We commenced the dinner with some delightful starters, beginning with Pan-fried Foie Gras ($38) that is paired with caviar and truffle. It is served in a crispy beancurd skin tart. Chef Pak incorporated modern ingredients while retaining longstanding heritage of the dish, creating new and different flavours or textures for the palate

Smoky Lishan Oolong Mala Quail Eggs 4.2/5

The Smoky Lishan Oolong Mala Quail Eggs ($16) reminded me of the Chinese Tea Eggs. It is given a modern take by marinating the quail eggs in mala sauce and smoked in premium Lishan oolong tea leaves, resulting in a smoky, earthy and savoury taste profile.

The Alaska King Crab Somen ($22) is a refreshing starter served chill. A hot and sour consomme made from preserved Szechuan vegetables is poured at tableside, giving the silky smooth somen a subtle hint of tangy for the palate.

An indispensable part of Cantonese dining table is the culture of soup drinking. At Madame Fan, Chef Pak's Kampong Chicken Soup ($88) is savoured over two courses.

The first course is a Chicken Soup whereby the essence of the kampong chicken is drawn from simmering over low heat for four hours, served with cordyceps flower and bamboo pith. Diners can also opt to add on premium fish maw at a supplement of $28 per person. The second course is Hand-shredded Chicken in Aged Vinegar Sauce. The chicken is handed shredded and refreshingly dressed in vinegar ginger sauce.

Braised Cognac Soon Hock

The Braised Cognac Soon Hock (Seasonal Price), doused in cognac is delicately braised to retain its natural juices, paired with Chinese yam, baby cabbage in a rich broth with flavours of shellfish, lobster, crab and clam.

Slow Cooked Wagyu Oxtail

A beautiful dish that is slow cooked to tender is the Wagyu Oxtail ($38). The cooking breaks down the collagen-rich tissues, resulting in a thick, velvety, and almost sticky consistency. It gives the dish a luxurious mouthfeel to the dish in a cinnamon and star anise sauce.

Boston  Lobster with Winter Melon 'Noodles'

The Boston Lobster with Winter Melon 'Noodles' is a creative dish replacing the usual noodle with shredded winter melon. The winter melon noodles are simmered in a spicy pickled pepper to give it a good balance of tangy and sour to the refreshing broth. It is paired with sweet Boston lobster meat for a luxurious indulgence.

Gui Zhou Maotai Ice Cream

Last but not least, we had the Gui Zhou Maotai Ice Cream for dessert, paired with cinnamon chocolate stick and ginseng crumbs. The infuse of alcohol gives the ice cream a sweet, fruity finish with a lovely aroma.

Uni Gallery by OosterBay welcomes a new addition to the culinary team, Chef Jayden who has over a decade of experience in Japanese restaurants, particularly in the art of binchotan grilling. With him joining the team, alongside Sashimi Master Chef Chua, they have put together a new 7-Course Omakase Menu ($88) and expand the menu to offer binchotan grilled dishes.

The 7-Course Omakase Menu kickstarted with the huge and plump Hyogo Oyster Shot. It is rich, briny, and slightly sweet with a creamy finish.

Next is the Sashimi Platter which comprising Chutoro, Kinmedai, Kampachi and Hotaru-Ika. While you only get a slice each, they are fresh and thickly cut for a satisfying enjoyment.

With the expanded menu to include binchotan grilled dishes, the omakase also comes with binchotan item such as the Grill Scallop in Shell, which beautifully showcase the scallop's sweetness.

Next is the rich and melt in the mouth pan-seared Foie Gras with Asparagus. Half way to the 7-course menu, we already had oyster, sashimi, scallop and foie gras. With all these luxurious ingredients, I think it is already value for money.

Another item from the binchotan is the Grilled Tiger Prawn with Miso Sauce. The firm and bouncy tiger prawn is perfectly grilled infushed with the smokey aroma.

Spectacularly presented in an ice block is the Uni Ice Somen with uni in a dashi broth. It is very refreshing, zested upwith the addition of yuzu and lime.

The Sazae Tsubuyaki (Japanese Sea Shell) made an impressive entry by grilling the savoury delicacy in its own shell in dashi stock and shimeji mushrooms. offering a symphony of rich and complex flavours. Separately a pot of dashi stock is served at the side which you can drink like a soup.

Wrapping up the meal, we had the light and refreshing Chilled White Fungus with Kumquat and Peach Resin. A fitting dessert to wash down the richly flavoured Chinese New Year dishes and double up as a palate cleanser.

Claudine @ Dempsey Hill - Sister Restaurant Of Three-Starred Michelin Restaurant Odette By Chef Julien Royer

With a few foodie friends, we make a reservation at Claudine at Dempsey Hill, the sister restaurant of Odette. It is another concept by Chef Julien Royer. The restaurant, located inside an old chapel building where the former White Rabbit restaurant was, has been transformed into a beautiful French brasserie.

Charred Leeks 4/5

We started with the Charred Leeks ($22). I have never eaten leeks served in 'gribiche' dressing with cornichon and chives. While it looks like a pool of mess, it was a tasty finish that allowed me to appreciate the charred leeks.

My friend, who loves her terrine, insisted on ordering the Nougat De Foie Gras ($38), which was an excellent choice. Best to spread it on the bread to enjoy the creaminess of the goose liver. It even comes with almond, cranberry and apricot to cut that richness.

