The Orchard Cafe @ Orchard Hotel Singapore - Elevated OZ “Meats” Buffet, A Lavish Sunday Brunch Experience with Expanded Indulgences and Weekend Favourites

The Orchard Cafe presents an elevated take on its well-loved OZ "Meats" Buffet with a special Sunday Brunch, offering an expanded spread that brings together hearty Australian highlights alongside indulgent brunch classics. The refreshed experience delivers a satisfying weekend feast, complete with premium ingredients and comforting favourites for all ages.

The buffet begins on a high note with a vibrant selection of Chef's Salads, offering a refreshing and flavourful start. Highlights include the Spanish Style Grilled Octopus, Creamy Idaho Potato with mustard and dill, and the Tomato with Baby Mozzarella and basil. Heartier options such as AUS Pulled Lamb with lentil and hummus, and AUS Beef Brisket with pickled vegetables further elevate the spread.

Artisan Cheeses

Following this is the antipasto section, featuring an assortment of Salami, Mortadella, Serrano Ham, Pepperoni and Smoked Salmon, complemented by a selection of premium artisan cheeses. This combination of cured meats and cheeses offers a satisfying balance of savoury richness and creamy indulgence.

Seafood on Ice

Seafood lovers will appreciate the generous Seafood on Ice selection, which includes Red Prawns, Mussels, Half-Shell Scallops, Cherry Clams, Black Mussels, Snow Crab, and Boston Lobster, alongside Poached Salmon. Adding to the spread are Assorted Sashimi such as Salmon, Trout, Yellowfin Tuna, and Hamachi, as well as a variety of Sushi and Maki Rolls of the Day.

Carving Station

At the Carving Station, diners can enjoy an impressive lineup of hearty mains. Highlights include the Slow-Roasted AUS Grain-Fed Prime Rib served with baby potatoes, Yorkshire pudding, and red wine sauce, as well as the Aussie-Style Grass-Fed Lamb Rack paired with mint and BBQ sauces. The Maple Glazed & Orange Marmalade Gammon Ham stood out for its balance of sweet and savoury notes. At the same time, the Baked Barramundi and Peri-Peri Roasted Chicken offered lighter yet flavourful alternatives.

The AUS Meats Charcoal Grill Station adds a smoky dimension to the feast, featuring grilled favourites such as Tiger Prawns, Pork Belly, Pork Bacon, Chicken Wings and Chicken Satay, all freshly prepared over charcoal for that irresistible charred aroma.

A selection of Roasted Delights further complements the spread, including Roasted Duck, Roasted Pork, BBQ Pork, and Hainanese Chicken served with fragrant Hainanese Chicken Rice, offering familiar local flavours that are always crowd-pleasers.

One of our favourite local delights is the Chilli Crab served with mantou, boasting a rich, tangy and spicy sauce that pairs perfectly with the fluffy fried buns, making it a must-have dish during brunch.

For those seeking comforting carbohydrates, the buffet also features a Congee Station with assorted condiments and fried Chinese doughnuts, alongside a Noodle Bar serving options such as Lor Mee and Laksa, catering to different flavour preferences. For a more satisfying combination, pair a warm bowl of congee with the soft, flavourful braised soy pork, which adds comforting richness to the dish.

Indian and Dosa Station

The Indian Station offers a robust spread of bold, aromatic dishes, including Kolkata Biryani, Butter Chicken, and Mutton Kosha Mangsho, alongside vegetarian options like Palak Paneer and Keerai Paruppu Kadayal. The Dosa Station serves freshly made Masala Dosa, Onion Uttapam and Plain Dosa with sambar and chutney.

Adding a luxurious touch to the brunch is the Foie Gras Station, where Pan Roasted French Foie Gras is served with rhubarb chutney and brioche.

Seafood aficionados will also enjoy the Oyster Station, featuring both baked and steamed oysters, which quickly became one of our personal favourites for their freshness and briny sweetness.

Families are well catered for with the Munchkin Table, offering kid-friendly favourites such as pizza, pasta on a wheel, Wagyu beef sliders, hash browns, snail sausages and fish & chips, ensuring even the little ones have plenty to enjoy.

Desserts

Desserts round off the experience on a delightful note, with an extensive selection that includes Signature Mango Cake, Strawberry Shortcake, Opera Cake, and Yuzu Sesame Cake. Other indulgent treats include Tim Tam Tarts with Berries, candy donuts, assorted kuehs, apple pie and pralines, as well as Banoffee Cream Pudding with white chocolate crumble. The Chocolate Fountain, served with fruits, marshmallows, Rice Krispies, and a fun popcorn station, adds a playful and satisfying end to the brunch.

Edge @ Pan Pacific Singapore - Celebrates The Festive Season with Well-Loved Local and International Spread Alongside Festive Seasonal Creations

Celebrate the festive season at Edge at Pan Pacific Singapore with one of its most abundant spreads of the year. The line-up features festive seasonal creations alongside the restaurant's well-loved local and international offerings.

Traditional Roasted Whole Turkey, Maple-glazed Gammon Ham

At the Festive Carving Station, highlights include the Traditional Roasted Whole Turkey, classically paired with cranberry sauce, and a succulent, sweet-savoury Maple-glazed Gammon Ham served with zesty spiced pineapple marmalade.

Charcoal-grilled Grass-fed Lamb Leg

The Charcoal-grilled Grass-fed Lamb Leg rubbed with Ras El Hanout spice stood out for its heady, aromatic flavours. Alongside it was a Slow-roasted Tomahawk, finished with a final torching of the exterior to add an extra layer of char and smokiness.

