Si Chuan Dou Hua @ PARKROYAL on Kitchener Road - Celebrate Chef Leung Wing Cheung’s 12 Years At The Helm With 12 Of His Signature Dishes

Si Chuan Dou Hua first found itself in our local F&B scene in 1996, with its founding outlet on Beach Road. Fast forwarding to today, the restaurant has two other spaces in the iconic UOB Plaza and PARKROYAL on Kitchener Road.

This year marks the 12th anniversary of Guangdong-born Executive Cantonese Chef Leung Wing Cheung's 12th year helming the restaurant at PARKROYAL on Kitchener Road. Chef Leung has an impressive 40 over years of experience cooking Cantonese cuisine.

To mark this joyous occasion, Chef Leung invites diners to travel back in time, specifically from the 1970s to 1980s, to enjoy delicacies inspired by his hometown of Guangdong, China. Aptly named Chef Leung''s 12th Anniversary: A Classic Feast 梁师傅十二周年: 梁家经典怀旧五味篇, this time-limited menu features 12 specially crafted dishes, all of which are rare Cantonese and Sichuan dishes, seen on the restaurant's menu for the very first time.

From now till 31 May 2023, diners can enjoy a Buy-3-Free-1 or Buy-6-Free-2 promotion with any orders from this anniversary menu. Each dish is priced at $33.

Wok-Fried Squid Stuffed with Prawn Paste, Bi Feng Tang Style 4.2/5

We first had the Wok-Fried Squid Stuffed with Prawn Paste (避风塘百花酿吊片), featuring Chef Leung's take on "har gao" in the shape of a squid. The Hong Kong sun-dried squid pieces are stuffed with prawn paste, fried, and paired with an addictive base of crunchy rice crackers, shrimp and garlic.

Stewed Seafood with Assorted Vegetables and Crystal Vermicelli Served in Casserole 4/5

Introducing the Stewed Seafood with Assorted Vegetables (海味粉丝什菜煲) on the menu was meant to recreate regal one-pot-stews often made during festive seasons. Flavours here are more delicate while carrying a depth of sweetness from slow-cooking dried shrimps and squid. What we appreciated was the clean stock that contains no artificial flavourings. Main toppings include fish beancurd, broccoli and crystal vermicelli.

Poached Giant Garoupa Fillet with Luffa Melon in Fish Stock 4.5/5

One of our favourites for the night was the Poached Giant Garoupa Fillet with Luffa Melon in Fish Stock (鱼汤胜瓜浸龙趸球). The cloudy broth was brimming with natural sweetness and creaminess from hours of simmering fish bones and meat. I particularly enjoyed the addition of black fungus and, my favourite luffa, for the refreshing crisp. My only gripe was that I preferred a cleaner texture on the giant garoupa fillets instead of the slightly floury mouthfeel.

Slow-Cooked Roast Duck with Sea Cucumber and Shrimp Roe 4.2/5

The Slow-Cooked Roast Duck with Sea Cucumber and Shrimp Roe (虾子海参焖火鸭煲) was served sizzling hot in a claypot. The mix of tender slow-cooked duck, sea cucumber, shrimp roe and tofu skin rolls were covered in a sweet seafood-based gravy.

Boiled Sliced Venison with Spicy Chilli Sauce 4.5/5

Most of my dining companions and I have not had many venison dishes before, but we thoroughly enjoyed the Boiled Sliced Venison with Spicy Chilli Sauce (沸腾爽滑鲜鹿肉). Using the same Si Chuan recipe from Chef Leung's childhood, it features tender and lean venison slices that were first boiled before adding to the numbing spicy chilli sauce. Digging into it past the peppercorns, minced garlic and dried chillies, you will also see strips of celtuce, leek and beansprouts which provide a complementary crunch.

Steamed Kampong Chicken with Fragrant Scallion Oil 4/5

Using a fragrant house-made scallion oil, the Steamed Kampong Chicken (葱油走地鸡) has tender meat and silky skin.

Poached Tianjin Cabbage Topped with Dried Shrimp and Conpoy in Superior Stock 3.5/5

Next was the Poached Tianjin Cabbage (虾亁瑶柱扒津白), which had dried shrimp and conpoy toppings. While we enjoyed the depth of the clear superior stock, we wished for more, especially the portion, considering its price tag.

Pan-Fried Tofu Stuffed with Minced Fish Paste in XO Sauce 4/5

Another classic dish is the Pan-Fried Tofu Stuffed with Minced Fish Paste in XO Sauce (极品酱鱼腐煎豆包). The rich and slightly spicy XO sauce with dried scallop bits scattered on top would go great with a bowl of white rice. Each piece of pillowy soft tofu is stuffed with minced fish paste.

