St Regis Singapore Festive Celebration 2013

Amuse Bouche 4/5

For a glimpse of the epicurean pleasures that is offered at the 3 restaurants at St Regis Singapore, here is a preview of some of the delectable indulgences. Dinner commenced with the amuse bouche which was Poached Egg with Shaved Black Truffles (LaBrezza). A generous slice of black truffle accompanied the warm runny egg whetted up the appetite for an exceptional culinary experience

Artichoke and Potato Soup 4/5

The Artichoke and Potato Soup (Brasserie Les Saveurs) was perfect for the cold night. Both hearty and comforting, the bowl of soup comes with luxurious boston lobster tartare topped with tarragon foam giving it a herby finishing. The bowl of soup also comes with a piece of crispy squid ink polenta. I thought that was an interesting concept but it did not have that crackling enjoyment I was looking forward to.

A Medley of Seafood 4/5

From the buffet line at Brasserie Les Saveurs, we were presented with A Medley of Seafood.  The platter of seafood was so irresistible that I just need to get my hand dirty digging into these fresh ocean selection.

Mediterranean Sea Bass Cappellacci 4/5

Unlike tortelloni or ravioli that is smaller, the Mediterranean Sea Bass Cappellacci (LaBrezza) is one big stuffed pasta. Served with green asparagus, sun dried datterino tomato and saffron sauce this was quite an enjoyable dish. Although the pasta skin is a bit thicker, I enjoyed that bite to it especially when they are freshly made.

Filet Mignon En Brioche 4.5/5

The Filet Migon En Brioche (Brasserie Les Saveurs) is a must try. Quite similar to the beef wellington but instead of puff pastry, it uses brioche to wrap around the delicacy inside.

Cutting open the brioche, there is a beef tenderloin with foie gras wrapped in prosciutto ham inside. I personally preferred this over beef wellington. I thought the soft and fluffy brioche works better with the dish compared to puff pastry. Paired with the perigord sauce which is basically a truffle and wine sauce, it simply accentuated the flavour of the beef tenderloin. The dish has a lot of strong and bold flavours in it and can be a bit heavy if you are not a big eater.

Roasted Muscovy Duck 4.2/5

Available for takeaway is the Roasted Muscovy Duck served with a orange sauce. This is my first time having this species of duck which is native to Mexico, Central and South America. The size is bigger than the usual duck species from the region and it is not as fatty.

Christmas Log Cakes 4.2/5

As the years go by, Christmas log cake has also evolved from tradition with new flavours and creation. At St Regis Singapore, it offers 2 delish creations from the pastry kitchen in the Chocolate Passion Royal Log Cake and Red Berries with Pistachio Sponge Log Cake. The Chocolate Passion Royal Log Cake comes in a divine chocolate mousse with passion fruit creme brulee with a layer of crunchy feuilletine while the Red Berries with Pistachio Sponge Log Cake is a low sugar concoction of vanilla mousse, strawberry, jelly and strawberry cremeux and pistachio sponge.

Christmas Stollen 4/5

I have never been much a fan of Christmas Stollen but this was pretty good with the sweetness of the tropical dried fruits working harmoniously with the spicy cinnamon.
