Having visited Butcher's Block before, my return was met with heightened anticipation, eager to explore the new culinary direction spearheaded by Chef Jordan Keao. Hailing from Hawaii, Chef Jordan brings his rich heritage to the forefront, seamlessly blending the art of butchery with the mastery of contemporary wood-fire cooking. The result is a symphony of flavours that spotlight fine seasonal ingredients in all their intrinsic fullness.

Embarking on the IMUA tasting menu, a gastronomic adventure awaited. The evening commenced with a trio of snacks that set the stage for what would come.

The Scallop is a delicately crafted dish featuring a plump scallop perched atop a parsnip blini adorned with kumquat kosho, scallop roe, puffed barley, and microgreens. The marriage of flavours and textural contrast showcased Chef Jordan's finesse.

A deconstructed Pumpkin Pie rounded off the meal with marshmallow ice cream, a five-spice biscuit, roasted pumpkin puree, coconut mochi, and fresh passionfruit. It is a light and vibrant dessert that leaves a sweet imprint. Lastly, the Petit Fours of Hazelnut Chocolate Bonbon, Lilikoi Pate de Fruit, and Charcoal Macaron—adding the perfect final notes to a memorable dining experience.

Chef Jordan Keao's culinary finesse, coupled with Butcher's Block's commitment to quality, resulted in an evening of gastronomic excellence, a testament to the evolving culinary landscape at this esteemed establishment.

YAO YAO (姚姚酸菜鱼) @ Vivocity - China Suan Cai Yu Restaurant’s Debut in Singapore with Duo Flavour Pots and Roast Duck

YAO YAO 姚姚酸菜鱼 has recently established its flagship outlet in Vivocity, joining the expanding array of Chinese brands dedicated to fish-based dishes. Having earned the title "Top Ten Brands of Sauerkraut Fish" from 2019 to 2022 in China, it boasts an impressive network of 60 outlets nationwide.

YAO YAO features California White Seabass in their signature Suan Cai Yu/Sauerkraut Fish. The menu offers various portion sizes and duo-pots that provide diners the choice to pair the Suan Cai Yu with one of three dishes: Sichuan Poached Fish, Tomato Fish, and Typhoon Shelter Shrimp with Fries.

Sour & Spicy Organic White Fungus 4/5

I started with appetisers; it was my first time trying white fungus prepared this way. YAO YAO's Sour & Spicy Organic White Fungus ($9) is served chilled and crunchy, with its shell-shaped pieces picking up the appetising sauce well.

Chilled Lettuce with Sesame Sauce 3.8/5

Thoughtfully presented, the Chilled Lettuce with Sesame Sauce ($10) has lettuce leaves neatly bundled alongside a small pitcher of sesame sauce. I appreciated the convenience of enjoying this dish and found it both crunchy and refreshing, albeit it was much more on the pricey side.

Garlic and Sichuan Pepper Duck Leg 3.8/5

Fried in a generous portion of garlic and Sichuan pepper, each piece of the Garlic and Sichuan Pepper Duck Leg carried excellent heat and crisp bits, but it's worth noting that these are meant to be a lot more bony than meaty.

The Sichuan Spicy Poached Chicken ($12) presented a somewhat monotonous flavour profile, and the meat texture was a bit stringy.

Sauerkraut Fish & Typhoon Shelter Shrimp with Fries 3/5

We got to try one of the duo flavour pots, the Sauerkraut Fish & Typhoon Shelter Shrimp with Fries ($53), which feeds 2 pax. In the sauerkraut fish-half, you will find sliced California White Seabass with fermented sauerkraut in a slow-cooked broth.

While the sauerkraut was decent, the broth was more muted and lacked depth. It leaned towards being mostly sour, and we were not quite a fan of how thinly sliced the fish were. I definitely wished the fish were fresher too.

Although we appreciated the punchy seasoning on the Typhoon Shelter Shrimp and crinkle-cut fries, the prawns were not the freshest. A more significant portion would also have been more justifying of the price tag.

XXL Crispy You Tiao 3/5

While the XXL Crispy You Tiao ($5) looked impressive in size, its taste was less memorable. Despite the recommendation to dip these pieces in the sauerkraut broth, the experience was less enjoyable due to the greasiness.

YAO YAO Peking Duck, Half 3.5/5

Yao Yao Peking Duck ($45 for Half) was a dish we saw many other diners order. It is served with egg crepe wraps and strips of onions, cucumber and sweet honeydew. Finish your wrap with a housemade sesame mustard dip or housemade sweet sauce.