Sauteed Egg with Kurobuta Honey Pork 3.8/5

The Sauteed Egg with Kurobuta Honey Pork (黑豚叉烧炒滑蛋) was much smaller than we expected but was creamy and buttery. The slices of Kurobuta pork were tender and lent a sweetness.

Sauteed Minced Fish with Celery, Honey Peas, Celtuce and Bell Pepper 4/5

We learnt that this dish of Sauteed Minced Fish (生煎鱼崧炒荷芹) is one typically eaten during New Year in the past but is less commonly found around now due to its laborious cooking process. First, the minced fish paste is fried and thinly sliced before being sauteed with sweet celery, honey peas, celtuce and bell pepper.

Pan-Fried Minced Pork with Salted Fish 3.8/5

Finally, the Pan-Fried Minced Pork with Salted Fish (马友咸鱼生煎肉饼) features lean pork laced with bits of salted fish. While we enjoyed the texture of the patties, we found these too salty for our liking.

My dining companions and I don’t take beef, but the last of the 12 dishes is the Wok-Fried Rice Noodles with Sliced Wagyu Beef and Bitter Gourd 和牛凉瓜炒河粉.

Crystal Jade Group Of Restaurants - Mother's Day And Seasonal Menu Promotion

Cucumber & Assorted Mushroom Dumpling 4.5/5, Steamed Squid with Water Chestnut Dumpling 4.5/5, Deep-fried Beancurd Roll with Pork Floss & Seaweed 2.5/5

Available at Crystal Jade Palace, Crystal Jade Golden Palace and Crystal Jade Pavilion for the first time, these three fine-dining establishments offer specially-curated High Tea sets, over two weekends each, in May and June, in the late afternoon from 3pm – 445pm. A peek into the Crystal Jade Pavilion Sea High-Tea set, we tried the Cucumber & Assorted Mushroom Dumpling served together with two seasonal dim sum items from Crystal Jade Hong Kong Kitchen - Steamed Squid with Water Chestnut Dumpling ($7.80/3 pieces) and Deep-fried Beancurd Roll with Pork Floss & Seaweed ($7.80/3 pieces). I enjoyed both the dumplings. They were exquisite, with thin skin and fillings that were on point with flavours and texture. However, the deep-fried beancurd roll was a tad greasy for me.

Chilled Boneless Kampung Chicken 4/5

Crystal Jade Palace presents two very tantalising dishes. The first to be served was Chilled Boneless Kampung Chicken with Scallion & Sand Ginger ($36 for half, $70 for whole). The chicken was deliciously succulent and tender, marinated in a mixture of chopped spring onions and sand ginger that lent incredible fragrance, flavour and freshness.

Stewed Chinese Yam Vermicelli with Sesame Chicken & Shredded Ginger 4/5

The 2nd dish was a nourishing and warming Stewed Chinese Yam Vermicelli with Sesame Chicken & Shredded Ginger ($32 for regular (3-4 persons)). The sesame flavour was more of an undertone, making the broth much lighter than expected and delightfully comforting. The Chinese yam vermicelli is specially brought in to create this dish. Its texture is a cross between rice vermicelli and glass noodles.

Steamed Whole Deboned Fish wrapped in Crystal Jelly 5/5

From Crystal Jade Golden Palace, I was awed by this high-skilled dish - Steamed Whole Deboned Fish wrapped in Crystal Jelly in Teochew Style (Seasonal price). The live fish is first filleted, then wrapped with shiitake mushroom, red chilli, preserved vegetables, Chinese celery and shredded ginger in a delicate mung bean sheet, and steamed in a light stock flavoured with preserved vegetables and enlivened with fresh tomatoes.

Hakka Grandma's Pork Belly with Preserved Vegetable 3.5/5

In contrast with the above, Hakka Grandma's Pork Belly with Preserved Vegetable ($28/4 pieces) is a very homely dish that entices with thick cuts of pork belly doused in a dark, rich sauce with Preserved Vegetables. The preserved vegetables were surprisingly quite balanced in flavour, and it would have been a perfect combination if the pork belly had been more tender.

Deep-fried Assorted Mushroom & Lotus Roots 3/5

Crystal Jade La Mian Xiao Long Bao & Jiang Nan presents Deep-fried Assorted Mushroom & Lotus Roots in Chef's Special Spicy Cumin Powder ($16.80). Using mushrooms and crunchy lotus roots instead of meat gives a different form of enjoyment. However, I would prefer the mushrooms to be less thinly sliced so each fried piece has a 'meatier' bite.

