Usher in the Year of Horse with a meticulously plated Salmon and Mackerel 'Lo Hei' ($128 per order) by Chef Li Kwok Kwong in the shape of a horse to symbolizes 'galloping' towards a bright future (马到功成). The new yusheng creation features a medley of refreshingly sharp flavours and colours with fresh salmon cubes, crispy skinned mackerel and silver fish as well as strips of bak gwa. The bountiful yusheng is given a unique taste with the use of Italian balsamic vinegar or mint dressing which is a different from the tradition.

There is also a fruity vegetarian version, Mixed Fruits and Water Chestnuts 'Lo Hei" ($38 for 3-6pax, $68 for 7-10pax) which is filled with mango slices, honeydew, dragon fruits, rose apples and a generous portion of water chestnuts drizzled with homemade strawberry sauce.