We also tried an interesting take on Duck Confit, served with Savoy cabbage, that offered a comforting, well-balanced combination.

For Asian roasts, both the Roasted Duck and Maltose Honey-glazed Char Siew impressed with their succulency and depth of flavour.

"Jiang Zheng" Red Snapper

"Bi Feng Tang" Roasted Chicken

Under Asian Delights, the "Jiang Zheng" Red Snapper was moist and tender, robustly flavoured with fermented bean paste chilli and crispy pork lard. A clear crowd-pleaser was the "Bi Feng Tang" Roasted Chicken, made moreish with crispy garlic and dried chilli.

Wok-fried Singapore Hokkien Noodles

My personal favourite was the Wok-fried Singapore Hokkien Noodles wrapped in Opah Leaf, fragrant and satisfying.

Sambal Berlado Turkey

The Taste of Malaysia section included a festive twist with Sambal Berlado Turkey, alongside comforting staples such as satays.

Over at the Indian Cuisine station, popular dishes like Butter Chicken and Lamb Biryani were well represented.

Cheese and Charcuterie Station

The Cheese and Charcuterie Station offered a wholesome assortment of cheeses, condiments, and handcrafted cold cuts, including Pan Pacific home-cured beef salami, Virginia ham, pastrami, mortadella, paprika lyoner, and Black Forest ham.

The highlight of the festive spread was undoubtedly the Dessert Stations, featuring a chocolate fountain, ice cream, and log cakes.

Upside-Down Pineapple Cake

The festive sweet creations were impressive, with standouts including Homemade Stollen, Minced Fruit Pies, and Raspberry Choux Puffs. The buttery Upside-Down Pineapple Cake was particularly memorable and a fitting end to the meal.

Rang Mahal Restaurant & Bar @ Naumi Hotel Singapore - Relocate and Rebrand to Its Root as A Family-Run Restaurant

Rang Mahal has found a new home at Naumi Hotel Singapore, now established as Rang Mahal Restaurant & Bar. This marks an evolution for the brand after a remarkable 54-year culinary journey, from its beginnings as a family-run restaurant at the Imperial Hotel to its long-standing presence as a modern Indian fine dining destination at Pan Pacific Singapore from 2000 to 2025. The refreshed concept brings together the best of North, South, and coastal Indian cuisines, while also spotlighting some of the family recipes that add a personal touch to the dining experience.

Khakra & Chutney Dips 5/5

Appetisers set the tone beautifully, offering bold flavours wrapped in comfort and nostalgia. A much more exciting alternative to the traditional papadum, the Khakra & Chutney Dips ($10) features crisp Gujarati-style crackers made with wholemeal flour and aromatic spices, paired with three homemade chutneys — tangy mint, sweet mango, and spiced mustard yoghurt. Nutty and spice-forward, the trio of chutneys enriched every bite with a punch of flavours.

Maa's Chilli Cheese Pakoras 4.5/5

A family recipe from the mother of the Director and second-generation owner, Maa's Chilli Cheese Pakoras ($18) features green chillies stuffed with cheddar and cream cheese, battered in spiced gram flour, then fried to golden perfection. The creamy, mildly sweet cheese filling mellowed the heat of the chilli, balanced by a refreshing mint-beetroot sauce.

Arshiya's Chowpatty Slider 3.5/5

Arshiya's Chowpatty Slider ($20), named after the founder's daughter in law and inspired by Mumbai's Chowpatty Beach, is a nostalgic street snack of spiced potato patties with onions, chilli powder, chaat masala, and cumin, sandwiched in buttery buns with tamarind and coriander spreads. The sweet-tangy tamarind imparted an unexpected, but welcoming tang to the slider.

Calcutta Pani Puri 4/5

Another quintessential Indian street food, Calcutta Pani Puri ($16), arrived as crispy puris that we had the joy to fill the golden shells ourselves with seasoned potatoes and tamarind-mint water before popping them into our mouths.

Non-Vegetarian Grill Platter 4.5/5

The Mains range from Grill Platters, Curries and Biryani. The Non-Vegetarian Grill Platter ($52) came sizzling with Tandoori Chicken Tikka, Tiger Prawns, and Lamb Seekh Kebab. The meats were well-marinated and tender, flavourful without being overly salted. The Lamb Seekh Kebab, in particular, stood out for its balance of spice and succulence, offering a well-rounded bite.

Kokan Fish Curry 4.5/5

For a taste of coastal Maharashtrian cuisine, the Kokan Fish Curry ($28) was a highlight, featuring moist seabass simmered in a coconut-based Konkani masala, with kokum adding a gentle tang. While the curry was well-balanced, a slightly stronger dose of kokum would have enhanced the dish's brightness.

Old Delhi Butter Chicken 3.5/5

A perennial favourite, the Old Delhi Butter Chicken ($30) featured tandoor-roasted chicken simmered in a rich tomato and fenugreek gravy, finished with cream. While the chicken was perfectly tender, the sauce leaned a touch too creamy and sweet, as I would prefer it to be more savoury.

Garlic Naan 3/5

The Hyderabadi Lamb Biryani ($30) was fragrant and flavourful, with the rice beautifully cooked and each grain distinct. However, some lamb pieces were slightly dry. The dish paired wonderfully with Burani Raita ($16), a yoghurt spiked with dehydrated garlic, which also complemented the Garlic Naan ($16); however, the naan could be fluffier.

Nani's Lychee Kulfi 5/5

Dessert was Nani's Lychee Kulfi ($16). The homemade kulfi, cut into cubes and laced with bits of lychee for added texture, had well-balanced sweetness and a lingering lychee aroma. Rang Mahal is indeed a brand that has truly stood the test of time.