Rainbow Cold Jelly 4/5

The Rainbow Cold Jelly ($8) served as a chilled and sweet ending to our meal. The base of housemade oolong tea-flavoured jelly is topped with many ingredients, including raisins, red beans, hawthorn bits, crushed peanuts, pearl barley and pearls. You can have it as it is or with coconut milk drizzled over. I personally found it quite sweet, but we saw many diners of younger age enjoying this.

Man Fu Yuan @ InterContinental Singapore - Showcasing Best of Irish Produces, Silver Hill Duck, John Stone Dry-Aged Beef and Hampshire Pork

Man Fu Yuan at InterContinental Singapore has partnered with the Irish Duck Company to present 'The Best of Irish Showcase.' From 1 October 1st to 15 November, three 6-course menus highlighting some of Ireland's finest produce will be offered for lunch and dinner. Irish Duck Company is the exclusive distributor that first brought the world-famous Silver Hill Duck to Asia, and thanks to them, we get to savour the 'wagyu of duck' right here in Singapore. They are now ready to introduce the exquisite John Stone Dry-Aged Beef and Hampshire Pork to Singapore. In the hands of Man Fu Yuan's Executive Chinese Chef Aaron Tan, these premium Irish meats to the table, highlighting their qualities with Cantonese traditional flavours and techniques.

Appetiser 4.5/5

Each of the 3 menus brings together all three of these finest Irish products in a single menu. We tried the Elegant Set Menu. We started with an appetiser featuring John Stone Irish Smoked Salmon Flower with wasabi aioli, Chilled Cherry Vine Tomatoes with crab meat and Chilled John Stone Dry-Aged Beef. The aged beef, infused with the aged-citrus honey soya sauce, intensified the already rich flavour, creating an incredibly meaty texture. The smoked salmon was just as delectable with its luscious texture and deep flavour. The exquisite crab meat added balance to the dish, introducing a sweet and refreshing note that harmonised the flavours beautifully.

Soup 4/5

The Soup course was a Braised Golden Bird's Nest with golden pumpkin superior stock. The soup had an incredible depth of flavour with a slight creamy consistency.

Wok-fried John Stone Irish Lamb Loin 3/5

The 3rd course is Hong Kong Kailan with Wok-fried John Stone Irish Lamb Loin with Sarawak black pepper sauce. The lamb loin was succulent, tender, and quite delicate on the level of gaminess. The black pepper sauce, however, was too much for me.

Braised Irish Hampshire Pork Belly 5/5

Next was Braised Irish Hampshire Pork Belly with South African 5-head Abalone. A very considered dish - a sumptuous pork belly with an ideal balance between meat and fat, resulting in an unctuous delight. To complement this decadent meat, a 5-head abalone was paired with the pork belly, tender and infused with the rich flavours of the braising sauce.

XO Chinese La Mian with Rock Lobster, Silver Hill Irish Duck 4/5

The last main was a much-anticipated dish - XO Chinese La Mian with Rock Lobster and Silver Hill Irish Duck in XO sauce. Like the previous course, pairing relatively fatty meat with lean seafood created a harmonious balance between two exquisite ingredients, enhancing the other's qualities. The XO sauce didn't work for me.

Oven-baked Mango Pudding 4/5

The dessert is Oven-baked Mango Pudding, which is extra comforting. It is served warm in the traditional way.

The Elegant Set Menu, ideal for 3 to 5 persons, is priced at $228 per person. All set menus include an optional wine-pairing option at $68++ per person.

Next, the Baked Stuffed Crab Shell takes centre stage, paying homage to Hong Kong's fusion of Eastern and Western cuisines. Handpicked Sri Lankan crab meat is combined with onions and shiitake mushrooms in a cream sauce reminiscent of bechamel. The mixture is then baked in a crab shell to golden perfection. Accompanying this delicacy is the succulent Roasted Silver Hill Irish Duck, complemented by sweet and juicy fresh mango and a tangy homemade plum sauce.

The dace fish flesh is expertly removed and blended into a fish paste, which is then combined with orange peel for a citrus note and finely diced liver sausage for added depth. The fish paste is stuffed back into the dace fish and pan-fried to crispy perfection.

Morsels at Dempsey Hill celebrates its 10th anniversary with a renewed concept. Moving away from its small plates sharing menu concept, Morsels 2.0 offers a new fixed course tasting menu concept to showcase the season's best produces with Chef Petrina's fermented sauces.

