First conceptualised in Seorae village, South Korea, it has grown into the leading Korean BBQ chain and cemented its reputation as a rare pork-cut specialist, with over 300 outlets established globally. Seorae has since expanded to 6 outlets in Singapore, with its newest outlet in Northpoint City. They are dedicated to presenting the authentic flavours of Korean BBQ and traditional cuisine, making it a must-visit destination for those seeking a taste of Korea's culinary heritage.

Seorae's latest addition to their Signature Collection is the Hangari Dry-Aged Pork Belly ($32/200g), a culinary masterpiece aged in traditional Korean Hangari pots with a proprietary blend of three essences. This careful ageing process in a controlled 3-degree chill chamber produces a uniquely flavourful and tender pork belly cut. It promises a melt-in-your-mouth texture that is a true indulgence for the senses. To elevate the experience further, this exquisite dish complements exceptionally well with a side of sambal kimchi onion, adding a delightful hint of spice and complexity to the rich flavours of the dry-aged pork belly. Make a classic lettuce wrap by placing a piece of pork belly within a lettuce leaf and topping it with the sambal kimchi onion.

It serves as a palate cleanser and pairs excellently with the restaurant's grilled meats.

Baristart Coffee Singapore @ Wisma Atria - Hokkaido Cafe’s 3rd New Outlet in Town with Popular Hokkaido Cream Puffs, Coffee and Japanese Western Food

Good news to those who work in town, as Baristart Coffee welcomes its newest outlet at Wisma Atria, located within the OCBC branch on the fourth floor. It may be tricky to find as the third outlet is nestled within the bank's largest integrated lifestyle and banking branch with a fun retail space featuring books and selected lifestyle brands.

The brand is most known for its use of the creamy Hokkaido BIEI Jersey Milk, and it features it across several items on the menu, such as its beverages, cream puffs, and soft serves.

Baristart Latte

If it is your first visit here and you’re thinking of grabbing coffee, go for their smooth and aromatic Baristart Latte ($6.70). It's available both hot and iced, and you can top up a dollar for add-on flavours of caramel, vanilla or honey.

Mixed Berries Yoghurt Smoothie

The Mixed Berries Yoghurt Smoothie ($8.50) is one of the beverages under the non-caffeine list. However, it was a little too icy and muted than I was hoping for in its yoghurt flavour.

Hokkaido Tontoro 3.8/5

The Hokkaido Toronto ($17.80) features a light garden salad mix with tangy-sweet raspberry pommery dressing, yuzu ponzu radish sauce, and slices of Hokkaido Snow Pork Jowl. Although the dressing was appetising, the dish was pretty average and pricey.

Hokkaido Zangi 4.2/5

Drizzle lemon juice over the Hokkaido Zangi ($14.80) for that extra freshness to the crunchy bites. These well-marinated Hokkaido-style fried chicken chunks make an excellent sharing choice.

Wafu Pasta 4.2/5

We sampled a couple of main dishes, the first being a classic Japanese fusion dish, the Wafu Pasta ($19.80). While it was a touch oily, the spaghetti was well coated in an umami butter and dashi sauce mix with a slight kick of spice and studded with several toppings - prawns, bacon strips, asparagus and nori.

Obihiro Butadon 4/5

The Japanese rice-based Obihiro Butdaon ($19.80) is served with grilled pork belly dressed in a homemade teriyaki sweet sauce. A bowl of Shiro Miso soup also accompanies it.

Tonkatsu 4/5

The Tonkatsu ($18.80) is one of the three sandos on the menu. A thick, deep-fried Hokkaido pork loin patty is sandwiched between two soft and crustless white breads. It's finished with cabbage, mustard butter and sweet tonkatsu sauce, which gives a delightful mix of sweet, savoury and tangy notes. It's best to enjoy this while it's still hot.

Hokkaido Cream Puff 4.8/5

We definitely couldn't leave Baristart without having one of their well-loved Hokkaido Cream Puffs ($7). Baristart's rendition is one of my favourites. It is always generously piped with its signature BIEI Jersey Milk custard cream, so rich and luscious, paired with the irresistible crunchy crust.

Nest At One Farrer @ One Farrer Hotel - Bespoke Private Dining Experience

Nest at One Farrer Hotel offers an exclusive and unique private dining experience inside their private studios and villas on level 20, the top floor of One Farrer Hotel. Jointly designed by Executive Chef Marcus Tan and Pastry Chef Wee Pai Hau, they invite you to experience their all-new Executive Set menus alongside curated wine recommendations.