Man Fu Yuan @ InterContinental Singapore - Taste Of The Yesteryears 今日事,当年情; A Celebration Of Heritage Cantonese Cuisine By Four Celebrated Masterchefs

For a limited period from 1 April to 30 April 2023, Man Fu Yuan at InterContinental Singapore presents for the first time 8 Hands collaboration between four celebrated Masterchefs, Chef Pang Lu Tin, Fok Wing Tin, Peter Tsang and Man Fu Yuan's Executive Chinese Chef Aaron Tan. The four of them have come together to present set menus for the taste of yesteryears, reimagining traditional Cantonese classics. Diners will be treated to their combined culinary expertise and a gastronomic adventure featuring premium ingredients and the best of Lee Kum Kee’s sauces.

It is an opportunity to taste the collective mastery in one single meal of much-loved traditional classics from the 1970s and 80s, presented with skills that have been honed for decades, perfected with modern techniques and laced with exquisite flair and premium ingredients.

We started the dinner with a trio of appetisers by Chef Pung, whetting up the appetite. A beautiful trio of Chilled Spice Jelly Fish Head with Preserve Mandarin Orange, Crispy Duroc Pork Belly, and Steamed Egg White with Sea Urchin is on the plate.

Soup by Chef Fok

Soup, an indispensable part of Cantonese cuisine, is showcased in the Superior Pumpkin Soup with Soft Scallop sheet and Sharp Spinach by Chef Fok. Pumpkin is added to give colour to the superior stock and creaminess. The highlight is the soft scallop cooked using the traditional sou vibe technique. Yes, I was educated that Chinese cooking has sou vibe technique too, not only in Western cuisine.

Superior Seafood by Chef Aaron Tan

Next is the Braised 15-head South Africa 'Ji Ping' Dried Abalone, which Chef Aaron Tan perfectly cooks to achieve the 'Tang Xin', a jam-like, ramen-egg texture.

Poultry by Chef Peter

The Steamed Goose with Plum, Ginger and Chinese Wine by Chef Peter draws inspiration from the Teochew-style braised duck. Chef Peter has to substitute the goose with duck, which is still a delicacy. The whole duck is painstakingly wok cooked to seal the skin and then slow-braised with Lee Kum Kee's sauce. The result is flavoursome and tender.

Poultry by Chef Fok

Another poultry item on the menu is the Pan-seared Duck and Chicken with Water Chestnut Patty by Chef Fok. The golden brown patty is succulent and has a homely flavour that reignites many childhood memories.

Seafood by Chef Aaron

Packed with robust flavours is the Crispy Soft-shell Crab with Crispy Garlic, Dried Chilli and Scallion. The execution is similar to Hong Kong's Bi Feng Tang" style.

Rice by Chef Peter

We had the Crispy 'Guo Ba' Rice with Braised 'Guan Dong' Sea Cucumber and Abalone Sauce by Chef Peter for the rice dish. It is an elevated way of having carbo paired with premium sea cucumber cooked to a delightful bouncy texture.

Dessert by Chef Pung

The Chilled Coconut Pudding with Silky Bird's Nest by Chef Pung wrapped up our meal. It is a light yet refreshing dessert brimming with a silky bird's nest for a luxurious, sweet ending.

Taste Paradise @ ION Orchard - New Luxurious Spring Seasonal Menu Available For Limited Time

Fine Cantonese restaurant Taste Paradise unveiled a new seasonal menu to mark the dawning of the spring season. It features a medley of dishes specially curated using luxurious sea and land ingredients, including osmanthus mussel, coral trout and lobster.

Chilled Ice Plant with Tangy Sesame Sauce 3.8/5

We started off dinner with starters from their existing menu. First of which was the refreshing Chilled Ice Plant 胡麻酱冰菜 ($16.80). The fragrance of the nutty sesame sauce made this an appetising start, but the ice plant could be crunchier.

Classic XO Carrot Cake 4.2/5

For the second starter, we had the Classic XO Carrot Cake 经典XO酱萝卜糕 ($14.80). Each carrot cake cube had a lovely thin and crisp crust around it but remained fluffy and soft inside. Stir-fried in an umami XO sauce, eggs, and beansprouts, the savoury notes and hint of spice made this very appetising.

Doubled-Boiled Black Chicken Soup with Sea Whelk and Sea Coconut 4/5

The Doubled-Boiled Black Chicken Soup 海椰皇螺头炖乌鸡汤 ($76.90*, UP: $85.90) is carefully boiled for over 8 hours before it's served to diners. The clear yet flavourful superior stock is made with fresh sea whelk, chicken feet, American ginseng, wolfberries and coquito nuts. While I wasn't a fan of the hard and crunchy coquito nuts, they did provide a mild sweetness to the broth. We were also told that they aid in strengthening your immune system.