The Herring & Potato Salad ($28) topped with frisee surprised me for its simplicity, yet the various ingredients combine to make it a delicious dish. I adore the pairing of herring and potato, which is a first for me too. Herring can be quite sourish, so the starchy potato kind of balanced it.

The Vol-Au-Vent ($58) looks somewhat like a volcano to me in its form. The towering puff pastry is filled with sweetbread, morel and chicken quenelle. The creamy mushroom jus at the base is like the after-eruption volcano lava that has flowed to the bottom of the volcano.

Chou Farci 4.2/5

It is another eye-opener for me at Claudine in the Chou Farci ($98). It didn't come across me that the French also use cabbage to wrap their food in their cooking. I thought only the Chinese did it. Cutting through the huge cabbage dome reveals luxe fillings of Gascon bacon, foie gras, prune etc. It is a richly flavoured and hearty dish that requires approximately 30 minutes of preparation time.

Claudine Bouillabaisse 4.2/5

The Claudine Bouillabaisse ($198) is probably the most expensive item on the menu. The classic French fish soup with seafood is good for sharing. It consists of deep-sea prawns (carabineros), scallops, john dory fish, razor clams and mussels. The seafood is accompanied by a plate of saffron rouille sauce and croutons to soak up the delicious soup. I enjoyed the dish, but it hurt my wallet.

While I heard mixed reviews of the restaurant, my friends and I enjoyed the food at Claudine. However, the dining experience could be better. Unfortunately, the experience was spoilt by the waiting staff reminding us numerous times throughout the dinner that we had to finish by a specific time for the second seating.

Wan Hao Chinese Restaurant @ Singapore Marriott Tang Plaza Hotel - The Return Of Sri Lankan Crabs And New Menu Launch

Wan Hao Chinese Restaurant at Singapore Marriott Tang Plaza Hotel is currently running a Sri Lankan Crab Special from 1 September to 31 October 2022. From exquisite dim sums to a la carte specialities, the Sri Lankan Crab menu allows you to savour the crustacean's plump and sweet meat through 11 different dishes.

Deep-Fried Salted Egg Crab Bun 4/5

For the dim sums, to retain the delicate sweet flavour and texture of the Sri Lankan Crabs meat, the latter is steamed whole before the crab meat is removed from its shell and churned into dainty delights. Drawing inspirations from the well-loved Custard Lava Bun, Deep-Fried Salted Egg Crab Bun ($3.80) is a delicious fried version with a savoury salted egg crab filling encased within a delightfully airy and fluffy dough. But I do find the salted egg slightly overwhelms the crab meat.

Four Happiness Dumpling 4/5

Four Happiness Dumpling ($3.80), an elevated prawn dumpling studded with Crab Meat, Crab Roe, Ham and Celery, will light up your face with its juicy filling, with extra texture and umami-ness lent by the 4 colourful ingredients. Deep-Fried Spring Roll with Crab Meat & Glass Noodle ($3.80) is another dim sum special that is tasty as a spring roll but doesn't do much justice to the crab meat.

Salted Egg with Chicken Floss Crab 4.5/5

For a la carte dishes, Wan Hao's rendition of Salted Egg Crab - Salted Egg with Chicken Floss Crab ($68/ 500- 600gm portion) is a hot favourite of all times. This crab is given a coat using a combination of curry powder, deep-fried garlic, chicken floss and salted egg. This drier method of presenting the crab gives the meat a better chance to shine - the savoury dried coat crumbs became a flavour enhancer, accentuating the sweetness of the crab meat while being finger-licking good on its own.

Braised Beancurd with Crab Meat & Crab Roe 4.8/5

Braised Beancurd with Crab Meat & Crab Roe ($48/person), brimming with fresh chunky crab meat and crab roe, was a star of the evening that showcases the fine qualities of the crustacean. The key probably lies with the flavourful superior stock that was used to form the base of this dish. It did a perfect job in bringing the 3 delicate flavoured ingredients together.

Braised Bird’s Nest with Crab Claw & Watercress Superior Stock 4/5

Braised Bird’s Nest with Crab Claw & Watercress Superior Stock ($68/pax) is indeed a luxurious dish. I appreciate how the emerald green of the watercress reflects the elegance of this dish. Similar to the dish above, the superior stock used is the key to imparting the base flavours and harmonising the ingredients.

Wok-Fried Cod Fillet with Foie Gras 3/5

Other dishes to include in your visit to Wan Hao are some of its newly launched items. Wok-Fried Cod Fillet with Foie Gras in Chef's Secret Sauce ($48). The flavours were good, but the combination of foie gras and wok-fried cod made it a fairly rich dish. Overall I find it a tad dry, given that the cod morsels were almost crunchy and the noodle base was fried too.

Roasted Spanish Suckling Pig wrapped with Wok-fried Glutinous Rice 3/5

No special occasion is needed to devour the Roasted Spanish Suckling Pig wrapped with Wok-fried Glutinous Rice and Chinese Sausage ($508), so long advance reservation is made. While the expected caramelised crispy crackle at the skin was achieved, the collagenous layer underneath the skin was slightly too chewy for my liking.

Brandy Baked Alaska with Ice Cream 4/5

Ice cream dessert is not commonly found in Chinese restaurants. Hence Wan Hao decided to subvert that expectation and introduced its very own Brandy Baked Alaska with Ice Cream ($15++), flambé with Brandy right at your table. It sure brings a lot of excitement to the table.
