Sushi Jiro @ PARKROYAL Collection Marina Bay - New Outlet At The Newly Renovated Hotel (Formerly Mandarin Marina )

SushiJiro31

Sushi Jiro at Kepple Bay has opened a new outlet at the newly refurnished PARKROYAL Collection Marina Bay (formerly Marina Mandarin). The new outlet is located on the fourth floor of the hotel. Compare to its Keppel Bay outlet; it is more convenient and accessible for the general public that does not drive.

Scallop. Salmon Roe, Sea Urchin, Seaweed 4.2/5

I had the 10-course Omakase ($260) which started with a refreshing starter comprising Scallop and Seaweed crowned with Ikura and Sea Urchin. An excellent dish to whet up the appetite and even go with a glass of sake.

Three Kinds of Mushroom, Salted Ginkgo Nuts, Pumpkin Cake, Smoked Pickled Radish 3.5/5

Still, on the starter, we have Three Kinds of Mushroom that comes in a bowl. Over on the paper boat, we have Pumpkin Cake, Smoked Pickled Radish, Salted Ginkgo Nut and Prawn. The beautifully presented course somewhat felt like a mini kaiseki course on its own. It feels like the chef is trying to tell the diners what the restaurant has to offer in terms of skills and cooking techniques.

Assortment of Sashimi 4.2/5

Next is an Assortment of Sashimi which comprises of Amberjack, Mackeral and Chutoro. Unfortunately, I could not remember the name of the ingredient wrapped into a roll. Freshness is guaranteed here with fresh handpicked produce air-flown up to 4 times a week from Japan.

Shirako 4.2/5

Shirako or better known as cod fish's sperm is an acquire dish, not many appreciate. Since young, having eaten pig's brain, I have this somewhat similar in taste and texture. It is a delicacy to me as it is a rare dish on the menu. You can imagine it like tofu, dressed in a zesty sauce which brightens up the tasteless shirako.

Lobster Sashimi 4.8/5

One of the most luxury dishes on the 10-course omakase has to be the Lobster Sashimi topped with Sea Urchin, Caviar, Ikura and Gold Flakes. In my opinion, this is the best way to appreciate the sweetness of the lobster meat.

SushiJiro18
Hamaguri Clam, Carrot, Japanese Green Pepper, Seaweed Tempura 4/5

Next is the tempura dish that comes with Hamaguri Clam, Carrot, Japanese Green Pepper and Seaweed coated in a light and thin batter.

SushiJiro19
Hokkaido Oyster 3.8/5

Air-flown from Japan is the Hokkaido Oyster which has a clean and briny taste. It feels like the whole ocean is in the mouth.

SushiJiro23
Japanese Premium Wagyu A5 Beef 4.5/5

Melted in the mouth is the Japanese Premium Wagyu A5 Beef perfectly grilled to showcase the beautiful marbling. I appreciate the fried garlic on the side, which elevates the quality red meat's whole enjoyment.

SushiJiro26
Hamachi Sushi 4.5/5

SushiJiro28
Ika Sushi 4/5

Next, we have an assortment of Nigiri Sushi which is served one at a time. I would recommend sitting at the counter to see how the chef skillfully pieces each sushi together. All in all, I have five different sushi - Hamachi, Ika, Amaebi, Otoro and Unagi.

SushiJiro33
Amaebi Sushi 4.2/5

SushiJiro38
Otoro Sushi 4.5/5

SushiJiro40
Unagi Sushi 4.5/5

One of my favourites sushi is Unagi Sushi. Unlike those used for unagi rice bowl coated with a thick sweet sauce, the light seasoning and marination allow the appreciation of its natural flavour. It is also lightly torched for an added smokiness before serving.

SushiJiro41
Lobster Soup 4.5/5

Coming to the end of the omakase menu, we have a bowl of hearty yet packed with flavours Lobster Soup. I always love a bowl of hot soup at the end of the meal, especially after all the alcohol and richly seasoned food.

SushiJiro44
Japanese Melon 4.8/5

End the 10-course Omakase meal on a sweet note with the Japanese Melon. We all know how expensive this Japanese melon is, and its sweetness is incomparable to those we get from the fruit stall. A slight of this sweet Japanese melon is enough to send me to candy land.

Note: This is an invited tasting.
