Wan Hao Chinese Restaurant @ Marriott Tang Plaza Hotel - Reunions Of Joy & Prosperity

IMG_5213

Wan Hao Chinese Restaurant at Singapore Marriott Tang Plaza Hotel usher in this Lunar New Year with new celebratory delicacies that ooze with abundance, prosperity and wealth.

IMG_5216

Toss to good fortune with six types of Yu Sheng, one of which comes with Lobster, Swordfish, Hokkaido Scallop, Sea Urchin, Caviar, Salmon Roe & Crispy Fish Skin Yu Sheng (Large: $268++). Kumquat pineapple sauce replaces the traditional sauce to give it a more appetising and also to symbolise fortune and wealth. Crispy fish skin is also added to the Yu Sheng for an extra crunch.

IMG_5225
Wan Hao Eight Treasures Imperial Pot with Bird’s Nest 4.5/5

Last year, I also had the Wan Hao Eight Treasures Imperial Pot with Bird's Nest ($488++/ $888). It remains one of the most memorable ones because of its collagen-rich stock. Unlike the conventional Pen Cai, the superior broth for this treat is lighter. In addition, it contains nourishing ingredients such as chicken feet, old fowl, pork skin, and more. Targeting the ladies, it even comes with Bird's Nest, on top of our premium ingredients such as 10-head Australian abalone, fish maw, dace fish beancurd bag, live prawns, pork tendons and more.

IMG_5246
Bird’s Nest Dumpling with Crab Roe Superior Soup 4.5/5

Bird's Nest Dumpling with Crab Roe Superior Soup was again another dish that has been elevated for the occasion. The bird's nest adorning the dumpling was more for the wow factor rather than adding towards the taste. Still, the dumpling itself was delicious on its own with well-seasoned filling. The beautiful crab roe soup was subtle in the flavour but rich in body, which complemented the dumpling perfectly.

IMG_5251
Australian Lobster with Black Truffle and Fresh Milk Egg White 3/5

However, sometimes it can get slightly too much with premium ingredients. Australian Lobster with Black Truffle and Fresh Milk Egg White in a puff pastry nest & pan-fried foie gras was enjoyable, especially with the yam puff pastry. The combination of foie gras and the black truffle on top of all that was simply overwhelming.

IMG_5275
Dessert 4.5/5

I love the dessert! Summing up the meal was Hashima Double-boiled in Almond Cream in mini pumpkin. Served piping hot, the warm and soft flesh of the pumpkin lent a creamy texture and a mild sweetness to the hashima.

Crystal Jade CNY 2022 - Spring Into a Roaring Lunar New Year

CrystalJadeCNY5

Homegrown Chinese restaurant group Crystal Jade has put together a variety of set menus and new exquisite dishes for this Chinese New Year. It caters to all reunions - big and small, from convivial family gatherings to cosy intimate affairs.

CrystalJadeCNY2
Opulence 3-head Abalone Yusheng

The new Opulence 3-head Abalone Yusheng ($128/ $198) is a vibrant and healthy version this year. The colourful plate consists of coins of red dragonfruit, dried yuzu peel, Japanese pickled sweet ginger, homemade pickled cucumbers, deep-fried yam strips, chickpeas, carrot, white radish and green radish. Hsin Chu beehoon is added for crunch. It is further crowned with edible gold leaves, fresh flowers, lightly torched abalone slices from Australia, jellyfish and ikura, finally, tossed in uplifting roselle and yuzu-based dressing.

CrystalJadeCNY19
Double-boiled Kampong Chicken Soup

The Double-boiled Kampong Chicken Soup with American Sea Whelk and Tiger Palm Mushroom is nourishing and comforting. The team has specially brought in the tiger palm mushroom to usher in the year of the Tiger.

CrystalJadeCNY25
Pan-fried Sea Cucumber

The Pan-fried Sea Cucumber, a surf-and-turf option on the menu, is stuffed with Kurobuta Pork, Black Moss, Chinese Iron Yam and Scallion. I like the idea of the stuffing giving the firm and bouncy sea cucumber the additional textural dimension.

