Executive Chef Eric Neo and his team at Man Fu Yuan, Intercontinental Singapore has put together 5 handcrafted festive menus this Chinese New Year to herald the arrival of the Year of the Dog. The Chinese New Year festive menus will be available from 18 January to 2 March 2018, priced from $118 per guest.

Treasure Yu Sheng 4.5/5

With the numerous Lo Hei sessions I have attended this year, the Yu Sheng at Man Fu Yuan is the longest I had. What we had is the Treasures Yu Sheng which comes with Abalone, Hokkaido Scallops and Salmon dressed in a Sake Goma Sesame Sauce.

Boiled to a rich milky consistency is the Double-boiled Chicken Soup with Fish Maw, Bamboo Pitch and Matsutake Mushrooms. Brimming with premium ingredients, this is a luscious yet hearty adn comforting bowl of soup

Roasted Suckling Pig 4.5/5

The Roasted Suckling Pig dish is probably inspired by the way we enjoy the Peking duck. The crispy slice of roasted suckling pig is accompanied with a piece of daikon and a huge piece of foie gras. It is supposed to be wrap with the crepe and have all the different ingredients together to enjoy the different play of textures and harmony of flavours.

Man Fu Yuan Abundance Treasure Pot 4.5/5

Available for both dine-in and takeaway is the Man Fu Yuan Abundance Treasure Pot ($398). The treasure pot consists of 18 prized delicacies such as braised sea cucumber with minced prawns and pork, 10-head whole abalone, Canadian lobster, Hokkaido scallop, live prawns, fish maw, goose web, pig's trotter, sea whelk, dried oyster, chicken wing, preserved meat sausage, liver sausage, flower mushroom, cabbage, fried bean curd skin, fried yam and fatt choy.

Steamed Lobster, Chinese Wine, Egg White 4.2/5

An exquisite dish on the menu is the Steamed Lobster with Chinese Wine and Egg White. Do remember get a spoon to scoop up the bed of silky egg white underneath the lobster. The lobster meat was also cooked to a nice bouncy texture with hints of Chinese wine aroma.

Steamed Tiger Garoupa, Mushrooms, Chinese Ham 4.2/5

I find that the Steamed Tiger Garoupa with Mushrooms and Chinese Ham is quite unique with the pairing of steamed fish with Chinese ham. The steamed tiger garoupa seems to have absorbed the essence of the Chinese ham giving it an extra boost in flavour.

Glutinous Rice, Boneless Chicken in Lotus Leaf 3.5/5

The Glutinous Rice with Boneless Chicken in Lotus Leaf made a dramatic entrance with fire being lit around the dish, burning the spices that is placed around the dish. It gives the air a nice aromatic scent. I didn't think that it elevates the dish in any other way though. Putting that aside, the glutinous rice was sticky and flavoursome, and the chicken is cooked to an enjoyable moist and tender texture.

Double-boiled Hashima in Whole Coconut 4/5

Last but not least, I have the Double-boiled Hashima in Whole Coconut. The dessert is served hot. I enjoyed how the coconut juice infused with the tea for a subtle fruity sweetness on top of the longan and red dates.

All in all, Man Fu Yuan offers 5 festive set menus to usher in the Year of the Dog. Prosperity Men ($128 per pax), Success Menu ($188 per pax), Abundance Menu ($1188 for 10 guests, $120 per additional guest), Harmony Menu ($1388 for 10 guests, $140 per additional guest) and ($2888 for 10 guests, $290 per additional guest).
