Resplendent Reunions In The Year Of The Pig At Man Fu Yuan

Upholding the traditions of the Chinese New Year, Executive Chef Eric Neo and his team has put together a collection of festive culinary masterpieces and delightful Lunar New Year goodies to usher in the Year of the Pig at Man Fu Yuan, Intercontinental Singapore.

Prosperity Yu Sheng

Toss to a prosperous year with the new 60-inch Prosperity Yu Sheng ($138). The Chinese character on the Yu Sheng is 亥 ("Hai), symbolizing the twelfth earthly branch the pig is associated with in the sexagenary cycle. The colour prosperity yu sheng consists of baby abalone, Hokkaido scallops, salmon, pork crackling, apple sauce and shallot oil

Double-boiled Chicken Consomme

A comforting and yet nourishing soup is the Double-boiled Chicken Consomme. Clean tasting but packed with rich depth in flavours, you can also find lush ingredients such as nameko mushrooms, sea cucumber, fish maw and bird's nest in it.

Man Fu Yuan Abundance Treasure Pot

One of the highlights at Man Fu Yuan is the Abundance Treasure Pot ($398) brimming with over 18 different ingredients. In the treasure pot, feast to a pot of braised pig's trotters, 10-head whole abalone, fish maw, sea cucumber, Hokkaido scallops, roast duck, goose web, dried oysters, prawns, sea whelk, chicken wing, flower mushroom, cabbage, fried bean curd skin, fried yam, cured meat sausage, liver sausage and fatt choy.

Roasted Pork Belly Roulade with Minced Seafood

New this year is the Roasted Pork Belly Roulade with Minced Seafood ($368 for 4kg). The crackling skin and juicy meat is really enjoyable. However I did not quite like the minced seafood stuffing in between. I still prefer their signature suckling pig stuffed with glutinous rice.

Herbal Chicken in Lotus Leaf

A beautifully executed dish is the Herbal Chicken in Lotus Leaf. It is quite amazing how the chef manage to roll the chicken into a ball. The aroma of the herbs managed to infuse and elevated the appreciation of the tender poultry.

Lobster, Egg Noodles, XO Chilli Sauce

Last but not least we wrapped out our dinner with the Lobster Egg Noodles in XO Chilli Sauce. This slurping goodness is packed with the unami XO chilli sauce, boosted by the addition of freshly fried pork lard. The bountiful lobster lavish the whole enjoyment.

Xin Cuisine @ Holiday Inn Atrium Singapore - A Luxury Chinese New Year Celebration

Xin Cuisine Chinese Restaurant at Holiday Inn Atrium Singapore will be launching its Lunar New Year 2019 Set Menu on 14 January 2019 and will be available till 20 February 2019.

Salmon and Tuna Yu Sheng

Fresh on the menu is the Salmon and Tuna Yu Sheng with Fish Skin and Kumquat Sauce ($78/$98) The tuna is seared on the surface which adds to its texture and bite. Order online before 31 January to enjoy a 20% early bird discount.

Xin's Barbecue Meat Platter

From Xin's Barbecue Meat Platter, I had a taste of their Roast Duck, Roast Pork and Soy Sauce Chicken, which also form their Trio Barbecued Meat Platter in the Set Menu. The roast duck was lean but the skin was crisp and meat was still quite tender. The pork is the one that many will dive right into it.

Double-boiled Matsutake with Hasma

Part of the set menu, Double-boiled Matsutake with Hasma is a clear soup that is deeply nourishing, a good respite for the body from all the rich celebratory dishes.

Xin’s Abalone Treasure Pot

Xin’s Abalone Treasure Pot ($288/$428) is apparently one of the most popular festive takeaways and is possibly one of my favourite Pen Cai so far, thanks to the well braised sea cucumber and collagen-rich fish maw. I also like that the roast duck has its crispy skin retained and not dumped in like a stewed meat. The second layer of vegetables comprises items like mushrooms and radish, were equally delectable.

Wok-fried Glutinous Rice

Something familiar and comforting, wrap up your Lunar New Year meal with their Wok-fried Glutinous Rice with Chinese Sausage and Preserved Meat. It is this time of the year that I truly appreciate the complex flavours of our traditional cured meats and how they could make simple rice taste so unbelievably good.

Mango Pomelo Sago and Niao Gao

One of the desserts served is a refreshing Mango Pomelo Sago with Dragon Fruit, accompanied by Deep-fried Xin’s Red Dates and Assorted Nuts Nian Gao. The Niao Gao is a healthier version - loaded with nuts, so each bite is not just empty calories but of good nutrients from the mixed nuts. I like the extra crunch and bite from the nuts but they tasted a bit too raw for my liking. A good old traditional Niao Gao, intense and gooey, might be more satisfying.
