Kilo Singapore @ Duxton - Kilo Collective Celebrates Its 10th Anniversary With An Evolved Concept Of Its Flagship

Kilo Singapore recently opened its doors at Duxton. Its menu is inspired mainly by Latin America's culture, fuelled by an open format natural flame kitchen with a wood-fired grill.

Japanese Oysters 4/5

For a start, we had Japanese Oysters ($18). Their freshly shucked Japanese oysters are relatively daintier and milder in taste which I prefer. You may top up $5 with your choice of two shooters of Bloody Mary.

Kilo Seafood Ceviche 3.8/5

Another cold starter we had was Kilo Seafood Ceviche ($34). It features a mixture of chunks of tuna, seabass and red prawn tossed with organic tomatoes cubes that have been cured overnight in a dressing made with fennel, radish, Spanish purple onion, fresh lime juice, and pure extra virgin olive oil. The texture lent by the seafood was good but lacked the punch in its flavours for a more assertive acidity.

Classic Steak Tartare On Confit Potato 4.2/5

From Mezze, we had Classic Steak Tartare On Confit Potato ($22). The steak tartare is made with Australian wagyu cube roll, which has a marbling of 4 to 5, which gives a luscious mouthfeel. The confit potato had a starchy texture, bound well with the creamy tartare.

Signature Kilo Squid Ink Rice With Crispy Calamari 4/5

Signature Kilo Squid Ink Rice With Crispy Calamari ($26) is a hearty mezze good for sharing. The rice is specially treated and marinated overnight with a homemade lime-infused glaze with soy and fish sauce. Upon order, the overnight rice is first fried, then stir-fried altogether with squid ink sauce. Perhaps due to the presence of soy sauce, the squid ink rice itself was strongly reminiscent of a typical Chinese style of fried rice. It was tasty as a plate of fried rice but somewhat disconcerting.

USDA Prime Rib Charcoal 4.2/5

Don't miss out on its selection from the Charcoal Fired Grill for mains. The cuts from the Charcoal Fired Grill segment are served with Kilo Fries and Chargrilled Romaine Lettuce. We had a 350gm of USDA Prime Rib Charcoal. Prime rib has a marbling similar to wagyu, and hence when done skilfully, the charcoal fire grill will get the best out of its fats and juice. Ours didn't disappoint as well.

72% Dirty Seduction 4.2/5

For sweets, we chose 72% Dirty Seduction ($14). It is assembled with two different mousse textures: Hazelnut mousse made with a 100% pure chocolate mousse consisting of 72% dark chocolate chips and a creamy mousse. I love the contrasting crunchy chocolate crackers seasoned with sea salt and the warm chocolate sauce drizzle, which reinforced that chocolate-ty notes.

Osomatsu Japanese Kitchen & Bar is a new mod-Japanese restaurant at Kinex. Diners can look forward to inventive interpretations of izakaya food and Japanese cuisine prepared with fresh and quality ingredients.

Maguro Tataki Salad 3/5

We started with the Maguro Tataki Salad ($28), which comes with thick slices of tuna layered on a bed of mixed salad and kaiso seaweed. Pour the wasabi yuzu sauce and give everything a good toss to brighten the enjoyment.

Shironi Truffle 4/5

The Shironi Truffle ($30) consists of light and clean tasting sea bream topped with caviar and drizzled with truffle oil for an elevated finishing. It is an elegant and beautiful dish.

Tofu Nuggets 4.2/5

One of my favourite items on the menu is the Tofu Nuggets ($12). The tofu nuggets are made from pressed tofu, almond meal and potato. It is as good as McDonald's nugget and much healthier.

Uni Kura Tart 4.5/5

Making an impressive entry is the Uni Kura Tart ($22/pc). It is served in a smoked jewel box, giving it a beautiful smoky aroma, topped with salmon roe and truffle cream. It is a lavish play of umami flavours.

Charcoal Chicken 4.5/5

Using chicken thigh cut, the Charcoal Chicken ($16) is tender and juicy inside, yet crispy on the exterior. It is a delightful and addictive starter. Best to go along with a few drinks.

Tsukune 4.5/5

The Tsukune ($5.20) is another delightful bite to go with the drinks. What I enjoy about the homemade chicken meatball is its soft bone, giving it a nice textural contrast.

Miyazaki A4 Wagyu Cha Zuke 4.5/5

Besides the a la carte items, diners can leave the meal to the hands of the skilful chef too. From the omakase menu, we tried the Miyazaki A4 Wagyu Cha Zuke. The best way to enjoy this is to pour the kombu dashi stock into the rice for a light and flavourful enjoyment. It is a hearty and comforting rice dish with melt in the mouth wagyu.

Ume Jelly 3.5/5

Wrapping up our dinner is the Ume Jelly ($8) made with Japanese plum liquor jelly and wholesome wolfberries.