The Havens' private dining studios are converted from their hotel rooms, with a staff assigned to serve the customers in these studios. Meaning we had had the entire room to ourselves! The private studios offer two 5-course Executive Dinner menus - Lavender set menu ($98) and Wisteria set menu ($98). Two Executive menus for lunch are available as well.

We started with two warm buns, served with Truffle Butter and Unsalted Butter. The fluffy and buttery soft bun was particularly warming.

Honey Soy Unagi 4/5

Both the starters were excellent. The Honey Soy Unagi (Lavender) is a warm starter that whets my appetite with savoury, unctuous unagi, complemented by a slightly sweet tamago. The al dente kimchi capellini topped with saltish ikura and scallion helped build the dish's texture.

Ceviche Hokkaido Scallop 4.8/5

As for the cold starter, Ceviche Hokkaido Scallop (Wisteria), each slice of the scallop was succulent, offering an almost melt-in-your-mouth texture, complemented by the bright flavours of the Asian citrus-soy dressing and pink ginger. The accompanying savoury kaiso salad added an extra layer of flavour dimension, and texture.

Mushroom Velouté 4/5

For the second course, the Ginseng Chicken Consommé (Lavender) stood out with its elegant consommé carrying a good depth of ginseng flavour. Partially immersed within, a chicken gyoza was a highlight, featuring a juicy, well-seasoned filling encased in a perfectly pan-fried crust. The Mushroom Veloute (Wisteria) boasted a deep, earthy flavour from sautéed forest trumpets, with a touch of truffle oil to further enhance that earthiness.

Hoisin-barbecue pork belly 4.5/5

Both the third courses were well executed, but I found the Hoisin-Barbeque Pork Belly (Wisteria) to have a better balance of flavours, thanks to a yummy house-made Hoisin sauce that elevated the barbecued pork belly. The pork belly itself was succulent and tender, devoid of any strong porky flavour, and the crunchy macadamia sprinkles on top provided a delightful textural contrast. The tangy pineapple compote added a sweet and bright acidity, cutting through the dish's richness.

Mentaiko Mayo Halibut 4/5

The flavour profile of the Mentaiko Mayo Halibut leans more towards the sweeter side, but overall, we still enjoyed the dish. The fish had a tantalizingly buttery texture and flavour, enriched by the mentaiko mayo. The fruity and savoury tomato mousseline, along with the pickled tomato, was a thoughtful touch by the chef.

Braised Beef Cheek Rendang 3.5/5

Both menus feature beef as the fourth course. The Lavender menu presents a visually appealing Braised Beef Cheek Rendang served with Blue pea glutinous rice, pickled pineapple-cauliflower, and crispy parsnip. The beef cheek was incredibly tender, with a melt-in-your-mouth texture, and the pickled cauliflower played a role similar to our Asian achar in a rendang dish. Though the taste of the parsnip was slightly off for some reason, it was a cohesive dish.

Filet mignon 2.8/5

As for the Filet Mignon, while the 'shao xing' wine jus that dressed it was flavourful, alongside thin slices of pancetta, the meat seemed to lack seasoning to bring out its flavours fully.

For desserts, the White Peach Terrine with Red Muscat Granite and Aloe Vera (Wisteria) was refreshing, especially due to the delectable bite of the jelly terrine. The Apple Tart Tatin with vanilla crème anglaise (Lavender) was stunning, striking a good balance between sweetness and acidity. However, a slight, distinct bitterness came through from the apple itself, and I'm not sure if that was intentional.

For dining at The Havens, a minimum of 4 guests is required, up to a maximum of 10 guests. Floral arrangement is upon request.

I recently had the privilege of experiencing Liu Fu Si Fang Cai (劉府私房菜), a sought-after private dining in Singapore. It stands as a revered bastion of private dining dedicated to the art of Chinese cuisine. Though open to reservations monthly, it maintains an air of exclusivity, requiring a dash of luck to secure a coveted table.

The dining symphony commenced with the elegant overture of Black Garlic Chicken Soup. Served bubbling in a pot, the chicken, infused with the subtle sweetness of black garlic, bestowed an enriched depth to the flavoursome broth. The harmony between the robust chicken essence and the nuanced black garlic note was a delightful prelude to the feast ahead.