We had the 9-course Full Tasting Menu ($188++), starting with four snack items. Interestingly, Chef Petrina incorporates East and West influences into each snack. We kickstarted with the fresh Season Oyster (French + Japanese) paired with citron green tea kombucha vinaigrette and olive gel, brightening the taste profile of the shellfish.

Sanchoku Corned Beef Cream 4/5

Next is the Sanchoku Corned Beef Cream (British + Indian) that is presented in the form of a Pani Puri. The blended Sanchoku beef d-rump is mixed with crunchy cornichon stuffed inside a crispy pani puri shell. Bite into it and get an explosion of flavours.

Zucchini Pancake 4/5

The bite-size Zucchini Pancake (Korean + Spanish) coated in egg batter is pan-fried till golden brown and topped with ricotta cheese, red bell pepper and boquerones. I felt the soul of the dish come from the marinated anchovy fish, accentuating the whole dish.

Mushroom Garum Broth 3.8/5

Lastly is the Mushroom Garum Broth (Chinese + Indian), packed with the essence from the smoked willow tree mushrooms and blaze mushrooms, topped with burnt banana leaf oil. It even comes with a crispy light puffed pastry twist dusted with oregano, thyme and onion powder.

After the snacks, we had the bread course, in which a warm and fluffy Brioche is served together with seaweed herb butter.

Cured Stolt Farm Turbot Carpaccio 4.2/5

We moved on to the entree, starting with the Cured Stolt Farm Turbot Carpaccio. The sustainably sourced turbot is aged for 3-5 days, then thinly sliced and dressed in smoked zucchini dashi to enjoy the turbot. It is paired with crunchy ice plant, cucumber and crispy rice puff for texture, enhanced with 8 Gems caviar for popping brininess.

Toriyama A4 Japanese Wagyu Eye Round Tataki 4.2/5

Next is the Toriyama A4 Japanese Wagyu Eye Round Tataki paired with a spring salad. The wagyu eye round is cured overnight in Morsels's two years old corn miso and finished in the hibachi for a pleasant smokiness while retaining the tender and juiciness. Round up the enjoyment with the thick creamy sabayon and cured eye yolk.

Chinese Celery Tortellini 4/5

Another beautiful dish is the Chinese Celery Tortellini. The delectable texture of the pasta dough is stuffed with wild mushrooms and potato duxelles, served in a vibrant green pea sauce and preserved lemon foam. Lastly, the morsel is topped with charred fermented asparagus for texture.

Jeju Abalone & Sakura Chicken 3/5

The Jeju Abalone & Sakura Chicken is a rice dish. The bouncy abalone and tender chicken rested on a bed of multigrain risotto flavoured with Morsels's four year old doenjiang. I enjoyed the risotto texture comprising Koshihikari Japanese rice, Calrose Californian short grain rice, Cambodian brown rice, and barley. It felt like travelling to Jeju island with the beetroot stock surrounding the dish, poured at the tableside. However, there was a lack of sharpness in the flavour, and it was too earthy for my preference.

Fjord Trout 4/5

Still from the ocean, we had the Fjord Trout that is lightly cured and smoked, complemented by a delicious soy dashi stock, rhubarb compote and edamame cereal. Though cooked using Western techniques, each bite has flavours resembling our local fish soup.

Primrose Farm Pork Tenderloin 4.2/5

I have already lost count of the number of dishes I had, and we are just moving to the mains. For mains, there is a choice of Primrose Farm Pork Tenderloin or Rougie Magret Duck. The sous vide Primrose Farm Pork Tenderloin was tender and succulent, enlivened by the accompanying kumquat red pepper kosho. The other components on the plate are potato pave and grilled baby gem.

The other main is the Rougie Margret Duck presented in Western and Asian styles. The grilled duck breast grilled and glazed with ume bbq sauce is tender and comes with a hint of smokiness and sweetness. For the Asian style, it is served as a Japanese duck tsukune.

After all the savoury dishes, we had a cup of refreshing beverage comprising a mixture of lemongrass, pear juice and yuzu juice as a palate cleanser.

Moving to desserts, we started with the Rice Whipped Panna Cotta, which is topped with sago and diced apple. The dessert, served chilled with shiso granita and apple lemon balm kombucha, provided the acidity for a light and refreshing finish.

Morsels's version of Any Butter comes in the form of a polenta cake crowned with Amalfi lemon cream, sitting atop a bed of sweet red bean paste, paired with rosemary namelaka and kinako sable. It is richer in flavour than the first dessert, but the combination worked beautifully.
