Yan Ting @ St. Regis Singapore - Rediscover a New Inimitable Dining Experience

YanTingMay24-22

With the reopening of Yan Ting at The St. Regis, the restaurant now boasts a refreshed modern look that exudes a lush, rich, and moody ambience. Alongside this aesthetic transformation, Yan Ting has welcomed newly appointed Executive Chinese Chef Chan Chung Shing, who masterfully pays homage to authentic Cantonese cuisine while infusing it with diverse modern flavours.

Appetiers 4.5/5

We began our meal with a quartet of appetisers featuring Yan Ting's signature dishes: Honey-glazed Barbecued Iberico Pork, Fried 'Pik Fong Tong' Radish Cake, Pan-seared Hokkaido Scallop with Caviar, and Chilled Abalone. Among these, the 'Pik Fong Tong' Radish Cake stood out with its unique execution, incorporating a distinct Hong Kong flavour into a dim sum classic.

Braised Superior Bird's Nest, Crabmeat, Pumpkin Broth 4.8/5

Following the appetisers, I savoured a bowl of Braised Superior Bird's Nest with Crabmeat and Pumpkin Broth. The naturally bland bird's nest was elevated by the sweetness of the crab meat and pumpkin, resulting in a comforting and nourishing finish.

Steamed Leopard Coral Grouper, Dough Stick, Garlic 4.2/5

The next dish was Steamed Leopard Coral Grouper with Dough Stick and Garlic. The sweet and flaky grouper flesh was beautifully infused with a garlicky aroma and paired with the crispness of dough sticks. While I'm accustomed to pairing steamed fish with soft tofu, the dough stick provided a refreshing and unique dimension to the dish.

YanTingMay24-21
Crispy Beef Short Ribs 4.2/5

Another savoury delight was the Crispy Beef Short Ribs. The dish featured a delightful contrast of tender meat enveloped in a satisfying crunchy coating, complemented by a medley of spices and aromatics.

YanTingMay24-23
Wok-fried Lobster Angel Hair Pasta, Truffle 4.2/5

An unusual yet innovative take on Cantonese cuisine, the Wok-fried Lobster Angel Hair Pasta with Truffle was a standout dish. The incorporation of pasta added a bold modern twist, resulting in an indulgent and harmonious combination of textures. Each mouthful was infused with the rich, sweet flavour of lobster, accented by the light, earthy notes of truffle.

YanTingMay24-27
Chilled Panna Cotta 4.2/5

To conclude our meal, we enjoyed the Chilled Panna Cotta. This dessert struck the perfect balance between firmness and creaminess, offering a smooth, silky, and light experience that was both elegant and comforting.

Yan Ting's reopening under the guidance of Chef Chan Chung Shing promises an exceptional dining experience. It blends the rich traditions of Cantonese cuisine with contemporary flair, and the combination of innovative dishes and classic flavours ensures that every visit is memorable.

Boston Lobster and Ikura Yu Sheng with Passion Fruit Sauce 4.5/5

Boston Lobster and Ikura Yu Sheng with Passion Fruit Sauce ($268) - Xin Cuisine's Boston lobster yu sheng enticed with sweet and chunky lobster meats, complemented by a tangy-sweet passion fruit sauce. The occasional burst of saltiness from the ikura balanced the overall sweetness of the dish. Additional salmon, abalone, and crackers are also available for ordering.

Xin’s Roast Suckling Pig 4/5

Xin's Roast Suckling Pig ($508/whole pig) will not disappoint with its exceptional crisp skin for an opulent feast. One day in advance is required for takeaway order.

IMG_0402
Braised Stuffed Scallop with Sea Cucumber in Abalone Sauce 4/5

We tried several dishes from their set menus. Braised Stuffed Scallop with Sea Cucumber in Abalone Sauce features a scallop with a prawn stuffing that enhances the texture and flavour, resulting in a delightfully meaty bite. The exquisitely prepared sea cucumber contributes to the dish with its soft and tender qualities.

IMG_0407
Australia Beef Short Rib 4.5/5

The Australia Beef Short Rib, braised with red wine, showcased a fork-tender meat. The red wine sauce heightened the rich flavours of the meat.

IMG_0414
Crab Roe Seafood Fried Rice 5/5

The Crab Roe Seafood Fried Rice was truly delectable, offering delightful textural bites from chunky prawns and scallops. What made it exceptional were the fried rice puffs skillfully tossed into the mix before serving. This added an additional layer of bite and infused a moreish aromatic flavour to the dish.

IMG_0420
Xin's Deep Fried Nian Gao 3/5

For dessert, we had Xin's Deep Fried Nian Gao. While the Nian Gao was wonderfully soft and chewy within the crust, I didn't quite enjoy the aftertaste of the batter.

Xin Cuisine's Chinese New Year Takeaways are available for order from 1 December 2023 till 24 February 2024 through its e-shop (singaporeatrium.holidayinn.com/eshop). IMG_8991

Black Knight Hotpot, the Taiwanese celebrity-beloved hotpot restaurant located at Millenia Walk, has recently launched a new seasonal Autumn-Winter menu alongside its signature Fish Maw Chicken Pot soup. Simmered over 16 hours, it is made with no MSG and packed with nourishing properties. Considering the coming colder months that mark autumn-winter in four-season countries and Singapore's cold, rainy monsoon season, this Fish Maw Chicken Pot is meant to be a comforting, healthy treat for all, especially the ladies!

