Tiffin Room @ Raffles Hotel Singapore - Unveils A Refreshed Menu With An Expanded Selection Of North Indian Dishes

Tiffin Room at Raffles Hotel Singapore has recently unveiled a refreshed menu with an expanded selection of North Indian dishes put together by award-winning Chef de Cuisine Kuldeep Negi. Helming Tiffin Room's kitchen for over a decade, Chef Kuldeep continues to draw inspiration from the royal culinary heritage of the Maharajas and his travels through various regions of North India. From the new menu, you get to enjoy a diverse range of chaats, appetisers and mains that identify with the warm and rich flavours of Tiffin Room.

You can opt for the customisable Mera Dabba (my box in Hindhi) Experience, an elevated set meal that comprises a selection of appetisers and main courses presented in an iconic four-tiered custom-made copper tiffin box. The set meal is complemented with delicately flavoured rice, tandoori bread, chutneys and pickles.

We started with a hearty street snack Aloo Dal Tikki Chaat. Dressed in a mouth-watering blend of mint chutney, yoghurt, tamarind and spices, these crispy potato and yellow lentil patties burst with piquant and zesty flavours.

From the non-vegetarian appetisers, we tried Achari Macchi Kebab featuring uniformly moist pieces of spiced tandoori-grilled grouper fillets laced with a hint of smokey flavour. On the other hand, the Murgh Jaitun Seekh is a very spiced-forward grilled minced chicken mixture of green olives, cheddar cheese, saffron, and spices.

Gucchi Methi Mattar Malai 5/5

For the mains, both the vegetarian dishes were superb, especially the lesser-known Gucchi Methi Mattar Malai - a creamy and cheesy morel mushroom curry accented with sharp flavours of fenugreek leaves and a blend of spices. Traditionally, white button mushrooms are used, but I thought using these morel mushrooms was brilliant. The creamy curry clings to each of the honeycomb caps of the mushroom, akin to how spiral pasta binds with the sauce. Hence you will get the full flavours of the curry each time you bite into the mushroom.

The other vegetarian main is one of Mera Dabba staples - Aloo Gobhi, a classic cauliflower and potato delight. Every floret and potato chunk was tender and soft, fully flavoured by a blended yoghurt, garlic, and masala onion gravy.

The other two mains were Kadhai Prawns and Balti Gosht. The prawn curry was bright and robust with coriander seeds and onion-tomato masala. There were slices of bell peppers in the curry, which also punctuated the curry with some fruity sweetness. The latter was a curry of lamb leg cubes flavoured with brown onion, tomato, and spices. Again, the curry was good, but the lamb leg cubes were a tad dry.

Malpua with Rabri 4/5

For desserts, we had the Malpua with Rabri, a pancake originating from India. It had a dense and enjoyable chewy texture topped with condensed milk and mixed nuts for an added crunch. Best to go with a cup of masala tea.

Kulfi Falooda

The other dessert is interesting - Kulfi Falooda, featuring a homemade cardamon-infused Indian ice cream assembled with vermicelli noodles, rose syrup and mixed nuts. Eating the chilled vermicelli noodles was reminiscent of having a bowl of refreshing shredded grass jelly dessert. The nuts soaked in the mixture gave a contrasting chewy texture to the dessert. A rather odd combination, but it works!

Ju Hua Tai (菊花台) @ Duxton Hill - Oriental Themed Cocktail With Asian Inspired Bar Snacks & Mains

Ju Hua Tai (菊花台) is an oriental-themed cocktail bar that has recently opened its doors at Duxton Hill. Alongside its artisanal tippers are Asian-inspired bar snacks and mains to complete the experience.

Chrysanthemum's Secret 4.5/5

You may find its list of cocktails as alluring as I did. Ju Hua Tai's signature cocktail, Chrysanthemum's Secret ($22), indeed is a must-try as raved by many. It is a concoction of Chrysanthemum-infused 135 East Hyogo Gin, Lychee, Raspberry and Elderflower Liqueur. The cocktail's distinctive earthy Chrysanthemum scent and herbaceous notes went well with the fruity sweetness of the Lychee. The exquisite handmade Chrysanthemum jelly was aesthetically pleasing to the eyes and delicious.

We also tried Osmanthus Concubine ($23) concocted with Brasslion Dry Gin, Goji Berries and Osmanthus Cordial. It will have stood out more if the Osmanthus notes are stronger.

Criss Cut Fries with Thai Curry Crab Dip 3.8/5

The crunchy Szechuan Cucumber ($10) was moreish with piquant Szechuan sauce. The concept of Criss Cut Fries with Thai Curry Crab Dip ($16) is akin to that of Fried Mantou with Chilli Crab sauce. The rich and creamy Thai Curry Crab dip was punchy with herbs and spices, and the addition of the crab meat gave the dip a meaty texture. Plain fried mantou would have been a better medium to complement the dip as the combination of both the saltish fries and rich sauce proved to be rather heavy.

