosy dinner date or a gathering with close friends.

Our first snack was a Cashew Cream, Kelp, and Banana Tart. It may sound like an unusual combination, but it comes together beautifully. The fermented cashew cream is rich and creamy, with sweet, slightly nutty, and savoury notes.

The second snack features delicate Foie Gras marinated in fragrant ginger flower, creating a luxurious and aromatic experience. The foie gras is silky and rich, with a velvety texture that melts in your mouth. The ginger flower adds a unique floral note, balancing the richness of the foie gras.

The third snack is a Victorian Lamb Tartare, a treat showcasing finely diced, tender lamb that is seasoned to perfection with a hint of spice. It is topped with caviar and placed atop a crispy potato hash.

Next up is the Custard, which has chawanmushi paired with a creamy sauce. While the previous three snacks are more playful in flavour, this dish falls into the realm of comfort food. The custard is beautifully fragrant with the use of thyme and chives. Accompanying it is a smooth buttermilk sauce, tender scallops, crispy sunchoke chips, and a touch of caviar.

The next four dishes were presented together to provide a communal experience. It's a good idea that allows diners to interact, taste more dishes, as well as decide some of the sequence of their meal.

We enjoyed Kingfish prepared in two distinct styles. The first was Crudo, where a tangy verjus and fragrant dill complemented the fresh, delicate fish. The addition of zesty grapefruit slices added a bright, citrusy kick that balanced the dish perfectly.

The second preparation was a Tartare of smoked Kingfish with smoked mussels. This dish was served in a charming and crispy little candied tart, which provided a delightful contrast in sweetness and crunch.

We also had a Rye Soft Roll, which was served delightfully warm. While rye doesn't make for a pillowy soft roll, the earthy flavour of rye went really well with the unique Sakura Smoked Butter. You will definitely taste the smokiness of the butter, which is very enjoyable. We also used the bread to mop up some of the other sauces from the other three dishes.

The last of the communal dishes was an Octopus dish served with Piquillo peppers and the interesting salsify, which is a root vegetable belonging to the dandelion family. It is also known as the Oyster plant because it offers a mineral-like flavour when cooked. The octopus is well prepared and tender, and the sauce adds a vibrant touch that enhances the dish.

After the four communal dishes comes a choice of main course - Black Cod or Maple Leaf Duck ($14++ supplement required).

The Black Cod is first seared in a pan and then finished in the oven, resulting in a slightly smoky exterior and crispy skin, while the buttery, flaky flesh inside stays moist and succulent. It's a delightful, classic choice if you're in the mood for seafood.

However, the Maple Leaf Duck would be my pick for the main course. The duck was remarkably tender and juicy, the skin was nice and crisp. Accompanying the duck was a velvety parsnip purée, adding a creamy, earthy element.

For the final savoury dish, we were presented with a hearty bowl of Roasted Grains, in this case, barley, which offered a nutty flavour and a pleasing chewy texture. The dish was both comforting and indulgent, topped with tender, shredded confit duck leg. The sauce, crafted from white onion and cream, was really delicious and fragrant, and the dish was also topped with truffle and sage. One of the best aspects of this dish is that you can request a second serving if you still have room in your stomach. This generous option ensures that you leave completely satisfied.

The final dish on this tasting menu was the Smoked Hay dessert. However, I wasn't particularly fond of this flavour combination. While it's quite impressive that it manages to capture the flavour of smoked hay, after a rich meal, I was looking for something sweeter or more refreshing to round out the experience.

Hevel also offers a thoughtfully curated wine pairing programme priced at $98++ and a cocktail pairing option for $78++. The wine pairing we tried features an exquisite selection sourced from handpicked small-batch producers, showcasing a range of unique and high-quality wines. This selection highlights the artistry of these boutique wineries and emphasises a celebration of fortified wines, which add depth and complexity to the dining experience.

Overall, Hevel is an excellent choice for those wanting to enjoy quality cuisine in a stylish and vibrant setting.