CrystalJadeCNY27
Steamed Chilean Cod Fish with Red and Green Chilli in Puning Sauce

One of my favourite dishes is the Steamed Chilean Cod Fish with Red and Green Chilli in Puning Sauce. The sauce is deliciously special, together with the pickled red and green chillis, complemented the buttery cod fish excellently.

CrystalJadeCNY31
Steamed Salted Chicken with Ginger and Scallion Sauce

Another beautiful dish is the Steamed Salted Chicken with Ginger and Scallion Sauce. Nothing fancy but simple cooking of using salt, ginger and scallion to bring out the flavour of the tender chicken.

CrystalJadeCNY39
Crisp-fried Brussel Sprouts accompanied with Fresh Silken Beancurd Skin

This year, Chef Martin has added new excitement for the vegetarians to celebrate CNY. Vegetarians can look forward to something different such as Crisp-fried Brussel Sprouts accompanied with Fresh Silken Beancurd Skin. It is a textural enjoyment of crispiness and silkiness, all in one.

CrystalJadeCNY46
Crispy Pandan Glutinous Rice Cake 'Nian Gao'

An interesting way of enjoying the Nian Gao is the Crispy Pandan Glutinous Rice Cake 'Nian Gao'. Infused with the aromatic pandan flavour, it is soft on the inside and crispy on the outside.

CrystalJadeCNY49
Yuzu Mandarin Orange Jelly

A delightful dessert is the Yuzu Mandarin Orange Jelly studded with yuzu peel and mandarin orange segments for a light and fruity sweet finishing.

CrystalJadeCNY42
Deep-fried Pumpkin Ball with Lava Salted Egg Yolk

Served as a warm dessert, the Deep-fried Pumpkin Ball with Lava Salted Egg Yolk has a soft exterior, filled with oozing savoury-sweet lava salted egg yolk.

Chinese New Year dining at Crystal Jade restaurants will commence from 17 Jan 2022 (select outlets will be closed on 1 Feb 2022 – CNY Day 1) and set menus for up to five persons (same household) are available. Ichiban Boshi Launches Japanese-style Chinese New Year Specialities

IchibanBoshi5

Celebrate this Lunar New Year with festive dishes that come with a Japanese flair at Ichiban Boshi. Other than its highly raved Auspicious Salmon Yuzu Yusheng, there is also a meatless, fruity alternative to your annual Lo Hei. What's more, for the very first time, Ichiban Boshi puts its twist to the traditional Pen Cai, delighting you with premium fresh ingredients all in one pot.

IchibanBoshi7
Auspicious Salmon Yuzu Yusheng 4/5

Loyal customers of its Auspicious Salmon Yuzu Yusheng ($62.80, Set A - 8 to 10 pax) can once again get their hands on this best-selling Yu Sheng of all years. The citrusy house special yuzu dressing made from ingredients' imported from Japan, balances the sweetness of the preserved condiments. The fresh Norwegian salmon is also a huge draw for the festive dish.

IchibanBoshi8
6 Treasures Fruits Yusheng 4/5

6 Treasures Fruits Yusheng ($56.80) is only available online exclusively via the festive e-stores of Ichiban Boshi, Ichiban Sushi and Kuriya Japanese Market. It is suitable for 6 to 8 pax. If you already have the typical Yu Sheng a few times throughout the festive season, this fruity and refreshing meatless version will be up your alley. Featuring a medley of six fruits: pomelo, pear, guava, mango, pineapple and jackfruit, it will help set up your appetite for the feast to come.