Mala Chicken Popcorn ($15) is inbetween a Szechuan Laziji and Popcorn chicken. It has the flavours of the former but a relatively meatier texture.

Pork Belly Bao 3/5 and Scallop Bao 3.5/5

On the menu, there is also a selection of Baos. We tried Pork Belly Bao ($8.80) with stewed pork belly in a fried bun and a Scallop Bao ($9.80) with a tempura-style scallop in a steamed charcoal bun. Overall, we find the type of bun too skinny, which works against the Pork Belly Bao as the bun becomes too greasy when deep-fried. The Scallop Bao was way more enjoyable. However, a smaller and fluffier bun could have made it look fuller and a lot more enticing.

Cauliflower Steak 4/5

For mains, the Octopus Leg with Thai Vinaigrette was disappointing with a squashy texture which was not palatable. On the other hand, the Cauliflower Steak ($23) stood out with an evenly grilled exterior that lent a layer smoky flavour that elusively enhanced the flavour of the sweet grilled Cauliflower. To further elevate it, it is topped with punchy ingredients - pickled radish, pomegranate, yuzu dressing.

Path Restaurant @ Marina Bay Financial Centre - Paving The Path To A Vivid Modern Asian Dining Experience

Path Restaurant at Marina Bay Financial Centre is the newest and exciting opening in the F&B scene. The modern Asian restaurant is Chef Marvas Ng's inaugural restaurant in partnership with 1855 F&B. The food at Path is a multi-layered experience. Each dish is a seamless composition of French fine-dining techniques and presentation, using comforting East Asian flavours.

Our dinner at Path started with the light and refreshing Wakamatsu Strait Yellowtail ($36). The clean tasting sashimi is brightened by the pickled Chinese artichoke and zucchinis, whetting the appetite for the next course.

Hand-Dived Hokkaido Scallop 4/5

Next is the Hand-Dived Hokkaido Scallop ($58) served and cooked at the tableside. The sashimi-graded scallops from Hokkaido are seared on a hot stone, topped with sakura ebi and cooked with a seaweed truffle sauce. The scallop was plump and sweet. The touch of theatrical completes the whole experience. It is paired with Pickled Kombu Pumpkin Salad, refreshing up the palate.

Premium Kuhlbarra Fish Maw 4.5/5

The Premium Kuhlbarra Fish Maw ($35) is a new culinary experience. It is my first time eating fish maw this way. It showcases the chef's philosophy incorporating the premium Asian ingredients in a collagen-rich Douxi caviar sauce with fresh greens. It is a dish packed with complex and rich flavours, finished with delightful textural finishing.

"Suan Ni" Hong Man 4/5

It is my first time having the eel with the spinal cord intact, and more even how it is cooked in a braising sauce that consists of garlic and Dou Ban Jiang. The "Suan Ni" Hong Man ($24) reminds me of the traditional Chinese dish, Suan Ni Bai Rou boosting with garlic aroma.

French Organic Cauliflower 4.2/5

This is probably the best cauliflower steak I have eaten. The French Organic Cauliflower ($24) is braised in vegetable stock till soft and tender and then deep-fried for exterior crispiness. A layer of mayonnaise is coated around the cauliflower and then topped with house-blend furikake and buckwheat seasoning for that extra lift in flavouring.

Crispy Japanese Amadai 4.5/5

The Crispy Japanese Amadai ($75) is a beautiful dish paired with black bean beurre blanc. It is the same sauce used for the fish maw dish. However, I find the sauce complements the fish better. In addition, the crispy scales on the skin provided that extra textural enjoyment.

Signature Butter-Roasted Herb-Brined French Poulet $72

A highlight at Path is the Signature Butter-Roasted Herb-Brined French Poulet ($72). Before roasting in the oven, the chicken is brined with Chinese herbs and then coated with 800 to 1000gm of butter. This result is a beautiful and tender chicken infused with butter and herbs. To appreciate the chicken further, you can have it with the butter chicken jus sauce and scallion salsa.

Daikon Sword Leaf Lettuce Roll

Chef Marvas's mum would always serve salad with roasted chicken as a child. So in creating this memory, Chef Marvas introduces the Daikon Sword Leaf Lettuce Roll to go with the Signature Butter-Roasted Herb-Brined French Poulet. The sharp and refreshing salad helps to cut the richness.

If you need your carbs, I would highly recommend the Signature Wild Forest Mushroom Donabe with Premium Japanese Rice ($38). Each mouthful of the fragrant rice is brimming with an abundance of flavours and textures from the oats, waxed meat, porcini mushrooms and vegetables.

Wrapping up our dinner, we have two desserts - Whiskey Bombe Alaska ($28) and French Canele ($18 for 3pc). Go for the whiskey ice cream served with Kirsch marmalade and meringue for something sweet and light. However, what intrigues me is the french canele made with Chinese Bai Jiu (white wine). Baked to perfection, it comes with a crusty exterior, soft and fluffy interior with a tad of the fragrant bai jiu.