Steamed Coral Trout with Pickled Cabbage and Potato Vermicelli 4.5/5

Our favourite dish of the night was the Steamed Coral Trout 川味酸菜水晶粉蒸东星斑 ($18/100g*, UP: $20/100g) prepared in Szechuan style. The fresh slices of boneless fish fillets were firm and tender, with the gravy packing a comfortable level of heat and numbness. Hidden underneath was springy potato vermicelli that soaked up the broth particularly well.

Boston Lobster Black Truffle Fried Rice with Sakura Shrimp 4.2/5

The Boston Lobster Black Truffle Fried Rice 波士顿龙虾黑松露樱花虾炒饭 ($76.90*, UP: $88.90) is fried with a housemade truffle sauce to a mild smoky fragrance, with sakura shrimps, chopped asparagus and diced fresh mushrooms. Topped on top are chunks of tender Boston lobster meat. The truffle fragrance was stronger than its flavour, but we appreciated that as it allowed the rest of the ingredients to shine better.

Stir-fried Osmanthus Mussel with White Asparagus in Black Truffle Sauce 4.2/5

Our last savoury dish of the night was the Stir-fried Osmanthus Mussel with White Asparagus 松露松茸桂花蚌炒淮山白芦笋 ($76.90*, UP: $86.90) that is done in the same black truffle sauce. Osmanthus mussels are unlike the usual mussels that we are more familiar with. They are softer with a bit of a chew and have an impressively light crunch. The earthiness from the matsutake mushrooms paired with Chinese yam, spring white asparagus, fresh lily bulb petals and the aromatic truffle sauce was delicious.

Chilled Aloe Vera and Lemongrass Jelly in Sour Plum and Lime Juice 3.5/5

We ended the meal on a refreshing note with the Chilled Aloe Vera and Lemongrass Jelly in Sour Plum and Lime Juice 芦荟酸柑香茅冻.

Red Lantern Live Seafood Restaurant @ Sembawang Country Club - Hidden Live Seafood Restaurant In The North Offering Tze Char Dishes

Red Lantern Live Seafood Restaurant officially opened in August this year and is situated within Sembawang Country Club. It offers more than 80 tantalising Asian seafood dishes, such as the signature Live lobster porridge, Chilli Crab, Squid, Kailan, BBQ Pork Ribs and more. The spacious restaurant is not enclosed and has a nice view of the golf terrace.

Golden Salted Egg Squid 4/5

We started our meal with the Golden Salted Egg Squid ($15). Deep fried to a crispy texture, the slightly chewy rings of squid were coated in a slightly spicy, creamy salted egg paste. It was an enjoyable dish that packed a nice salted egg flavour.

Dual Taste Kailan 3.8/5

A unique way to kick up a notch to the usual kailan dishes, the Dual Taste Kailan ($12) was served with a pile of crispy kailan leaf shreds and anchovies atop the crunchy Kailan stalks. It was an interesting twist that gave diners two different flavours and textures from one vegetable.

BBQ Spanish Pork Ribs with Red Wine 4.2/5

One of our favourite dishes is the BBQ Spanish Pork Ribs with Red Wine ($18). The pork rib meats were superbly fork tender and fell off the bone easily. It was also coated in an incredibly flavourful marinate before being smoked and glazed, packing a robust sweet-savoury flavour with a strong smoky aroma.

Fragrant Spicy Crab 4.2/5

As they had run out of Lobsters for the day, we settled for the Fragrant Spicy Crab ($88) instead, which did not disappoint. The wok-fried crab was tossed and covered in loads of chilli peppercorns and crispy fried garlic pieces, which brought out the lovely spicy fragrance, while the crab meat was thick, sweet and fleshy. Besides the Fragrant Spicy Crab, they offer choices of Chilli Crab and Black Pepper Crab as well.

Occupying the former premises of Crystal Jade Dining IN, the restaurant has reopened as Crystal Jade Pavilion, the restaurant group's third fine-dining brand. It is located on level one at Vivocity, facing the picturesque backdrop of the waterway and Sentosa island.

Chilled Tomatoes, Chilled Homemade Tofu with Scallop, Deep-fried Mushrooms and Corn 4.2/5

We started with a couple of appetisers such as the Chilled Fresh Lily Bulb and Cordyceps Flower with King Oyster Mushroom ($13.80), Chilled Tomatoes with Roselle Plum ($10), Chilled Homemade Tofu with Scallop, Bonito Flakes and Perilla Leaf ($18.80) and Deep-fried Mushrooms and Corn with Salted Egg Yolk ($12.80). I can't put my finger on my favourite, because all of them are deliciously good.

Poached Scotland Bamboo Surf Clam in Prawn Broth 4.8/5
