Hui Wei Chilli Ban Mian (回味辣椒板面) @ Geylang Bahru Food Centre - Shiok Dry Chilli Ban Mian

With the re-opening of Geylang Bahru Food Centre after its renovation, it is great to see many familiar stalls back. One of them is Hui Wei Chilli Ban Mian (回味辣椒板面) which has temporary moved to Toa Payoh during the renovation. The stall is now back and continue to sell a variety of noodle dishes such as Dry/Soup Ban Mian, a variety of La Mian, Seafood Ee Mian, Ke Kou Mian, Fu Zhou Fishball Noodle and more.

Signature Chilli Ban Mian 4.5/5

Of the many noodle dishes offering at the stall, a must try is the Signature Chilli Ban Mian ($4/$6). The bowl of handmade noodle comes with ikan bilis, meatball, poached egg, fried shallots, pork lard and minced meat.

I would recommend to give a good toss to coat the noodles evenly with the spicy and fragrant chilli sauce. The spicy level may be hard for some to tolerate and this is exactly why I enjoy it. It is damn shiok! Not only is the dry chilli sauce shiok, it has a nice aromatic kick to it that complement the noodle excellently. Besides the chilli sauce that holds the dish together, a worthy note is the handmade noodle that has a firm yet bouncy texture.

During my visit, there is constantly a long queue waiting to try their handmade noodles. It actually quite amazing to see how the humble little stall is able to offer 18 different noodle dishes on the menu.