Path restaurant is definitely an exciting addition to the dining scene offering modern Asian cuisine. Chef Marvas brings a precise balance between French finesse and the East Asian ingredients that feel and taste sumptuous yet possess a reassuring familiarity that warms the heart.

La Belle Epoque @ Boat Quay - New European Restaurant Along The Singapore River

La Belle Epoque (which means 'the golden age' in French) is a European restaurant and bar concept that has recently opened its doors at Boat Quay. It offers contemporary European cuisine using fresh ingredients seasoned with natural herbs. Most of the herbs are sourced from Head Chef Firdauz's very own herb garden.

Oyster & Iberico 4/5

Starting off the evening was Oyster & Iberico ($26), an interesting combination of fresh oyster and crispy iberico ham, tomato salsa and Avruga caviar. Other than the delightful crunch lent by the crispy iberico ham, I love how the different elements within the tiny shell played out when I consumed it as a whole. The crispy iberico ham and caviar seasoned the fresh oyster with their savoury notes, while the sweet and acidic tomato salsa balanced the overall flavours.

Next, we had Hummus Taco ($10). The hummus is made with smoked chickpea. The elusive smoky accent of the hummus made it even more moreish and delicious. However, it might be better to serve the corn taco shell as a side as it turned soggy after a while.

Cauliflower Steak 2.5/5

The Cauliflower Steak ($12) is a vegetarian-friendly dish featuring a smoked and cured cauliflower with vegetable butter herbs, served with purple sweet potato. Unlike the hummus taco, smoking the ingredients didn't work in the dish. The presence of that smokey flavour was somewhat overwhelming and got unpleasant after a while. The cauliflower was not very well cooked through either.

Smoked Pork Belly 4/5

We had two meat dishes, of which I would highly recommend the Smoked Pork Belly ($16) marinated with spices. It is served with crispy pork crackers, grilled peach salad and pork veloute. The taste of the pork cracker needs to be improved for sure, but otherwise, the pork belly itself was scrumptious. Instead of the usual apple sauce, the chef used the sweetness of grilled peach to complement the meat.

However, the Beef Short Ribs ($28) was rather disappointing. Marinated with local spices and sous vide for 48 hours, the meat was relatively dry.

The desserts were good. We had Lemon Tart ($10), Tiramisu ($10) and Guerre Stellari ($10). The Guerre Stellari was my favourite. Encased within dark chocolate crust was rum chocolate mousse, and it was a perfect marriage with the tart raspberry sorbet.

Binary @ Palais Renaissance - New Gastrobar Featuring Asian And Western Cuisines

Newly opened at Palais Renaissance is Binary, a gastrobar that offers both Asian and Western cuisines complemented by a remarkable selection of 60 wine labels and cocktails. The menu allows guests to choose from two culinary approaches or enjoy both styles on the same plate.

Home-made Kubaneh Bread 4.5/5

A crowd favourite with almost every diners that I know that has visited the gastrobar is the Home-made Kubaneh Bread ($14) served with garlic butter and kombu butter. The Jewish Yemeni pull-apart bread is so soft and fluffy that is addictive so good with the butter pairing.

Tomato Bruschetta 3/5

The other bread item on the menu is the Tomato Bruschetta ($14) served with fresh tomato concasse and sour plum infused tomatoes. Tomato is served two ways incorporating both Asian and Western flavours. It is enjoyable but not something extraordinary.

Deep-fried Burrata 

It is my first time having a Deep-fried Burrata ($18). The whole burrata is coated in panko and deep-fried. It is paired with pesto alla genovese. It may be an interesting idea, but I didn't find it helps elevate the enjoyment. I still prefer the burrata in its original form.

I adore the "Nasi Lemak" style Chicken Wings ($18) served with sambal tumis. It is very flavourful and aromatic from the various spices marination. The accompanying sambal tumis is an excellent pairing for the delicious chicken wings.

A beautiful dish on the menu is the classic Spanish tapas, Gambas Al Ajillo. The bouncy and crunchy tiger prawns are sauteed in olive oil, garlic, chilli flakes, parsley, lemon juice and white wine.

The Grilled Octopus in Lao Gan Ma Chilli is a unique dish on the menu. It is an interesting combination that works for me. I have tried a local take using sambal, but Lao Gan Ma Chilli's version is even better.

Iberico Pluma 4.5/5

The Iberico Pluma ($38) is marinated with Korean Gochujang, served with fresh green coral lettuce, ssamjang sauce, chopped kimchi and sea salt. The best way to enjoy the tender meat is to eat it like a wrap, wrapping it with lettuce.

Ending the night on a sweet note, we have the Ice Jelly, Yuzu Sorbet ($16) and Warm Homemade Fudgey Brownie, Vanilla Ice Cream ($16). I prefer the Aiyu Jelly as it is sweet and refreshing.