IMG_9002
Fish Maw Chicken Pot 5/5

Their house signature Fish Maw Chicken Pot ($58) is packed with collagen, extracted naturally from a concoction of fish maw, kampung chicken, dry scallops, cordyceps, and other nutritious ingredients. Simmered for up to 16 hours, the creamy broth gave a luxurious gelatinous mouthfeel. You can experience it in 2 sizes – single or double pot – across different spicy and non-spicy flavours, each freshly cooked upon order.

IMG_8984
Meat Platter 4.5/5

To accompany our soup, we had a meat platter made with Okinawa Black Pork Belly ($26/full portion), Japanese Pork Collar ($26/full portion), US Prime Short Rib ($38/ full portion) and Australia Sirloin Beef ($32/full portion). Pork from Japan is in the spotlight this season, and it's worth trying especially the Okinawa Black Pork Belly.

IMG_8981
Scallops

New this season is also a selection of Live Prawns ($12/100g). Scallops ($12/pc) are available as well.

IMG_8979
Celtuce Slices

IMG_8986
Kelp

For such creamy broth, opt for crisp greens for a textural contrast. Celtuce Slices and Kelp are highly recommended.

IMG_9003
Chinese Cucumber Salad 3.5/5, Crispy Peanuts 4/5

Amp up the hotpot experience with new cold appetisers, such as Chinese Cucumber Salad and Crunchy Peanuts. The cucumber is seasoned with soy sauce, rice vinegar, garlic, green onions and a dash of sugar for a contrasting sweetness. The Crunchy Peanuts comes with rice vinegar as well, making it extra. moriesh.

Salt & Palm @ Joo Chiat - Neighbourhood Resto-Bar Serving Modern Flavours Of East Indies

SaltnPalm15

Having won over Sydney, Australia, Salt & Palm has now opened in the colourful neighbourhood of Joo Chiat, bringing its fun new take on the flavours of the East Indies to our shore. Helmed by Executive Chef Natasya Soetantyo, she seeks to change the perception and introduce the diversity of Indonesian cuisine as a whole archipelago through contemporary cooking techniques using traditional spices, recreating the complex flavours and dishes in a modern way.

SaltnPalm32
Fresh Oyster 4/5

We kickstarted our meals with a couple of starters, beginning with the Fresh Oyster ($28 for 3 pc). The freshly shucked Amelie oysters from Marennes-Oleron, France, can be paired with either a choice of lime wedges or tomato tamarind and basil kemangi pandan oil.

SaltnPalm19
Hokkaido Scallop 4/5

Next is the Hokkaido Scallop ($22), lightly torched and paired with tempe chips, fried garlic, chilli peanut lime, sweet soy and lemon basil herbs. The combination gives a glimpse of Chef Natasya's philosophy of incorporating her Indonesian heritage into her cooking.

SaltnPalm21
Fish Cake 4/5

The Balinese-style Fish Cake ($12 for 2pc), made from minced fish and a blend of traditional spices, is topped with chilli lemongrass shallot salsa which enlivens the flavour. The accompanying chicken skin tuille provides that extra textural enjoyment.

SaltnPalm8
Potato Cake 3.5/5

There are also several Vegan dishes on the menu, such as the Potato Cake ($12 for 2pc). The potato cake is topped with vegan mayo and vegan caviar to finish. The combination and flavour are straightforward, which didn't come with any significant surprises.

SaltnPalm25
Prawn Bisque Pasta 4/5

Moving to the mains, we had the Prawn Bisque Pasta ($32), inspired by Palembang Mie Celor, a seafood noodle in coconut broth. The interpretation, which comes with king prawns, south sumatran prawn bisque, onsen egg, beansprouts, tobiko and chives, is bursting with the sweetness of the sea.

SaltnPalm10
Beef Short Ribs 3.8/5

Australian grain-fed beef is used for the Beef Short Ribs ($52). I wish the texture could be more tender, but the rendang sauce is fragranced with kaffir lime leaf, cinnamon, chilli, and candlenut. The flavour is more savoury than sweet, leaning more towards the Indonesian style instead of the sweeter Malaysian style.

SaltnPalm17
Porchetta 4.5/5

The Porchetta ($32) at Salt & Palm is its version of Balinese Babi Guling. The pork belly is marinated in a unique Balinese spice blend but cooked in Italian style. The result is succulent with crispy crackling, paired with chilli lemongrass salsa for a lifted enjoyment. This is one of my favourite dishes for the night.

SaltnPalm12
Mushroom Rendang 4.5/5

Another beautiful dish on the menu is the Mushroom Rendang ($30). The medley of mushrooms and baby potatoes is simmered in a housemade rendang sauce over long hours and topped with toasted coconut flakes for texture contrast.

SaltnPalm23
Pandan Coconut Creme Brulee 2.8/5

We wrapped up our dinner with the Pandan Coconut Creme Brulee ($15) and Pavlova ($18) for dessert. The Pandan Coconut Creme Brulee is egg and dairy free, topped with jackfruit and berries. There was even young coconut filling in the custard. However, I wouldn't say I liked the texture of the creme brulee. It lacked that smooth, creamy texture without the use of egg and dairy.

SaltnPalm6
Pavlova 4.2/5

Compared to the creme brulee, I preferred the Pavlova ($18) for its brighter flavours. The plant-based meringue with plant-based mango and passionfruit cream is further embellished with fresh mango, blueberry, grilled peach and coconut flakes.

Note: This is an invited tasting.