Har Cheong Pork Belly 4.2/5

Setting the stage for innovative culinary twists, Liu Fu Si Fang Cai showcased their rendition of Har Cheong Pork Belly. While Har Cheong Chicken is a familiar delicacy, the concept of Har Cheong Pork Belly was a revelation. Delicately fried to a golden crisp, the pork belly delivered a burst of flavour, harmoniously merging the beloved shrimp paste essence with the tender meat.

Steamed Soon Hock with 2 types of Chye Poh 4/5

The spotlight then turned to the Steamed Soon Hock with 2 types of Chye Poh. This perfectly executed dish demonstrated the synergy between delicate cooking techniques and thoughtfully paired ingredients. The marriage of the Soon Hock's tender flesh with the distinct sweetness of the Chye Poh created a symphony of flavours that tantalized the palate.

An unexpected delight arrived in the form of Mustard Greens with Sio Bak, cooked ingeniously in Assam. This unique concoction showcased the culinary prowess of Liu Fu Si Fang Cai. The infusion of Assam into the dish balanced the inherent bitterness of the mustard greens, resulting in a harmonious blend of flavours that delighted even the most discerning palates.

The highly anticipated signature, Fried Hokkien Mee, took the stage next. Infused with the rich essence of prawn stock, the dish was a homage to traditional flavours. While not claiming the crown of the best I've tasted, it was undoubtedly a plate of gratifying delight.

The feast took a delightful twist with the indulgence of Black Pepper Crab. Delving into the crab's succulent flesh, coated in a piquant black pepper sauce, was an experience that ignited the senses. The sauce's fiery notes skillfully complemented the crab's natural sweetness, making it a finger-licking, unforgettable endeavour.

As the culinary journey drew to a close, the Crystal Tang Yuan took centre stage, offering a sweet denouement to the gastronomic masterpiece. Bursting with two distinct flavours, this dessert captured the essence of Liu Fu Si Fang Cai's innovative approach to traditional dishes, leaving a lingering and memorable impression.

In conclusion, Liu Fu Si Fang Cai stands as a testament to the heritage and classic dishes that flourish within the realm of private dining. Each dish's harmonious symphony of flavours and techniques showcases the chef's dedication to elevating the dining experience. While the reservation process may demand a dash of luck, the resulting culinary journey is undoubtedly worth the anticipation. Wang Dae Bak Grill @ Holland Piazza - South Korean Barbecue in a Modernized Classic Setting

Wang Dae Bak Grill at Holland Piazza is the brand's 3rd outlet, offering authentic South Korean barbecue in a modernised classic setting. The menu features fresh gourmet varieties such as US Prime Sirloin, Marinated Prime Ribs and Flower Pork Belly, including sets that cater to different dining group sizes.

The banchan here was really delicious! Besides the kimchi, I most enjoyed the braised egg and sauteed brinjal. They are refillable too.

For 2 or 3 pax, Buddy Set ($68) would be ideal if you intend to enjoy your meats with other dishes. The set has Marinated Prime Ribs, Duroc Pork Belly/Collar, Flower Pork Belly, and Marinated Chicken. The Pork Collar had a balanced marbling, lending the meat a good amount of flavour as the fats rendered off slowly on the sizzling grill.

Both the chicken and prime ribs meat were marinated, but the marination did the chicken more justice than the latter. The chicken thighs were succulent, with flavours elevated by the marination. On the other hand, the tender beef did not deliver the anticipated beefy notes of a prime rib.

Spicy Seafood Tofu Stew 4/5

Other signature WDB dishes include this Spicy Seafood Tofu Stew with soft wobbly tofu. It was robust and heady with a depth of crustacean flavour from the fresh prawns and clams.

Kimchi Cheese Rolls 2.5/5

Kimchi and cheese combination sounds enticing, but the execution fell short with the Kimchi Cheese Rolls, which turned out to be a tad greasy. The kimchi and the cheese melded into one saltish tang. A kimchi cheese mandu or dumpling may have been a better alternative.

Kimchi Fried Rice with Cheese 4/5

Kimchi Fried Rice with Cheese was hearty and flavoursome, with the kimchi bits evenly tossed together with the pearly rice grains. The cheese was absent though. The charred bits formed at the base of the fried rice imparted a tantalising smokey nuance to the overall taste.