IchibanBoshi5
Japanese Treasure Pot 4.5/5

Ichiban Boshi launches its first-ever Japanese Pen Cai, which is only available online exclusively via the festive e-stores of Ichiban Boshi, Ichiban Sushi and Kuriya Japanese Market. I like the Japanese Treasure Pot ($188) good for 4 to 5 pax. It comes brimming with premium ingredients such as whole abalone, sashimi-grade scallops from Hokkaido, snow crab leg meat, prawn, homemade Japanese chashu, homemade chicken roulade with cabbage and spinach, kamaboko fish cake and shiitake mushroom. I much prefer this version to the traditional one because of the flavour and taste it delivers. The addition of the tender braised chashu from Ramen Kiou is a plus for me too.

IchibanBoshi21
Long Bamboo Rainbow Chirashi 4/5

The Long Bamboo rainbow Chirashi ($19.90) is one of the auspicious dishes served at Ichiban Boshi during the Chinese New Year period. It consists of fresh seafood such as maguro, Japanese red sea bream, yellowtail, salmon, egg, black flying fish roe and salmon roe on sushi rice with ginger. The sushi rice has been specially treated, which makes it extra yummy and addictive on its own.

IchibanBoshi19
Premium Sushi Moriawase 3.8/5

For a greater variety, go for the Premium Sushi Moriawase ($45.90). Diners can indulge in a medley of sushi such as madai, hamachi yellowtail, salmon, maguro, roasted beef, unagi, and scallop and ikura salmon roe, presented in a wooden stairway.

IchibanBoshi26
Wafu Aqua Pazza 4.2/5

My favourite dish of the evening is this Wafu Aqua Pazza ($38.90) featuring a whole seasonal fish in a hot and soulful broth. There's nothing more heartwarming than sharing a pot of hearty broth made with beautiful simple ingredients with your loved ones. That's what reunion meals are all about.

WanHao5
Lobster (Cooked) & Caviar Yu Sheng 4.5/5

New highlights include the Lobster (Cooked) & Caviar Yu Sheng with a choice of traditional or mandarin orange sauce. Perfect if you and your loved ones ain't into raw fish, for the cooked lobster slices adds a succulent sweet crunch to the mix. Instead of the traditional sauce, you are given a choice of mandarin orange sauce that is zesty and sweet. Furthering that citrusy note is the addition of passionfruit pearls, that burst with tangy juice in each bite.

WanHao10
Eight Treasures Imperial Pot with Bird’s Nest (贵妃煲) 4/5

Wan Hao Eight Treasures Imperial Pot with Bird’s Nest ($788++/6 persons) debuts this year, and it's all about nourishment and collagen. Brimming with collagen-rich ingredients - Bird’s Nest, 10-Head Australian Abalone, Fish Maw, Dace Fish Beancurd Bag, Live Prawns, Pork Tendons, Chicken and Japanese Shiitake Mushroom. It may not be your usual pen cai, but it embodies the spirit of pen cai just as much. The superior broth itself is equally nourishing, made with ingredients such as chicken feet, old fowl, pork skin, and more.

WanHao18
Braised Giant Prawn with Salted Egg Cream Sauce 4.5/5

A contemporary take on its Cantonese cuisine, Braised Giant Prawn with Salted Egg Cream Sauce delights with its succulent prawn that comes with an aromatic crisped exterior.

WanHao17
Crispy Pork Trotters with Fermented Red Rice Sauce 4.5/5

Served in a vibrant and colourful bed of julienned vegetables, Crispy Pork Trotters with Fermented Red Rice Sauce were moreish with their thin and perfectly crisped skin lacing over tender meat. I have always loved fermented red rice, and loving it just as much here being used as a dipping sauce for that extra funk of flavour.

WanHao22
Dessert 4.8/5

For dessert, we tried Water Chestnut Puree with Hashima, Black Sesame Glutinous Rice Ball with Pistachio as well as a Golden Niao Gao Tart with Japanese Red Bean. Served chilled, the Water Chestnut Puree with Hashima cooled and refreshed my palate before moving on to savouring the sweet and nutty goodness of the rice ball and tart. Golden Niao Gao Tart with Japanese Red Bean is also available as takeaway treats too ($28nett/ 8 pieces).
