Tucked away in the calm enclave of ESPA, the award winning spa's restaurant Tangerine is now offering a new menu starring healthy options which nourish the body. Chef Forest, wife of Chef Sam Leong has created several new dishes especially for those who are looking for a well balanced and light meal.

The comforting and hearty Doubled Boiled Canadian Wild Morel Mushroom with Sakura Chicken Consomme ($18) not only was flavourful but enriching in iron, potassium and low in calories.

Not only beautiful in sight but flavours too. The Cure Atlantic Salmon with Granny Smith Apple & Celery Juice has a light and clean flavour but yet intriguing with the different flavours working together in harmony.

Chilled Aloe Vera, Rosella Gelo & Calamansi 3.5/5

The Chilled Aloe Vera, Rosella Gelo & Calamansi ($14) is a refreshing dessert with a nice tangy finishing. The used of aloe vera and barley added textures to the whole sin free dessert.

With the health driven menu compromises whole grains, fresh fruits and vegetables as well as premium free range poultry, guests can indulge in a nutritious dining experience in a relax environment.

Forest (森) @ Resort World Sentosa

The contemporary Chinese fine dining restaurant, Forest (森) at Equarius Hotel, Resort World Sentosa is introducing a brand new Sunday lunch concept. Showcasing Chef Sam Leong's interpretation of Chinese classics with a modern twist in a 8 course feast at a reasonable price of $68++. The Sunday lunch menu is also changed monthly to feature Chef Sam Leong's signature dishes in a single seating.

Baby Abalone 4/5 Crispy Duck with Yam 4.5/5

We were given a glimpse of the Sunday lunch menu starting with a duo platter. The Baby Abalone was cooked to a nice tender and dressed with a sharp Ma La sauce balanced with the refreshing shredded cucumber and carrot. The Wok Fried Crispy Duck pressed confit with Yam served with Mushroom Sauce remembered me of the classic braised duck with yam dish. Chef Leong's rendition has given it a more texture enjoyment.

Wagyu Beef Cheek 4/5

Rubbed with cumin powder, the Wagyu Beef Cheek was slow cooked to fork tender and served with in a black truffle sauce.

Steamed Salmon 5/5

Being a Teochew I like my steamed fish. Chef Sam Leong's Steamed Salmon with Ginger Flower, Lemon and Kaffir Lime Leaves won my palate. Chef Sam Leong has taken the classic Teochew steamed fish to a whole new level with the familiar flavours that is close to my heart. The sourness broth with the pinkish salmon was a perfect marriage.

Braised Flat Rice Noodle 4.2/5 Wok Fried Japanese Pearl Rice 4/5

The Braised Flat Rice Noodle with prawns in black bean sauce and Wok Fried Japanese Pearl Rice with squid ink in XO chilli sauce accompanied with seared Hokkaido scallop. The 2 dishes are another showcase of Chef Sam Leong's culinary skill in giving the classic hor fun and fried rice a modern interpretation.

Call it a Sunday lunch menu but it felt more like a Chinese fine dining degustation menu with 8 course. There are a total of 6 appetisers, 3 mains and a dessert reflecting Chef Sam Leong's interpretation of Chinese classics with a modern twist.
